Candy Cane Crinkles ~ Project 52 Week 49

Hi Everyone! Just to update you all – a week ago today my mom passed away after a 10 month long fight against squamous cell skin cancer that had metastasized through her body. She fought hard & I am beside myself with grief. We were incredibly close as I was her only child. I am trying to find comfort in the fact that she can be with me all the time now – it’s just not the same.

So as you can imagine – I am swamped with all sorts of things to take care of & plan. I will be having some of my dearest blogging friends here guest posting frequently to ease my schedule during this time. One of my closest & most beloved friends – Kim – from Little by Little will be hosting you all here for the duration of Project 52 to finish out the year. Please give her a nice warm welcome!!! Kim’s sharing these tasty treats she made 🙂

Candy Cane Crinkles

Now that December is in full swing it is time to start baking. I love finding easy cookie recipes that our family can make and enjoy without the stress of overly complicated recipes.

I saw these Candy Cane Crinkles on Pinterest. I decided to kick off baking season with these because everything I needed was already in my pantry. That is a huge score for spur of the moment Christmas baking!

The cookies were really good. We enjoyed them with Christmas music in the background and we could feel our jolly rising!

Even our elf, Kringle, thought they were keepers.

Candy Cane Crinkles would be a great cookie exchange take-along cookie.

Tips for Hosting a Cookie Exchange for Kids

I am currently back home in So Cal while we work through all of this & I will be personally blogging very minimally until the end of the year. I do however have some AMAZING blogging friends that will be guest posting here & giving me that enormous support & help. So today- please welcome Emily- from Nap-Time Creations. Tips for Hosting a Cookie Exchange for Kids

‘Tis the season…and I mean COOKIE SEASON! I love Christmas baking! SO many fun colors, flavors and variety. I’ve hosted a cookie exchange for some of my mom friends for a few years now and today I thought I would share some of the tips I’ve learned a long the way. First, lets just say this is not your everyone bring six dozen, have a fun evening drinking cider away from the kids get-together. I wanted to get my kids involved in the decorating {and even baking} of my Christmas cookies. So… Tips for hosting a cookie exchange with kids:

As you can see in the {old!} photo above, I’ve been making Christmas cookies withe my son since he was two. I like to eat a variety of cookies, but get overwhelmed by baking them all. We host and open house for my Husband’s school team so I need a lot of cookies. Years ago I decided to invite some friends to help me out with the variety factor. So I invited a few…

1. Invite some friends…the number doesn’t matter!

2. The host makes the sugar cookies for decorating and supplies the decorations {or have everyone bring their favorite sprinkle}

3. Make up some whole wheat no-sugar cookies for the little ones {We avoid giving sugar to the kids until they are two, so this recipe was my creation when they were young and I always bake a small batch now for friends with babies.}

4. We live in small Hong Kong apartments and most don’t have ovens. So… a glorified toaster oven is what we bake with {I’m blessed to live at a complex with pretty much full sized ovens}. When you can bake about six cookies at a time, its too much to make dozens and dozens.

So, whatever amount you bring, that’s the number you take home.

I still get the variety I want {although not an equal number}and no one is stressed.

5. We begin the gathering by letting the kids play and dividing up the cookies. Isn’t that a gorgeous table of cookies! {yum, can’t wait!} Then let the decorating begin! Everyone now knows which cookies they are taking home and can lets their own kids make a mess of them, I mean decorate them. {ha!} here are photos from the laste three years’ parties.

6. Hide a few cookies to decorate how you want later and let the kids go crazy on a few… they generally get tired after several and then the moms can finish up. It’s messy, and yes, I’m finding sprinkles until Easter, but its worth it!

This year I’m going to try royal icing in squeeze bottles to see if that helps with the mess. I really like the way it looks on cookies too. Homemade Christmas Gifts ~ Random Acts of Kindness

One thing I think about a lot during this time of year is the sacrifices others make for the community as a whole. I think about it because my brother is still in Japan with his family serving so that we can be safe here. We have been there & we understand the strain it puts on the family. So I came up with this little gesture to say thank you & headed to ConsumerCrafts.com to help put this project together.

1 – 16 oz jar Mod Podge Matte

18″ rustic twine (I had this on hand)

24″ brown paper (I had this on hand)

20 Peppermint Crunch Bites to fill

This is a simple project. Including the recipe ingredients – this should cost no more than $20.

Take your twine & cut into 3 even pieces.

Tie on your bells through the holes of the stars in equally spaced places around the pail.

Write your message on your tag & then give a nice even coat of Mod Podge over the top to seal.

