  • white cake mix + ingredients to make according to package directions
  • orange gel food coloring

  • sweetened condensed milk

Frosting

  • confectioner’s sugar
  • cream cheese – softened
  • vanilla extract
  • heavy cream

What do you poke a poke cake with?

This will depend on the size of holes you want in the cake – those will be your pockets of flavor. So you can either use a chopstick for smaller holes or go with the handle of a wooden spoon (most common) for larger ones.

I find that the chopstick works better when making jello since the liquid is thinner. The larger wooden spoon handle works best for pudding because it has a thicker consistency.

Can this poke cake be made with pudding instead of sweetened condensed milk?

Yes – this poke cake can be made with instant pudding instead of the sweetened condensed milk mixture. In fact, it is quite common to do so. Using the pudding makes it ultra-creamy. For this cake – try a white chocolate pudding flavor.

Just use a 4-serving-sized box of instant pudding mix and 2 cups of cold milk. Whisk those together until smooth and pour it over the top of the cake just like you would the sweetened condensed milk. Then refrigerate for several hours before adding the frosting. This will help firm up the pudding before continuing.

Can you make poke cake the day before?

Yes, you can make a poke cake the day before. Just make sure to cover it tightly and keep it in the dish you baked it in until you are ready to serve.

How to Make Candy Corn Poke Cake

Cake

  1. Lightly grease a 13×9 pan. Set aside.
  2. Prepare the cake mix according to package directions and then divide the batter equally into 3 bowls (about 1 ½ cups of cake batter in each).
  3. Add yellow food coloring to one of the bowls, and orange coloring to another, the third will be left white.
  4. Pour the yellow batter evenly across the bottom of your prepared pan and place in the freezer for 20 minutes. (make sure it is on a level surface).
  5. Remove the pan from the freezer and pour the orange batter on top of the yellow layer and smooth it evenly to cover. Place the pan back in the freezer for another 20 minutes.
  6. Remove from the freezer and spread the final white layer across the top of the orange layer.
  7. Preheat the oven to 350 degrees.
  8. Allow the pan of the layered cake batter to sit at room temperature for about 30 minutes while the oven preheats.
  9. Bake the cake according to the package directions.
  10. While the cake is still warm use a chopstick or a handle of a wooden spoon to poke holes in even rows about an inch apart all over the cake.
  11. Pour the sweetened condensed milk over the top of the cake making sure to pour it into all of the holes.
  12. Cover the cake and place it in the refrigerator overnight. (or at least 8 hours)

Frosting

  1. Before starting place the mixing bowl in the freezer for about 15 min, this helps the whipped cream whip up easier.
  2. In a separate mixing bowl, beat together the confectioner’s sugar, cream cheese and vanilla until creamy and blended.
  3. Remove the chilled bowl from the freezer.
  4. Add the heavy cream and beat on medium speed for 1-2 minutes, increase the speed to high and continue mixing until stiff peaks form.
  5. Fold the cream cheese mixture into the whipped cream and mix for 1-2 minutes or until well combined. Take care to not over-mix, you don’t want to deflate the whipped cream.

Decorate

  1. Spread the frosting into an even layer on top of the refrigerated cake.
  2. Top with candy corn.
  3. Cut into 12 pieces and serve chilled.

Can candy corn poke cake be frozen?

Yes – of course. Just like any other cake, you can freeze this poke cake. Just make sure to wrap the cake tightly with plastic wrap or place it in an airtight container before freezing. Use it within 3 months.

I do recommend adding the candy on top when serving as it will taste best if it wasn’t frozen first.

  • Cake mix – Regular vanilla cake or white cake mix will work for this recipe.
  • Eggs – Should be at room temperature.
  • Oil – Vegetable oil or any neutral-flavored oil will work. Unsweetened apple sauce can be used instead.
  • Heavy Cream in the Frosting – make sure it is SUPER COLD to get the right consistency.
  • This cake and frosting can be made with keto-friendly/low-carb options. Start with a keto cake mix, use a confectioner’s sugar alternative and omit the candy on top of the cake. Still super cute – with the layers of cake colors.

Cake

  • 1 white cake mix + ingredients to make according to package directions

  • 1 cup confectioner’s sugar
  • 8 oz cream cheese – softened
  • 1 tbsp vanilla extract
  • 2 cups heavy cream

Instructions

Cake

How to store leftover Mummy Cookies?

Store the cookies in an airtight container at room temperature for up to a week. I don’t recommend refrigerating them as the eyes don’t do well in the damp environment of the refrigerator. They tend to bleed and weap a bit.

Can I freeze Mummy Cookies?

Yes, you can freeze these cookies. Place them in a freezer-safe bag or container and they will keep for up to 3 months. Let them thaw at room temperature before eating.

BUT – as I mentioned above – the eyes don’t do well in a damp environment. SOOOOO – I recommend storing them without the eyes and adding them right before serving.

  • Nutter Butter cookies
  • almond bark
  • white chocolate chips
  • candy eyeballs

What is the best chocolate for dipping cookies?

While you can use chocolate chips to make these, I have found that it often requires a bit of coconut oil or shortening to get the chocolate to melt to the right consistency.

I like to use candy melts because the chocolate is made with just the right formula so that it performs exactly as needed.

The candy melts come in a multitude of colors, varieties, and flavors so the sky is the limit on what you can do with them when it comes to making chocolate-coated goodies.

We made this recipe using almond bark and then used white chocolate chips to make the mummy part. You can sub candy melts for the almond bark and the white chocolate chips if you want to make this recipe even easier.

We used the almond bark because it comes in large quantities, making it easy to melt a lot of it at one time.

How to Make Mummy Cookies

How to Make Mummy Cookies

  1. Melt the almond bark in a microwave-safe dish for 20 seconds and mix. Repeat until all the bark is melted.
  2. Place the nutter butter cookies into the melted bark. Use tongs to press the cookies into the melted chocolate and fully coat the cookies. Remove the cookies and place them onto the parchment paper.
  3. Allow the chocolate coating to completely cool for 10 minutes.
  4. Once the bark is completely cooled melt the white chocolate chips in a microwave-safe dish for 20 seconds and mix. Repeat until all the chocolate chips are melted. **See notes in post for melting tips.
  5. Carefully spoon the melted chocolate into a piping bag. Cut the tip or the corner of the bag depending on how thick you want your mummy stripes to be.
  6. Pipe the white chocolate over the cookies in a back and forth zigzag pattern to create the look of a mummy.
  7. Complete the mummies by adding two candy eyes.

Why didn’t my chocolate wafers melt correctly?

When your chocolate wafers become chunky rather than creamy, it is said that the chocolate is seized.  This is typically due to overheating or contact with water or steam. 

In the first case, the chocolate is just burning from excess heat, but in the second case, there is a negative reaction between the chocolate (which is waxy and has many oils that are hydrophobic, or “water-fearing”) and the water, causing the components of the chocolate to separate. 

