Bacon month continues – have you found your perfect bacon recipe yet? I know I am in bacon heaven with all these scrumptious bacon recipes being shared. With all of us sharing a couple times a week you are bound to find something you love! I know I am & it’s been great. So today I’m sharing one of my favorite recipes – beer bread. I love beer bread because it’s so incredibly easy to make. The original recipe came from my mother-in-law. I didn’t receive many recipes from her (I somehow need to get more of her recipe book from my sister-in-law) but this one that I did get from her is a favorite. It’s as easy as mix & bake – nothing fancy. You don’t even have to wait for it to rise. I think that’s why I make it all the time. Only now – I have added bacon & cheddar cheese to really pack a punch.
This is a fabulous recipe for serving on the side of maybe a steak dinner or even an alfredo recipe. We enjoyed it for both recently. With the 5 of us – there is rarely any left over. Positively delicious – you have to make it!
Bacon Cheddar Beer Bread
Ingredients
- 3 cups self rising flour
- 3 tbsp granulated sugar
- 1 bottle kraft beer
- 2 cups shredded sharp cheddar cheese
- 1 cup crisp bacon pieces
- 1/2 stick butter
Instructions
- Preheat oven to 350 degrees
- Spray large glass loaf pan with cooking spray
- Mix flour, sugar & beer in mixer bowl with dough hook attachment until combined & dough like
- Slowly mix in cheese & 1/2 the bacon
- Transfer to prepared pan.
- Top with remaining bacon
- Bake 40 minutes
- Melt butter in microwave.
- After bread has baked 40 minutes- remove from oven & pour the melted butter over the top
- Return to oven & bake another 20 minutes.
- Remove & cool until it is able to be handled.
- Slice gently & serve warm.

We sure love egg salad! How about you? It’s such an easy recipe that the whole family absolutely loves. Which is why we decided to kick it up with some heavenly oven cooked bacon for bacon month. Honestly, I can’t believe we never did this before. It’s so simple & really the perfect thing to add to a great egg salad recipe. All that crispy, salty bacon mixed in with the eggs – oh my. Seriously, I was so excited to eat this that I was rushing though taking these pictures just so I could get back to the kitchen & have a bite. I was really sad when I was so full after one sandwich that I couldn’t have just a little more.
You see, we typically make our egg salad as a slider – on some Parmesan toasted baguettes. It’s pretty darn good that way. I love every bite. But changing it up & adding it to this big fat croissant was a great choice. Oh my – it was SO GOOD. We really have to make this more often. I certainly didn’t get enough the first time.
Bacon Egg Salad Sandwich
Ingredients
- 18 hard boiled eggs
- 2 tbsp drained pickle relish we use dill but you can also use sweet
- 1 tbsp minced garlic
- 1/3 cup mustard
- 1 cup mayo
- Minced onions salt, pepper & powdered garlic - Sprinkle to liking
- 2 cups oven cooked bacon - crisp & crumbled
- Croissants
Instructions
- Put the eggs & all the egg mix ingredients in a large bowl & mix with fork.
- Mash & break up the eggs as you go.
- When all combined & there are no large chunks- refrigerate until ready to serve
- Add to croissants (toasted or untoasted) when serving

Peanut Butter & Jelly Arepas

An American twist on the classic Venezuelan dish, these Peanut Butter & Jelly Arepas are absolutely divine. Great easy recipe sandwich alternative.
Have you ever had arepas? They are a classic Venezuelan recipe made with white cornmeal like you see above, that is so versatile. Typically prepared like a grilled cheese or even stuffed full of meat & other great sandwich add-ins that are delicious.
Instead of preparing one of those, I decided to put an all-American twist on it. You see, in my research of them I saw that someone mentioned how great these were in place on English muffins for breakfast. I just couldn’t shake that urge to add some jam to a couple, so I just had to make a good ol’ PB&J. It’s was absolutely delicious!!!
As I mentioned, I used my favorite, P.A.N. Cornmeal, which was founded & is based in Venezuela. Great versatility & excellent flavor, this cornmeal is fabulous! It’s definitely a pantry staple. What would you stuff into your arepas?
Peanut Butter & Jelly Arepas
Ingredients
- 2 cups white cornmeal
- 2 cups warm water
- 1 tsp vegetable oil
- 1 tsp salt
- 3-4 tbsp peanut butter
- 3-4 tbsp homemade jam/jelly
Instructions
- In a medium bowl, combine white corn meal, oil & salt
- Add the water slowly until it absorbs
- Mix with your hands until dough forms, kneading until smooth & manageable
- Form a large ball & then section into about 6 equal parts
- For those 6 equal parts into smooth patties
- Place on preheated griddle & cook on medium to low heat until golden brown (7-10 minutes each side)
- Remove & cool on wire rack
- Once they are cool enough to handle but still slightly warm, split the open & add in your peanut butter & jelly
- Enjoy

White Corn Tortillas
Easy homemade White Corn Tortillas are so easy to make & taste better than anything you’ll find in the store. They are the perfect addition to your dinner.
I love making things from scratch whenever I can. Most of the time it not only tastes better but it’s much easier than it seems.
In a very short amount of time I’m able to make enough of these homemade white corn tortillas for our evening dinner.
I know what you’re thinking – why not just buy the package at the store? Well – because these are SO much better.
Cornmeal Recipes
You know how the store bought tortillas will break when you fold them & all the contents of your taco is either in your hand or on your plate? Not these -they are soft & pliable & are able to hold up to stuffing them full of taco goodness.
I love the taste too – not quite like flour or a traditional corn tortilla. It’s a flavor all it’s own& better than anything I have ever paired with my tacos.
The hubs is a huge lover of tacos & burritos & absolutely swoons over these tortillas. I really didn’t expect him to rave like he does – but he loves them so much.

