Cranberry BBQ Meatballs

Cranberry BBQ Meatballs are the easiest appetizer for any event or celebration. Make these on the stovetop in just 20 minutes, in the slow cooker with just 5 minutes of prep, or in the pressure cooker with just 5 minutes of cook time. So delicious – they’re everyone’s favorite.

My friends, I have to say, I am crazy for snacks and appetizers. I’m pretty sure I could live on appetizers 99% of the time.

So it is no surprise that for the holidays, we don’t actually put out a huge feast. Rather we prefer to provide an array of snacks like these Cranberry BBQ Meatballs for us all to graze on for the day.

I’m sure that might come as a surprise. Most of my friends were shocked to hear that I create recipes for a living, but I don’t create an elaborate feast when it comes to the holidays.

But honestly, my time with my family is cherished. I don’t get a lot of it. I would much rather spend time visiting than cooking and cleaning in the kitchen.

So when it comes to our time together, we make recipes like these Cranberry BBQ Meatballs. They are not only CRAZY delicious but also incredibly quick and easy to make.

I have provided 3 different ways you can make these meatballs. You can go “old school” and make them on the stovetop in about 20 minutes. You could also just toss them in the slow cooker and let it do the work for you.

But with the latest Instant Pot craze – I thought I would also include my recipe for how I make these in the pressure cooker. If you happen to have been gifted one for the holiday, you can test it out with this super simple recipe.

Here are some commonly asked questions

What is the best way to store leftover meatballs?

After serving, place leftover meatballs in a shallow airtight container. Be sure to label with the date before refrigerating. This recipe should keep for up to 3 days if not left out for too long.

As with most things, it is important to get food into the refrigerator within 1 hour after serving to prevent bacteria growth.

Why use a shallow container to store the leftovers?

Well, when the container is shallow, the contents chill faster than if you were to use a large, deep container. Ideally, you don’t want it to take too long for the leftovers to get to their chilled/stored temperature.

As I mentioned, if the food remains above about 35 degrees for more than 1 hour after cooking, the bacteria starts to grow.

Can this recipe be doubled?

Depending on the size of your cooking equipment you might be able to double this recipe. If you have a nice LARGE stockpot you could probably double the stovetop version.

I wasn’t able to fit more than this recipe in my pressure cooker or slow cooker. But if you happen to have more than 1 of each of those, you could do dueling batches. (maybe borrow one from a neighbor if needed)

Can I use fresh meatballs?

Yes, absolutely, that will work just fine. Just be sure to cook them thoroughly BEFORE starting this recipe. This recipe is intended for FULLY COOKED meatballs prior to adding any seasonings and sauce.

Instant Pot Cranberry Meatballs

HOW DO YOU MAKE Cranberry BBQ Meatballs?

Stovetop Method

  1. Place the frozen meatballs, beer, BBQ sauce, cranberry sauce, garlic, chili powder, and cornstarch in a large saucepan or shallow stockpot. (I used my cast iron dutch oven)
  2. Cook over medium-high heat. Let cook for 3-5 min.
  3. Once the sauce begins to boil, reduce the heat to a simmer.
  4. Let cook for 12-15 minutes or until the sauce has darkened & reduced (meatballs are already cooked- so they should just be hot)
  5. Serve warm.
  6. Transfer to an airtight container and refrigerate any leftovers.

Pressure Cooker Method

  1. Place the frozen meatballs, 6 ounces of beer, broth or water, BBQ sauce, cranberry sauce, garlic, and chili powder in the pot & stir.
  2. Cover & set on to seal, manual for 5 minutes.
  3. Quick-release, remove the lid.
  4. Combine the cornstarch with a splash of water. Whisk to combine and create a slurry.
  5. Pour the cornstarch slurry into the pot and stir. The mixture will thicken as it sits with the residual heat.
  6. Stir again before serving at your game-day or holiday party.
  7. Keep on the warm setting until you are done serving and then transfer to an airtight container and refrigerate any leftovers.

Slow Cooker Method

  1. Place the frozen meatballs in the bottom of the slow cooker.
  2. Whisk together the beer, BBQ sauce, cranberry sauce, garlic, chili powder, and cornstarch in a medium mixing bowl, and then pour the mixture over the top of the meatballs. Stir.
  3. Cover and cook on low for 4-5 hours or until the meatballs are hot, stirring every hour or so.
  4. Remove the lid during the last 30 minutes, but continue to let them cook. This will help to thicken the sauce.
  5. Keep on the warm setting until you are done serving and then transfer to an airtight container and refrigerate any leftovers.

Can I use any type of meatballs?

You can literally use whatever type of meatballs you prefer. We have tried them with beef, pork, turkey, sausage, and chicken.

Can I use regular-sized meatballs?

Yes, absolutely, that will work too. But the cooking time will be longer and you probably won’t be able to fit quite as many in the pot while cooking.

Is it necessary to use a specific type of pressure cooker?

No, not at all. I just happen to have an Instant Pot, but pressure cookers have become so popular over the last couple years that just about every big & small appliance company makes one. This will work with them all.

We actually have several slow cookers that we have acquired over the years from doing this job. I have a smaller one that is great for half recipes.

But the one I use the most is this standard, no-frills slow cooker that is perfect for this particular recipe.

Cranberry BBQ Meatballs

Ingredients

Stovetop & Slow Cooker

  • 2 lbs pre-cooked frozen mini meatballs
  • 12 oz beer
  • 18 oz BBQ Sauce
  • 14 oz jellied cranberry sauce
  • 1 tbsp granulated garlic
  • 3 tsp chili powder
  • 2 tbsp cornstarch

Pressure Cooker

  • 12 oz broth or water *replacing a portion of the beer

Instructions

Stovetop Method

  • Place the frozen meatballs, beer, BBQ sauce, cranberry sauce, garlic, chili powder, and cornstarch in a large saucepan or shallow stockpot. (I used my cast iron dutch oven)
  • Cook over medium-high heat. Let cook for 3-5 min.

Notes

*Note – the liquid for the pressure cooker method is increased because sauces that are too thick tend to cause a burn notice on the pressure cooker. To help to keep this from happening we are thinning the sauce during the cooking process and then thickening it up at the end. If you happen to still get the burn notice, increase the broth or water by 1/2 cup, make sure that the pot is deglazed and there isn’t any burnt food residue stuck on the bottom, and retry.
 
To make in the air fryer – use frozen meatballs and cook at 400 for 8-12 minutes. Combine the sauce ingredients in a small bowl, then toss the cooked meatballs in the sauce.

I can’t believe it is the holiday season. That means it is time to get those holiday plans in order and recipe lists finalized.

One thing I always try to do each year is to have one classic cocktail served at our gatherings. With as popular as coffee has become I thought it would be great to jump off of that and go with this White Russian Cocktail Recipe.

Honestly, Id’ be shocked if it wasn’t being that everyone seems to love adding peppermint flavor to coffee drinks these days.

But even though I shared that so long ago, I thought it would be great to have the classic version of the original recipe here too.

Can I use coffee instead of coffee liqueur?

Yes, absolutely, that will work just fine. I recommend using strong brewed coffee for the best flavor.

  • Fill a small rocks glass or coffee cup with ice.
  • Add the Irish cream, milk, vodka, and Kahlua.
  • Stir gently to combine.
  • Serve immediately.