Be sure to refer to the package directions when melting chocolate to prevent this from happening.

Can I use sugar-free chocolate?

I haven’t tried using sugar-free chocolate. But I think that will work just fine. That being said – you would need to also find some carb-friendly cookies in a similar shape to make these low-carb altogether.

Are Mummy Cookies Easy to Make?

If cake pops, chocolate truffles, or other chocolate-dipped treats intimidate you, don’t fret! These chocolate-covered Nutter Butter cookies are SO much quicker and easier and you can customize them a million ways.

  • 24 ounces almond bark
  • 1 cup white chocolate chips
  • 64 candy eyeballs

Instructions

  • Melt the almond bark in a microwave-safe dish for 20 seconds and mix. Repeat until all the bark is melted.

As the sun began to set, I could feel a chill in the air. It was the perfect time for some spooky Halloween fun. So, I decided to make my favorite Graveyard Dessert.

This can be made with homemade stabilized whipped cream. But this recipe won’t work with regular whipped cream. It needs to be stabilized so that it won’t turn the pudding into a soup and the ghosts will hold their shape.

How to Make Ghosts in the Graveyard Dessert

Pudding Base

  1. In a large bowl, whisk together the pudding mix and milk until smooth.
  2. Place the bowl in the refrigerator to set, for about 10 minutes.
  3. Remove from the refrigerator and fold in the whipped topping.
  4. Place it back in the refrigerator to chill for about 10-15 minutes (longer is fine).
  5. Create the decorations while the pudding mixture is chilling **instructions below.
  6. Divide the pudding mixture into serving dishes or a 9×13 glass dish **see notes.
  7. Add 6-8 Oreo cookies to the food processor and crush them into crumbs.
  8. Sprinkle the cookie crumbs over the pudding mixture and then add the decorations you have created.

Trees

  1. Line a baking sheet with parchment paper.
  2. Add 2-3 blocks of the almond bark to a microwave-safe bowl.
  3. Heat in the microwave for 1 minute, remove and stir.
  4. Continue cooking for 10-20 seconds at a time until the chocolate is almost melted. Stir until completely melted and smooth.
  5. Transfer the chocolate to a plastic decorator bag or resealable bag and snip off a very small amount of the tip of the bag .
  6. Create the trees by piping melted chocolate onto the parchment paper.
  7. Let set for 10-15 minutes or until hardened.

Tombstones

  1. For the white frosting for writing, mix together 1 cup confectioner’s sugar and about 1-2 teaspoons of milk until smooth. You need the frosting to be very thick so begin with a very small amount of milk and gradually add a tiny bit at a time until the consistency is good for writing.
  2. Write years and/or RIP on the Milano cookies or chocolate-covered graham crackers.

Decorate

  1. Add decorations to pudding mixtures.
  2. Add gummy worms if you like.

Ghosts

  1. Place a portion of the whipped topping in a piping bag fitted with a round tip.
  2. Pipe the whipped topping into a ghost shape on top of the assembled graveyard.
  3. Once piped – gently press the candy eyes on the ghosts OR you can use the remaining melted chocolate in the piping bag to pipe on the face of the ghosts.

Can this be made ahead of time?

Ghosts in the Graveyard Dessert can be made ahead of time and stored in the fridge until you’re ready to serve it. Simply prepare the base pudding portion of the dessert as directed, then add a layer of plastic wrap on top and store it in the fridge for up to 3 days.

When you’re ready to serve, simply remove it from the fridge, and add the toppings fresh! I don’t recommend adding the crumbs, cookies, or gummy worms before storing them in the fridge. Those ingredients don’t keep well in the refrigerator.

This one’s for the kids! Ghosts in the Graveyard Dessert is a creamy chocolate pudding topped with crushed Oreos, spooky trees, worms, and ghosts.

  • 2 boxes instant chocolate pudding mix 3.9 oz each
  • 3 cups cold milk
  • 16 oz whipped topping thawed – part of one for decorations

Fall is in the air and that means one thing – apple season! This Apple Cider Donut Cake is a delicious way to enjoy it. It’s perfect for a cozy autumn weekend morning or paired with a scoop of vanilla ice cream for dessert.

The cake is soft and moist, with the perfect hint of apple cider flavor. And the frosting is just icing on the cake (pun intended)! So grab your cider and get baking!

The best part is that this cake starts with a cake mix base, making the prep super quick and easy. You’ll love the taste and texture of this scrumptious treat.

Apple Cider Donut Cake

When it comes to fall, apple cider is where it’s at. We are absolutely bursting with apples here on the property. When fall comes around there is no shortage of ideas about what to do with all these apples.

Because we can only drink or store so much cider, I’m always making recipes to use it up and this cake is a perfect example. The sweetness and spice of the cider make this cake absolutely heavenly.

Can this cake be frozen?

Yes, I do it often. Once baked – this cake can be frozen at all stages of the creation process. I like to remove a freshly baked and cooled cake from the pan, wrap it tightly in plastic wrap and freeze it for later use. (this is also handy when you want to work with cold cakes to keep the frosting from getting too soft.)

You can also gently wrap the completely decorated cake and freeze it until you need it.

FOR BEST RESULTS – WAIT TO ADD THE CINNAMON/SUGAR COATING UNTIL THE CAKE IS THAWED AND READY TO BE SERVED. The sugar will moisten in the damp environment of the freezer, causing it to seep and soak into the cake instead of keeping the desired texture for this cake.

Just make sure to thaw it in the fridge the night before as it does taste best when not frozen. I also like to leave it at room temperature for 1-2 hours before serving so the frosting is more creamy than stiff.

What is bundt cake?

Basically, a bundt cake is a cake that is baked in a bundt pan. A bundt pan is a round, donut-shaped cake pan that was inspired by a traditional European cake known as Gugelhupf.

Cake

  • yellow cake mix
  • apple cider
  • apple sauce
  • large eggs
  • brown sugar
  • ground cinnamon
  • vanilla extract

Cinnamon Sugar Coating

  • unsalted butter – melted
  • granulated sugar
  • ground cinnamon

Glaze

  • confectioner’s sugar
  • apple cider

What type of cider should I use?

Typically in the fall, you can find gallons of cider at the market, farmer’s market, pumpkin patches, and so many other places. Anything you find there will work just fine for this recipe.

If you are blessed, like we are, to have apple trees on your property or you visit the local orchard and use those apples to make your own fresh cider – that will work too.

Can this be made with apple juice instead of cider?

Yes, apple juice will work. It might be a bit thinner than what you find with cider – so that could change the consistency of the batter and how the batter bakes.

Also, cider is packed full of spices and additional flavors that apple juice does not have. The cake will be lacking some of those great flavors if you use apple juice.

