Growing up my step-dad would always pick up a huge jar of this salad when he would do a Costco run. He had to have it all the time.

I can’t blame him – it goes great with so many things. I don’t think I can remember a holiday or gathering when this salad wasn’t being served.

But the best part is that now we make our own because Costco isn’t as close as it once was. This tastes so much better than the stuff in the jar anyway – I know you’ll love it as much as we do.

Use it within 3-5 days – if it lasts that long. Ours is always gone by the next day.

Yes, you certainly may! This salad should keep for up to three months if kept in an airtight container.

What is 3 bean salad?

It’s made of different cooked beans – most often green, wax, kidney, and/or lima beans – tossed in a sweet-sour vinaigrette.

Fresh raw onions, bell pepper, and/or other cooked or raw veggies, such as chickpeas, are examples of variant ingredients.

We often change it up a bit because we have some allergies to lima beans in the family. No one is complaining about that – I don’t know too many people that like lima beans anyway. But the possibilities are endless with how you can change this to make it perfectly to your liking.

Although the three-bean salad may appear to be simple, it is quite exquisite. The added bonus is that the high fiber content is beneficial to your heart.

  • dark red kidney beans – drained and rinsed

  • white northern beans – drained and rinsed
  • fresh cilantro – chopped
  • red onion – diced
  • lime juice
  • honey

Where did three bean salad come from?

The super-simple salad is often based on canned beans, which early 1950s homes almost always had in their pantry. Fresh beans may be used as long as they are blanched first. The kidney, waxed, and green beans are combined with finely chopped onion and bell pepper in this recipe.

How to Make Three Bean Salad

  1. Combine the kidney beans, garbanzo beans, white northern beans, cilantro, onion, lime juice, honey, olive oil, salt, and cumin in a medium to large bowl and mix well.
  2. Cover and refrigerate for approximately 25-30 minutes, even better if you can let it sit overnight.
  3. Mix well and serve with chips for a fun dip or as a side dish.

NOTE: Garbanzo beans can be substituted with pinto beans or black beans if desired.

Who loves a good cupcake? I’m all about the cake – all the time. It’s probably because I was raised by a professional cake decorator – so cake is in my blood, literally.

So I’m always digging through mom’s old recipe boxes and books to find some inspiration. I came across a recipe she made for a traditional Boston Cream Pie cake. I thought it would sure make for some awesome cupcakes, just in time for St. Patrick’s Day!

Boston Cream Pie Cupcakes

Honestly – the light and fluffy vanilla cupcakes are so delectable with that creamy filling. Then adding the whipped chocolate buttercream and the rich chocolate ganache – these make my eyes roll to the back of my head with every bite.

What is the best way to store leftover Boston Cream Pie cupcakes?

As with all cupcakes, the most important thing is to keep them in an airtight container. Because of the butter in the frosting and the cream filling and ganache, keep them refrigerated when not serving. Bring to room temperature before serving so the frosting is creamy.

They will keep in the fridge for up to 4 days or freeze for up to 3 months.

Can these cupcakes be made with a box mix?

Sure! If you are tight on time and want to just whip up the cupcake portion of the recipe using a box mix – that will work fine too. You can pick and choose the flavors you like and maybe add a little extra extract to personalize it a bit.

If you are going to do that – you can always use a chocolate cake mix instead – that would be really delish!

Can Boston cream pie cupcakes be frozen?

Yes, I do it often. Once baked – these cupcakes can be frozen at all stages of the creation process. I like to remove the freshly baked and cooled cupcakes from the pan, wrap them tightly in plastic wrap and freeze them for later use. (this is also handy when you want to work with cold cakes to keep the frosting from getting too soft.)

You can also gently wrap the completely decorated cupcakes and freeze them until you need them. Remember that the frosting won’t be completely firm and can still be dented if something gets pushed up against it while in the freezer.

Just make sure to thaw it in the fridge the night before as they do taste best when not frozen. I also like to leave them at room temperature for 1-2 hours before serving so the frosting is more creamy than stiff.

What is the difference between Dutch-process cocoa powder and regular cocoa powder?

So Dutch-processed cocoa powder is also referred to as alkalized cocoa. This powder starts with cocoa beans that have been washed in an alkaline solution of potassium carbonate, also used in the production of soap and glass.

By doing this, it neutralizes the acidity of the beans, making the beans neutral. This is important because when they are neutral, they do not react with baking soda. Instead, it is often paired with baking powder.

So – long story short – using regular cocoa powder vs Dutch-process cocoa powder will yield a completely different rise and texture to any recipe you are making.

So I highly recommend paying close attention to the type of cocoa powder called for in each recipe and sticking to it for that reason.

Cupcakes


● Flour is the base of our cupcake– make sure to measure using the spoon and level method so you don’t end up with dry cupcakes.
● Sugar helps sweeten the cupcakes.
● Baking powder helps the cupcakes rise.
● Milk keeps the cupcake light and soft.
● Vegetable oil helps keep the cupcakes moist so they don’t dry out.
● Eggs bind the cupcakes together so they don’t fall apart.
● Vanilla enhances the sweetness of these cupcakes.

Cream Filling


● Milk makes a rich and delicious pastry cream.
● Egg yolks thicken the cream filling while also adding additional richness.
● Sugar helps sweeten the cream.
● Cornstarch absorbs extra moisture and thickens the cream.
● Vanilla bean paste adds great vanilla flavor, as well as little specks of vanilla bean. Feel free to substitute 1 teaspoon vanilla extract or the caviar from 1 vanilla bean.
● Butter makes the cream silky and smooth.

Chocolate Buttercream


● Butter adds great flavor to the frosting and keeps it from becoming too dry.
● Vanilla enhances the flavor of the cocoa.
● Confectioner’s sugar adds sweetness and structure to the buttercream.
● Cocoa powder adds great chocolate flavor to the buttercream. Make sure to use unsweetened baking cocoa.

Chocolate Ganache


● I used semi-sweet chocolate but feel free to use any kind you like– just make sure it’s good quality!
● Heavy cream helps the chocolate melt into a smooth ganache. You must use heavy cream, not milk.
● Coconut oil helps the chocolate melt and makes a smooth and shiny ganache

How to Make Boston Cream Pie Cupcakes

Cupcakes

  1. Preheat the oven to 350F and line a 12count muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, and baking powder.
  3. In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla.
  4. Add the wet ingredients to the dry and mix just until no lumps of flour remain.
  5. Divide the batter between the muffin tins, filling each one ¾ of the way full with the batter.
  6. Bake for 14-16 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the cupcakes from the pan and transfer them to a wire rack to cool completely.

Cream Filling

  1. Heat the milk in a small saucepan set over medium heat, just until it starts to steam.
  2. In a small heat-proof bowl, whisk together the egg yolks, sugar, and cornstarch for 1 minute, or until they become pale yellow.
  3. Next, slowly whisk in the milk, a little at a time. Make sure not to add it all at once or you may scramble the eggs.
  4. Once all of the milk has been incorporated, return the egg mixture to the saucepan and set it over medium heat again.
  5. Cook, stirring constantly, for 3-4 minutes or until the cream has thickened. It will be very thin and then thicken very quickly– don’t stop stirring or it may burn.
  6. Once the cream has thickened, remove it from the heat and add the vanilla bean paste and butter. Whisk to combine.
  7. Transfer the cream to an airtight container and cover the surface with plastic wrap (make sure the plastic is directly touching the cream so it doesn’t form a skin).
  8. Transfer the cream to the fridge and chill until it is no longer hot– about 1 hour.

Chocolate Buttercream

  1. Add the butter and vanilla to the bowl of a stand mixer fitted with the paddle attachment.
  2. Beat on medium speed until the butter is light and fluffy– about 1 minute.
  3. Next, sift together the confectioner’s sugar and cocoa powder to remove any lumps.
  4. With the mixer on low speed, slowly add the dry ingredients into the butter.
  5. Once all of the dry ingredients have been incorporated, turn the mixer to high speed and beat until the frosting becomes light and fluffy– about 1 minute.
  6. Transfer the frosting to a piping bag fitted with your choice of tip and set aside until ready to use.

Chocolate Ganache

  1. Add the heavy cream, chocolate chips, and coconut oil to a small microwave safe bowl.
  2. Microwave for 30 seconds and stir. If the chocolate is not fully melted, microwave it for an additional 30 seconds and stir.
  3. Whisk until the ganache is smooth. Set it aside to cool to room temperature before using. The ganache should be pourable but not warm (you don’t want it to melt the buttercream).

Assembly

  1. Scoop out the center of each cupcake and fill it with 2 teaspoons of pastry cream. Place the top of the cupcake back on to cover the creamy filling.
  2. Pipe the chocolate buttercream on top and finish the top with a small drizzle of chocolate ganache.
  3. Enjoy the cupcakes immediately or store them in an airtight container in the fridge for up to two days.
  4. Bring to room temperature before enjoying again.

Cupcakes

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ cup whole milk
  • ½ cup vegetable oil

Cream Filling

  • ½ cup whole milk
  • 2 large egg yolks
  • 3 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla bean paste
  • ½ tablespoon butter

Chocolate Buttercream

  • ½ cup butter softened
  • 1 teaspoon pure vanilla extract
  • 2 ¼ cups confectioner’s sugar
  • ¼ cup cocoa powder not Dutch processed

Chocolate Ganache

  • ½ cup chocolate chips
  • ⅓ cup heavy cream
  • 2 teaspoons coconut oil

Instructions

Cupcakes

This easy poached eggs recipe makes a great breakfast. All you need is eggs, a little vinegar, water, and a saucepan. So simple and tasty!

