But most of the time I forget to peel potatoes & get them boiling in enough time to have them ready during dinner time.

It’s frustrating because I love having mashed potatoes as a side dish, yet I really have to plan ahead to make it happen.
That is until I figured out how to make them in my pressure cooker & now they are done before the main dish. So quick & easy!

Back a few years ago I went on a retreat with some friends who turned me on to the pressure cooker craze. I came home, bought one & have been experimenting with recipes ever since.
The pressure cooker has really transformed my cooking & how long I need to give for dinner preparation, which is really nice. I always thought those good things can’t be rushed. But really, you can’t beat good food that is easy too.
I especially love that I can now have my favorite comfort food, mashed potatoes, more often, which makes me happy.

How can I make this in the slow cooker?
If you would like to make mashed potatoes in the slow cooker, rather than the pressure cooker – you are in luck. I have a delicious recipe for that that you can find here. It is simple, easy & just as delicious.
What is the best way to store leftover mashed potatoes?
After serving, place leftover mashed potatoes in an airtight container. Be sure to label with the date before refrigerating. This recipe should keep for up to 3 days if not left out for too long. As with most things, it is important to get food into the refrigerator within 1 hour after serving to prevent bacteria growth.

How many can this serve?
This will depend greatly on portion sizes & the appetites of your crowd. This recipe feeds our family of 5 little bit left that can be for seconds or leftovers.
We have 3 young adult children, so we usually don’t have a ton of leftovers of most things, but this was perfect for us all & we had some to enjoy to the next day.
I like that this is just enough & keeps portions in check because when it comes to comfort food like this, we almost always overdo it.

Can this recipe be doubled?
Unfortunately, due to space constraints in standard pressure cookers, I have to say no. As much as I would love to double or even quadruple this recipe because I love it so much, there just isn’t enough room to fit that many potatoes.
What if I want the potatoes to be creamier?
If you like thinner, creamier mashed potatoes like you see pictured here with the beef, just increase your milk to about 1 cup to 1-1/2 cups. Add it slowly as you mash the potatoes so you don’t end up with too much liquid once you are done mixing these.
HOW DO YOU MAKE PRESSURE COOKER MASHED POTATOES?
- Place water in the bottom of the pressure cooker.
- Add in trivet or vegetable steamer to the bottom of the pot (if you don’t have one, use the rack that was included with your cooker & then create a small bowl with foil to keep the potatoes from falling through.
- Peel & dice potatoes & place in the cooker on rack & make sure the potatoes don’t exceed the cut-off line.
- Close the lid & lock it on.
- Set the manual timer to 7 minutes & step back & let it do its thing.
- Once it’s completed it’s time, carefully use the quick release.
- Remove lid making sure the steam wil rise away from your face
- Scoop out the cooked potatoes & place in a large mixing bowl.
- Add milk & mayonnaise if desired along with seasonings & mash with a hand-held potato masher until blended & lumps are removed.
Can this be made with a different kind of potato?
Absolutely. Sometimes I like to mix in a handful of red potatoes, leaving the skins on for added flavor & texture. But you can replace the russet potatoes with Idaho potatoes or Yukon gold as well.

Pressure Cooker Mashed Potatoes
Ingredients
- 2 pounds russet potatoes
- 1 cup cold water
- ⅔ cup milk
- 1 tbsp mayonnaise *opt
- salt & pepper to taste approx 1-2 tsp of each
- butter for serving – if desired
Instructions
- Place the water in the bottom of the pressure cooker.
- Add the trivet or vegetable steamer to the bottom of the pot (if you don't have one, use the rack that was included with your cooker & then create a small bowl with foil to keep the potatoes from falling through.
- Peel & dice the potatoes & place them in the cooker on the rack & make sure the potatoes don't exceed the cut-off line.
- Close the lid & lock it on. Set the manual timer to 7 minutes & step back & let it do its thing.
- Once it's completed it's time, carefully use the quick release.
- Remove lid making sure the steam will rise away from your face and cabinets.
- Scoop out the cooked potatoes & place them in a large mixing bowl.