How to Make Apple Cider Donut Cake

Cake

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease and flour a 10-cup bundt pan. Set aside.
  3. In a large mixing bowl, using a stand or hand mixer, beat together the cake mix, apple cider, and apple sauce.
  4. Add in the eggs and mix until just incorporated.
  5. Continue by adding the brown sugar, cinnamon, and vanilla.
  6. Mix until fully incorporated, being sure to scrape the sides.
  7. Pour the mixture into the prepared bundt pan.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Once finished baking set aside, and allow to cool to room temperature in the pan.
  10. Once at room temperature, flip over the pan onto a serving plate to release the cake and start the toppings.

Cinnamon Sugar Coating

  1. Brush the melted butter over the entire cake, allowing the butter to soak in for a couple of minutes.
  2. While the butter is absorbing, in a small bowl, mix the sugar and cinnamon until well blended.
  3. Sprinkle the cinnamon sugar over the entire cake.

Glaze

  1. In a small bowl, add the confectioner’s sugar and apple cider.
  2. Whisk until smooth.
  3. Drizzle over the top of the cake.
  4. Cut and serve.

Why cool the cake first before flipping out?

If you try to flip the cake while it is still hot or even warm, it hasn’t had a chance to firm up yet. Flipping a warm cake increases the likelihood of the cake not releasing from the pan entirely, falling apart, or breaking when it is flipped.

Trust me – it is a big fat bummer to have this cake you are so excited about and then have only half of it come out properly, The whole thing is a wash and you have to turn it into something like truffles instead.

How can I prevent the cake from getting stuck inside the pan?

You should make sure that you grease and flour your pan really well or heavily coat it with a flour and grease/cooking-spray mixture to keep the cake from sticking. (such as Baker’s Joy)  The ridges in the pan are most susceptible to this and they are the most delicate parts of the cake. 

Make sure that you really work your grease into these crevices for the best results.

I like to use Baker’s Release because it yields the best results, in my opinion.

What is bakers release?

Bakers release is a combination of oil, flour, and shortening that makes releasing cakes and other baked goods almost effortless.

To make Bakers Release – it is as simple as 1,1 & 1. 

  • equal parts of all-purpose flour, shortening, and cooking oil – I like to do 1 cup of each.

Mix the ingredients together – whisking well. Store in an airtight container in the pantry or refrigerator. When ready to use, dip a pastry brush into the mixture and spread it over the cake pan.

Can this be made in a regular cake pan?

This cake can be made in a 13×9 baking pan. Bake for 20-25 then do the toothpick test to check for doneness.

This cake can also be made into cupcakes. Fill each well 3/4 of the way full and bake for 15-20 then do the toothpick test to check for doneness.

S’mores are a classic American camping treat. They consist of a roasted marshmallow and a layer of chocolate sandwiched between two graham crackers.

How do you make a S’more?

There are many ways to make a S’more, but the classic method is to roast a marshmallow over a campfire, then sandwich it between two graham crackers with a layer of chocolate.

How Air Frying Works

While air fryers are relatively new to the market, the technology isn’t really a new concept. They basically work like tiny convection ovens that you can use on your countertop.

Similar to a convection oven, it circulates the hot air within the cooking area using a high-powered fan. This helps evenly distribute the heat around the food which not only creates more evenly cooked food but also reduced cooking times.

By circulating the hot air, which contains the fine oil droplets from adding a light mist layer before cooking, and allows you to remove the need for submerging our foods in heavy oils to create the deliciously crunchy foods we all love.

What are the benefits of air frying?

Healthier

It’s no secret that fried foods are more fattening – but did you know that there are 9 calories in every gram of fat? With air frying, we can reduce the fat by removing most of the oils usually needed to create crunchy foods. This helps to drastically reduce fat intake and calories.

Convenience

I love being able to cook with my air fryer and eliminate the need for large baking sheets and lots of pots and pans. Most of my air fryer recipes can be made with just a mixing bowl or two or a small saucepan in addition to my air fryer.

Energy Efficient

Someone said to me once, “why make this in the air fryer if you can do it the conventional way in the same amount of time?” Well, air frying helps eliminate the need for a conventional oven.

Not only can you keep your home cooler in the summer by not using the oven, but you are saving money with reduced energy consumption costs as well.

Time Saver

I don’t know about you, but if I can avoid turning on the oven and having to wait 20 minutes for it to preheat, I’m happy about that. Most air fryer recipes either don’t require that you preheat the fryer – or the preheat time is 5 minutes or less. That is a huge time saver over using the oven.

Take it on the go

I love that the air fryer is compact and easy to take along on trips. We pack ours in our RV and find that air fryer cooking while camping is so much easier than trying to deep fry foods on a small RV stove or camping burner.

Here are a few tips for making the perfect S’more:

  • Use fresh marshmallows for the best flavor.
  • Roast the marshmallow over the campfire until it is golden brown.
  • Allow the chocolate to soften slightly before sandwiching it between the graham crackers.
  • Use a sharp knife to cut the S’more in half so that the chocolate does not squish out.
  • Serve the S’more immediately after it is assembled.

Change up the ingredients

To change up this classic combo, try replacing the chocolate square with a large peanut butter cup or your favorite candy bar. You can also add strawberries in between the chocolate square and marshmallow.

You can really shake it up and replace the graham crackers with chocolate chip cookies or glazed donuts.

How to Make Air Fryer S’mores

  1. Snap the graham crackers in half making two squares.
  2. Divide the chocolate bars into 4, three-piece sections.
  3. Add one section of chocolate onto a graham cracker, and then one marshmallow to the other part of the graham cracker.
  4. Place the crackers open faced up in the air fryer basket.
  5. Cook at 350 for 3 minutes.
  6. Carefully remove the cooked crackers and then assemble by pressing the two cooked portions together. The melted marshmallow and chocolate should smush together to make a deliciously messy s’more!

How to prevent sticking in the air fryer

Sticking can often happen when using an air fryer. I understand that most would think to add non-stick spray to the basket to prevent this. I strongly encourage you to not do that.

Non-stick spray leaves a coating that won’t come off, even when washed. Over time – this will build up and cause smoking when you use our air fryer.

I also do not recommend putting down a sheet of foil. The idea behind air frying is to allow the air to circulate around the food.

This is why the basket or tray has holes in it. If you put foil down – this prevents the air from reaching all of the areas it needs to in order for it to cook properly.

Instead – I recommend spraying the basket with olive oil using this spray bottle. You can line the air fryer with perforated parchment paper.

Or you can use one of these really great silicone liners that still allow for airflow but are reusable and easily cleanable.

Air Frying Doneness Tip

Every air fryer is a bit different and they all cook at different rates – so in general, all cooking times are approximate based on the pan and temperature.

You can always cook the recipe longer if needed and reduce the heat a bit. If needed, you can tent the top if it is browning too much.