Tie on to your pail with another bell.

Line your pail with your brown paper.

Fill with the Peppermint Crunch Bites & share some happiness.

I jut adore these tags.

Candy Cane Pretzels

I have been playing in the kitchen a little bit. In my opinion- almost anything can be improved upon if it’s dipped in chocolate. I mean, you say the words “chocolate dipped…” & you have my full attention. I especially love the holiday season because it gives me the creative push I need to make some really fun ideas- almost all of which involve chocolate in some way. So I decided to take some large pretzel sticks & give them a little gourmet feel by decorating them.

These were so much fun to make.

Quick little snack – my kids LOVE them.

Make sure to leave a little part of the pretzel without chocolate so you have a place to hold it.

Candy Cane Pretzels

Ingredients

1/2 bag White Chocolate Candy Melts
1/4 cup Red Chocolate Candy Melts
1/2 tsp Peppermint Extract
8-10 Large Pretzel Sticks

Instructions

Prepare a large baking sheet lined with parchment.
Lay out your pretzels on the prepared baking sheet.
In a small glass bowl add your white candy melts
Microwave on high 1-2 minutes- stirring every 30 seconds (do not over heat)
Once the chocolate is liquified - add in peppermint extract & stir well to incorporate.
Take your pretzel & hold it over your bowl & spoon the chocolate over the pretzel to coat
Place back on parchment lined baking sheet & continue with remaining pretzels
In another small bowl melt your red chocolate candy melts the same way you did the white.
Once liquified- transfer to piping bag with small round tip
Pipe lines over pretzels in a drizzle pattern. This does not have to be precise at all - get creative
Allow to cool & harden for about 1 hour before serving or packaging.

Turkey Quesadillas

Each week I am sent a weekly meal plan in PDF. For this I added what I needed to my notes for the store.

Instead of using chicken we decided to use the leftover turkey we had frozen for later from Thanksgiving.

This was super simple to make & oh so good. We like to sprinkle a little Parmesan cheese on top of our tortillas.

Turkey Quesadillas

Ingredients

1 lb cooked turkey or chicken - shredded
8 oz shredded cheddar cheese
12 large flour tortillas
1/4 stick butter
granulated garlic for season
Parmesan cheese for topping
sour cream guacamole, refried beans on the side.

Instructions

Melt your butter in your large skillet.
Place in one tortilla & add cheese & turkey to cover
Top with another tortilla
Cook until bottom tortilla starts to brown in spots - flip & do the same for the other side
Insides should be melted & hot
Transfer to cutting board - sprinkle liberally with granulated garlic & Parmesan cheese
Cut with pizza wheel & serve hot.

That’s it- super simple & a great way to use some leftovers too.

Painted Christmas Sign

I think it's fairly safe to say that I love painting signs for the season. If you get a large enough board it can really make a statement when you use it to decorate your porch. Before I headed down here to So Cal I had planned on decorating our porch for Christmas & got a little crafty with the paint. Unfortunately the hubs won't be decorating the house this year since we won't be with him – but I will be all set next year to decorate with abundance. One thing that I loved while working on this project that really made it turn out just RIGHT was being able to use FrogTape® Textured Surface. It's really amazing how things turn out when you use products & the right tools for the job.

I decided to put this FrogTape® Textured Surface to the test & use it on plywood.

I started with the FrogTape® Textured Surface, paint brushes, the board & my paint colors.

I ended up moving off this mat & painting over an old shower curtain because it was about 16 degrees outside – so painting indoors was my only option.

I started with a nice coat of this grey color over the whole board.

After the paint was dry I followed the instructions on the packaging.

I placed my FrogTape® Textured Surface tape in the shape I wanted to be sure didn't get painted. Then per the instructions I took a damp rag & rubbed the edges of the tape well. It's pre-coated with the sealer so the moist towel activates when rubbed.

We then took the bottle of sealer & placed a nice thick coat around the edges of the tape.

Then waited about 15-20 minutes to dry.

Once the sealer was dry I gave a good coat of off-white paint over the whole board – allowing some grey to show through.

Once the top coat of paint was dry I peeled the FrogTape® Textured Surface off. No problems there- NICE CLEAN EDGE! I then added my additional text & decorative touches. It was that easy & the perfect project for a cold, snowy day.

I loved using the FrogTape® Textured Surface because it seals any parts of the tape that would have a gap because of the texture of the surface you are working on. Normally I would have pulled off the tape & there would have been all sorts of bleed in to the edges of the image. I also thought that the sealer would have an effect on my paint- but that was not the case. The paint coated to the edge just as well as any other time. This is definitely my "go-to" product for painting now. I'm almost always working on a textured surface & this really helped make my project turn out so much better.