I make about 20-24 tortillas with this recipe. Depends on how large or small you make them.

Can this recipe be doubled?
Yes, absolutely this can be doubled. You can make as many tortillas as you need, doubling is easy.
Now they are just part of our prep for taco night. It takes less time than frying traditional corn tortillas & do much better for us too. You have to give them a try.

HOW TO MAKE White Corn Tortillas?
- Combine all ingredients in a large bowl & whisk well – add more water as needed 1/8 cup at a time. (batter should be thin- more like cake batter than muffin batter.)
- Heat a large non-stick skillet over med-low heat.
- Ladle in one scoop of batter like you would pancakes.
- Take the backside of a spoon & smooth out the batter to the outer sides to get the tortilla as thin as you can & also even out the shape. (this should make it more uniform in size & shape & help increase the size)
- Allow to cook until browned – flip & brown the other side – be patient & watch closely.
- The first couple might take a little practice but once you have it down it’s really quite simple.
- This should make about 20-24 tortillas depending on their final size.
These don’t need yeast?
Nope, no yeast for tortillas, so they are easy. No yeast, no need to wait for them to rise. Just mix & cook like pancakes.

- 1/2 tsp orange extract
Glaze
- 1 cup confectioners sugar
- 1 tbsp milk
- 1/8 tsp orange extract
Instructions
- Preheat oven to 350
- Spray loaf pan with cooking spray & set aside
- Combine flour, salt, sugar, baking powder in mixer bowl
- Add in eggs, milk, oil, vanilla & extract & mix to combine
- Fold in white chocolate chips
- Transfer to prepared pan
- Bake 35-40 minutes - watching closely in the last 5 minutes or so as ovens vary.
- Remove when toothpick test in the center is clean
- Cool on wire rack completely before adding glaze
Prepare Glaze
- Whisk all ingredients together & pour over bread
- Enjoy!

So ever since I made my Blueberry Backed French Toast a couple weeks ago I have been dying to make some more. The kids scarfed down the whole thing & the hubs never even had the chance to try it.
So I promised I would make some more – I mean, it’s an easy breakfast recipe so why not? Only I decided to make it a little different.
I canned the blueberry idea & swapped it out for caramel & marshmallows. Yep! I created this Caramel Marshmallow Baked French Toast that was out of this world. It was every bit as good as it sounds & all of us had a chance to enjoy it this time.
I think I love baked french toast so much because I can whip it up – cover it & pop it in the fridge at any point in the day.
Then the next day I can either pop it in the oven when the hubs heads out for work or the kids can do it when they get up. They have a fresh baked breakfast – with very little mess.
Really the ease & cleanliness of baked french toast is a HUGE plus for me.
I’m such a fan of regular french toast – but the mess & time to make it is so discouraging. Now that I have made it – I’m on a roll. Seems I’m always thinking of new & creative ways to make it even better.
The best part is that I swapped out the milk I would normally use in my baked french toast recipes & I used Caramel Marshmallow creamer instead. What a fabulous way to add a punch of flavor – delish.

Caramel Marshmallow Baked French Toast
Ingredients
- 2 cups mini marshmallows
- 1-1/2 cups International Delight Caramel Marshmallow fat free & sugar free creamer
- 3/4 french loaf or other crusty bread
- 3 large eggs
- 2 cups caramel plus more for topping
- 1-1/2 tsp vanilla extract
- 1/4 cup all purpose flour
- 1/4 cup packed brown sugar
- 1/4 cup cold butter cubed
- -confectioners sugar for dusting- opt.
Instructions
- Coat 9x13 glass baking dish with cooking spray
- Cut your bread into bite sized pieces & place in pan covering the bottom
- Layer in about 1 cup of the marshmallows & 1 cup of the caramel portioning out as evenly across the top of the bread as possible
- Add another layer of bread followed by the remaining marshmallows & caramel
- In a small bowl - whisk together milk, eggs & vanilla extract
- Pour evenly over your layers
- Cover & refrigerate at least 2 hours but as long as overnight
- When ready - preheat oven to 350 degrees
- In a small bowl, combine flour, brown sugar & butter cubes
- Work together with your fingers or a pastry cutter until you reach a coarse crumbs consistency
- Sprinkle evenly over the top of the prepared dish & bake for 35-45 minutes or until golden brown
- Serve immediately - preferably with a little homemade caramel drizzle on top

There are a few recipes that I can’t seem to get enough of. One is beer bread. My mother-in-law’s recipe for beer bread is one I have been making since she first gave it to me almost 20 years ago. It’s great on the side of soup. Since it’s cold & dreary outside we have been making an awful lot of soup & so the old beer bread recipe has made an appearance several times already this season. So this past week I wanted to change it up just a tad. I created this Cheddar & Chive Beer Bread which was oh so perfect with the soup I will be sharing with you all later this week. My mother-in-law would be so proud that I am still using her recipe & twisting on it to make it even better.
Oh that little bit of cheddar & chives makes all the difference with this bread. So GOOD!