Ingredient Tip

If the marshmallow has a hard time staying on top of the chocolate, try cutting it in half and placing the sticky side down. This will keep it in place and more evenly distribute the marshmallow over the whole s’more.

When looking for milk chocolate squares, I usually just pick up a solid milk chocolate candy bar & break it to the size I need.

How to store leftover s’mores

While s’mores are always best when served immediately after making them. If you have leftover s’mores, you can store them in an airtight container at room temperature for up to 3 days.

Can these be made in the oven?

You bet – if you don’t happen to have an air fryer do not fret. You can make these in the oven as well. To do so…

Bake in a preheated 350-degree oven for 9-11 minutes. You can also broil the marshmallows for a couple of minutes to make them toasty if desired.

What to serve with s’mores

S’mores are typically served as a dessert or snack. However, they can also be served as part of a larger meal. For example, you could serve them with hot dogs and burgers at a cookout, or you could make s’mores pizza for a fun twist on the classic dish.

What air fryer do you use?

We actually have 3 air fryers. I have a smaller one from Phillips that we started with. I have since given that to my son since he’s only cooking for 1.

But the more I used the air fryer I realized I really wanted a digital screen. It wasn’t any more expensive, in fact- our XL air fryer from GoWISE was less expensive than the Phillips and I love its ease & extra functions.

Plus it comes with a lot of the extra accessories I like to use when cooking with my fryer.

But I when I started working on my second air fryer book, I wanted to change things up. I picked up this LARGE air fryer that has been wonderful. It has Touch Screen Presets plus it is XL Family Size, which is great!

When it comes to birthdays, you don’t always have to do a cake to celebrate. My mom would always have the option of cookies at the party table so people could have a little nibble of something sweet without having to commit to a slice of cake.

These birthday cookies are so much fun. Loaded with sprinkles, easy to make with cake mix (meaning they are super soft and chewy for days), and then topped with a simple buttercream that will have everyone coming back for more.

Here are some commonly asked questions

What is the best way to store leftover kiss cookies?

Because these cookies are frosted, I recommend keeping them in an airtight container in the refrigerator. You will also need to keep them in a single layer because of the frosting.

The easiest way to do this is to place them in casserole dishes – preferably ones with an airtight lid. If they don’t have lids that make them stackable for space saving – you can use the press & seal wrap instead. Not only does it do a good job at keeping things airtight – but it stays firm enough for light stacking.

What is Funfetti or Confetti Cake Mix?

Basically, Funfetti is a soft, fluffy, vanilla cake with rainbow sprinkles baked throughout. It’s FUN and probably my most favorite flavor of cake.

This is actually the same as confetti cake. But then Pillsbury came out with an actual Funfetti variety of their box mix – which made the name popular.

For this recipe, you can use the Pillsbury brand and get the actual Funfetti cake mix or you can pick up the rival brands who call their versions confetti or rainbow chip.

  • heavy whipping cream or milk
  • clear vanilla extract

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

How to Make Birthday Cookies

  1. Preheat the oven to 350 degrees F.
  2. Line 2 large baking sheets with parchment paper or a silicone mat. Set aside.
  3. In a large bowl, mix together the cake mix, eggs, and oil until completely combined.
  4. Stir in the sprinkles until mixed throughout.
  5. Scoop with cookie dough scoop or tablespoon onto the prepared baking sheets.
  6. Bake for 8-10 minutes or until slightly firm but still soft.
  7. Remove from the oven and place the baking sheet on a wire rack.
  8. If adding chocolate kisses without frosting, add them immediately while the cookies are warm.
  9. Or cool the cookies completely, then add the frosting, sprinkles, and chocolate kisses.
  10. Store in an airtight container.

Frosting

  1. In a mixing bowl, cream the butter until fluffy and smooth.
  2. Sift the confectioner’s sugar into a medium bowl – this step is optional, although it makes the frosting smooth and easier to mix.
  3. Gradually add the confectioner’s sugar, alternating with heavy cream or milk.
  4. Add the vanilla extract and beat well.
  5. Add to a piping bag with a large star tip and pipe onto cooled cookies before adding the chocolate kiss.

Can you freeze kiss cookies?

The short answer is yes. These cookies can be frozen after baking, once they have completely cooled. The best way to do that is to wrap each cookie individually with plastic wrap.

Then place them in an airtight container or zip-top bag. You can freeze for up to 3 months. Keep in mind that the sprinkles may sweat from the moisture in the freezer – so you might want to stick to only freezing the ones without sprinkles.

You can also freeze the dough. Just roll it into balls and place it on a baking sheet. Freeze in a single layer. Once frozen, transfer to an airtight container for space-saving.

When ready to bake, thaw the dough, roll the cookies in the sugar or sprinkles and then bake as directed. Please don’t add the sugar or sprinkles prior to freezing – neither holds up too well with the moisture in the freezer.

Do I need to chill the dough?

Typically cake mix cookies don’t require chilling. However, if your room is quite warm, you might want to place the bowl in the fridge for about 30-60 minutes prior to rolling.

This will help keep the cookies thick and from spreading too much when baking.

How many can this serve?

This recipe makes about 35 cookies, so it will depend on how many people eat at a time. It will also vary a bit on how large or small you make the cookies.

Can this recipe be doubled?

Yes, doubling this recipe works great and I highly recommend doing it if you are giving these as a gift or making them for a party. These are a favorite and they do go quickly.

What are the best sprinkles for these cookies?

This is important – just because the package says “sprinkles” doesn’t necessarily mean that it is in fact sprinkles.

I see a lot of people using colored sanding sugar that is labeled as sprinkles.

This will not work as well because when that sugar gets wet – like when mixed into a moist dough or when placed in the refrigerator, it will sweat & the color will bleed out.

Make sure you are using jimmies – they don’t bleed or alter the colors. “Sprinkles” called Nonpareils are also not great for this recipe because they also bleed.

What is the best way to store double chocolate chip cookies?

I like to place mine in an airtight container and keep them at room temperature for up to 5 days. You can also use a zip-top bag but I find they get jostled a bit too much with this and then you have broken cookies.

Can the dough be frozen for later?

Yes – this dough can be frozen and baked later. If you would like to roll the dough prior to freezing, make sure to freeze the dough balls in a single flat layer. Once frozen they can be transferred to a zip-top bag for space-saving.

To bake – increase the baking time by 1 minute – no need to thaw the dough before baking.

I like to roll the dough between my hands to soften the outside of the dough before baking – then roll in the sugar – this helps the cookies have the freshest texture once they are baked.

How long do double chocolate chip cookies last?

These double chocolate chip cookies should be enjoyed within 5 days to 7 after making them. They can be frozen for up to two months if you need to do that too.

Are these really no-chill?

Yep – that is why I love this recipe. You don’t have to chill this dough at all. However – if your house is hot (maybe it’s summer and you don’t have AC) or maybe the dough is too warm and the cookies are spreading too much when baking – you can chill the dough for 30 minutes before baking to help it out.