Easy Christmas Porch Decorations

Decorating the front porch for Christmas is a must for me usually this time of year. While I am down here caring for my mom I knew that she would want some Christmas cheer. For the one box I wrapped it with white paper & then used the Duck Brand® EZ Start® Printed Packaging Tape as an accent. For the smaller box I just wrapped the EZ Start Printed Packaging Tape around the entire thing. Then just used some large ribbon to tie them together for an added festive touch. See- I told you it was simple & it makes the porch SO CUTE!

Dark Chocolate Almond Biscotti

Have you recovered from yesterday? I certainly hope you had a blessed & beautiful Thanksgiving Day!

I thought I would stay low key here through the whole holiday weekend. I’m sticking with simple & easy recipes & projects to make your life easier. I knew I would need something to snack on over coffee while the hubs is home with me for these 4 days. I decided to try making some biscotti – but since I am really loving all this dark chocolate I picked up at a recent run to the market- I added some on in there & made a tasty treat.

Dark Chocolate Almond Biscotti

Perfect blend of chocolate & almond.

Dark Chocolate Almond Biscotti

Ingredients

1/4 cup vegetable oil
3/4 cup granulated sugar
2 tsp vanilla extract
1/2 tsp almond extract
2 eggs
1-3/4 cup - 2 cups all-purpose flour depending on firmness of the batter
1/4 tsp salt
1 tsp baking powder
1/2 cup slivered almonds
3/4 cup dark chocolate chips - divided

Instructions

Preheat oven to 300 degrees
Line baking sheet with parchment- set aside
In mixer - combine oil & sugar. Beat until combined.
Add in vanilla & almond extracts & eggs. Mix well.
Add in flour, salt & baking powder - mix. Start with the lesser amount of flour & add more if the batter doesn't seem firm enough to hold shape
Fold in 1/4 cup slivered almonds & 1/2 cup dark chocolate chips.
Divide dough in half & transfer to prepared baking sheet & form 2 logs.
Wet your hands- batter is sticky - use hands to form the logs to desired size.
Top with remaining almonds & chocolate chips.
Bake 30-35 minutes until very light brown. Remove.
Set aside to cool 10 minutes. Reduce heat on oven to 275 degrees.
After cooled 10 minutes- slice to desired sized pieces (about 3/4 inch)
Lay on sides & bake additional 9-11 minutes.
Allow to cool on baking sheet before transferring to airtight container.

Fall Decorated Peanut Clusters

Happy Thanksgiving!!!!

May you all have a very blessed & beautiful holiday today!

I just wanted to share with you my super simple treat that you can whip up in just a few minutes while you are waiting for your guest to arrive. Just make- pop them in the fridge to firm up & they will be ready to serve by the time you are all FULL from your feast!

Fall Decorated Peanut Clusters

The flavor of pumpkin spice in the drizzle is so yummy.

Fall Decorated Peanut Clusters

Ingredients

2 cups chocolate chips
2 tbsp shortening
1-1/2 cups Spanish peanuts
2 tsp coarse sea salt
3 tbsp autumn leaf sprinkles
1/4 cup pumpkin spice candy melts

Instructions

Mix chocolate chips & shortening in small glass bowl
Heat in microwave in 30 second increments - stirring in between until completely melted & combined.
Stir in peanuts - mix until completely coated
Spoon out onto parchment lined baking sheet
Sprinkle with either sea salt or your autumn leaf sprinkles. OR
Meld your candy melts in microwave for 1 minute in small bowl- stir (this should be enough to melt completely)
Transfer to piping bag & drizzle over your clusters to decorate.
Place in refrigerator for at least 1-2 hours to harden.
Store in air tight container at room temperature.

That’s it! Super simple & the best part is – no bake.

Your guests will be snacking on these all day!

Peppermint Shortbread Bars

So- I’m sure by now you have noticed that I am on a Peppermint kick right now. I can’t seem to help myself. It’s that time of year & it’s so YUMMY. I love trying it with all my usual holiday cookie recipes. This time I decided to mix in those little peppermint bits into my favorite holiday shortbread cookie recipe to create something a little extra special.

Peppermint Shortbread Bars

Buttery & rich with those little bits of peppermint to give your mouth a little pop.