Who loves a deliciously runny yolk when enjoying eggs? It is my favorite part of having eggs with breakfast.

While there are plenty of different ways to make eggs and get that great yolk, one of my favorites is to poach the eggs. It is super simple to do and the yolk is perfect every single time.

Easy Poached Eggs

Poaching an egg isn’t a complicated process, although it does take a little practice.  The first thing you need to do is add water to a pot.

After you’ve added the water to the skillet, you’re going to need to add a bit of white distilled vinegar into the skillet with the water. You don’t need too much vinegar. About two to three tablespoons would be good enough.

While the water comes to a very gentle boil, it’s time to prepare the eggs. Depending on how old your eggs are, you may want to crack them, one at a time, into a fine strainer and let it set for a few minutes. This will remove any thin egg whites.

The next step is to add them to a small bowl and slip them into the water. You don’t want to mix them or anything like that because then you won’t end up with poached eggs.

Now check your water, you want to see a good amount of bubbles on the bottom of the pan, but you don’t want it to be boiling. Using a long-handled spoon, gently stir the water in a circular motion to create a tornado effect, then gently slip the egg into the center of the water that is moving.  

You only need to cook the poached eggs for two or three minutes, so be sure to stand by the stove to avoid overcooking the eggs. If you overcook them, they won’t turn out perfectly.

To remove the egg, use a slotted spatula to lift the egg from the water and place them on a plate, and serve them. You can eat them by themselves or with other foods, including sliced bread or toast. Some people like to add them to salads for extra flavor, too.

Poached eggs can be kept in water in an airtight container for up to two days in the fridge and then reheated. Because eggs are rather thick, they won’t absorb much liquid after two days; however, I’ve discovered that the yolks do become a bit moist over time.

  1. Fill a microwave-safe coffee cup, glass, or liquid measuring cup halfway with cold water.
  2. Crack 1 egg into the cup.
  3. Place a little microwave-safe saucer on top of the cup to cover the hole completely.
  4. Microwave on high for 30 seconds, then check to see if the egg white is done. Take Care: Even after a very short cooking period, steam can escape rapidly and effectively, so wait several seconds before removing the lid.
  5. Strain the egg after it has been boiled.

Easy Poached Eggs

This easy poached eggs recipe makes a great breakfast. All you need is eggs, a little vinegar, water, and a saucepan. So simple and tasty!

Chinese Orange Chicken is an easy copycat recipe when you are craving take-out but SO MUCH BETTER because it takes just 30 minutes to make.

I don’t know about you – but I can’t get enough Chinese food. We used to have several places near our house when we lived in the city – from the mom & pop places to the big chain Panda Express just 5 minutes away. It was all too accessible.

But now that we don’t have take-out nearby, we are making our own out of our list of favorites. One of those favorites is this Orange Chicken recipe. It is as close as I have been able to recreate to a copycat recipe and it is SO GOOD! Try my Instant Pot White Rice to pair with this too!

Chinese Orange Chicken

What I really love about this mandarin chicken is that it is so crispy and that glaze is phenomenal. Plus it only takes 30 minutes to make.

That means that I can literally get this on the dinner table faster than it would take me to call in an order, drive there and back to pick it up, and get it all served. You really can’t beat that. I know you’ll love it as much as we do.

What is orange chicken?

With different variations originating in China, orange chicken is a popular dish made with chicken breast meat that has been battered and fried and then coated in a sweet and sour orange sauce. Some versions of the recipe also call for added ingredients like pineapple or green bell peppers.

Where was orange chicken created?

As I mentioned above, the base of the recipe would be from China. But the big chain Panda Express claims to be the actual creator of “Orange Chicken” as a variant to General Tso’s chicken or sweet and sour chicken. There’s no way to know for sure – but it sure is a delicious option.

How to store leftover orange chicken?

This chicken stores well. Just place any leftovers in an airtight container and keep refrigerated for up to 3 days. To reheat, pop the corner of the lid, add a small splash of water, and microwave until hot.

The chicken won’t be quite as crispy as when it was fresh – but still quite delicious.

How to Make Homemade Orange Chicken

Sauce

  1. In a medium saucepan, combine the orange juice, soy sauce, brown sugar, rice wine vinegar, orange zest, sesame oil, garlic, ginger, crused red pepper flakes.
  2. Stir and cook over medium heat.
  3. In a small bowl or jar with a lid, whisk together the water and cornstarch to make a slurry.
  4. Slowly drizzle the slurry into the sauce, whisking constantly until the sauce begins to thicken.
  5. Cook for 4-5 minutes or until sauce is to the desired consistency.
  6. Remove from heat. Set aside.

Chicken

  1. Trim the chicken and cut it into large chunks.
  2. In a shallow bowl or dish, whisk the eggs.
  3. In another bowl or dish, whisk together flour, cornstarch, salt and pepper.
  4. Dip the chicken in the wisked eggs and then in the flour mixture, place on baking sheet until oil is hot.
  5. Heat the oil in large skillet to 350 degrees F.
  6. Line a large baking sheet with paper towels.
  7. Working in small batches, cook the chicken 2-3 minutes or until golden brown and cooked through.
  8. Remove the cooked chicken from the oil and place on the prepared baking sheet.
  9. Repeat with the rest of the chicken until it is all cooked.
  10. Toss the cooked chicken in the prepared sauce.
  11. Serve immediately with rice, green onions, and sesame seeds if desired.
  12. Store leftovers in the refrigerator for up to 3 days.

Can this be made ahead of time?

Yes – you can make this dinner ahead of time. But keep in mind that the coating on the chicken will not be as crispy once you reheat it.

Can the chicken be baked instead of fried?

You won’t get the same texture as you would with frying it. I don’t recommend trying to bake it with the flour/cornstarch coating.

If you would like to bake – you can either season the chicken, bake, and add the sauce without a crunchy coating OR you can coat the chicken in panko instead of the flour before baking. Bake at 450 degrees for about 20-25 minutes.

Is orange chicken spicy?

No, not really. There is a little bit of a bite with the addition of the crushed red pepper flakes in the sauce. But if you only like the sauce to be sweet you can leave out the crushed red pepper.

How to make orange chicken in air fryer

This is the easy part – instead of frying the chicken in oil – working in batches, place the pieces in a preheated 350-degree air fryer, spray with oil and cook for about 5 minutes. Can this be made without orange juice?

Well- it wouldn’t be orange chicken anymore, but if you want to change it up you can use pineapple juice instead. This will make it really similar to my pineapple chicken recipe – which is a real crowd-pleaser.

Can this recipe be cut in half?

Yes – if you are only cooking for 2, this recipe cuts in half easily. Also – if you need to double it, that works well too. Just be sure to give yourself plenty of time to cook all of the chicken – you don’t want to over-crowd it in the skillet.

  1. Preheat the oven to 350 degrees.
  2. Grease 2 – 9″ round cake pans or 1 standard bundt pan. Set aside.
  3. Combine the flour, sugar, mashed bananas, beaten eggs, crushed pineapple, oil, pecans, vanilla, baking soda, salt and cinnamon in the mixer bowl. Stir on low using the whisk attachment or whisk by hand until the ingredients are completely combined – but don’t over-mix.
  4. Transfer to the prepared pan or pans.
  5. Bake 30-35 minutes for the 9″ pans or approx 50 minutes for the bundt pan. Use either the toothpick test or the spring-back test to determine doneness as varying ovens, climate and elevation will affect the time.
  6. Remove and transfer to a wire rack to cool to room temperature before removing and decorating.

What is the best way to store leftover cream cheese frosting?

Just keep it refrigerated in an airtight container for up to 7 days. As long as you don’t let it sit out at room temperature for too long, this should keep well when chilled.

You can also freeze it for up to 3 months. Just make sure to thaw in the refrigerator for 24 hours prior to using it again.

Can hummingbird cake be frozen?

Yes, I do it often. Once baked – this cake can be frozen at all stages of the creation process. I like to remove the freshly baked and cooled cakes from the pan, wrap them tightly in plastic wrap and freeze them for later use. (this is also handy when you want to work with cold cakes to keep the frosting from getting too soft.)

I also like to freeze the cake once I have assembled the layers and added the crumb coat. This helps the final frosting decorating go much smoother. This way you don’t have your frosting melting off the side of the cake because the cake or the frosting is too warm. Often times I will get a cake to this stage days before the event I’m making for. Then just finish up the decorating the night before.

You can also gently wrap the completely decorated cake and freeze it until you need it. Remember that the frosting won’t be completely firm and can still be dented if something gets pushed up against it while in the freezer.

Just make sure to thaw it in the fridge the night before as it does taste best when not frozen. I also like to leave it at room temperature for 1-2 hours before serving so the frosting is more creamy than stiff.

What is bakers release?

Bakers release is a combination of oil, flour, and shortening that makes releasing cakes and other baked goods almost effortless.

To make Bakers Release – it is as simple as 1,1 & 1. 

  • equal parts of all-purpose flour, shortening, and cooking oil – I like to do 1 cup of each.

Mix the ingredients together – whisking well. Store in an airtight container in the pantry or refrigerator. When ready to use, dip a pastry brush into the mixture and spread it over the cake pan.