  • brown sugar – packed
  • granulated sugar
  • vanilla extract
  • large egg
  • all-purpose flour – spooned and leveled
  • unsweetened cocoa powder – not Dutch-processed
  • baking soda
  • table salt
  • semi-sweet chocolate chips

Why do my cookies go flat?

Cookies typically go flat when the dough isn’t at the right temperature at the time of baking OR when they are missing the right ingredients that help them to rise- such as eggs, baking soda, and baking powder. Please make sure you are measuring those ingredients correctly and that they are at room temperature when you start the mixing.

Also – something to keep in mind- make sure you are placing the dough on a cool baking sheet. The cookies will bake differently if you are placing the dough on the hot baking sheet you just removed from the oven. Make sure you have a rotation of baking sheets so you can always place the unbaked dough on a cool tray.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown sugar will work in this recipe.

Is there a substitute for butter in double chocolate chip cookies?

You can use margarine or vegetable shortening as a butter substitute in these double chocolate chip cookies. Keep in mind that the rise, spread, and overall texture of the cookies will be altered when making this change.

How to Make Double Chocolate Chip Cookies

  1. Preheat the oven to 350 degrees.
  2. Line a couple of baking sheets with parchment and set them aside.
  3. In a large, microwave-safe bowl, melt the butter on 50% power until mostly melted – remove and whisk until the remainder of the butter melts.
  4. Whisk in the granulated sugar and brown sugar until well combined.
  5. Stir in the egg and vanilla just until incorporated.
  6. Add the flour, cocoa powder, baking soda, and salt. Mix until just combined. The dough will be just a bit sticky.
  7. Fold in the chocolate chips.
  8. Scoop the dough into 1.5 tbsp portions onto the prepared baking sheets – making sure to space the dough about 2 inches apart to allow for spread.
  9. Bake for 7-10 minutes or until the cookies are just set. They will be a bit puffy but will continue to set as they cool.

Can this recipe be made without a stand mixer?

I think you could possibly get away with using a hand mixer if you have firm beaters.

I don’t recommend using a whisk or even the whisk attachment on a stand mixer for this dough as a whisk isn’t strong enough for this dough.

How do I properly measure the flour?

The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.

What is the difference between Dutch-process cocoa powder and regular cocoa powder?

So Dutch-processed cocoa powder is also referred to as alkalized cocoa. This powder starts with cocoa beans that have been washed in an alkaline solution of potassium carbonate, also used in the production of soap and glass.

By doing this, it neutralizes the acidity of the beans, making the beans neutral. This is important because when they are neutral, they do not react with baking soda. Instead, it is often paired with baking powder.

So – long story short – using regular cocoa powder vs Dutch-process cocoa powder will yield a completely different rise and texture to any recipe you are making.

So I highly recommend paying close attention to the type of cocoa powder called for in each recipe and sticking to it for that reason.

You bet! We like to use frozen blueberries that we have stored from the previous season because our blueberry season is so much later than most other places in the country.

For us – blueberry desserts are perfect for summer but it will be nearly the fall season for everyone else before our blueberries are ready.

Can this be made with another type of fruit?

Yes, you can make this with other berries, we love making this with blackberries from our garden each summer. However, keep in mind the volume of the fruit you are substituting with so that it still has the same ratio with the top crust layer.

Yes, absolutely, that will work just fine. I have used white, yellow, and even chocolate when I didn’t have a box of vanilla.

Without chilling, the dough would not only be too sticky to really roll it into balls. But it would also spread way too much while baking – leaving flat and not very appealing cookies in the end. Please don’t skip the chilling process.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

How to Make Cookie Monster Cookies

  1. In a large bowl of an electric mixer, cream together the butter, brown sugar, and granulated sugar until fluffy.
  2. Beat in the egg, vanilla, and 3 drops of the blue food coloring. Add more food coloring until you reach your desired shade. Keep in mind that the color will intensify as the dough sits.
  3. Slowly mix in the flour, baking powder, and salt.
  4. Stir until just combined.
  5. Next fold in ⅓ cup of the white chocolate chips, ⅓ cup of the mini Oreo cookies, and ⅓ cup of the mini chocolate chip cookies. Use the mixer or a spoon to break up the cookies just a bit while stirring them in.
  6. Divide the dough into 6 equal portions and form each portion into a ball.
  7. Place on a lightly greased cookie sheet.
  8. Break up the remaining mini Oreo cookies and mini chocolate chip cookies.
  9. Place the remaining white chocolate chips, mini Oreo cookies, and mini chocolate chip cookies around the top of the unbaked cookie dough.
  10. Refrigerate for at least 30 minutes.
  11. Meanwhile, preheat the oven to 350 degrees.
  12. Bake the cookies for 15-18 minutes. You want the edges to just be golden brown, we want the cookies to stay chewy – so don’t over-bake.
  13. Cool for 5 minutes on the baking sheet and then transfer to a rack to cool completely.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

Can you freeze Cookie Monster Cookies?

Yes – the baked cookies will keep when frozen for up to 3 months. Wrap each cookie individually with plastic wrap and then place them all in an airtight container before freezing.

How to store these Cookie Monster Cookies?

These cute cookies can be stored in an airtight container at room temperature for up to 1 week. If you want them to last longer, you can freeze the dough or the baked cookies for up to 3 months. Just make sure to wrap them tightly in plastic wrap or freezer-safe bags to prevent them from drying out.

Can I add other ingredients to the cookie dough?

Sure! These adorable cookies are a great base for experimentation. You can change the color and the mix-ins to whatever you like. Keep in mind that by changing them from blue to another color and changing the cookies that are added to something else – they will no longer be “cookie monster cookies” but you can come up with some really cute variations.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown will work in this recipe.

Why do I need to pack my brown sugar when measuring?

Packing your brown sugar is crucial for making consistent measurements. If you do not pack your brown sugar, you are leaving little air pockets in your measuring cup that will reduce the true amount of brown sugar you are adding to the recipe.

These pockets are never uniform, meaning that scooping without packing will add a different quantity each time. Thus, one should always pack their brown sugar when measuring – even if the recipe does not call for it.

For best results, please grill them for about 8-10 minutes. No need to flip them over, since they are rounded on the other side, they won’t have enough contact with the grill for it to make a difference.

I would imagine that because most frozen peaches come pre-sliced, you would have to place them in a container or on a griddle over the grill. They would essentially become smoked peaches since they wouldn’t be touching the grill grates.