Peppermint Shortbread Bars

Ingredients

1 cup 2 sticks butter - room temperature
3/4 cup confectioners sugar- sifted
1 tsp vanilla extract
2 cups all-purpose flour- spooned- not scooped
1/2 tsp coarse sea salt
1/2 cup Andes peppermint crunch bits

Instructions

Preheat oven to 325 degrees.
Spray 8x8 glass baking dish with cooking spray- set aside
In mixer bowl- combine butter, confectioners sugar, vanilla, flour & salt. Beat until well combined. Should look moist but not creamy
Fold in peppermint bits.
Transfer to your prepared baking dish. Press down with fingers to flatten & spread out into dish.
Bake until firm & pale golden color. 35-40 minutes
Let cool on wire rack about 30 minutes before cutting & transferring to airtight container or serving.

Chocolate Mint Muffins

I think it’s safe to say that I’m sort of obsessed with mint this time of year. Especially when it comes to combining it with chocolate. Mmmmmmmm – yeah. I can’t get enough. So just be warned. I picked up some of those delectable Andes mints pieces & decided they would be great in muffins. Not just any muffins would do though. I needed to make the kids something for breakfast but these actually turned out more like a treat. That’s okay- they weren’t complaining about these.

They actually turned out with more of a brownie type texture- works for me. Yum!

A little sprinkle of extra mint pieces on top when they are hot- OH MY!

Chocolate Mint Muffins

Ingredients

1-3/4 cup all-purpose flour spooned in, not scooped
1-1/4 cups brown sugar - packed
2/3 cup cocoa powder
1 tsp baking powder
1 tsp baking soda
pinch of salt
1 cup Andes mint pieces
3/4 cup milk
1 tbsp vinegar
2 large eggs
1/3 cup vegetable oil
1-1/2 tsp coffee extract
1 cup Andes mints for sprinkling on top

Instructions

Preheat oven to 350 degrees.
Line 16 muffin tins with parchment liners
Combine milk & vinegar in small cup & set aside
In large bowl - whisk together flour, brown sugar, cocoa powder, baking powder, baking soda & salt.
Add in mint chips & stir to incorporate
In separate bowl combine milk mixture & eggs- whisk
Add in oil & coffee extract - whisk to combine.
Pour into dry mixture & carefully fold in. Do not over mix.
Scoop by the spoonful into prepared baking tins until the papers are 3/4 full
Bake 23- 25 minutes or until toothpick test is clean.
Let cool in pan & then transfer to wire rack to finish cooling.

Pumpkin Butter Coffee Cake ~ Holiday Baking

One thing I absolutely love during the holidays is baking treats & food gifts for friends & neighbors. Because we were just moving in during the holidays last year it was our neighbors that brought us plates of goodness to welcome us to the neighborhood. But usually I like to prepare either a plate of a collection of goodies or I like to make something like a cake or loaf of breakfast bread to give to them to day before the holiday so that they have breakfast covered for the next morning. This way they don’t have to make anything for their guests while also trying to prepare for the feast or for the other festivities happening that day. This particular breakfast treat is my favorite to give the day before Thanksgiving.

Pumpkin Butter Coffee Cake

I give it a light wrap with parchment & some bakers twine.
Rustic & imperfect.

Then I send the kids out to do the deliveries.

Look at all that buttery goodness in there. The pumpkin butter is perfect for Thanksgiving morning.

Pumpkin Butter Coffee Cake

Ingredients

Cake

1-1/4 cups all-purpose flour
1/2 cup sugar
2-1/4 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 cup milk
4 tbsp Salted Land O' Lakes butter sticks
1 egg - beaten
1/4 cup Pumpkin Butter

Streusel

1/2 cup sugar
1/4 cup all-purpose flour
1 tsp cinnamon
4 tbsp Unsalted Land O' Lakes butter sticks

Instructions

Preheat oven to 400 degrees
Spray 8" round glass baking dish with cooking spray - set aside.
For cake - combine flour, sugar, baking powder, cinnamon & salt in mixer bowl.
Add in milk & egg - beat.
Add in Land O' Lakes butter - mix
Add in pumpkin butter - mix well.
Transfer to prepared dish
Make streusel -
In small bowl whisk together all streusel ingredients until you have a thick paste like consistency.
Drop on top of cake batter in small portions to cover most of the cake - do not mix
Bake 30-35 minutes or until toothpick test is mostly clean.
Cool on wire rack in pan completely before removing.

You can pick up Land O’ Lakes butter sticks at Walmart & create this dish for your friends & neighbors too.