Hummingbird Cake

Moist, sweet, and completely irresistible, this Hummingbird Cake is a classic old-fashioned, southern dessert loaded with bananas, pineapple, and spices and topped with cream cheese frosting.

Ingredients

Cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 ripe bananas – mashed
  • 3 eggs – beaten
  • 8 ounces crushed pineapple – drained
  • ¾ cup vegetable oil
  • ¼ cup chopped pecans – optional
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp table salt
  • ½ tsp ground cinnamon

Frosting

  • 2 cups confectioner’s sugar
  • 8 oz cream cheese – room temperature
  • ½ cup butter – room temperature
  • 1 tsp vanilla extract
  • 1 ½ cups crushed pecans to coat the cake

Instructions

Cake

  • Preheat the oven to 350 degrees.
  • Grease 2 – 9" round cake pans or 1 standard bundt pan. Set aside. (I like to use homemade baker's release)
  • Combine the flour, sugar, mashed bananas, beaten eggs, crushed pineapple, oil, pecans, vanilla, baking soda, salt and cinnamon in the mixer bowl. Stir on low using the whisk attachment or whisk by hand until the ingredients are completely combined – but don’t over-mix.
  • Transfer to the prepared pan or pans.
  • Bake 30-35 minutes for the 9″ pans or approx 50 minutes for the bundt pan. Use either the toothpick test or the spring-back test to determine doneness as varying ovens, climate and elevation will affect the time.
  • Remove and transfer to a wire rack to cool to room temperature before removing and decorating.

Frosting

  • Blend cream cheese and butter on high speed until it begins to thicken.
  • Reduce the speed and add in the confectioner’s sugar and vanilla, blend well until no lumps remain.

Assemble the Cake

  • Once cakes have completely cooled, add frosting between the top and bottom layers and then frost the entire cake with remaining frosting.
  • Sprinkle the crushed pecans over entire cake, pressing some of the pecans gently alongside of the cake to until completely covered.

Mint Chocolate Cupcakes

While I could enjoy these tasty little treats any time of the year, I especially love to make them around St. Patrick’s Day. It is one of my favorite holidays and it gives me a reason to make our favorite flavor combo into a scrumptious little cupcake.

These are great for the kiddo’s class parties, potlucks, bunco night, and office parties too. Don’t forget the birthday parties for those that love mint and, of course, they make great gifts for the neighbors too.

Notes for the Chocolate Cupcakes

  • Flour is the main dry ingredient in the cupcakes. Make sure to measure using the scoop and level technique.
  • Granulated sugar adds sweetness to the cupcake.
  • Cocoa powder makes these cupcakes super chocolatey. Make sure to use unsweetened baking cocoa.
  • Baking powder helps the cupcakes rise.
  • Whole milk adds moisture and richness to the cupcakes.
  • Vegetable oil also adds richness but also helps keep the cupcakes soft.
  • Eggs bind the cupcakes together so they don’t fall apart.
  • Vanilla enhances the flavor of the chocolate and mint.

● Butter gives the buttercream structure. Make sure it’s fully softened so you don’t end up with lumps.

● Confectioner’s sugar adds sweetness, as well as structure to the buttercream. If your sugar has large lumps, make sure to sift it!
● Green food coloring is optional but helps the cupcakes appear “minty”.

How to Make Mint Chocolate Cupcakes

  1. Preheat the oven to 350F and line 12 muffin cups with paper liners. Set aside.
  2. In a large bowl, whisk together the flour, sugar, cocoa, and baking powder.
  3. In another bowl, whisk together the milk, vegetable oil, eggs, and mint extract until smooth.
  4. Add the wet ingredients to the dry and mix just until combined.
  5. Fold in the chopped Andes mints and mix them in gently– you don’t want to overmix the cake batter!
  6. Divide the cake batter evenly between the prepared cupcake liners. I use a ¼ cup cookie scoop to ensure they’re all the same size.
  7. Bake the cupcakes for 15-18 minutes, or a toothpick inserted into the center comes out clean.
  8. Remove the cupcakes from the pan and transfer them to a wire rack and allow them to cool to room temperature before frosting.

How to Make Mint Buttercream Frosting

  1. Add the butter and mint extract to the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed for 1 minute, or until the butter is light and fluffy.
  2. With the mixer on low, slowly add the confectioner’s sugar. Once all of the confectioner’s sugar has been incorporated, add the green food coloring, if using.
  3. Turn the mixer to medium-high speed and beat until the frosting is light and fluffy– about 2 minutes. Scrape down the sides of the bowl as needed so you don’t get any pockets of butter or sugar that aren’t blended in.
  4. Transfer the frosting to a piping bag fitted with your choice of tip.
  5. To assemble, swirl the frosting on top of the cupcakes and then add an andes mint on top for garnish.
  6. Enjoy immediately or store in an airtight container in the fridge for up to two days.

There’s a reason why soft-boiled eggs are a breakfast favorite. There’s something about the soft, creamy center that just makes them irresistible. And they’re so easy to make!

I know that our family LOVES that gooey yolk. It’s perfect when paired with so many things for breakfast. You’ll love how easy these are to make.

What is the difference between a hard boiled egg and a soft boiled egg?

While the two are similar – there are some distinct differences – the yolk and how they are served.

If you want to make soft-boiled eggs, you can follow the same process as you would when making hard-boiled eggs, but remove the eggs after only 4-6 minutes. (see my recipe here for Perfect Hard Boiled Eggs)

Be sure to follow the same steps of setting your eggs in water on the stove and then boiling them for several minutes. If you’re not sure whether an egg is ready to remove or not, you can take one out, crack it, peel it, and slice it to check the center.

Once you’ve checked the center, if it still looks soft like how you want it, you can remove the rest of the eggs from the pot full of water.

How to serve soft boiled eggs

Serving soft-boiled eggs while they are still warm is best so you can maintain that deliciously runny yolk, however, you still want to add them to an ice bath to stop the cooking and make them easier to handle.

After they are done, you can use a cutter or knife to crack the shell. We like serving the soft boiled eggs in an egg cup with a small spoon or dipping toast.

How Long do Soft Boiled Eggs Last?

Keep the soft-boiled eggs in the shell, as they will last for approximately two days in the refrigerator. To reheat refrigerated soft-boiled eggs, simply do the same process with half the time.

You can, and we do it often for the stovetop method. When we are feeding the whole family we will double, triple, or quadruple the recipe so that we have enough for everyone. It is simple to do, as long as you work quickly once it is time to move the eggs to the water bath.

Soft-boiled eggs are an egg that has been cooked in their shell until the whites have a custardy texture and the yolks are creamy, with a runny (uncooked) to jam-like (half-set) consistency.

How to Make Soft Boiled Eggs

  1. Fill a medium-sized pot with 2-3 inches of water and bring to a simmer.
  2. Carefully add the eggs to the simmering water with a slotted spoon.
  3. Allow to simmer for 4-6 minutes.
  4. While the eggs are simmering, get an ice bath ready.
  5. When eggs are done remove them from the pot and add them directly to the ice bath.
  6. Let the eggs sit int he ice bath for 2-3 minutes. Just until they can be comfortably handled.
  7. Crack the end of the egg and remove the shell. Use a small spoon to scoop out the egg.
  8. Season with kosher salt and fresh cracked black pepper, if desired.

Best ways to tell if eggs are fresh

We have a habit of stocking up on eggs and then forgetting about them because they are out in the garage fridge.

While eggs will keep (if refrigerated properly) for up to 6 weeks beyond the date on the package – I always like to do this nifty little test if I know they have been in there for a while. The date isn’t always accurate.

When eggs go bad – they create an air bubble inside the shell. So if you place an egg in a few inches of water – watch what it does.

  • If it stays at the bottom – it is good.
  • If it sort of hovers halfway between the bottom and the top of the water – it’s on the way to going bad and should be used immediately.
  • NOW – if the egg floats – that means the air bubble has formed and the egg is no longer safe to eat and should be tossed out.

How do I know when they’re done?

Unfortunately, there isn’t a way to know without cracking one open. However – if you follow the time guidelines here in this recipe you should end up with perfectly soft-boiled eggs. Over time you might find you have a preference and like to cook them a little less or a little bit longer for the desired doneness. But this recipe here should give you the perfect result.

Soft Boiled Eggs

Soft-boiled eggs are a staple in many households. They are a favorite because of the soft and supple whites and that delicious runny yolk. Great for breakfast or brunch.

Ingredients

  • 2-4 eggs
  • salt & pepper to taste

Instructions

  • Fill a medium-sized pot with 2-3 inches of water and bring to a simmer.
  • Carefully add the eggs to the simmering water with a slotted spoon.
  • Allow to simmer for 4-6 minutes.
  • While the eggs are simmering, get an ice bath ready.
  • When eggs are done remove them from the pot and add them directly to the ice bath.
  • Let the eggs sit int he ice bath for 2-3 minutes. Just until they can be comfortably handled.
  • Crack the end of the egg and remove the shell. Use a small spoon to scoop out the egg.
  • Season with kosher salt and fresh cracked black pepper, if desired.

The best way to keep these bars is to either cover the pan tightly and keep it refrigerated OR transfer the bars to an airtight container and keep it refrigerated. I don’t recommend keeping it at room temperature because of the cream cheese in the frosting.

Can this recipe be doubled?