  2. Cut the peaches in half and remove the pit.
  3. Brush the peaches on the cut side with the oil.
  4. Brush the grill with the oil as well.
  5. Place the peaches on the grill -cut side down- and cook for 8-10 minutes.
  6. While the peaches are cooking, melt the butter in a microwave-safe bowl.
  7. Stir in the sugar and cinnamon.
  8. Remove the peaches from the grill and place them on a baking sheet with a rim.
  9. Spoon the butter mixture over the peaches slowly so it soaks in.
  10. Serve immediately with a scoop of ice cream and a drizzle of caramel sauce, if desired.
  11. Store the leftovers in the refrigerator for up to 3 days.

Can I make grilled peach pie?

Absolutely! Just follow your favorite recipe and substitute grilled peaches for the fresh or canned peaches called for in the recipe. Yum!

I have not tried baking a pie on the grill yet. But stay tuned, it is on my wish list.

Does it matter what type of peach is used?

Nope – you can make this recipe with either yellow or white peaches. They are both equally delicious. Just make sure they are ripe but still firm enough that they don’t squish when you cut them and remove the pit.

Can these peaches be grilled on the stovetop?

Yes – if you would like to grill these peaches on the stovetop instead of the bbq that is possible. I found that using a cast-iron skillet works best for this – preferably one that has grooves in the bottom like this grill pan here.

How to Cut a Peach

First – Wash thoroughly by rinsing under water and rubbing gently with your hands.

Then – if you want to peel the skin before cutting – if the peach isn’t fully ripe, use a peeler to remove the skin. Otherwise, score the skin on top and blanch them in boiling water for 15 seconds. After that, immerse them in an ice bath to halt the cooking process. This method allows you to remove the peaches’ skins without cooking them.

To cut into slices – Place the peach on a cutting board with its stem side up. Cut angled pieces from the peach using a paring knife, starting from the stem end. To remove the flesh, cut away any tissue around the pit if necessary. This results in between 10 and 12 slices.

Leaving the peel on – Start with the peach at the top of the stem, where there is a natural indent. Cut down into the flesh until you hit the pit with a sharp paring knife. Continue cutting around to the other side until it reaches where you started.

Twist each half, then hold. If it comes apart with little effort, the peach is a freestone. It’s most likely a clingstone peach if you need to remove the pit from the flesh by cutting.

Choose one of the sides, then use the blade’s tip to make small incisions along the pit’s curve, separating the flesh. The remaining portion will still have the pit in the middle since you removed half of it with tiny sawing motions.

I’m just here working my way through all of mom’s cake recipes. While a whole lot of them are several layers and super elaborate – she has some in her collection that are simple and easy – like this lemon cake.

I love this one because it falls into the snack cake category being that it is only one layer, is on the smaller side of 8″ square, and whips up fairly quickly.

It is perfect for bunco night, a small backyard bbq or brunch at church. I know you’ll love this one as much as we do.

Can this be made with different size cake pans?

You bet – if you need to change the size of the cake you are making – please see the variations below. As with all cakes – bake until the toothpick test is clean as different ovens, climate, elevation, and other factors can change the baking time.

  • 8″ square (used here) is the same as a 9″ round with both holding 8 cups of batter.
  • 9×5″ loaf pan also holds 8 cups of batter – however, the depth of the cake would increase and change the baking time.
  • 9 x 13 pan holds 14 to 16 cups of batter – you would need to double this recipe for a 9×13 pan.
  • This recipe can be made in 2 – 6″ round pans – with each pan holding a total of 4 cups – baking for 18-21 minutes.
  • You can convert this to cupcakes – it will make about 8-12 standard-size cupcakes.

Keep the depth of the batter the same.

The amount of batter in a cake pan is crucial to the recipe. The cake could sink in the middle or overflow if there is too much batter. If you don’t use enough batter, you’ll end up with a thin, flimsy, and dry cake (the moisture will evaporate too rapidly). When switching pan size, follow this guideline: fill halfway to two-thirds full. If you have any leftovers – make them into cupcakes.

How do I properly measure the flour?

The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.

What is cake flour?

Cake flour is very finely milled making it lighter in texture, it is bleached so it has a lighter color, and has a much lower protein content than your standard all-purpose. All of these things will change the overall texture, rise and consistency of the cake since it will produce less gluten.

How to Make Lemon Cake

  1. Preheat the oven to 350 degrees F. Spray an 8×8 inch pan with nonstick baking spray. Set aside.
  2. In a medium-sized bowl, whisk together the cake flour, baking powder, salt, and lemon zest. Set aside.
  3. In a bowl of an electric stand mixer fitted with a paddle attachment, cream together the butter and sugar until light and fluffy, about 3 minutes.
  4. Add in the eggs one at a time, followed by the almond extract, sour cream, and lemon juice. Mix until combined.
  5. Carefully, add the flour mixture into the wet mixture. Mix until just combined.
  6. Pour batter into the prepared 8×8 pan.
  7. Bake for 22 to 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove the cake from the oven and let cool for 20 to 30 minutes before removing it to a cooling rack.

How to Make Lemon Cake Icing

  1. Add the confectioner’s sugar, lemon juice, and heavy whipping cream to a medium-sized bowl. Whisk until smooth. If you would like a thicker icing keep adding more confectioner’s sugar. If the icing is too thick, add more lemon juice or heavy whipping cream to thin it out.
  2. Spread the icing on top of the lemon cake and sprinkle with your favorite colorful sprinkles.
  3. Serve immediately.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown will work in this recipe.

Why do I need to pack my brown sugar when measuring?

Packing your brown sugar is crucial for making consistent measurements. If you do not pack your brown sugar, you are leaving little air pockets in your measuring cup that will reduce the true amount of brown sugar you are adding to the recipe.

These pockets are never uniform, meaning that scooping without packing will add a different quantity each time. Thus, one should always pack their brown sugar when measuring – even if the recipe does not call for it.

NOTES FOR THE BEST RICE KRISPIE COOKIES

  • Store in an air-tight container for up to 5 days.
  • Find Red, White, and Blue M&Ms in the summer or you can pick them out of a regular bag.
  • Try using mini M&Ms instead of in addition to the regular ones.
  • You can pop these cookies in the fridge before baking if you want to make them ahead of time.
  • You can also freeze the unbaked cookie dough balls on a sheet pan and then transfer them to a freezer bag and freezer for up to 3 months.

A Springform Pan is the perfect baking pan for any type of cheesecake. They are unique because they have removable sides that allow you to easily get your cake out without breaking it.

Serving Notes

  • I topped my cheesecake with whipped cream and sprinkles but this is completely optional!
  • To slice your cheesecake, run a knife under hot water and wipe it clean with a towel between each cut. This will help ensure you have smooth, clean slices.

Well, yes and no. If you want a traditional round and tall cheesecake like you see here, then the answer is yes. Without being able to remove the sides of the pan as you do with a springform, you won’t be able to remove the cheesecake and keep it in slices.

However, if you want to make this in a 9×13 shallow pan, that would work too. When working with a more shallow pan and cutting into bars instead of slices, the cheesecake is easier to remove and serve.