Simple Pine Cone Ornaments

I have been wanting to create a dream Christmas tree for a long time. I have always been drawn to the creams, browns & golds that you see with rustic Christmas tree decorations. Every year I say I am going to change things & make a beautiful tree but I lose track of time to get it done & we end up putting up the same ol’ random collection of ornaments that we have been using for years. NOT THIS YEAR. I am being proactive & starting now. Best part is that I am utilizing things I already have on hand & either re-purposing or up-cycling them to work for me this year. It won’t cost me much of anything but some paint & a dip into things I already have on hand- so that’s a good thing. Because when it comes to the hubs & my bright ideas- the only thing he wants to know is “how much is this going to cost us?” For this- nearly free & I get my beautiful tree. So one of the first things I knew I wanted was pine cones. I set the children outside to gather what they could in the yard- we will continue to collect & add to our ornaments as they fall off the trees. But to start we made these little beauties to bring the rustic of outside in here.

Simple Pine Cone Ornaments

Super simple – just take your pine cone & intertwine your string around the base-

tie in a knot & then tie another knot at the ends to make your loop.

I added a little cream lace bow around the base too for more brightening once it’s on the tree.

It’s that simple & I can’t wait to get our tree so I can put them on.

Gingered Cider Hot Toddie

Does a warm Hot Toddie sound good right about now?? I know that when it gets chilly outside I like to have a warm beverage all day long. Most times it’s coffee, but sometimes I don’t want so much caffeine as it gets later in the day. So I switch to tea of some sort. I like to make a non alcoholic hot toddie to warm me up. I decided to see what sort of twist I could make on my usual tea & came up with something you will love to serve your guests this holiday season.

Making this with cider instead of water really gives it a wonderful rich flavor.

Gingered Cider Hot Toddie

Ingredients
Recipe is per mug
2 cups apple cider- warmed
1 bag of tea flavor of choice
1 tbsp honey
1/8 tsp ginger
1 slice of lemon
1 cinnamon stick
1 shot Brandy Whiskey, Rum of Bourbon **Optional

Instructions
Warm your cider in your mug
Steep your tea bag in cider for 3-5 minutes
Add in honey & ginger & stir with your cinnamon stick
Leave cinnamon stick in mug
Add shot of desired spirits (optional)
Top with lemon slice

I love that I can have this at any time of day without the shot of spirits. It’s also a great beverage to serve to guests during holiday entertaining.

Very festive & since the spirits are optional- everyone can enjoy it.

Dulce de Leche Pumpkin Muffins

I wasn’t going to do it. I really had not planned on making any recipes with pumpkin puree this season. But then I was sent some to try for another post & I couldn’t just let it sit there in the cabinet. So since I figured the kids were tired of having banana bread for breakfast everyday – I decided to take the pumpkin muffin recipe to the next level & make them something they will really enjoy in the mornings.

Dulce de Leche Pumpkin Muffins

As if the pumpkin muffins weren’t tasty enough- that Dulce de Leche makes it goodness overload.

Mmmmmmm………. look at that drizzle.

Dulce de Leche Pumpkin Muffins

Ingredients
Muffins
3 cups all-purpose flour
2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp pumpkin pie spice
1 tsp baking soda
1 tsp salt
2 cups pumpkin puree- not pie filling
1-1/2 cups granulated sugar
1 cup vegetable oil
4 eggs
2 tsp vanilla extract
1 tsp molasses
Streusel
6 tbsp flour
4 tbsp brown sugar
4 tbsp cold butter
Topping
3/4 cup Dulce de Leche

Instructions
Preheat oven to 350 degrees
Line muffin tins with papers or spray with cooking spray. (recipe makes 24 muffins)
In mixer bowl combine pumpkin, sugar, oil, eggs, vanilla & molasses. Beat & blend until smooth.
Add in flour, cinnamon, ginger, pumpkin pie spice, baking soda & salt. Beat slowly until just combined.
Spoon batter into prepared muffin tins.
Make streusel by placing all streusel ingredients in small bowl & cut together with pastry cutter or by crossing 2 knives to cut the butter into the dry ingredients. Should be lumpy.
Sprinkle over the top of each muffin.
Bake muffins for 20-23 minutes or until toothpick test is clean.
Cool on wire rack & then drizzle with warmed Dulce de Leche before serving.

Boy do we have some fabulous Family Favorite Thanksgiving Recipes to share with you today. Looking for Easy Family Dinner Ideas? With the theme being Family Favorites I had to share with you the recipe I look forward to most when I think of Thanksgiving. It’s the one that comes the day AFTER Thanksgiving but it’s my favorite none the less.