Yes – but you will still need to bake in two separate baking pans that are 9×13 each. You can double the ingredients and then divide between the two pans and then bake them side-by-side.

  • vanilla or white cake mix
  • instant vanilla pudding  – just the powder, don’t make the pudding.
  • vegetable oil
  • water
  • eggs
  • green food coloring

Frosting

  • cream cheese – the brick, not the whipped variety – room temperature
  • butter – room temperature
  • pure vanilla extract
  • confectioner’s sugar

Decorate

  • rainbow sprinkles – jimmies

Can these be made with another flavor of cake mix?

Yes – I like to use white or vanilla because it makes it easy to tint the batter to whatever color I need for the holiday I am making them for. But you can just as easily make these with chocolate cake mix and chocolate pudding for that matter.

How to Make St Patricks Day Cake Mix Cookie Bars

Bars

  1. Preheat the oven to 350 degrees.
  2. Grease a 9×13 baking dish. Set aside.
  3. Combine the cake mix, pudding mix, oil, water and eggs in a large bowl. Mix well to combine.
  4. Spread the mixture out into the prepared dish.
  5. Bake 22-26 minutes or until set.
  6. Cool completely before adding the frosting and sprinkles.

Frosting

  1. In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese until whipped.
  2. Add in the butter and beat again until well blended.
  3. Slowly mix in the vanilla and 1 cup of the confectioner’s sugar until just incorporated.
  4. Continue adding the sugar, small portions at a time, and mixing until just incorporated.
  5. Once the sugar is just blended in, increase the speed of the mixer and whip on high for 1-2 minutes to really aerate the frosting and get everything blended well.
  6. You can then spread the frosting onto a cooled cake or cookies to decorate.

What can I make with rainbow sprinkles?

What are the best sprinkles for these cookie bars?

This is important – just because the package says “sprinkles” doesn’t necessarily mean that it is in fact sprinkles.

I see a lot of people using colored sanding sugar that is labeled as sprinkles.

This will not work as well because when that sugar gets wet – like when mixed into a moist dough or when placed in the refrigerator, it will sweat & the color will bleed out.

I really love this dinner recipe because not only is it easy, but it keeps me from running the oven – keeping my energy costs low. Plus – it’s crazy delicious too.

I think you’ll really love this recipe because you can prep it during lunchtime and then let the cooker do its thing. No need to tend to it all day.

Plus, this is easily adaptable making it simple to adjust for different cravings, or maybe you want to make it meat-free. That’s easy to do and everyone loves it. This is great for bringing to a potluck or other gathering.

I really love to make this when taking meals to families in need. Maybe they just had a new baby or another event in their lives and they don’t have a lot of time to cook. You can whip this up, pair it with some bread and they have an easy meal.

Yes – generally you will want to keep the ingredients separate in the refrigerator until you are ready to assemble. But having the shells already cooked and in the fridge does save some time.

What are stuffed shells?

Stuffed shells are a type of pasta dish that is made by stuffing cooked pasta shells with a variety of fillings, such as ground beef, sausage, vegetables, or cheese. The stuffed shells are then typically baked in the oven until they are heated through and the cheese is melted. However, you can also cook them in the crockpot for an easy and fuss-free dinner.

  • ricotta cheese
  • shredded mozzarella cheese – shredded & divided
  • frozen spinach – cooked and drained
  • egg
  • pasta sauce

How long can these be made ahead of time?

These shells can be made and kept on the warm setting for up to 2 hours before serving. I try not to let them go for longer than that because the pasta tends to fall apart when it is cooked too long.

How to Make Stuffed Shells

  1. In a large pot of salted boiling water, cook the pasta to al dente. Keep in mind that these need to be super undercooked, they will cook more in the slow cooker. They just need to be pliable enough to fill them, you don’t want them to fall apart. Drain and set aside.
  2. Meanwhile in a large bowl combine your ricotta cheese, spinach, 1 ½ cups mozzarella cheese and egg. Stir to combine well.
  3. Spread just a bit of the sauce into the bottom of the slow cooker.
  4. Spoon the ricotta mixture into the cooked shells.
  5. Place the stuffed shells into the slow cooker. You can stack them to fit them all.
  6. Add the browned, drained sausage all over the shells.
  7. Next spread the remaining sauce all over the top.
  8. Cook on low for 3-4 hours until bubbly.
  9. During the last 30 minutes of cooking, top with the remaining shredded cheese.
  10. Sprinkle with parmesan and parsley and serve!

Can these be frozen for later?

I personally don’t like to freeze pasta because of what it does to the texture. However – my friends say that if you transfer the cooked shells to a foil pan, cover with the remaining sauce, and then cover before freezing – you can freeze for up to 4 months. To bake from frozen, just place the frozen pan in a 350-degree oven and cook for about 1 hour with the foil on.

We actually have several slow cookers that we have acquired over the years from doing this job. I have a smaller one that is great for half recipes.

But the one I use the most is this standard, no-frills slow cooker that is perfect for this particular recipe.

Mint Chocolate Chip Ice Cream Cake is made for an epic celebration. Created with chocolate-covered ice cream bars, Oreos, and hot fudge!

Each year my kids try to stump me by asking for a new “over the top” birthday cake. This year my son asked me for an ice cream cake and since his favorite flavor is mint chip – I decided to go all out.

After scouring mom’s old cake books for inspiration, I ended up coming across a fun ice cream cake online made with ice cream sandwiches – it’s over on Tastemade. (see link below)

I put my own twist on their cake since I knew I wanted mint ice cream, a whole lot more chocolate, and then, of course – I wanted it to be much taller than their cake. I’m all about a BIG birthday cake.

The overall idea is the same but I absolutely LOVE how it turned out. It was BOLD and fit the occasion perfectly.

We had a whirlwind of a weekend with him driving the 9 hours home on Friday, spending Saturday dealing with a car issue during the day, driving 90 min back to CDA for an event that night, and then having a very quick birthday celebration before he headed back to Boise on Sunday. It was fast but fun.

Can this be made with another type of ice cream?

Yes – if you want to make this in a different flavor of ice cream, maybe use different Klondike bars or even a different type of ice cream sandwich altogether – that will work just fine. Just make sure the size is cut to fit in the pan.

Can the crust be made with another type of cookie?

The crust can be made with another type of cookie if you like. You may need to add a little melted butter or additional milk to help bind the crumbs together since the creamy filling in the Oreos does help to pull the crust together so it doesn’t fall apart.

Can I use homemade whipped cream?

Homemade whipped cream can be used, but you will need to stabilize it first. Regular whipped cream, whether it is homemade or from the squirty can will deflate and basically melt right off your cake.

Can this be made smaller?

Absolutely. If you don’t need a huge cake, you can try reducing the ingredients and making it in a smaller springform pan. You can also just leave the slices individually wrapped and frozen and enjoy the pieces over the next several months.

Ingredients for Mint Chocolate Chip Ice Cream Cake

Do I have to use a springform pan?

Not necessarily. Overall it does make it easier to remove the cake from the pan and to work with it. But if you don’t have one you can use a regular pan and then line it with parchment. This way you can use the paper that hangs over to pull the cake up and out of the pan for the rest of the decorating.

How to Make a Mint Chocolate Chip Ice Cream Cake

  1. Line a large baking sheet with parchment.
  2. Working quickly – unwrap all of the ice cream bars and slice them in half. Place them on the prepared baking sheet. (You should have 44 half bars). Place them back in the freezer until you are ready to use.
  3. Crush 20 of the Oreo cookies in a food processor until you have fine crumbs. (Use the whole cookie including the filling)
  4. Stir in the milk and mix until the crumbs are moist.
  5. Spread the mixture into the bottom of a springform pan and press into a smooth, even layer.

  2. Press some crushed Oreos onto the sides of the cake.
  3. Pipe additional swirls of whipped topping on top of the cake and garnish with Oreo cookies.
  4. At this point you can add any sprinkles or other toppings you want.
  5. Keep frozen until ready to serve.

Mint Chocolate Chip Ice Cream Cake

Mint Chocolate Chip Ice Cream Cake is made for an epic celebration. Created with chocolate-covered ice cream bars, Oreos, and hot fudge!

  • 9″ springform pan
  • Food Processor
  • Clear plastic cake collar
  • Offset spatula

Ingredients

  • 22 mint Klondike ice cream bars
  • 28-30 mint Oreo cookies – divided
  • 2 tbsp milk
  • 6 ounces hot fudge
  • 48 ounces mint chip ice cream
  • 24 ounces whipped topping
  • finely grated chocolate for dusting on top – optional

Instructions

  • Line a large baking sheet with parchment.
  • Working quickly – unwrap all of the ice cream bars and slice them in half. Place them on the prepared baking sheet. (You should have 44 half bars). Place them back in the freezer until you are ready to use.
  • Crush 20 of the Oreo cookies in a food processor until you have fine crumbs. (Use the whole cookie including the filling)
  • Stir in the milk and mix until the crumbs are moist.
  • Spread the mixture into the bottom of a springform pan and press into a smooth, even layer.
  • Heat the hot hudge for a few seconds so it is easier to pour and spread. Then spread it into an even layer on top of the Oreo crust.

Senate Bean Soup made in the Instant Pot gets dinner on the table fast. Loaded with ham, beans, & veggies – it’s “good for you” comfort food.

This hearty, comforting soup is a meal in a bowl. The dish has roots in the U.S. Senate’s tradition of serving soup during legislative sessions when it was often made with beans as a protein source and vegetables from the garden.