Yes, absolutely, that will work just fine. I typically have Bailey’s on hand, but if you have a different brand, it won’t make that much of a difference.

What’s the difference between a White Russian and a black Russian drink?

So, the Black Russian cocktail is basically 2 ingredients, vodka and the coffee liqueur. A White Russian cocktail includes the addition of cream – in this case the milk and the Irish Cream.

Can I use any type of coffee liqueur?

You bet! While Kahlua is the most common brand that people know – you can use any variety you can find in your area.

I have a really old post for homemade Kahlua Coffee Liqueur that I shared a long time ago. The post needs to be updated, but the recipe is fantastic.

Can this be made non-alcoholic?

You can! That version of a non-alcoholic White Russian is often referred to as a brown cow or dirty cow. You can use coffee or espresso in place of the coffee liqueur, omit the vodka and use heavy cream or half and half in place of the Irish Cream.

White Russian Cocktail Recipe

White Russian Cocktail is made with vodka, coffee liqueur, & cream. Not just for the holidays, this classic is a favorite for any season.

Notes

For a seasonal twist, try using Bailey’s Pumpkin Spice or Peppermint Cream.

You can even substitute non-dairy milk such as oat or coconut.
To add a hint of cinnamon, try substituting the vodka for RumChata.
If you don’t have Kahlua, you can substitute strong brewed coffee or one shot of espresso.

Oh how I love chocolate cookies. Well, let’s be honest, I love most types of cookies. But these chocolate cookies are so soft, chewy and deliciously fudgy too.

But when I think about the holiday season, I instantly think of pairing those chocolate cookies with peppermint and that is how these Double Chocolate Cookies were born.

Really, you can’t go wrong with taking a cookie that is already pretty scrumptious and then dipping it in white chocolate.

But then you take it a step further and add crushed candy canes to the top and these are HOLIDAY HEAVEN!

We can’t get enough of them in this house. Not only that, but they make a great addition to a cookie platter when gifting to the neighbors or attending a potluck holiday party.

Here are some commonly asked questions

What is the best way to store leftover cookies?

Once the chocolate coating has set, you can stack these cookies in an airtight container and keep at room temperature for about 5-7 days.

I don’t recommend refrigerating them as the candy cane pieces tend to sweat and get sticky in the moist air.

How do I properly measure the flour?

The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.

However – if you fluff your flour with a spoon, then gently scoop the flour into the measuring cup, taking care to not pack the flour – that should work for this recipe.

Can I use a sugar substitute?

I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.

Can I use a gluten-free flour?

I’m not sure just yet. I have been meaning to give this a try but haven’t had a chance. If you do try this, I would recommend using a 1:1 flour like this one as I don’t believe it would require additional ingredients that are typically called for when trying to make baked recipes in a gluten-free version. Please come back & tell me how it turned out.

HOW DO YOU MAKE Double Chocolate Cookies?

  1. Stir flour, cocoa powder, baking powder, and salt in a bowl. Set aside
  2. Melt the chocolate chips in the microwave for 1 minute at 50% power level. Stir and heat for another 30 seconds. Remove from microwave and continue stirring until there are no more lumps. (heat once more for 30 seconds if necessary)
  3. In a medium-sized bowl, beat together butter, granulated sugar, and brown sugar.
  4. Beat in eggs one at a time. Then stir in vanilla extract
  5. Mix in the melted chocolate chips.
  6. Stir in the dry ingredient mixture, being careful not to over stir.
  7. Cover and refrigerate for at least 20 minutes.
  8. Preheat the oven to 350 degrees F.
  9. Line a baking sheet with parchment paper.
  10. Roll the dough into 1 ½ tbsp. balls using a cookie scoop and then place them on a cookie sheet. (leaving 2 inches between each)
  11. Bake for 8-10 minutes.
  12. Cool for 10 minutes on the cookie sheet, centers will be soft.
  13. Transfer the cookies to a wire rack and cool for additional 5-10 minutes.

Coating

  1. Crush the peppermint candies in a zip-top bag using a rolling pin. Set aside.
  2. Melt the white chocolate in a microwave-safe bowl for 1 minute at 50% power level. Stir and heat in 30-second intervals until there are very few small lumps. Remove and stir until completely melted, (be careful to not overcook or it will seize).
  3. Dip half of each cookie into the melted white chocolate and place it on a parchment-lined baking sheet.
  4. Sprinkle the crushed candy over the white chocolate immediately.
  5. Refrigerate the cookies for 5-10 minutes to allow chocolate to set.

To make Double Chocolate Cookies you will need…

  • all-purpose flour
  • Dutch-process cocoa powder
  • baking powder
  • salt
  • chocolate chips
  • butter
  • granulated sugar
  • brown sugar
  • eggs
  • vanilla extract
  • white chocolate
  • peppermint candies or crushed candy canes

Can I use regular cocoa powder?

So Dutch-processed cocoa powder is also referred to as alkalized cocoa. This powder starts with cocoa beans that have been washed in an alkaline solution of potassium carbonate, also used in the production of soap and glass.

By doing this, it neutralizes the acidity of the beans, making the beans neutral. This is important because when they are neutral, they do not react with baking soda. Instead, it is often paired with baking powder.

So – long story short – using regular cocoa powder will yield a completely different rise and texture to the cookies. So I highly recommend sticking with the Dutch-processed cocoa for these cookies.

Should I use salted or unsalted butter?

This is really a personal preference. If you are happy with just a little salt to cut the sweetness, then use salted butter.

I usually use whatever I have on hand & I really don’t pay too close attention to what butter I have. But I typically keep salted butter on hand & I love that little bit of extra salt with the sweet in this recipe.

These days with groceries being more difficult to find – I basically get whatever the store has available at the time and make it work.

Can these chocolate cookies be frozen?

Yes, but only before adding the white chocolate and candy cane sprinkles. You can freeze the uncoated cookies in an airtight container for up to 2 months.

Like refrigeration, freezing the cookies with the candy cane pieces will make those pieces wet and sticky. Since you need the white chocolate to be unset for the sprinkles to stick, you can’t coat the cookies and add the sprinkles after freezing.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown sugar will work in this recipe.

Can I use another sprinkle?

Yes, absolutely, that will work just fine. These are super cute with holiday jimmies or party sprinkles.

You can even use nuts or decorate these cookies for a different holiday or party theme.

What type of chocolate chips should I use?

I prefer working with semi-sweet chocolate chips for these cookies. However, you can use milk chocolate if that is what you have on hand. I have not tried it with dark chocolate and I am not sure how that would turn out because of how differently that type of chocolate melts.

Fudgy chocolate cookies dipped in white chocolate & sprinkled with crushed peppermint make these insanely DELICIOUS Double Chocolate Cookies that are just perfect for the holidays!

Ingredients

  • 2 cups all-purpose flour
  • ½ cup Dutch-process cocoa powder
  • 2 tsp. baking powder

  • 10 oz. chocolate chips (about 1¾ cups)
  • 10 tbsp. butter
  • ½ cup granulated sugar
  • 1 ½ cups brown sugar
  • 4 eggs

  • 1-2 tbsp peppermint candies or crushed candy canes

That is why I thought you’d love this recipe I created for an Apple Cranberry Spritzer. Not only is is simple but it is incredibly delicious too.