  • Cream cheese is the base of our cheesecake layer– make sure it is fully softened so you don’t end up with lumps.
  • Milk helps keep the cheesecake light and fluffy.
  • Sour cream adds a great tanginess and helps lighten the cheesecake.
  • Vanilla enhances the sweetness of the granulated sugar and adds that classic vanilla-funfetti taste.
  • Eggs make the cheesecake rich and delicious!

How do I cut Birthday Cheesecake?

When you can just press down with your knife without “sawing” with a serrated blade, cheesecakes cut the most neatly. Next, wash the knife in hot water (or put it in a large cup of heated water) and dry it off.

Insert the blade’s tip into the center of your cheesecake and press it down and in. You can also slice your cheesecake using cheese wire or dental floss to get clean, smooth pieces. Remember that slice sizes are determined by the size of your cake.

How to Make a Graham Cracker Crust

  1. Preheat the oven to 325F.
  2. Grease a 9” springform pan with non-stick baking spray and line the bottom with parchment paper.
  3. In a small bowl, stir together the graham cracker crumbs, sugar, and butter until they resemble wet sand.
  4. Transfer the crust to the springform pan and press it gently into the bottom and sides, creating an even and compact crust that is about ¼-⅛” thick.
  5. Bake the crust for 5 minutes. Then remove and set it aside to cool while you make the filling.

Can I use cookies instead of graham crackers for the crust?

Yes – you can use cookies such as Oreos for the crust of this cheesecake. A golden Oreo would be delicious. To do this, use

  • 18 creme-filled chocolate sandwich cookies crushed to fine crumbs
  • 2 tablespoons butter melted

Combine the cookie crumbs and melted butter, mixing until the crumbs resemble wet sand.

Press the mixture into the bottom of the springform pan. Place in the freezer until you are ready to fill it. This helps to solidify the crust.

What are the best sprinkles for this cake?

This is important – just because the package says “sprinkles” doesn’t necessarily mean that it is in-fact sprinkles.

I see a lot of people using colored sanding sugar that is labeled as sprinkles.

This will not work as well because when that sugar gets wet – like when mixed into a moist dough or batter or when placed in the refrigerator, it will sweat & the color will bleed out.

“Sprinkles” called Nonpareils are also not great for this recipe because they also bleed.

How to Make Birthday Cheesecake Filling

  1. Add the softened cream cheese to the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until the cream cheese is smooth and fluffy- about 1 minute.
  2. Add the sugar, milk, sour cream, and vanilla and mix to combine. Make sure to scrape down the sides of the bowl as needed.
  3. With the mixer on low speed, add the eggs one at a time.
  4. Once all of the eggs have been added, gently fold in the sprinkles.
  5. Pour the cheesecake mixture on top of the crust and bake it for 45-50 minutes or until the cheesecake is just set in the center.
  6. Allow the cheesecake to cool to room temperature. Then, transfer it to the fridge to chill for at least four hours (preferably overnight).
  7. Slice and enjoy! Store any leftover cheesecake in an airtight container in the fridge for up to five days.

Why is my filling lumpy?

The lumpy filling is caused by the cream cheese being too cold. When you combine the remaining dry and room-temperature ingredients with the chilly cream cheese, it won’t properly blend with them, leaving tiny lumps of cream cheese throughout the mixture.

PRO TIPS FOR THIS CHEESECAKE

  • Start off with really room-temperature cream cheese. Leave it out on the counter when you are making breakfast and it should be the perfect temperature after a couple of hours, depending on the temperature of your house. If the cream cheese is too firm the batter will not be smooth.
  • Don’t be alarmed if your cheesecake seems underdone after an hour of baking, it will firm up as it cools. Don’t over-bake.
  • Make sure to CHILL for an adequate amount of time. One time I was too impatient and tried to serve a cheesecake before it had fully chilled. It was warm on the inside – which I can tell you – is just gross when eating. Not only that – you need it to be chilled so that it will hold together. Slicing and serving a warm cheesecake creates a huge mess because the slices just sort of fall apart and you just have a plate of goo. I always plan ahead for cheesecake and refrigerate it overnight.

Can I use fat-free cream cheese?

Cheesecake isn’t really considered diet food. It is rich and creamy because of the full fat that is in the cream cheese.

Because of this, I don’t recommend using a low-fat or fat-free product to make this recipe.

  • ½ cup whole milk
  • ½ cup sour cream
  • 1 teaspoon pure vanilla extract
  • 3 large eggs
  • ½ cup rainbow sprinkles

Instructions

Graham Cracker Crust

  • Preheat the oven to 325F.

Here are some commonly asked questions

I do not have unsweetened chocolate. Can I substitute with semi-sweet chocolate chips instead?

Contrary to what you would initially picture as a good flavoring for ice cream, adding unsweetened chocolate capitalizes on the natural bitterness of the chocolate without over-sweetening the mix. This is key for a black forest ice cream since the black cherries will also be on the tart side. You want these flavors to pair well, requiring you to carefully control just how much sugar you would like to add to the mix.

With this being said, you can absolutely add semi-sweet chocolate to the mix if you do not have unsweetened chocolate available. Just know that you may want to reduce the amount of sugar that you add to the mix in order to compensate for the additional sweetness.

Can I use imitation vanilla for this recipe?

You can use imitation vanilla instead of real vanilla extract in this recipe. Vanilla is in high demand and short supply as of late. This means that the price is going to go up, making imitation vanilla a more economical option.

To save on the cost of real vanilla extract, I make my own vanilla at home. To do this, soak three to five vanilla beans in vodka and store the mix in a mason jar in a cool, dry place. Once the alcohol turns a rich dark brown color, it has extracted much of the vanillin from the beans, adopting its flavor. Use it as you would use ordinary vanilla extract. It does not go bad but should remain in a cool, dry place for the duration of its lifetime.

Is it unsafe to eat the raw eggs used in this recipe?

It is generally unsafe to eat raw eggs due to the presence of salmonella. However, you can enjoy this recipe safely by using pasteurized eggs instead of the normal eggs you would pick up in the store. This reduces your risk of accidentally consuming harmful microorganisms.

Can I make this recipe with other mix-ins too?

Absolutely! When adding mix-ins to this recipe, you are only limited by your imagination. Traditionally, the chocolate base of this ice cream would go great with frozen or fresh raspberries, strawberries, blackberries, and blueberries.

Just be careful about the water content in the types of fruit you add to the mix. This could make your ice cream turn out icier than desired. Alternatively, you can also experiment by adding whole chocolate chips or brownie bits to the mix for a more decadent and rich flavor.

In the ice cream maker linked below, this takes approximately 30 minutes to freeze into soft serve.

I do not have a double boiler to melt the chocolate. Can I still make this recipe?