Not only is this a traditional American recipe, but it is a hearty, healthy soup that is perfect for cold winter days.

I first learned about this soup this past summer when my son was working in the Senate. He had the opportunity to dine in the Senate dining room with the Senator he was working for. He ordered this soup, fell in love with it, and then made sure to tell me all about it later that day.

I started looking for different versions of the recipe online and there are a lot of them. Since I was short on time, I decided to take the inspiration from what I was finding but then turn it into a “dump and go” type recipe for the pressure cooker.

I know I don’t have time to tend to a soup on the stovetop all day and you probably don’t either. This one is simplified and delicious.

Here are some commonly asked questions

Where did Senate Soup Originate?

While there are several stories about where the soup came from – since we are in Idaho, our favorite story involves Senator Fred Dubois of Idaho. It is said that he requested the soup to be served back in the early 20th century.

That recipe includes mashed potatoes and makes a massive 5-gallon batch. My son says that the version they serve in the Senate dining room today doesn’t include the mashed potatoes but is made with a braised onion.

This version is a little bit of this and that so I could get it to cook quickly and adapt easily for the pressure cooker. I didn’t want to have to soak the beans or add in any other steps that would make the soup complicated. I think Senaor Dubois would still love this version of the famous soup. It is a wonderful meal.

How to store leftovers?

This soup is easy to store. Just place the leftovers in an airtight container and keep it refrigerated for up to 5 days. You can also freeze this soup for up to 3 months.

Can this be made on the stovetop?

Yes, you can make this on the stovetop. Just follow the instructions using a stockpot, large kettle or large pot over medium heat on the stove. Work as written up to step 4. Then instead of covering and setting the pressure, you will just let it simmer on the stove for about an hour – stirring occasionally.

How to Thicken Senate Bean Soup

If you want this soup to be thicker you can do a couple of different things. First and probably the easier option is just to increase the mashed or instant potatoes you are adding to the mixture.

The second is adding a cornstarch slurry to the soup. You can do this by whisking together a 1/4 cup of cornstarch with 1 tablespoon of water and then stirring it into the soup.

  • vegetable stock
  • diced ham
  • granulated garlic
  • pepper
  • salt
  • white beans – drained and rinsed (any type of white beans)
  • Roasted Garlic Flavored Instant Mashed Potatoes

Toppings

  • parsley
  • bacon
  • chives
  • cheese

NOTES FOR THE BEST SOUP

  • You can use a ham bone in place of the diced ham if desired.
  • 1 cup leftover mashed potatoes or 1/3 cup instant potato flakes can be used in place of the flavored version called for.
  • Any variety of stock can be used.
  • You can use water instead of broth
  • Change up the chopped vegetables
  • Reheat over low heat
  • You can add or reduce the beans so you have enough beans to your liking.
  • Try with a smoked turkey leg in place of the ham
  • Use cannellini beans or white navy beans

Can this be made in the slow cooker?

Yes, actually you can make this U.S. Senate Bean Soup in the slow cooker. You will need to saute the veggies in a skillet. Then add them to the slow cooker along with the stock, ham, beans, and seasonings. Then just cover and cook on high for 2-3 hours or on low for 3-4 hours. When you have about a half-hour before you are ready to serve, add the potatoes and stir.

How to Make Senate Bean Soup in the Instant Pot

  1. Combine the chopped onion, celery and carrots with the olive oil in the Instant Pot insert.
  2. Heat on the saute setting, stirring frequently until the veggies start to soften.
  3. Press cancel.
  4. Add the stock, ham, granulated garlic, pepper and salt.
  5. Cover and set the valve to sealing.
  6. Cook on manual pressure for 8 minutes.
  7. Natural pressure release for 15 minutes.
  8. Once the pin has dropped, remove the lid and press cancel.
  9. Add in the beans and mashed potatoes packet. Stir.
  10. Turn on the saute setting again and bring to a simmer for about 5 minutes.
  11. Stir before serving.

What size Instant Pot do you use for this recipe?

I am currently using an 8-quart pot, but this recipe can be made in the 6-quart pot too. If you have one of the smaller versions (3-quart mini), I recommend cutting this recipe in half.

Forget about running to the coffee shop for breakfast when you can make warm & chewy, Air Fryer Bagels in the comfort of your own home!

Do you love homemade bagels? Growing up we had coffee drive-thrus and even a massive bagel shop nearby our place. It was quite common for us to swing through and pick up a morning bagel and mocha to enjoy while we sat in traffic each morning on the way to work.

These days we live so rurally that there isn’t anything like that around here. Even the local market only offers a few choices when it comes to bakery goods. So we have become accustomed to making our own.

Air Fryer Bagels

For years I have made bagels in the oven. Then I switched to a super-easy, no-yeast dough and I thought making bagels couldn’t get any simpler. But then the air fryer came on the scene and it was a game-changer.

Honestly – these come together so quickly – you’ll wonder why you ever buy the ones at the store. You can have these super soft and fresh bagels whenever the craving strikes.

How to Store Leftover Bagels

The key to keeping the bagels fresh is to give them just enough air so that they keep from getting too moist. Unlike the ones you get at the store that are loaded with preservatives, these will soak up the moisture from the refrigerator. So I like to keep them in a paper bag at room temperature to keep the texture just perfect.

How to Toast these Bagels

To toast these bagels, slice them in half horizontally. Then spray lightly with oil. Heat the air fryer to 360 degrees. Place the prepared bagel in the air fryer and cook for 2-3 minutes or until it reaches the desired level of toasted perfection.

How to prevent sticking in the air fryer

Sticking can often happen when using an air fryer. I understand that most would think to add non-stick spray to the basket to prevent this. I strongly encourage you to not do that.

Non-stick spray leaves a coating that won’t come off, even when washed. Over time – this will build up and cause smoking when you use our air fryer.

I also do not recommend putting down a sheet of foil. The idea behind air frying is to allow the air to circulate around the food.

This is why the basket or tray has holes in it. If you put foil down – this prevents the air from reaching all of the areas it needs to in order for it to cook properly.

Instead – I recommend spraying the basket with olive oil using this spray bottle. You can line the air fryer with perforated parchment paper.

Or you can use one of these really great silicone liners that still allow for airflow but are reusable and easily cleanable.

Air Frying Doneness Tip

Every air fryer is a bit different and they all cook at different rates – so in general, all cooking times are approximate based on the pan and temperature.

You can always cook the recipe longer if needed and reduce the heat a bit. If needed, you can tent the top if it is browning too much.

Why add honey to the boiling water?

The honey not only adds a light sweetness to the dough but it also helps to improve browning while the bagels cook. You can leave it out – but I highly recommend you give it a try.

What type of toppings do you recommend?

The sky is the limit when it comes to making all your favorite bagels. Here is a shortlist of the things you can add as toppings.

How to Make Bagels in the Air Fryer

  1. In a large bowl, whisk together the warm water, yeast, and brown sugar.
  2. Next add the flour and salt and stir the dough together using a dough whisk or wooden spoon. You can also do this in a stand mixer fitted with the dough hook if you prefer.
  3. Once a shaggy dough forms, transfer the dough to a lightly floured surface and knead it for 2-3 minutes, or until it becomes smooth and only slightly sticky to the touch.
  4. Transfer the dough to a lightly oiled bowl and set it aside to rise for one hour.
  5. After the dough has risen, divide it into 4 and shape the dough into a ball.
  6. Poke a hole through the center of each ball to create the traditional bagel shape.
  7. Bring a large pot of water (about 4 quarts) to a boil. Add the honey and stir to combine.
  8. Boil the bagels, one at a time, for 30 seconds per side. Then remove the bagels and place them on a sheet of parchment paper that has been lined with nonstick spray.
  9. Lightly spray your air fryer basket with oil.
  10. Add the bagels to the basket, making sure not to overcrowd them.
  11. Beat the egg with a small splash of water (about 1 tablespoon) to create an egg wash.
  12. Brush the egg wash over the top of each bagel and sprinkle with your choice of toppings.
  13. Cook at 375 F for 8-10 minutes, or until the bagels are golden brown.
  14. Serve warm.
  15. Store any leftover bagels in an airtight container at room temperature for up to two days.

Can these be made with 3-ingredient dough?

YES! If you don’t want to make this yeast dough – you can certainly speed up the process by using my super easy 3-ingredient bagel recipe and then cooking them in the air fryer instead of the oven.

What is in everything but the bagel seasoning?

Everything bagel seasoning contains sesame seeds, poppy seeds, salt, garlic powder, and onion powder. It has become quite popular originally as a bagel seasoning and then Trader Joe’s decided to sell it as a stand-alone product which went crazy.

People love it and it pairs quite nicely with cream cheese on a bagel. This is probably why it is so popular.

How to Make Your Own Everything Bagel Seasoning Mix

This is a really easy recipe to make and once you have it on hand – you can add it to more than just these bagels. To make your own seasoning – just mix the following ingredients together in a small bowl and then store in a small airtight container.

  • 2 tbsp poppy seeds
  • 1.5 tbsp dried minced garlic
  • 1.5 tbsp dried minced onions
  • 1 tbsp black sesame seeds
  • 1 tbsp white sesame seeds
  • 2 tsp coarse salt

Air Fryer Bagels

Forget about running to the coffee shop for breakfast when you can make warm & chewy, Air Fryer Bagels in the comfort of your own home!