This drink is best when enjoyed immediately because of the carbonated component added. It also doesn’t keep too well if you are adding any alcohol to the pitcher.

Try to enjoy this recipe freshly made – cutting the ingredients in half or even to 1/4 if it is too much.

Can I use frozen juice concentrate?

Frozen juice concentrate will still need to be made into juice before you can use it for this recipe. But once you do that, it is fine to use.

That will depend on the size of your slow cooker. If you have a large cooker, you should be able to fit double the ingredients in there.

Or you can have 2 cookers going side-by-side if you are expecting a larger crowd.

What is the best way to store leftover hot apple cider?

Just keep it refrigerated for up to 4 days. I like to transfer any remaining cider to a large pitcher once it has cooled to room temperature and then pop it in the fridge.

  2. Add clementines, apples cloves or star anise, brown sugar, and cinnamon sticks. Cover and cook on low for 3-4 hours.
  3. Stir in bourbon or rum.
  4. Let stand 5-10 minutes to let flavors mix.
  5. Garnish with cinnamon sticks, cloves, apples, and/or clementines if desired and serve warm.

Can I use regular navel oranges?

Regular oranges should work just fine in place of the clementines.

My friends, I’m totally addicted to cupcakes. I’m pretty sure I have never passed up a cupcake, and these cupcakes stuffed with Nutella are no exception.

I mean, cupcakes are pretty amazing all by themselves. But then adding that extra little surprise of the inside being filled with creamy hazelnut spread just takes them over the top.

Now, if you have been here for a while then you know that my mom was a baker. She made THE MOST AMAZING cakes that never disappointed.

But she never ventured into stuffing cupcakes, which is kind of surprising. I can tell you, she would have flipped over these.

Honestly, what’s not to love. A soft and perfectly crumbly vanilla cupcake filled with creamy Nutella and then topped with the perfect amount of rich and creamy chocolate buttercream frosting.

Sounds pretty perfect to me. You can serve these for the holidays and holiday parties and potlucks. But I like making them for birthdays or even bunco night too.

Here are some commonly asked questions

Can this recipe be doubled?

This recipe works fine when doubled, especially if you use the cookie scoop to get the portions divided equally between all of the cupcakes.

Can I use a sugar substitute?

I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.

Can these cupcakes be frozen?

Yes, I do it often. Just make sure to wait until they have cooled to room temperature. Then package them up in a zip-top bag or another airtight container and freeze for up to 6 months.

You can also wrap each unfrosted cupcake individually with plastic wrap before freezing. Freeze in a single flat layer until frozen, then you can stack them as needed.

HOW DO YOU MAKE Nutella Filled Cupcakes?

Cupcakes

  1. Preheat your oven to 375F. Line 12 muffin tins with paper liners or spray them with nonstick cooking spray.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream together the melted butter and brown sugar until they are combined and have the consistency of caramel— about 3 minutes on medium-high speed.
  3. Next, add the vegetable oil, eggs, and vanilla extract. Mix on low speed until they are fully combined.
  4. Next, in a small bowl, combine the flour and baking powder.
  5. With the mixer on low, alternate by adding 1/3 of the dry ingredients. Next, add ½ of the milk. Now add another ⅓ of the dry ingredients. Then, add the remaining milk followed by the remaining flour. Mix just until no large lumps remain. Use a silicone spatula to scrape down the sides of the bowl and make sure no sugar is left at the bottom.
  6. Divide the batter evenly between the muffin pans; filling each one about ¾ of the way full. I use a ¼ cup cookie scoop to ensure all of the muffins are the same size.
  7. Bake the muffins in a preheated oven for 15-18 minutes, or until they are lightly browned and the toothpick test is clean.

Frosting

  1. Combine the butter and 1 cup of the confectioner’s sugar in the mixer bowl. Beat together with the whip attachment until fluffy. Then slowly beat in the remaining confectioner’s sugar.
  2. Once the sugar is mixed in, increase the speed and beat on high for about 5 minutes.
  3. Turn off the mixer and add the cocoa powder, vanilla, and salt.
  4. Turn the mixer on the lowest setting and drizzle in the milk as it mixes in the dry ingredients you just added.
  5. Once mostly combined, turn off the mixer and scrape down the sides of the bowl.
  6. Mix again at high speed for another 4-5 minutes or until light and fluffy.

Assembly

  1. Scoop out the tiny portion of the baked cupcakes either with the back of the nozzle or with a knife.
  2. Fill in half a teaspoon of Nutella in it.
  3. Pipe or spread the frosting on the top and add any desired sprinkles.

Should I use salted or unsalted butter?

This is really a personal preference. If you are happy with just a little salt to cut the sweetness, then use salted butter.

I usually use whatever I have on hand & I really don’t pay too close attention to what butter I have. But I typically keep salted butter on hand & I love that little bit of extra salt with the sweet in this recipe.

These days with groceries being more difficult to find – I basically get whatever the store has available at the time and make it work.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown sugar will work in this recipe.

Ingredients

For the Cupcakes

  • 6 tbsp butter melted
  • ½ cup brown sugar
  • ½ cup of vegetable oil

  • ⅛ teaspoon table salt
  • ¼ cup milk

Are you ready for the holidays? I am and I’m not. This is a super busy time of year, but I really love having all the kids home and getting in some quality family time.

Each year I like to come up with a new beverage to serve during the holidays. Because we all feel a bit nostalgic I thought it would be nice to make a classic cocktail like an Old Fashioned, but give it a seasonal twist with this Spiced Old Fashioned recipe.

I made my own cinnamon thyme syrup for this recipe. It is really simple and gives you enough to make enough cocktails for your small holiday gatherings.

  1. In a small saucepan, combine the water and brown sugar. Bring to a boil and cook until the sugar is fully dissolved.

Who loves eggnog? It is a favorite in our house. Everyone gets really excited when they start seeing the cartons of it available in the store.

But there is something special about making homemade eggnog that just adds to the excitement of the holiday. Check out this Classic Eggnog recipe.

There is just something about making your own eggnog from scratch. It definitely tastes so much better than what you can get from the carton.

Everyone gathers in the kitchen, fills up their glass and then moves to the family room to visit around the fire. That is certainly my favorite part of the holidays!

My son, the cinnamon lover, always adds a bit more cinnamon to his. Truth be told, we all love a little extra cinnamon but you can add nutmeg if that is more your preference.

Here are some commonly asked questions

What is the best way to store leftover eggnog?

Keep the eggnog refrigerated for up to 3 days. You may see some separation if it has been sitting in the fridge for several hours – especially if you added the optional brandy, bourbon or rum to it.

Just give it a stir before serving again.

I recommend only making and adding the fresh whipped cream if you plan on using all of it immediately. Fresh whipped cream will deflate and doesn’t keep well.

Can I use canned whipped cream?

Yes, canned whipped cream is fine. These days you can also find it in other flavors like pumpkin, which would make a delicious addition to this recipe.

HOW DO YOU MAKE Classic Homemade Eggnog?

