Pumpkin Butter Simplified
Okay everyone! I really love pumpkin butter & I get so excited about it this time of year. Typically I have to wait until we have pumpkins that are near the end of their prime before I make some. My slow cooker gingered pumpkin butter is quite delicious. But you know what, it also can take a bit of prep work to get it going. I mean, you have to cut & cube a pumpkin. It’s great for when you have pumpkins that you don’t want to waste. But I don’t yet & I am ready for pumpkin butter now. So I decided to see if I could simplify the recipe using canned pumpkin puree (not pie filling) & see how it turned out.
Well what do you know – it turned out AMAZING!!! Oh my word, everything I love about pumpkin butter in a simple & easy recipe that I can toss together in less than 5 minutes. I made mine in the crock pot & let it cook for about 1.5 hours mainly because I was busy in the office & I sort of set it & walked away. I came back when I had to check on dinner in the other slow cooker & it was ready. But if you don’t even want to wait that long you can also do this in a stove top version in about 20 minutes. How about that?! I’m STOKED because now I have pumpkin butter to enjoy with very little work to make it!
Pumpkin Butter Simplified
Ingredients
- 1 - 15 oz can pumpkin puree not pie filling
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 1 tsp pumpkin pie spice
- 1 tsp ground ginger
Instructions
- Place all ingredients in a small crock pot & stir to combine
- Cover & cook on high 1.5 hours or on low 2.5 hrs
- Transfer to clean glass jar, loosely add lid & let sit on the counter to come to room temperature before refrigerating
- *Note- you can also make this on the stove top by combining ingredients in a saucepan & bringing to a simmer. Simmer & stir for approx 20 minutes or until it becomes thick & darkens.