Equipment

  • 1 Air Fryer
  • 1 Large Pot
  • 1 Mixing Bowl

Ingredients

  • ¾ cup warm water about 100-110F
  • 2 ¼ teaspoons 1 packet instant yeast
  • 1 tablespoon brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • ¼ cup honey
  • 1 large egg
  • Toppings of your choice flake sea salt, sesame seeds, everything bagel seasoning.

Instructions

  • In a large bowl, whisk together the warm water, yeast, and brown sugar.
  • Next add the flour and salt and stir the dough together using a dough whisk or wooden spoon. You can also do this in a stand mixer fitted with the dough hook if you prefer.
  • Once a shaggy dough forms, transfer the dough to a lightly floured surface and knead it for 2-3 minutes, or until it becomes smooth and only slightly sticky to the touch.
  • Transfer the dough to a lightly oiled bowl and set it aside to rise for one hour.
  • After the dough has risen, divide it into 4 and shape the dough into a ball.
  • Poke a hole through the center of each ball to create the traditional bagel shape.
  • Bring a large pot of water (about 4 quarts) to a boil. Add the honey and stir to combine.
  • Boil the bagels, one at a time, for 30 seconds per side. Then remove the bagels and place them on a sheet of parchment paper that has been lined with nonstick spray.
  • Lightly spray your air fryer basket with oil.
  • Add the bagels to the basket, making sure not to overcrowd them.
  • Beat the egg with a small splash of water (about 1 tablespoon) to create an egg wash.
  • Brush the egg wash over the top of each bagel and sprinkle with your choice of toppings.
  • Cook at 375 F for 8-10 minutes, or until the bagels are golden brown.
  • Serve warm.
  • Store any leftover bagels in an airtight container at room temperature for up to two days.

It’s no secret – we love an easy no-bake treat around here. Since we also really love mint and the season is giving us a reason to go all-in on the mint recipes – we decided to whip up this super simple mint lush that I know you’ll love as much as we do.

I don’t know about you – but in my world – chocolate and mint are made for each other. So this mint lush recipe was a no-brainer.

It seems fitting for early spring – this one is perfect for not only the St. Patrick’s Day celebrations but you can also easily serve this for Easter too.

Here are some commonly asked questions

Can this be made with whipped topping?

Yes – if you don’t want to make your own stabilized whipped cream for the top layer – you can definitely use thawed whipped topping instead.

Can I make the bottom layer out of brownie instead of Oreo?

You bet – that would be absolutely delicious. Keep in mind that the recipe will no longer be a no-bake recipe when you have to bake the brownie layer and brownies tend to get quite firm when they are cold.

However – you could use pre-prepared brownies from the bakery at the market and keep this no-bake easy.

Can this Lush be frozen?

Yes, you can freeze lush – just make sure your dish is freezer-safe and you have the top tightly sealed with plastic wrap and/or a lid. Freeze for up to 3 months.

Thaw in the refrigerator overnight. Keep in mind that the added moisture from freezing might cause some separation in the layers or they might not be as firm when serving.

Can this be made non-alcoholic?

Absolutely! That part is easy. You can eliminate creme de menthe and use 1-2 tsp of mint extract if you want a non-alcoholic dessert.

If using mint extract – you can add several drops of food coloring until you reach the desired shade of green – be sure to keep in mind that the color will intensify over time. You can also add in a splash of milk to thin the mixture if it is too thick to spread without the creme de menthe.

What is the best way to serve mint lush?

Be sure to keep refrigerated until ready to serve. You need those layers to be firm enough that they keep their shape when cutting and removing from the pan. Always serve chilled.

  • instant chocolate pudding + you will need 2 cups of milk

Cream Cheese Layer

How to Make Mint Lush

  1. In a medium mixing bowl, prepare the pudding according to directions on the box.
  2. Place in the refrigerator until ready to use.
  3. Place Oreos in the food processor and process until you have medium-fine crumbs.
  4. Transfer the crumbs into a medium bowl and mix with the melted butter.
  5. Press the crumb mixture evenly into the bottom of 8×8 baking dish (saving approximately 1/4 cup of the mixture for sprinkling on top once it is assembled of desired).
  6. Place in refrigerator to set.
  7. While bottom sets, make cream cheese layer by beating together the cream cheese and confectioner’s sugar until creamy.
  8. Add creme de menthe and mix until blended together well. If using mint extract – you can add several drops of food coloring until you reach the desired shade of green – keeping in mind that the color will intensify over time. Place a piece of foil or plastic wrap on top of the pan, or use a pan with a lid – cover and keep refrigerated for up to 3 days.

  • 1 package instant chocolate pudding + you will need 2 cups of milk

Crust

  • 20-25 Oreo cookies
  • ¼ cup unsalted butter melted

Cream Cheese Layer

  • 8 ounces cream cheese softened
  • 1 cup confectioner’s sugar
  • ¼ cup creme de menthe

Whipped Cream Layer

  • 1½ cups heavy cream
  • ¼ cup confectioner’s sugar

Instructions

Our family loves chicken recipes and this one is no exception. I’m such a sucker for creamy sauces on a perfectly seasoned chicken breast so this dinner is one we make quite often.

I really love that not only is it delicious – but it’s super fast to make with the help of the air fryer. No more heating the oven and waiting around for the chicken to bake – this dinner is ready in about 30 minutes. You really can’t beat that.

How Air Frying Works

While air fryers are relatively new to the market, the technology isn’t really a new concept. They basically work like tiny convection ovens that you can use on your countertop.

Similar to a convection oven, it circulates the hot air within the cooking area using a high-powered fan. This helps evenly distribute the heat around the food which not only creates more evenly cooked food but also reduced cooking times.

By circulating the hot air, which contains the fine oil droplets from adding a light mist layer before cooking, and allows you to remove the need for submerging our foods in heavy oils to create the deliciously crunchy foods we all love.

What are the benefits of air frying?

Healthier

It’s no secret that fried foods are more fattening – but did you know that there are 9 calories in every gram of fat? With air frying, we can reduce the fat by removing most of the oils usually needed to create crunchy foods. This helps to drastically reduce fat intake and calories.

Convenience

I love being able to cook with my air fryer and eliminate the need for large baking sheets and lots of pots and pans. Most of my air fryer recipes can be made with just a mixing bowl or two or a small saucepan in addition to my air fryer.

Energy Efficient

Someone said to me once, “why make this in the air fryer if you can do it the conventional way in the same amount of time?” Well, air frying helps eliminate the need for a conventional oven.

Not only can you keep your home cooler in the summer by not using the oven, but you are saving money with reduced energy consumption costs as well.

Time Saver

I don’t know about you, but if I can avoid turning on the oven and having to wait 20 minutes for it to preheat, I’m happy about that. Most air fryer recipes either don’t require that you preheat the fryer – or the preheat time is 5 minutes or less. That is a huge time saver over using the oven.

Take it on the go

I love that the air fryer is compact and easy to take along on trips. We pack ours in our RV and find that air fryer cooking while camping is so much easier than trying to deep fry foods on a small RV stove or camping burner.

How to store chicken leftovers

You can store the creamy garlic chicken in an airtight container for 5 days in the refrigerator or around 3 months in the freezer.

Air Frying Doneness Tip

Every air fryer is a bit different and they all cook at different rates – so in general, all cooking times are approximate based on the pan and temperature.

You can always cook the recipe longer if needed and reduce the heat a bit. If needed, you can tent the top if it is browning too much.

Ingredients for Creamy Garlic Chicken

CHICKEN:

  • chicken breasts – boneless, skinless
  • granulated garlic
  • salt
  • black pepper
  • all-purpose flour
  • grated parmesan cheese

SAUCE:

  • butter
  • olive oil
  • onion – finely chopped
  • whole garlic peeled 
  • chicken broth
  • heavy cream
  • grated parmesan
  • black pepper
  • chopped parsley

How to prevent sticking in the air fryer

Sticking can often happen when using an air fryer. I understand that most would think to add non-stick spray to the basket to prevent this. I strongly encourage you to not do that.

Non-stick spray leaves a coating that won’t come off, even when washed. Over time – this will build up and cause smoking when you use our air fryer.

I also do not recommend putting down a sheet of foil. The idea behind air frying is to allow the air to circulate around the food.

This is why the basket or tray has holes in it. If you put foil down – this prevents the air from reaching all of the areas it needs to in order for it to cook properly.

Instead – I recommend spraying the basket with olive oil using this spray bottle. You can line the air fryer with perforated parchment paper.

Or you can use one of these really great silicone liners that still allow for airflow but are reusable and easily cleanable.

How to Make Creamy Garlic Chicken in the Air Fryer

  1. Preheat the air fryer for 5 minutes at 180-degree C / 350-degrees F.
  2. Butterfly the chicken by cutting in half horizontally, to create 2 thin slices.
  3. Season the chicken on both sides with granulated garlic, salt, and pepper.
  4. In a shallow bowl, mix the all-purpose flour and parmesan.
  5. Coat the chicken in the flour and parmesan mixture, shake off excess.
  6. Spray the basket with little oil and place 2 chicken pieces in it. (if you have a large air fryer – you can do them all at once)
  7. Spray some oil on the top. Cook for 6 minutes on each side. Repeat with the rest of the chicken.