  1. Mix the egg yolks and sugar with an electric mixer in a large bowl. Continue mixing until the mixture is thickened and pale.
  2. In a saucepan, combine milk, cinnamon, and vanilla extract. Heat the milk over medium heat until it begins to boil.
  3. Remove 1/3 cup of the hot milk and whisk into the egg yolks mixture to temper the egg yolks.
  4. Pour the tempered egg yolk mixture back into the saucepan while whisking continuously. Add ground nutmeg. Continue cooking on low heat for approximately 5-7 minutes until the mixture thickens a little. Do not boil.
  5. Let the milk mixture cool to room temperature.
  6. Pour the heavy cream into the bowl. Whip the heavy cream until soft peaks form.
  7. Add the whipped cream to the cooled milk mixture and whisk to combine.
  8. Boozy Eggnog – add the 3 ounces of Bourbon or Dark Rum to the mixture when you add the heavy cream.
  9. Place in the refrigerator and cool completely for at least 2 hours.
  10. Pour eggnog into glasses. Top with whipped cream, ground cinnamon/sugar mixture, and star anise.

This recipe makes about 4 servings, but that depends on the size of your serving glasses. You should be able to get 4, 6-ounce servings from this recipe.

Can I use non-fat milk?

I have not tried it using non-fat milk or 1% milk. I made this using 2%. Being that you want the eggnog to be really creamy, I recommend using 2% or whole milk. I would think that it would work with a lower fat content, but will just have a thinner and less creamy consistency.

Classic Homemade Eggnog

Classic Homemade Eggnog

Classic Homemade Eggnog is the perfect drink for all your holiday entertaining and when cozying up by the fire (with or without alcohol).

Ingredients

  • 2 cups of milk
  • 3 egg yolks
  • ⅓ cup granulated sugar
  • 1 cup heavy cream
  • ⅔ tsp ground cinnamon
  • ⅓ tsp ground nutmeg
  • 1 tsp vanilla extract
  • 3 ounces Brandy, Bourbon or Dark Rum *opt
  • Optional: whipped cream, star anise, ground cinnamon/sugar mixture for topping.

Instructions

  • Mix the egg yolks and sugar with an electric mixer in a large bowl. Continue mixing until the mixture is thickened and pale.
  • In a saucepan, combine milk, cinnamon, and vanilla extract. Heat the milk over medium heat until it begins to boil.
  • Remove 1/3 cup of the hot milk and whisk into the egg yolks mixture to temper the egg yolks.
  • Pour the tempered egg yolk mixture back into the saucepan while whisking continuously. Add ground nutmeg. Continue cooking on low heat for approximately 5-7 minutes until the mixture thickens a little. Do not boil.
  • Let the milk mixture cool to room temperature.
  • Pour the heavy cream into the bowl. Whip the heavy cream until soft peaks form.
  • Add the whipped cream to the cooled milk mixture and whisk to combine.
  • Boozy Eggnog – add the 3 ounces of Bourbon or Dark Rum to the mixture when you add the heavy cream.
  • Place in the refrigerator and cool completely for at least 2 hours.
  • Pour eggnog into glasses. Top with whipped cream, ground cinnamon/sugar mixture, and star anise.

Notes

*I highly recommend using a cinnamon/sugar mixture instead of just cinnamon to rim the glasses because cinnamon is hydrophobic & can cause choking if inhaled by itself. Water won’t wash it away, only a milk-based liquid like this eggnog will dissipate any cinnamon that may be ingested on the rim.

Do you love quick bread? We sure do! Quick bread is great because it isn’t like a traditional yeast loaf. It’s more like a loaf cake.

Of course, that makes it great for not only breakfast but is delicious as a dessert too. So moist with the perfect crumb that keeps you coming back for more.

I particularly love this one because it presents so beautifully. Just look at those gorgeous cranberries and that crusty sugar layer.

I whipped up a batch last year to add to our gifts for the neighbors. When I can make one recipe and gift it away 5-6 times – that is a win!

Wrap the bread in plastic wrap or cover the loaf pan with foil and keep at room temperature for up to 3 days. You can also refrigerate if you prefer.

Can I use frozen cranberries?

Yes, absolutely, that will work just fine. Just be sure to thaw them & pat them dry before using.

HOW DO YOU MAKE Cranberry Quick Bread?

  1. Liberally grease 5-6 mini loaf pans. Set aside.
  2. Preheat the oven to 350 degrees.
  3. Combine the flour, sugar, baking powder, and salt in a large bowl. Whisk to combine and set aside.
  4. Add the milk, eggs, and oil together in a large measuring cup, whisk to combine, and then pour it into the dry ingredient mixture.
  5. Fold the wet and dry ingredients until just moistened.
  6. Divide the batter between the prepared loaf pans, filling ¾ full.
  7. Add fresh cranberries to the top and then sprinkle with about ¼ cup of the sugar (divided between all of the loaves)
  8. Bake for approx 40 minutes or until the toothpick test comes out clean.
  9. One done, remove and sprinkle with remaining sugar and allow to cool to room temperature before removing from the pan.

Can this recipe be made in a regular loaf pan?

Yes, you can make this in 2 regular-size loaf pans. You can also cut this recipe in half and make just one regular-sized loaf. You will want to increase the baking time to 50-60 minutes or until the toothpick test is clean.

Can this be made into muffins?

Yes, this recipe is great for mini muffins. Fill a well-greased mini-muffin pan 2/3 full. Bake for about 12 minutes.

You can also portion it out into 2 regular muffin tins. Increase the baking time (instead of 12 minutes for mini muffins) to 24-30 minutes.

When working with traditional muffins, you can increase the heat to 400 degrees for 20-25 minutes or 375 degrees for 23-28 minutes.

I don’t recommend increasing the heat for mini muffins because they are so small and already bake quickly.

Can this 5-minute quick bread be frozen?

Yes, I do it often. If you plan on making ahead and saving – just wait for the loves to cool to room temperature. Then remove them from the loaf pans, wrap tightly in plastic wrap and then place them in zip-top bags. Freeze for up to 4 months.

Can I use a sugar substitute?

I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.

Can I use a gluten-free flour?

I’m not sure just yet. I have been meaning to give this a try but haven’t had a chance. If you do try this, I would recommend using a 1:1 flour like this one as I don’t believe it would require additional ingredients that are typically called for when trying to make baked recipes in a gluten-free version. Please come back & tell me how it turned out.

Ingredients

  • 4 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 tbsp baking powder
  • 1 tsp table salt
  • 2 cups of milk
  • 2 eggs
  • ⅔ cup of vegetable oil
  • 1½ cups of fresh cranberries
  • ½ cup granulated sugar for the tops

Instructions

Cranberry Orange Mimosa, a twist on the classic celebration drink that adds the holiday flavor of cranberry to the orange & champagne mix.

Are you ready for the holidays? I think it is going to be a different kind of year, but there is still a lot for us all to be thankful for and to celebrate.

But since we are going low key this year and I know a lot of people are too, I decided that a simple holiday cocktail was in order. This one is quick to make and a delicious twist on a classic.

The mimosa has been around for a good long time. It is a favorite for a lot of people and works well for large parties or small gatherings.

But I think you’ll love this cranberry twist so much that you may never have the original version again. It adds the perfect amount of tart with that sweet orange juice and sparkling wine.

Here are some commonly asked questions

What is the best way to store leftover mimosas?

Once the champagne, sparkling wine or sparkling cider has been added to the mixture, this drink doesn’t keep well and will need to be discarded, unfortunately.

I recommend only making what you will have at the time with the per-glass recipe unless you want to combine the cranberry and orange juices in the pitcher and refrigerate.

