Should I use light or dark brown sugar?
Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown will work in this recipe.

Why do I need to pack my brown sugar when measuring?
Packing your brown sugar is crucial for making consistent measurements. If you do not pack your brown sugar, you are leaving little air pockets in your measuring cup that will reduce the true amount of brown sugar you are adding to the recipe.
These pockets are never uniform, meaning that scooping without packing will add a different quantity each time. Thus, one should always pack their brown sugar when measuring – even if the recipe does not call for it.
How to make Rice Krispie Cookies
- Preheat the oven to 375 degrees.
- Line a baking sheet with parchment paper. Set aside.
- In a large mixing bowl using an electric mixer, cream butter and both granulated and brown until fluffy.
- Add the eggs and vanilla and mix until smooth.
- Stir in the baking soda and salt.
- Fold in the flour, just until combined.
- Gently fold in the rice Krispie cereal, M&Ms, white chocolate chips, and sprinkles.
- Using a 1 ½ tablespoon cookie scoop place the dough onto your cookie sheet.
- Top each one with any leftover chocolate chips, M&Ms, and sprinkles if desired.
- Bake for 8 to 10 minutes.
- Cool slightly before transferring to a wire cooling rack.
NOTES FOR THE BEST RICE KRISPIE COOKIES
- Store in an air-tight container for up to 5 days.
- Find Red, White, and Blue M&Ms in the summer or you can pick them out of a regular bag.
- Try using mini M&Ms instead of in addition to the regular ones.
- You can pop these cookies in the fridge before baking if you want to make them ahead of time.
- You can also freeze the unbaked cookie dough balls on a sheet pan and then transfer them to a freezer bag and freezer for up to 3 months.