For Sauce:

  1. Add the oil and butter to a large, tall-sided skillet. (It will need to be large enough to accommodate the chicken breasts later)
  2. Add the onions and sauté it until soft and translucent.
  3. Next add the peeled whole garlic cloves and cook for a few seconds until the garlic cloves are lightly browned on outside.
  4. Add chicken broth and let it simmer for 5 minutes (until it reduces to half).
  5. Reduce the heat to low.
  6. Add the heavy cream and let it simmer for 2 to 3 minutes until the flavors are all combined in the gravy.
  7. Mix in the parmesan and continue cooking again for 2-3 minutes until the cheese melts and the sauce is creamy and bubbly.
  8. Season with black pepper.
  9. Add in the air-fried chicken and cook for a couple of minutes to soak up all the flavors.
  10. Garnish with chopped parsley and serve hot with pasta if desired.

How do you air fry frozen chicken in an air fryer?

Firstly, it is important not to air-fry frozen or frosty food because it can cause the food to dry out and be over-cooked in some parts while being under-cooked in others. Let the food thaw out before air frying it.

This isn’t like the pressure cooker – trying to air fry foods from a frozen state won’t have the best results.

What oil sprayer do you use?

First, let me say that I highly recommend that you do not use cooking spray. It will leave a residue on your air fryer basket & cause it to smoke when you use it.

I really like this spray bottle – because it gives a nice mist & sprays consistently each time using just olive, vegetable, or canola oil. I couldn’t air fry easily without it.

Notes: If you want more garlicky flavor then mince the cloves before adding them to the gravy. (Whole cloves will give a much milder flavor)

What air fryer do you use?

We actually have 3 air fryers. I have a smaller one from Phillips that we started with. I have since given that to my son since he’s only cooking for 1.

But the more I used the air fryer I realized I really wanted a digital screen. It wasn’t any more expensive, in fact- our XL air fryer from GoWISE was less expensive than the Phillips and I love its ease & extra functions.

Plus it comes with a lot of the extra accessories I like to use when cooking with my fryer.

But I when I started working on my second air fryer book, I wanted to change things up. I picked up this LARGE air fryer that has been wonderful. It has Touch Screen Presets plus it is XL Family Size, which is great!

Air Fryer Creamy Garlic Chicken

Equipment

  • 1 Air Fryer
  • 1 Large Skillet

Ingredients

CHICKEN:

  • 2 large chicken breasts – boneless, skinless
  • 2 teaspoons granulated garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ¼ cup all-purpose flour
  • 3 tablespoons grated parmesan cheese

SAUCE:

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 1 whole garlic peeled 10-12 cloves
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan
  • 1 teaspoon black pepper
  • 2 tablespoons chopped parsley

Instructions

  • Preheat the air fryer for 5 minutes at 180-degree C / 350-degrees F.
  • Butterfly the chicken by cutting in half horizontally, to create 2 thin slices.
  • Season the chicken on both sides with granulated garlic, salt, and pepper.
  • In a shallow bowl, mix the all-purpose flour and parmesan.
  • Coat the chicken in the flour and parmesan mixture, shake off excess.
  • Spray the basket with little oil and place 2 chicken pieces in it. (if you have a large air fryer – you can do them all at once)
  • Spray some oil on the top. Cook for 6 minutes on each side. Repeat with the rest of the chicken.

For Sauce:

  • Add the oil and butter to a large, tall-sided skillet. (It will need to be large enough to accommodate the chicken breasts later)
  • Add the onions and sauté it until soft and translucent.
  • Next add the peeled whole garlic cloves and cook for a few seconds until the garlic cloves are lightly browned on outside.
  • Add chicken broth and let it simmer for 5 minutes (until it reduces to half).
  • Reduce the heat to low.
  • Add the heavy cream and let it simmer for 2 to 3 minutes until the flavors are all combined in the gravy.
  • Mix in the parmesan and continue cooking again for 2-3 minutes until the cheese melts and the sauce is creamy and bubbly.
  • Season with black pepper.
  • Add in the air-fried chicken and cook for a couple of minutes to soak up all the flavors.
  • Garnish with chopped parsley and serve hot with pasta if desired.

Notes

STORAGE: You can store the creamy garlic chicken in an airtight container for 5 days in the refrigerator or around 3 months in the freezer.
Notes:
If you want more garlicky flavor then mince the cloves before adding them to the gravy. (Whole cloves will give a much milder flavor)

The best way to store leftover pulled chicken nachos is to put them into an airtight container and keep them in the fridge. They should be good for about four days, so you can do this on a day when you aren’t planning on having your pulled meat just yet!

  3. Spread the chicken around the chips.

TIPS FOR AWESOME NACHOS:

Who loves cheesecake? I’m here raising both hands. This chocolate cheesecake tastes like chocolate heaven in your mouth.

So rich, decadent – with that perfect creamy texture and that sweet Oreo crust. This recipe is perfect for all you chocolate lovers out there.

When I met the hubs one of the first things I learned about him was just how passionate he is about cheesecake. His grandmother told me that I had to make him a cheesecake every single year for his birthday.

No problem – she taught me how to make her quick no-bake version at the time. But I love a good New York-style cheesecake and started changing things up.

Over the years I have come up with some pretty amazing cheesecake recipes – like this New York-Style Oreo Cheesecake and this No-Bake Pecan Pie Cheesecake. But, sometimes a girl has to get some chocolate – which is where this chocolate version comes in.

It’s simple to make and oh so amazingly delicious! I know you’ll love it as much as I do.

What is a Springform Pan?

A Springform Pan is the perfect baking pan for any type of cheesecake. They are unique because they have removable sides that allow you to easily get your cake out without breaking it.

How to store Chocolate Cheesecake?

This cheesecake stores well for up to 5 days in the fridge. This cheesecake can also be frozen and kept for up to 6 months as long as it has been in an airtight container.

Where did cheesecake originate?

Although many believe it was invented in New York, cheesecake actually originated in Greece over 4000 years ago. They would pound cheese into a thick paste and sweeten it with honey before combining it with wheat dough to make a crust.

It is similar to the cheesecakes we know today and I am so glad they thought to make something so delicious that we enjoy today.

Why is my filling lumpy?

The lumpy filling is caused by the cream cheese being too cold. When you combine the remaining dry and room-temperature ingredients to the chilly cream cheese, it won’t properly blend with them, leaving tiny lumps of cream cheese throughout the mixture.

Can graham cracker crumbs be used for the crust?

Yes, they are edible. You may use approximately 9 full-sized graham crackers (the rectangle) instead of Oreo cookies if you don’t want to. You can also substitute another cookie with a solid crumble for variety.

What type of chocolate is used in chocolate cheesecake?

Chocolate Cheesecake can be made with either semi-sweet or in some cases dark chocolate. If you prefer a sweeter Chocolate Cheesecake, choose semi-sweet chocolate chips. If you prefer to tone down the sweetness of this chocolate dessert then use good-quality dark chocolate instead of semi-sweet chocolate chips.

Keep in mind that a lot of the creamy texture comes from the fat that is in the chocolate – so the darker the chocolate, the less creamy it will be.

  • creme-filled chocolate sandwich cookies – crushed to fine crumbs
  • butter – melted
  • cream cheese softened
  • sweetened condensed milk
  • vanilla
  • semi-sweet chocolate chips
  • eggs

Can I use fat-free cream cheese?

Cheesecake isn’t really considered diet food. It is rich and creamy because of the full fat that is in the cream cheese.

Because of this, I don’t recommend using a low-fat or fat-free product to make this recipe.

  • heavy whipping cream
  • white chocolate chips
  • Assorted Lindor truffles – if desired

How to Make Chocolate Cheesecake

  1. Preheat the oven to 300 degrees.
  2. Combine the cookie crumbs and melted butter, mixing until the crumbs resemble wet sand.
  3. Press onto bottom of a 10-inch springform pan. Place in the freezer until you are ready to fill it. This helps to solidify the crust.
  4. Beat the cream cheese, sweetened condensed milk and vanilla in a large bowl with the mixer until blended.
  5. Melt the 12 ounces of semi-sweet chocolate chips in a microwave-safe bowl in 30 second increments until they are all melted and the chocolate is smooth.
  6. Add in the melted chocolate to the cream cheese mixture and mix well. Sometimes this works best if you allow it to cool slightly so the temperature is closer to the mixture.
  7. Add the eggs, 1 at a time, mixing on low speed after each one just until blended.
  8. Remove the prepared crust from the freezer and then pour the cream cheese mixture over the crust.
  9. Bake for 1 hour 5 min or until center is almost set but still slightly jiggly.
  10. Run a knife around the rim of the pan to loosen the cake while it is still hot and then cool completely before removing the rim.

How to Make Chocolate Ganache Topping and Decorate

  1. Place the chocolate chips in a medium glass bowl. Set aside.
  2. Heat up the heavy cream in a small saucepan on the stove or in a glass bowl in the microwave – until just simmering – not boiling.
  3. Pour the hot cream over the 6 ounces of semi sweet chocolate chips in the other glass bowl and let it sit for 2 minutes to melt and soften the chocolate. Stir till smooth.
  4. Pour the creamy chocolate mixture over the top of the cheesecake.
  5. Refrigerate the cheesecake for at least 4 hours.
  6. Before serving, melt the white chocolate chips in a microwave-safe bowl in 30 second increments until melted and smooth.
  7. Drizzle the melted white chocolate over the cheesecake.
  8. Decorate with the truffles – if desired.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

Can I use another topping?