Then you could add the sparkling wine when serving.

I have not personally tried it, so I can’t say how that would turn out. But I would imagine that if you already drink sugar-free juice, then you like the flavor of that and it should be fine.

However- I have heard that there are sugar-free versions of champagne, sparkling wine or sparkling cider available. You’ll have to see what you can find available in your area.

Notes

There are many kinds of sparkling wine. I often opt for Italian Prosecco in a mimosa because it’s more affordable than traditional French Champagne— but still just as delicious.
I recommend using freshly squeezed orange juice, although bottled will work as well.
It is important to use pure cranberry juice, not cranberry juice cocktail. Pure cranberry juice has a more tart, berry flavor while the cranberry juice cocktail is very sweet and fruity.
Make sure to chill the sparkling wine, orange juice, and cranberry juice before making your cocktail. Mimosas should be served chilled, but not with ice.

Best Pumpkin Pie is my great-grandmother’s award-winning recipe. This creamy pumpkin pie decorated with piped whipped cream and sprinkled with chopped pecans will have your guests begging for the recipe.

My friends, it is time for some pumpkin pie. But not just any pumpkin pie. This right here is the recipe that was passed down through the generations.

This is my great-grandmother’s recipe that she made in bulk for years and now I am finally sharing it here with you today.

You see, her recipe was written in bulk. I’m talking 4 + pies at a time depending on which recipe card you look at. Plus it has all sorts of old terminology for what they called different sized cans of ingredients.

It is really interesting to see how recipe writing has changed over the years. But one thing that hasn’t changed – how good this recipe is.

I was able to rework it and cut the recipe down to 2 pies. Because of the types of ingredients, I wasn’t able to write this for just 1 pie.

I’m sorry about that. But – the good news is that you will have one that you can gift away to the neighbors, send home with guests or just keep it in the freezer for when the craving strikes again.

I love this recipe because some of my earliest memories are of me sitting in my great-grandmother’s old farmhouse kitchen and watching her make dozens of pies.

Her and my grandmother would make them for their lodge events and they were always heavily requested this time of year. She never said no – she just baked and baked and baked.

Should I use salted or unsalted butter?

This is really a personal preference. If you are happy with just a little salt to cut the sweetness, then use unsalted butter.

I usually use whatever I have on hand because when I’m busy preparing for the holidays, I really don’t care about what butter I have. But I typically keep salted butter on hand & I love that little bit of extra salt with the sweet in this recipe.

HOW DO YOU MAKE homemade pie crust?

  1. Combine flour, butter, sugar, and salt in a large bowl.
  2. Using a pastry cutter, start working the butter into the dry ingredients until it looks like crumbles. (You can also use 2 butter knives & cross them through the ingredients to combine OR use a food processor & pulse until the mixture has crumbled.)
  3. Once you have reached a crumbly texture add the water.
  4. Work it together with your hands pressing & lightly kneading it together until you have a moist ball of dough that holds together well.
  5. Place the dough on a well-floured surface. Divide the dough in half for 2 crusts.
  6. Flour your rolling pin & start working from the center pushing outward in all directions.
  7. Once you have stretched the dough large enough to fill your pie plate carefully transfer it to your plate.
  8. Repeat with second crust.
  9. Trim any excess dough that hangs over the edge of the pie plate.
  10. Flute your edges by crimping between your fingers and pinching the dough every ½ inch or so.

To make Homemade Pie Crust you will need…

  • all-purpose flour
  • cold butter – cut into cubes
  • granulated sugar
  • salt
  • ice water

What is the best way to store leftover pumpkin pie?

I like to transfer the pie to an airtight container or cover tightly with plastic wrap or foil and keep refrigerated for up to 3 days.

Keep in mind that unless you add the cream of tartar to the homemade whipped cream to keep it stabilized, the whipped cream won’t be so pretty when you remove the cover the next day.

I recommend just scraping that whipped cream off and adding some fresh whipped cream when serving.

HOW DO YOU MAKE Homemade Pumpkin Pie Filling?

  1. Preheat the oven to 425 degrees.
  2. Beat the egg yolks in a large bowl.
  3. Add in half of the sugar as well as the pumpkin, cinnamon, and ginger. Mix well.

HOW DO YOU MAKE Homemade Whipped Cream?

  1. Place the mixing bowl in the freezer for a minimum of 30 minutes to chill before making the whipped cream.
  2. Once the bowl is chilled, remove it and pour in the heavy cream, confectioner’s sugar, and vanilla.
  3. Whisk on high speed for about 1 minute or until stiff peaks form – taking care to not over mix.
  4. Gently transfer the whipped cream to a piping bag fitted with a large open star top and pipe it into the desired pattern.
  5. Sprinkle the top of the decorated pie with chopped pecans.
  6. Note – if you want to stabilize this whipped cream to keep it from deflating, add 1/4 tsp cream of tartar when combining the other ingredients.

Can I use canned whipped cream?

Yes, absolutely, that will work just fine. The squirt top variety in the can will give you a similar look but does not contain the stabilizer to keep it looking pretty for a long period of time.

Can this pumpkin pie be frozen?

Absolutely! Wrap this pumpkin pie tightly with plastic wrap before adding the whipped cream on top and freeze for up to 6 months.

Can I use whipped topping instead of homemade whipped cream?

You bet and it is super easy. Just thaw the tub and then transfer it to the piping bag to add your decoration.

You can also just add a nice large dollop on top of the pie and spread it in a whipped fashion instead of piping on the rose design.

Why do I need pumpkin puree instead of pie filling?

This is really important when making pumpkin recipes. Pay close attention to the recipe & see if it calls for one or the other.

This recipe calls for pumpkin puree, which is just pumpkin that is cooked & pureed. Pumpkin pie filling is the puree mixed with sweeteners & spices – which isn’t what is usually called for when it comes to most recipes that use pumpkin.

They are not usually interchangeable because it will change the flavor & possibly the consistency of the recipe you are making.

Best Pumpkin Pie

Best Pumpkin Pie is my great-grandmother’s award-winning recipe. This creamy pumpkin pie decorated with piped whipped cream and sprinkled with chopped pecans will have your guests begging for the recipe.

Ingredients

Crust

  • 2 ½ cups all-purpose flour
  • 1 cup cold butter 2 sticks – cut into cubes
  • 1 tsp granulated sugar
  • ½ tsp salt
  • ½ cup of ice water

Pie Filling

  • 3 eggs – yolks separated
  • 1 ½ cups granulated sugar
  • 15 ounces pumpkin puree not pie filling
  • 1 ½ tsp cinnamon – heaping
  • ¼ tsp ginger
  • 24 ounces evaporated milk
  • Chopped Nuts – topping
  • Whipped Cream – topping see recipe below

Homemade Whipped Cream

  • 1 cup cold heavy whipping cream
  • 2 tbsp confectioner’s sugar
  • ½ tsp vanilla

Instructions

Crust

  • Combine flour, butter, sugar, and salt in a large bowl.
  • Using a pastry cutter, start working the butter into the dry ingredients until it looks like crumbles. (You can also use 2 butter knives & cross them through the ingredients to combine OR use a food processor & pulse until the mixture has crumbled.)
  • Once you have reached a crumbly texture add the water.
  • Work it together with your hands pressing & lightly kneading it together until you have a moist ball of dough that holds together well.
  • Place the dough on a well-floured surface. Divide the dough in half for 2 crusts.
  • Flour your rolling pin & start working from the center pushing outward in all directions.
  • Once you have stretched the dough large enough to fill your pie plate carefully transfer it to your plate.
  • Repeat with second crust.
  • Trim any excess dough that hangs over the edge of the pie plate.
  • Flute your edges by crimping between your fingers and pinching the dough every ½ inch or so.