Yeah- I told you- a long time. The hubs was begging for it & I finally told him that I would only do it if I could twist it up a bit for the holiday & make it better. So I came up with Gingerbread & Eggnog Monkey Bread that is soooooo yummy. It truly is the perfect Christmas breakfast.
Top it with a little butter while it’s hot. Then I like to make an extra batch of the icing so we can dunk each bite. It’s incredible! Ours never really lasts long enough to have leftovers the next day. I like to make it the night before. Sometimes I just let it rise all night & then bake in the morning so it’s fresh out of the oven. Or you can bake the night before & just zap in the microwave for about 20 seconds before serving. Either way – it’s delish!
Gingerbread & Eggnog Monkey Bread
Ingredients
Bread
- 1/4 cup warm water
- 1/4 cup granulated sugar + pinch for yeast
- 1 pkt rapid rise yeast
- 2 tbsp shortening
- Cooking spray like Bakers Joy
- 3/4 cup milk- warmed
- 1 tsp salt
- 1 large egg
- 3-1/4 cups all-purpose flour
Coating
- 1 stick butter
- 1 cup brown sugar
- 2 tsp cinnamon
- 1/2 cup pecans - chopped
- 2 tsp ground ginger
- 1/2 tsp ground cloves
- 1/4 tsp grated nutmeg
Glaze
- 1/4 cup eggnog
- 1 cup confectioners sugar
- 1 tsp nutmeg
Instructions
- Combine warm water & pinch of sugar in small bowl
- Sprinkle yeast over top - stir
- Let yeast mixture sit approx 5-10 minutes - it should look frothy when done
- Place shortening, warm milk, sugar, salt & egg in mixer bow with dough hook attachment - mix on medium
- Add yeast mixture & mix well
- Slowly add flour - kneading on medium for about 1-3 minutes
- Place in a greased bowl - cover & let sit in a warm place to rest about 20 minutes
- Spray your bundt pan with cooking spray
- Now make the coating by melting the butter in one small bowl
- In another small bowl combine remaining coating ingredients & mix with a fork
- Sprinkle a small portion of this mixture in the bottom of the bundt pan
- When dough is done resting - pinch off 1/2 -1 inch pieces & roll into balls
- Dunk each ball of dough in melted butter & then roll in sugar & spice mixture & place in bundt pan
- Continue until all the dough is coated
- Cover with plastic wrap & let rise about 1 hour or until double in size
- Preheat oven to 350 degrees
- Bake monkey bread 30-35 minutes
- Allow to cool in pan at least 30 minutes
- Invert onto plate to remove
- Make icing by combining all ingredients & whisking until smooth
- Drizzle over the top of the bread or use as a dipping sauce

Slow Cooker Dinner Rolls
I love utilizing my slow cooker whenever I can. It frees up my oven for other things & makes life in the kitchen simpler. So a couple years ago I learned how to make bread in the slow cooker. It was definitely a game changer for me. I love fresh bread & being able to utilize my slow cooker to make it just puts a smile on my face. Since we are just 2 days away from Thanksgiving – I figured these Slow Cooker Dinner Rolls might be a recipe worth sharing. You can have these going while your oven is occupied with the turkey.
Do you love the smell of freshly baked bread. I have a slight obsession with it. I would make fresh bread every day if I could. I like this recipe because it’s just enough for one night for our family of 5. We don’t have leftovers so we can all enjoy it while it’s fresh & warm. Perfect way to eat bread if you ask me.
Slow Cooker Dinner Rolls
Ingredients
- 1 cup warm milk 95-115 degrees
- 1/4 cup butter - melted
- 3/4 cup honey
- 2-1/2 to 3-1/2 cups all purpose flour
- 1 tbsp granulated sugar
- 1 tsp salt
- 1 tbsp rapid rise yeast
- Melted butter for serving
Instructions
- Line slow cooker with parchment & lightly spray with cooking spray.
- Combine yeast, sugar & milk in mixer bowl. Wait 5 minutes & then mix.
- Add salt & butter & 1/2 the four - combine using dough hook.
- Let sit 2 minutes to rest.
- Add remaining flour, & honey. Mix to combine.
- Knead in mixer with dough hook 4-5 minutes (or 10 min by hand) until elastic - add more flour if needed until it becomes elastic - not sticky
- Allow dough to rest 5 minutes.
- Pull off pieces & shape into rolls & place in slow cooker. -It's okay to double the layers if your cooker is smaller.
- Cover & cook on high 1-1/2 hours or until firm.
- Remove lid & do not allow condensation to drip on bread.
- Lay a paper towel over cooker top & recover. Wait 10 minutes.
- Remove & enjoy.