That’s what I love about this cheesecake – it is so versatile. So the chocolate cheesecake is the base – then you can add whatever toppings you like.

Sometimes we do Oreo cookies to match the crumb layer. But you can do whole or crushed cookies of any type, add pieces of your favorite candies or brownies. The sky is the limit.

Just be sure that if they have a colored candy coating – like M&M’s or Sixletes that you add those after the cheesecake has been refrigerated and just before serving. The colors tend to bleed and sweat when expose to the cold air of the refrigerator – which is very unappealing.

PRO TIPS FOR THIS CHEESECAKE

  • Start off with really room-temperature cream cheese. Leave it out on the counter when you are making breakfast and it should be the perfect temperature after a couple of hours, depending on the temperature of your house. If the cream cheese is too firm the batter will not be smooth.
  • Don’t be alarmed if your cheesecake seems underdone after an hour of baking, it will firm up as it cools. Don’t over-bake.
  • Make sure to CHILL for an adequate amount of time. One time I was too impatient and tried to serve a cheesecake before it had fully chilled. It was warm on the inside – which I can tell you – is just gross when eating. Not only that – you need it to be chilled so that it will hold together. Slicing and serving a warm cheesecake creates a huge mess because the slices just sort of fall apart and you just have a plate of goo. I always plan ahead for cheesecake and refrigerate overnight.

How do I cut Chocolate Cheesecake?

When you can just press down with your knife without “sawing” with a serrated blade, cheesecakes cut the most neatly. Next, wash the knife in hot water (or put it in a large cup of heated water) and dry it off. Insert the blade’s tip into the center of your cheesecake and press it down and in. You can also slice your cheesecake using cheese wire or dental floss to get clean, smooth pieces. Remember that slice sizes are determined by the size of your cake.

Do I have to use a springform pan?

Well, yes and no. If you want a traditional round and tall cheesecake like you see here, then the answer is yes. Without being able to remove the sides of the pan as you do with a springform, you won’t be able to remove the cheesecake and keep it in slices.

However, if you want to make this in a 9×13 shallow pan, that would work too. When working with a more shallow pan and cutting into bars instead of slices, the cheesecake is easier to remove and serve.

Best Chocolate Cheesecake

This is the Best Chocolate Cheesecake recipe ever! Perfectly rich, and creamy texture, made with real chocolate, and absolutely decadent. Easy to make and perfect for holidays and special occasions.

Equipment

  • 10″ Springform Pan

Ingredients

  • 18 creme-filled chocolate sandwich cookies crushed to fine crumbs
  • 2 tablespoons butter melted
  • 32 ounces cream cheese softened (four: 8 oz blocks)
  • 14 oz. sweetened condensed milk
  • 2 teaspoons vanilla
  • 12 ounces semi-sweet chocolate chips
  • 4 eggs

Topping

  • 6 ounces semi sweet chocolate chips
  • ¼ cup heavy whipping cream
  • ½ cup white chocolate chips
  • Assorted Lindor truffles – if desired

Instructions

  • Preheat the oven to 300 degrees.
  • Combine the cookie crumbs and melted butter, mixing until the crumbs resemble wet sand.
  • Press onto bottom of a 10-inch springform pan. Place in the freezer until you are ready to fill it. This helps to solidify the crust.
  • Beat the cream cheese, sweetened condensed milk and vanilla in a large bowl with the mixer until blended.
  • Melt the 12 ounces of semi-sweet chocolate chips in a microwave-safe bowl in 30 second increments until they are all melted and the chocolate is smooth.
  • Add in the melted chocolate to the cream cheese mixture and mix well. Sometimes this works best if you allow it to cool slightly so the temperature is closer to the mixture.
  • Add the eggs, 1 at a time, mixing on low speed after each one just until blended.
  • Remove the prepared crust from the freezer and then pour the cream cheese mixture over the crust.
  • Bake for 1 hour 5 min or until center is almost set but still slightly jiggly.
  • Run a knife around the rim of the pan to loosen the cake while it is still hot and then cool completely before removing the rim.

Topping

  • Place the chocolate chips in a medium glass bowl. Set aside.
  • Heat up the heavy cream in a small saucepan on the stove or in a glass bowl in the microwave – until just simmering – not boiling.
  • Pour the hot cream over the 6 ounces of semi sweet chocolate chips in the other glass bowl and let it sit for 2 minutes to melt and soften the chocolate. Stir till smooth.
  • Pour the creamy chocolate mixture over the top of the cheesecake.
  • Refrigerate the cheesecake for at least 4 hours.
  • Before serving, melt the white chocolate chips in a microwave-safe bowl in 30 second increments until melted and smooth.
  • Drizzle the melted white chocolate over the cheesecake.
  • Decorate with the truffles – if desired.

Whether you are craving a hearty, comfort food dish or are just in the mood for a twist on an old favorite, this Cabbage Roll Soup has all your favorite cabbage roll ingredients all wrapped up in one delicious bowl – this is the perfect dinner recipe.

Are you ready for some comfort food? Up here in North Idaho, we rarely make it above freezing most days this time of year. It’s bitterly cold and all I want to do is stay inside and make cozy soups like this Stuffed Cabbage Soup.

It’s loaded with veggies, a little added protein from the beef, and a whole lot of flavor. If you are looking for something to warm you up without adding to the waistline – this is the soup for you! Pair this with my Instant Pot White Rice too!

Cabbage Roll Soup

This soup is great because of its versatility. We often change it up by adding in whatever leftover veggies and other ingredients we have on hand.

For this reason – the hubs calls this “everything but the kitchen sink- soup. Most of the time I try to keep it as it is supposed to be – but it seems that no matter what I toss in there – it is still just so delicious.

It certainly keeps us all warm and content when we feel like hunkering down until spring.

How to Store Leftover Soup

  • ground beef
  • canola or olive oil
  • yellow onion – chopped
  • cabbage – chopped roughly
  • diced tomatoes
  • beef broth or vegetable broth if desired
  • white rice – cooked
  • oregano
  • dry basil
  • salt and pepper to taste
  • chopped fresh parsley for garnish optional

Making Cabbage Soup

  1. In a large saucepan or Dutch oven, add the oil, meat, and onion; cook on high heat for 10 minutes or until the meat is thoroughly cooked.
  2. Add the cabbage and cook until it has softened. (about 5 minutes)
  3. Reduced heat, add in the diced tomatoes, oregano, basil, broth, salt, and pepper simmer for 15 minutes.
  4. Stir in the cooked rice and cook for another minute or two to warm up the rice.
  5. Adjust the seasonings if necessary.
  6. Serve warm in a bowl, sprinkle with fresh chopped parsley if desired.

How do you make cabbage soup in the Instant Pot?

Brown the stew meat in a little olive oil in an instant pot, then add the rest of the ingredients, except for the cabbage and water.

Stir everything together until well combined, then add enough water to cover everything. Cover and cook for 45 minutes on the manual. You can quick release once it is done – taking care that soups tend to splatter when using the QR on the Instant Pot.

Once the pin drops, remove the lid – add the cabbage and then cover for 5 minutes to soften it before serving.

What is cabbage soup good for?

Cabbage soup is a healthy and nutritious complete meal in itself. Cabbage soup can help contribute to weight loss, it can stimulate metabolism. This soup has been shown to be beneficial for detoxification as well. I have heard that this soup can also promote liver cleansing and kidney function.

How long can you keep cabbage soup in the refrigerator?

This recipe can be kept in the refrigerator for up to 5 days. Make sure to transfer any leftovers to an airtight container within an hour after serving. Also- do your best to use a shallow container for storing.

Why use a shallow container to store the leftovers?

Well, when the container is shallow, the contents chill faster than if you were to use a large, deep container. Ideally, you don’t want it to take too long for the leftovers to get to their chilled/stored temperature.

As I mentioned, if the food remains above about 35 degrees for more than 1 hour after cooking, the bacteria starts to grow.

How to make slow cooker unstuffed cabbage roll soup?

You can do this by following the recipe here – only you will add the ingredients to the slow cooker instead of to the Dutch oven. Place the lid on the crockpot, turn it to high for 4 hours or low for 6 to 8 hours, and cook until the cabbage is soft. Stir in the cooked white rice just before serving and heat through.

Can this be made vegetarian?

Yes – you can make this vegetarian. Just eliminate the ground beef and use veggie broth – super easy!

Can you freeze cabbage roll soup?

To freeze this Cabbage Soup recipe, cool it completely first. Allow soup to cool fully before freezing to ensure that the components do not stay in the “tender zone” for too long and risk becoming mushy or watery. Transfer soup into a freezer-safe container.

Can I use frozen cabbage in the soup?

Remove frozen cabbage from the freezer and place it in the refrigerator to thaw overnight. To reheat cooked cabbage, cook it in a pan over medium heat. Just until heated through.

Cabbage is a wonderful, low-cost vegetable that can be included in any keto diet. Cabbage is not only low in carbohydrates but also low in calories, it’s a win-win.

Can I change the protein in this soup?

Yes – of course! This soup is super delicious when made with some leftover rotisserie chicken or ground sausage. I highly recommend giving them both a try!

Can I leave out the rice?

Sure you can. If you want to leave out the white rice altogether that will work – the soup will just be a bit thinner. You can also sub in some other things like brown rice, cauliflower rice, quinoa, barley, or couscous.