Pie Filling

  • Preheat the oven to 425 degrees.
  • Beat the egg yolks in a large bowl.
  • Add in half of the sugar as well as the pumpkin, cinnamon, and ginger. Mix well.

This Pork Loin Roast is easy to make and ready in about an hour, which makes it perfect for holiday meals and weeknight dinners alike.

When it comes to quick and easy dinners, we almost always choose pork. Not only is it fast on cooking times, but it is a great alternative to beef or poultry.

With this simple pork loin roast you can have a deliciously savory dinner on the table with just a few minutes of prep and really wow your crowd.

Now, when it comes to holiday meals, I tend to go the untraditional route. This is because I’m usually making all the holiday fixings months in advance so I can share them with you here.

So by the time the actual holiday comes, we have already had our turkey or ham and really want something different. That’s where this beautiful pork loin roast comes in.

I love it because the prep is so quick and then I can just get it in the oven and work on the sides or visit with the kids. Minimal work with a whole lot of gain.

Plus – the leftovers of this pork loin are positively scrumptious on a sandwich the next day.

What is the best way to store leftover pork roast?

Place any leftover roast in a shallow airtight container and keep refrigerated for up to 4 days.

Why use a shallow container to store the leftovers?

Well, when the container is shallow, the contents chill faster than if you were to use a large, deep container. Ideally, you don’t want it to take too long for the leftovers to get to their chilled/stored temperature.

As I mentioned, if the food remains above about 35 degrees for more than 1 hour after cooking, the bacteria starts to grow.

Can you cook pork loin roast in crock pot?

You bet! Just season this pork loin roast the same way. But instead of placing it in a preheated oven and baking it – you will place it in the slow cooker and cover.

Set it to low and let it cook for about 8 hours. You can add about a half cup of water in the bottom, but the juices it releases as it cooks should be enough moisture.

Process to make Pork Loin Roast

HOW DO YOU MAKE Pork Loin Roast?

  1. Remove the pork loin roast from the refrigerator and let sit at room temperature for about 15 minutes.
  2. Preheat the oven to 375 F degrees.
  3. Mix the garlic, salt, paprika, ground mustard, and pepper together in a small bowl and sprinkle it evenly over the pork and then massage it into the pork loin roast.
  4. Place the pork loin in a baking dish with the fat cap facing up.
  5. Cook the pork loin in the preheated oven until it reaches a temperature of 140 F degrees or about 60 minutes.
  6. Remove the pan from the oven and transfer the pork to a clean cutting board and allow it to rest for 15 minutes.
  7. Slice the pork loin crossways into ¾ to 1-inch slices and serve with a drizzle of the pan drippings over the top.

How many can this serve?

This 3-pound roast should feed 4-6 people depending on the thickness of the slices and of course, portion sizes.

Will pork loin roast shred?

I understand. I am a complete sucker for pulled pork. Unfortunately, pork loin roast is far too lean and won’t pull. If you want pulled pork, you will need to choose a pork shoulder or a pork butt. Check out my recipes here for slow cooker pork and pressure cooker pork versions.

Can this pork loin roast be frozen?

I personally prefer to use it up within 4 days after making it because it has better flavor and isn’t too dry. But you can place it in an airtight container or bag and freeze for up to 4 months.

Can this recipe be doubled?

You can, and we do it often. If you have a large braising pan you can place the roasts side-by-side in the pan when cooking. You can also place 2 regular casserole baking dishes side-by-side in the oven.

We like to make double because it gives us some leftovers that we can send home with our son so he has some meals for a bit. We also have plenty of people here that love to have those leftovers for a few days. Plus, it’s really nice to have a few nights off from cooking.

Can I use frozen pork roast?

You can’t cook the pork roast from frozen as you can when pressure cooking. For this method, you will need to use a fully thawed or fresh pork roast.

Yes, I do it often. Just make sure to wait until they have cooled to room-temperature. Then package them up in a zip-top bag or another airtight container and freeze for up to 6 months.

You can also wrap each unfrosted cupcake individually with plastic wrap before freezing. Freeze in a single flat layer until frozen, then you can stack them as needed.

Vanilla Bean Cupcakes

HOW DO YOU MAKE Cinnamon Vanilla Bean Cupcakes?

  1. Preheat your oven to 375F. Line 12 muffin tins with paper liners or spray them with nonstick cooking spray.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream together the melted butter and brown sugar until they are combined and have the consistency of caramel— about 3 minutes on medium-high speed.
  3. Next, add the vegetable oil, eggs, and vanilla bean paste. Mix on low speed until they are fully combined.
  4. Next, in a small bowl, combine the flour, baking, powder, and cinnamon.
  5. With the mixer on low, alternate by adding 1/3 of the dry ingredients. Next, add 1/2 of the milk. Now add another 1/3 of the dry ingredients. Then, add the remaining milk followed by the remaining flour. Mix just until no large lumps remain. Use a silicone spatula to scrape down the sides of the bowl and make sure no sugar is left at the bottom.
  6. Divide the batter evenly between the muffin pans; filling each one about 3/4 of the way full. I use a 1/4 cup cookie scoop to ensure all of the muffins are the same size.
  7. Bake the muffins in a preheated oven for 15-18 minutes, or until they are lightly browned and the toothpick test is clean.

HOW DO YOU MAKE cinnamon vanilla bean frosting?

  1. In the bowl of a stand mixer fitted with the paddle attachment, cream together the whipped cream cheese and butter on high until light and fluffy— about 2 minutes.
  2. Next, add the vanilla bean paste and cinnamon. Mix on low speed until fully incorporated.
  3. With the mixer on low, gradually add the confectioner’s sugar. Don’t add it all at once or you’ll end up with a mess! Once all of the confectioner’s sugar has been added, scrape down the sides of the bowl. Beat for another 5-10 seconds to make sure everything has combined.
  4. Increase the speed and whip the icing on high speed until it becomes smooth and aerated— about 2 minutes.
  5. Transfer the icing to a piping bag and set aside.

Assemble & Store

  1. Once the cupcakes have fully cooled, pipe the icing on each one. These cupcakes are best eaten the same day but they can be stored in an airtight container at room temperature for up to two days.

How to make Cinnamon Vanilla Bean Cupcakes

Should I use salted or unsalted butter?

This is really a personal preference. If you are happy with just a little salt to cut the sweetness, then use unsalted butter.

I use salted butter when cooking most of the time. If using unsalted, add 1/4 teaspoon of kosher salt.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But Light or dark brown sugar will work in this recipe.