It is no problem if you do not have a double boiler available in your kitchen arsenal. Keep in mind that the goal of using it would be to keep the chocolate from being exposed to the direct heat that would cause it to separate into its components.

Instead of using a double boiler, you can put some water in the bottom of a saucepan, then place a metal or glass mixing bowl over the top of the pan for you to mix the chocolate in. This would achieve what you are looking for as you melt the chocolate and mix your ingredients.

How long can I store my Black Forest Ice Cream in the freezer?

You can safely store your homemade ice cream in the freezer for up to one month before it is time for you to make a new batch.

Why do I have to refrigerate the mixture before I can freeze it in the ice cream maker?

The name of the game when making good homemade ice cream is freezing your mixture as fast as possible. The reason for this is that the faster you freeze your base, the smaller the ice crystal will be throughout the mix. This will give you a much creamier and more even mixture throughout. This is why many ice cream companies will super freeze their products with liquid nitrogen.

In our case, we do not have any fancy factory machinery or liquid nitrogen on hand. However, we can achieve that creamy texture by cooling our mixture to just above freezing before we place it in the ice cream maker. You will find that though this takes some additional time, the result is well worth it!

  1. In a double boiler, melt the chocolate over hot water until smooth.
  2. Slowly add the milk, and whisk to combine.
  3. Remove from heat and cool to room temperature.
  4. Beat the eggs with an electric mixer until light and foamy, about 1 minute. Slowly add the sugar and continue mixing until blended.
  5. Add the heavy cream, vanilla, and salt, blending until combined.
  6. Stir the chocolate mixture into the cream mixture.
  7. Refrigerate for 2 hours or overnight.
  8. Pour the chilled ice cream mix into the ice cream maker and churn according to the manufacturer’s instructions.
  9. Fold the frozen cherries into the ice cream.
  10. Place the hot fudge sauce into a zip-top freezer bag with the corner snipped.
  11. Transfer the soft-serve ice cream to a freezer-safe container, layering it with ribbons of hot fudge.
  12. Drag a knife through the fudge to swirl it throughout the ice cream taking care to not over-mix.
  13. Freeze the ice cream for 4 to 6 hours before serving.

Why did my ice cream become so icy rather than smooth?

If your ice cream became icy rather than creamy and smooth, this means that the mixture froze too slowly, allowing large ice crystals to form throughout. In the future, you may want to try pre-cooling your ice cream in the refrigerator before attempting to mix it in the ice cream maker.

We love strawberries in this house. A few years back I made this strawberry cake with a strawberry buttercream frosting. It was such a hit!

But I don’t always want or need to make a large, 2-layer cake. Sometimes I just want some cupcakes. So I whipped up these delicious little gems with some fresh strawberry chunks.

Then, because I already had a strawberry buttercream frosting, I decided to make these with a strawberry cream cheese frosting that was definitely a new favorite here. I know you’ll love these as much as we do.

Here are some commonly asked questions

How should I store the cupcakes?

You can store the unfrosted cupcakes in an airtight container at room temperature for up to 4 days. Once they are frosted, I recommend refrigeration because of the butter and dairy in the frosting.

Keep in mind that if you decide to add decorations such as sanding sugar or nonpareils – the colors will bleed when stored in a moist place like the fridge. Decorations such as jimmies should hold up fine to refrigeration.

Is food coloring unhealthy?

Not necessarily. Food coloring itself is not unhealthy. Some people have medical conditions and allergies that are agitated by food coloring. Additionally, some studies suggest that certain food dyes can lead to hyperactivity in children but the correlation between the two is somewhat murky.

Some people would rather not consume too much food coloring to reduce the number of dyes they ingest. There are many plant-based alternatives to artificial food dyes available for sale on the web. For example, some companies will use beet juice as a natural alternative to red dyes. Be sure to do your homework to find a product that best suits your interest. There are so many out there!

Should I use liquid, gel, or powdered food coloring in this recipe?

For this recipe, the type of food coloring you decide to use is interchangeable. Typically, liquid food coloring contains a bit of water and can make your batter runnier if used in excess. In situations where your recipe is moisture sensitive, powdered food coloring will be best.

You can also use gel food coloring – adjusting the amount to your desired shade. For this recipe, feel free to use what you are comfortable with.

Can I use frozen strawberries?

Yes, absolutely, that will work just fine. Just be sure to thaw them & pat them dry before using.

How do I store strawberry cream cheese frosting?

Cream cheese frosting can be stored in an airtight container in the fridge for up to 2 weeks. Simply let it come to room temperature before using it.

Can I freeze strawberry cream cheese frosting?

Yes, you can freeze this cream cheese frosting. Simply place it in an airtight container and store it in the freezer for up to 3 months. Thaw it overnight in the fridge before using it.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

My frosting is runny. How do I fix it?

Runny frosting can be a frustrating development when you are trying to complete your cake recipe. If you find that your frosting is runny, simply try adding more confectioner’s sugar to the mix. This will allow for the absorption of more oils and moisture throughout the mix, giving it a thicker consistency.

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

How to Make Fresh Strawberry Cupcakes

Cupcakes

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Place the butter and sugar into a mixing bowl and beat together until creamy.
  3. Once the mixture is creamy, add in the eggs and extracts. Mix until well combined.
  4. Continue by adding the vegetable oil and milk.
  5. Once mixed, add in the baking powder and salt. Mix until fully incorporated.
  6. Slowly add the flour in ½ cup increments until all the flour is fully incorporated into the batter.
  7. Fold the chopped strawberries into the batter.
  8. In a muffin pan lined with cupcake liners, fill each liner 2/3 of the way full of batter.
  9. Place the pan in the oven and allow to bake for 18-20 minutes or until a toothpick comes out clean.
  10. Once fully baked, remove from the oven and allow to cool.
  11. While the cupcakes are cooling, prepare the frosting.

How to Make Strawberry Cream Cheese Frosting

  1. In a mixing bowl, combine the cream cheese and butter. Beat until smooth and creamy.
  2. Add in the extracts and mix.
  3. Next, add in the confectioner’s sugar in ½ cup increments until all of it is fully incorporated.
  4. If you wish to add food coloring, place in the desired amount, and mix until the frosting is streak-free.

Decorate

  1. Place the frosting into a piping bag prepared with your desired tip.
  2. Pipe the frosting onto each cupcake.
  3. Top each cupcake with a fresh strawberry half and serve.

NOTES

  • It is very important that all the butter and cream cheese is at room temperature, I would recommend setting it out 3-4 hours before starting the recipe.
  • Store in an air-tight container in the refrigerator for up to 5 days.

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

  • 1 cup granulated sugar
  • ¼ cup unsalted butter- room temperature
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp strawberry extract
  • ¼ cup whole or 2% milk

  • 3½ cups confectioner’s sugar
  • pink food coloring optional

Instructions

Cupcakes

  • Preheat the oven to 350 degrees Fahrenheit.