It’s all the things I love on my Thanksgiving dinner plate- all pulled together in to this FABULOUS sandwich.

You have to make it on a grilled french loaf- it’s the only thing that can handle the contents without falling apart.

It’s so good that I usually roast a turkey sometime late spring just because I want the sandwich & I can’t wait for November.

I’m telling you- your eyes will roll to the back of your head with this one!!! 🙂 You’re welcome!!

Pilgrim Butty ~ Thanksgiving Leftover Sandwich

Ingredients
1 french loaf - cut into sandwich size pieces
1/4 stick butter - melted
Cream Cheese
Leftover turkey
Jellied Cranberry Cider
Olives
Frenches Fried Onions
Simple Turkey Gravy

Instructions
Brush your french loaf with your melted butter, sprinkle with some granulated garlic & salt & grill in pan or place in broiler for 3-5 minutes.
Remove from heat & allow to cool slightly.
Spread on cream cheese.
Add turkey, jellied cranberry cider, olives & fried onions.
Drizzle a little turkey gravy over the top before placing your top piece of bread on.
ENJOY!!!

Summer Squash Chocolate Loaf

I’m sharing my recipe for Pumpkin CinnaChip Blondies over at The 36th Avenue today. I will be posting there monthly as a food contributor! I’m so excited to be working with Desiree. She is such a dear blogging friend. Head on over there & check it out.

A bit ago one of the guys at the station brought the hubs one giant summer squash & one giant zucchini from his garden. I was so thrilled when the hubs brought them home. They sat on the counter for a while just because I knew that prepping them would be a chore. I wasn’t really worried about them going bad because they were given to us so fresh. I knew that the ones you pick up at the store aren’t even close to being that fresh. So there they sat. Finally I was tired of looking at them & needed to make something for the kids for breakfast the next day. So while the hubs was traveling- the boy & I decided to get them off the counter & prep them for baking. Peeling- cutting & grating consumed a good hour of two or our day. I like to portion out what I need for recipes into individual packages for the freezer. I made sure to leave out some of the summer squash because I had a particular recipe in mind.

Summer Squash Chocolate Loaf

Summer Squash Chocolate Loaf

Ingredients
4 cups grated summer squash
3 eggs
1 cup canola oil
2 tsp vanilla extract
1-1/2 cups granulated sugar
3 cups all-purpose flour
1/2 cup cocoa powder not Dutch processed
2 tsp cinnamon
2 tsp baking soda
1 tsp salt
3/4 cup chocolate chips

Instructions
Preheat oven to 350 degrees.
Line 2 loaf pans with parchment & lightly spray cooking spray- set aside.
In large bowl- sift together sugar, flour, cocoa powder, cinnamon,baking soda & salt.
Whisk in eggs, oil & vanilla.
Mix in with large spatula. Mixture will be very dry & pasty until you add the squash
Fold in squash & then chocolate chips.
Transfer to your prepared pans & smooth out.
Bake for 55-60 minutes or when toothpick test comes out clean.

Slow Cooker Black Bread

A couple weeks ago I shared with you all my Honey Pumpkin Spice Black Bread. It was great but I really wanted to see if I could do it in the slow cooker because sometimes I want to make bread & my main dish at the same time & I don’t have a double oven. Sooooo- I decided to create this recipe & it turned out great.

Slow Cooker Black Bread

Oh they were the best dinner rolls with our BBQ chicken breast & a baked potato.

They were also great with the Concord Grape Spread I shared last week.

It’s such a simple recipe- I was so pleased with how well this turned out.

Slow Cooker Black Bread

Break out the slow cooker. This is an easy to make black bread, no oven needed.

Prep Time25 minutes
Cook Time1 hour 30 minutes
Total Time1 hour 55 minutes

Course: Appetizer, dinner, Side Dish
Cuisine: American
Keyword: bread, slow cooker

Servings: 12 servings

Ingredients
1 cup warm milk
1 tbsp granulated sugar
1 tbsp Rapid rise yeast - I like Red Star Platinum
2½ cups all-purpose flour
¼ cup butter - melted
2 tsp molasses
1 tsp salt
¾ cup honey
1 tbsp cocoa
1 pkt Starbucks House Blend instant coffee
Oats to sprinkle

Instructions
Line slow cooker with parchment & lightly spray with cooking spray.
Combine milk, sugar & yeast in the mixer bowl. Wait 5 minutes to proof & then mix.
Add ½ of the flour, butter, molasses & salt - combine using dough hook.
Let sit 2 minutes to rest.
Add remaining flour, honey, cocoa & coffee. Mix to combine.
Knead in mixer with dough hook 4-5 minutes (or 10 min by hand) until elastic.
Allow the dough to rest 5 minutes.
Pull off pieces & shape into rolls & place in slow cooker. -It's okay to double the layers if your cooker is smaller.
Sprinkle with a little bit of oatmeal.
Cover & cook on high 1½ hours or until it sounds hollow when tapped with your fingernail.
Remove lid & do not allow condensation to drip on bread.
Lay a paper towel over cooker top & recover. Wait 10 minutes before removing.