Cinnamon Vanilla Bean Cupcakes

Ingredients

For the Cupcakes

  • 6 tbsp butter melted
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla bean paste or caviar from 1 vanilla bean
  • 2 cups all-purpose flour
  • 1⅓ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ cup milk

For the Icing

  • 4 ounces whipped cream cheese at room temperature
  • 4 tbsp butter softened
  • 1 tsp vanilla bean paste
  • 1 tsp ground cinnamon
  • 1½ cups confectioner’s sugar

Instructions

Make the Cupcakes

  • Preheat your oven to 375F. Line 12 muffin tins with paper liners or spray them with nonstick cooking spray.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together the melted butter and brown sugar until they are combined and have the consistency of caramel— about 3 minutes on medium-high speed.
  • Next, add the vegetable oil, eggs, and vanilla bean paste. Mix on low speed until they are fully combined.
  • Next, in a small bowl, combine the flour, baking powder, and cinnamon.
  • With the mixer on low, alternate by adding 1/3 of the dry ingredients. Next, add 1/2 of the milk. Now add another 1/3 of the dry ingredients. Then, add the remaining milk followed by the remaining flour. Mix just until no large lumps remain. Use a silicone spatula to scrape down the sides of the bowl and make sure no sugar is left at the bottom.
  • Divide the batter evenly between the muffin pans; filling each one about 3/4 of the way full. I use a 1/4 cup cookie scoop to ensure all of the muffins are the same size.
  • Bake the muffins in a preheated oven for 15-18 minutes, or until they are lightly browned and the toothpick test is clean.

Make the Icing

  • In the bowl of a stand mixer fitted with the paddle attachment, cream together the whipped cream cheese and butter on high until light and fluffy— about 2 minutes.
  • Next, add the vanilla bean paste and cinnamon. Mix on low speed until fully incorporated.
  • With the mixer on low, gradually add the confectioner's sugar. Don’t add it all at once or you’ll end up with a mess! Once all of the confectioner's sugar has been added, scrape down the sides of the bowl. Beat for another 5-10 seconds to make sure everything has combined.
  • Increase the speed and whip the icing on high speed until it becomes smooth and aerated— about 2 minutes.
  • Transfer the icing to a piping bag and set aside.

Assemble & Store

  • Once the cupcakes have fully cooled, pipe the icing on each one. These cupcakes are best eaten the same day but they can be stored in an airtight container at room temperature for up to two days.

Notes

*I use salted butter when cooking. If using unsalted, add 1/4 teaspoon of kosher salt.
*Light or dark brown sugar will work in this recipe.
*Using whipped cream cheese in the icing will make a lighter, fluffier icing. You can substitute standard cream cheese but you should beat it on high speed for 1-2 minutes before adding the butter.
*If you don’t have vanilla beans or paste, you can substitute vanilla extract.

I like fast – because I usually forget one thing or another. We put out so many snacks & then halfway through the day we realize we forgot to prepare one of the recipes.

We usually transfer to a shallow airtight container and keep refrigerated for up to 4 days.

Why use a shallow container to store the leftovers?

Well, when the container is shallow, the contents chill faster than if you were to use a large, deep container. Ideally, you don’t want it to take too long for the leftovers to get to their chilled/stored temperature.

As I mentioned, if the food remains above about 35 degrees for more than 1 hour after cooking, the bacteria starts to grow.

  1. Combine add the smokies and water to the bottom of the pot.
  2. Top with bbq sauce, mustard, bourbon, minced onions, minced garlic, Pappy’s, pepper, and hot sauce – in that order and do not stir.
  3. Cover and set manual pressure for 3 minutes.
  4. Once done, do a quick release. Uncover and stir.
  5. Combine the cornstarch and water in a small bowl and whisk until combined and you have a thin milky liquid – add more water as needed.
  6. Add the cornstarch slurry to the pot and stir well. It will thicken as it sits.
  7. Serve warm.

What type of mustard should I use?

You can use whatever type of mustard you prefer for this recipe. We use yellow but it is just as good with Dijon.

Yes, absolutely, that will work just fine. This recipe is great with either.

Can I use omit the bourbon?

Sure – you can leave out the bourbon if you prefer. Remember that when cooking with alcohol, only about 70% of the alcohol will cook out – so if that is a concern for you, you can always replace it with a non-alcoholic vanilla extract or apple cider vinegar.

  • 2 pkgs Beef Lil' Smokies 24 ounces each
  • 2 cups of water
  • 40 ounces BBQ sauce – we like Sweet Baby Rays
  • 2 ounces mustard
  • 1- ounce bourbon

  • 1 tbsp minced garlic
  • 1 tbsp Pappy’s seasoning
  • 1 tsp pepper
  • 4 dashes hot sauce – flavor of choice
  • 1 tsp cornstarch

Instructions

  • Combine add the smokies and water to the bottom of the pot.

Make these in the air fryer – Place the smokies in the air fryer in a single layer and sprinkle with desired seasonings. Brush with desired sauce and then sprinkle with brown sugar. Cook at 340 degrees for 12 minutes, flipping halfway through.
**for extra WOW – wrap with a partial strip of bacon before cooking.

If you have multiple silicone molds and plenty of freezer space, then yes, this can be doubled. When I made these, I did them back to back.

Keep in mind that the melting time will increase if you are doubling the amount of chocolate you are heating.

HOW DO YOU MAKE Hot Chocolate Bombs?

  1. Place the silicone mold on a flat, moveable surface like a tray or cutting board.
  2. Place the chocolate in a microwave-safe container like a glass measuring cup and microwave at 50% power in 30-second intervals, stirring in between each time. Mine took about 2 full minutes total.
  3. Add a heaping tablespoon of melted chocolate to each well of the silicone mold.
  4. Using a small rubber spatula, offset spatula, or back of a spoon, spread the chocolate up the sides of the mold until completely coated.
  5. Wait about 5 minutes for the chocolate to cool a bit and then divide the remaining chocolate between all of the wells and spread it around to give each of them a thicker coat. You want the chocolate to be thick, especially around the top edges.
  6. Place the mold, while on the tray in the freezer for the chocolate to set for at least 30 minutes.
  7. Once the chocolate has set, remove from the freezer. Give a little tug around the silicone mold to help release the chocolate. Then carefully use your fingers to push the chocolate cup out of the mold. Place the chocolate cups on a plate.
  8. Place the drink mix, marshmallows, and any other add-ins you are including in 3 of the chocolate cups.
  9. Working quickly (so your fingers don’t melt the chocolate), place one of the empty cups open-side down on a hot plate to melt the edges a bit. Then place it on the filled half of the sphere and press lightly.
  10. Melt the decorating chocolate the same way you melted the chocolate for the spheres and then transfer it to a piping bag or decorating squeeze bottle.
  11. Pipe a thin ribbon of chocolate around the seam of the spheres and then smooth it out with your finger.
  12. Then drizzle the melted chocolate over the tops of the bombs and sprinkle with decorations.
  13. Allow the chocolate to set before moving.
  14. Keep refrigerated or frozen until ready to use.

Why didn’t my chocolate melt correctly?

When your chocolate becomes chunky rather than creamy, it is said that the chocolate seized.  This is typically due to overheating or contact with water or steam. 

In the first case, the chocolate is just burning from excess heat, but in the second case, there is a negative reaction between the chocolate (which is waxy and has many oils that are hydrophobic, or “water-fearing”) and the water, causing the components of the chocolate to separate. 

Be sure to refer to the package directions when melting chocolate to prevent this from happening. But in most cases, I recommend heating at 50% power when using a microwave.

What is the difference between Dutch-process cocoa powder and regular cocoa powder?

So Dutch-processed cocoa powder is also referred to as alkalized cocoa. This powder starts with cocoa beans that have been washed in an alkaline solution of potassium carbonate, also used in the production of soap and glass.

By doing this, it neutralizes the acidity of the beans, making the beans neutral. This is important because when they are neutral, they do not react with baking soda. Instead, it is often paired with baking powder.

So – long story short – using regular cocoa powder vs Dutch-process cocoa powder will yield a completely different rise and texture to any recipe you are making.

So I highly recommend paying close attention to the type of cocoa powder called for in each recipe and sticking to it for that reason.

What is the best chocolate for hot chocolate bombs?

While you can use chocolate chips to make these, I have found that it often requires a bit of coconut oil or shortening to get the chocolate to melt to the right consistency.

I like to use candy melts because the chocolate is made with just the right formula so that it performs exactly as needed.

The candy melts come in a multitude of colors, varieties, and flavors so the sky is the limit on what you can do with them when it comes to making these hot chocolate bombs.

Ingredients

Standard Hot Chocolate Bomb

  • 1 cup milk or semi-sweet chocolate chips or 1¼ cup chocolate candy melts
  • 3 tbsp hot cocoa powder mix divided – 1 tbsp each
  • 3 tbsp mini dehydrated marshmallows divided – 1 tbsp each
  • ¼ cup white chocolate candy melts for decoration
  • Pinch shaved chocolate for decoration each bomb

Peppermint Hot Chocolate Bomb

  • 1 cup milk or semi-sweet chocolate chips or 1¼ cup chocolate candy melts
  • 3 tbsp hot cocoa powder mix divided – 1 tbsp each
  • 3 tbsp mini dehydrated marshmallows divided – 1 tbsp each
  • 2 tsp crushed peppermint candies each bomb
  • ¼ cup milk chocolate candy melts for decoration
  • ¼ cup white chocolate candy melts for decoration
  • Pinch crushed peppermint candies for decoration each bomb

Sugar Cookie Hot Chocolate Bomb

  • 1 cup white chocolate chips or 1¼ cup white chocolate candy melts
  • 3 tbsp white hot chocolate powder mix divided – 1 tbsp each
  • 3 tbsp mini dehydrated marshmallows divided – 1 tbsp each
  • 1 tsp rainbow sprinkles each bomb
  • ½ tsp powder vanilla extract each bomb
  • ½ tsp powder almond extract each bomb
  • ¼ cup white chocolate candy melts for decoration
  • Pinch rainbow sprinkles for decoration each bomb

Eggnog Hot Chocolate Bomb

  • 1¼ cup yellow chocolate candy melts or white chocolate candy melts + several drops of yellow food color
  • 3 tbsp eggnog powder mix divided – 1 tbsp each
  • 3 tbsp mini dehydrated marshmallows divided – 1 tbsp each
  • ⅛ tsp nutmeg each bomb
  • ¼ cup white chocolate candy melts for decoration
  • Pinch of nutmeg for decoration each bomb

White Chocolate Hot Cocoa Bombs & Valentine Hot Cocoa Bombs

  • 16 ounces white chocolate bark
  • 2 tbsp white chocolate hot cocoa powder per bomb
  • ¼ cup mini marshmallows per bomb
  • Sprinkles, for garnish

Red Velvet Hot Cocoa Bombs

  • 1¼ cup red chocolate candy melts or white chocolate candy melts + several drops of red food color
  • 2 tbsp hot chocolate powder per bomb
  • ¼ cup mini marshmallows per bomb
  • Valentine sprinkles for garnish

Pumpkin Spice Hot Chocolate Bombs

  • ½ cup confectioner's sugar
  • ¼ cup cocoa powder
  • ¼ cup chopped chocolate
  • ½ cup mini marshmallows
  • 1 tsp pumpkin pie spice

St. Patrick's Day Cocoa Bombs

  • 1¼ cup green chocolate candy melts or white chocolate candy melts + several drops of green food color
  • 2 tbsp white chocolate hot cocoa powder per bomb
  • ¼ cup Lucky Charm Marshmallows per bomb (see link in the post for where to buy)
  • ¼ cup white chocolate candy melts for decoration
  • rainbow sprinkles for decoration

Homemade Hot Chocolate Powder

  • ½ cup superfine or confectioner's sugar
  • ¼ cup unsweetened cocoa powder not Dutch-processed
  • 2 tbsp chopped white chocolate
  • 2 tbsp powdered milk (see notes)

Instructions

  • Place the silicone mold on a flat, moveable surface like a tray or cutting board.
  • Place the chocolate in a microwave-safe container like a glass measuring cup and microwave at 50% power in 30-second intervals, stirring in between each time. Mine took about 2 full minutes total.
  • Add a heaping tablespoon of melted chocolate to each well of the silicone mold.
  • Using a small rubber spatula, offset spatula, or back of a spoon, spread the chocolate up the sides of the mold until completely coated.
  • Wait about 5 minutes for the chocolate to cool a bit and then divide the remaining chocolate between all of the wells and spread it around to give each of them a thicker coat. You want the chocolate to be thick, especially around the top edges.
  • Place the mold, while on the tray in the freezer for the chocolate to set for at least 30 minutes.
  • Once the chocolate has set, remove from the freezer. Give a little tug around the silicone mold to help release the chocolate. Then carefully use your fingers to push the chocolate cup out of the mold. Place the chocolate cups on a plate.
  • Place the drink mix, marshmallows, and any other add-ins you are including in 3 of the chocolate cups.
  • Working quickly (so your fingers don’t melt the chocolate), place one of the empty cups open-side down on a hot plate to melt the edges a bit. Then place it on the filled half of the sphere and press lightly.
  • Melt the decorating chocolate the same way you melted the chocolate for the spheres and then transfer it to a piping bag or decorating squeeze bottle.
  • Pipe a thin ribbon of chocolate around the seam of the spheres and then smooth it out with your finger.
  • Then drizzle the melted chocolate over the tops of the bombs and sprinkle with decorations.
  • Allow the chocolate to set before moving.
  • Keep refrigerated or frozen until ready to use.

To make the hot chocolate

  • Place the bomb in an empty mug and top with 8 ounces of hot milk. Stir well before enjoying it.

To make homemade hot chocolate powder

  • Combine all of the ingredients (sugar, cocoa powder, white chocolate, and powdered milk) in a small bowl. Stir to combine.
  • Set aside until ready to use.

Notes

*The easiest way to heat the plate is to run it under hot water.
*If the chocolate isn’t melting well, add about 1 tsp of coconut oil and stir.
*You can add additional toppings like whipped cream, additional marshmallows, and sprinkles if desired.
**If you don’t have superfine or powdered sugar, you can place granulated sugar in a blender or food processor and pulse it until it becomes a fine, powdery consistency.
**Powdered milk is optional in this recipe but it helps add a nice creaminess to the hot chocolate– and it’s available in most grocery stores.
**I highly recommend using chocolate bark (also known as candy coating or almond bark) because it melts and rehardens easily and smoothly. If you don’t have chocolate bark, you can use tempered chocolate. Melted chocolate that has not been tempered is not recommended in this recipe.
**I wear gloves when making the hot chocolate bombs so I don’t leave any fingerprints on the outside.