Pine Cone Wreath ~ Project 52 Week 44

Good Morning!!!

We had some fun this past week. We set out one day to enjoy some fall colors. Not only did we find some incredibly beautiful colors but we had the chance to gather leaves & pine cones & bring them home. If you have been with me for a while then you know that last year at this time I didn’t have any fall where we were & I had to have some of my dear blogging friends mail me boxes of leaves & fall colors. I certainly don’t have to do that now & I couldn’t be more thrilled about it. The hubs kept asking me what on earth I was going to do with it all once I brought it home. Well- make a wreath of course.

The sun was gorgeous & I was truly enjoying the intentional flares 🙂

I just grabbed my leaves & pine cones, some ribbon & my hot glue gun & got to gluing on an unused grapevine wreath I had.

The hardest part was integrating the leaves with out crunching them. I love the pops of color they add.

I just love that I was able to take things that are abundantly around me here in North Idaho & create this.

I needed a wreath to adorn my door for Thanksgiving.

I love how it takes all the things I love about fall & really makes my front door pop.

Give Thanks Painted Signs

Earlier in the week I shared with you a teaser for a Blessed Painted Sign that I created for Marti over at SEWlicious Home Decor. When I was working on that project I had the idea to create this one too. It really helped spruce up the other areas of the house & bring a more “fall like” feel throughout.

For this I just chose my pieces – these because of the shape. I put several base coats of paint & then dry brushed some other colors on top to give it a more worn & rustic look. Then I stenciled on the pattern. Then I created my letters in Photoshop – suppose this could also be done in Word. Once I got the font & size the way I wanted I printed & cut the paper to size. Then I placed it on the block & drew over it with a ball point pen to indent the wood. Removed the paper & painted in the lines. Once it was dry I added the twine to hold the two pieces together. The whole thing was done & dry with in a couple hours. Not too bad.

Concord Grape Spread

One day we stopped by to see Joe- our farmer friend down the road. We wandered the farm looking at the last of his bounty for the season. It was a glorious day that I enjoyed so much.

Before we left with our bushel of apples we bought from him, he handed me a few handfuls of fresh concord grapes he picked the day before. The smell was absolutely HEAVENLY & the taste was even better.

We could have very easily eaten them all while we drove around that day & that would have been it for those grapes. But I held everyone off & saved them until we got home. I wanted to make something with them that would allow us to enjoy those fresh concord grapes for many days.

He picked these off later that day.

OH! MY! GOSH! This tastes amazing.

I’m having a hard time not eating it right out of the jar.

Concord Grape Spread

Ingredients
2 cups washed grapes
3 cups water
1-1/2 cups granulated sugar

Instructions
Place all ingredients in medium-large stockpot
Place 2 spoons in the freezer to chill.
Bring pot to a boil & keep boiling about 40-45 minutes - keep stirring through this time.
You will see the grapes break down, the seeds floating around & the mixture thickening up.
Once you reach the 40 minute mark take one of your spoons from the freezer & dip it in your spread- return to the freezer for 3 minutes. Continue to boil mixture while you are waiting for the spoon.
Remove spoon & tip to see if it runs- if it doesn't- your spread is ready.
If it does run- continue to boil additional 5 minutes at a time & repeat the spoon test until it doesn't run.
Once it's ready - remove from heat. Place a mesh colander over a small bowl & pour your spread in carefully. Press through with your spatula to get as much of the spread into your bowl while straining those seeds & remaining skins out.
Once you have strained completely- toss the seeds & skins & transfer your spread to your jars.
Allow to cool overnight before using.
Store in refrigerator or in freezer for long term.

You will LOVE having this on your morning toast or muffin.

Heath Bar Popcorn Balls

Ingredients
2 cups granulated sugar
1-1/3 cups water
1/2 cup light corn syrup
1 tsp white vinegar
1/2 tsp salt
1 tsp vanilla extract
18 cups approx 1-1/2 bags popped Popcorn
1 cup chocolate chips
3/4 cup Heath Toffee Bits
or you can take all those Heath Bar fun size bars & chop those up

Instructions
Prepare popcorn & set aside in an extra large bowl
In medium saucepan, combine sugar, water, corn syrup, vinegar & salt. Cook over high heat until it reaches 255 degrees (hard-ball stage)
Be patient- this can take a while - watch it closely & stir often.
Once it reaches 255 degrees, remove from heat & carefully stir in vanilla extract.
Carefully pour over popcorn & toss in your chocolate chips & Heath Toffee Bits
Stir, Stir, Stir until well incorporated - this will become more difficult as it starts to cool.
Once mixture is just cool enough that you can handle holding it for a short period of time- get your hands in there & start forming balls like you would with snow balls. It's going to get messy- it's okay. Work quickly- if it cools too much - it won't stick together to form the balls.
Place on cookie sheet lined with parchment to finish cooling.
Once cooled & hardened they are ready to serve.

Looking for last-minute ideas for Halloween Treats? We have been working on some simple & quick little Halloween snacks that can be thrown together easily & that kids will love.

I’m sort of obsessed with these Halloween double stuffed Oreos.

I tried eating a regular stuffed Oreo & I definitely missed all that extra filling. I think they should call the regular ones “diet” and double stuffed should be the normal amount of creamy filling going forward.

The kids & I had the idea that it would be fun to get all the kids in the kitchen to whip up something tasty. We like to create some sort of goodie for them to enjoy while they pass out candy on Halloween.

These chocolate-covered Oreo cookies were incredibly simple to make. The kids love helping & it creates lots of fun family time in the kitchen.

What is the best way to store leftover chocolate-covered Oreo cookies?

Once the chocolate has hardened, these are fine to store at room temperature. Just make sure to place them in an airtight container or zip-top bag.

Can this recipe be doubled?

You bet – I highly recommend doubling this recipe if you are serving these at a party or gathering. They are delicious and go quickly.

HOW DO YOU MAKE Halloween Chocolate-Covered Oreo Cookies?

Line a baking sheet with parchment & set aside.
Insert the Popsicle sticks into the Oreos carefully so you don’t separate them.
Place your candy melts in a microwave-safe bowl & heat at 50% for 1 minute at a time. Stirring in-between.
After the first minute add food color if using white candy melts. Stir. Continue heating.
Once the chocolate has melted, start dipping the cookies in the melted chocolate until adequately coated.
Immediately sprinkle with desired decorations & set on the prepared baking sheet to cool and set.
Once you have completed all the cookies you wish to make, place the baking sheet in the refrigerator for at least 2 hours to help set the chocolate.
Once the chocolate has set the cookies can then be stored at room temperature.

Can these cookies be made ahead of time?

Sure – as long as they are stored in an airtight container, these should be fine if you wanted to make them 1-2 days ahead of your celebration.

Can I use chocolate chips instead of candy melts?

You can, but sometimes they don’t temper as well and the chocolate will seize – especially when working with white chocolate chips. You may need to add 1/2 to 1 tbsp of shortening or coconut oil to help the chocolate chips melt.

1 pkg Halloween Double Stuffed Oreos 1.25 pound package
1/2 bag purple candy melts
27 Popsicle sticks
chocolate jimmies
black edible glitter flakes
green baking sugar sprinkles

Instructions
Line a baking sheet with parchment & set aside.

Good Morning All! Welcome to Project 52

We had some fun this past weekend creating a super fun craft/Halloween Party Game & I just had to share it with you all.

Halloween Mummy Bowling

As you know I have been planning all sorts of food lately for our little Halloween gathering but I had not really created anything for the kids “to do” while they visited & snacked. So I was super excited when I was challenged by Cottonelle to create a fun Halloween Party Game using Cottonelle Triple Roll. Once I was in the Cottonelle mindset – this idea of Mummy Bowling popped right up & I was super excited to get started.

I saved a bunch of plastic water bottles. Then I shopped at Target & picked up my Cottonelle Triple Roll.

Then I started just wrapping the tissue around the bottles to look like mummies. I taped the ends to hold it on & glued on some googly eyes.

I originally was going to add a little water in each bottle to weigh them down. But after playing with them while empty- we determined that it was plenty hard to knock them down due to the difficulty in aiming the roll of tissue we used as the ball. It was so much fun trying to get them to knock down- we were laughing like crazy.

It was great to create a fun game & have the kids help me through the whole process. Can’t wait to play again on Halloween.
