When it comes to birthdays, you don’t always have to do a cake to celebrate. My mom would always have the option of cookies at the party table so people could have a little nibble of something sweet without having to commit to a slice of cake.

These birthday cookies are so much fun. Loaded with sprinkles, easy to make with cake mix (meaning they are super soft and chewy for days), and then topped with a simple buttercream that will have everyone coming back for more.

Here are some commonly asked questions

What is the best way to store leftover kiss cookies?

Because these cookies are frosted, I recommend keeping them in an airtight container in the refrigerator. You will also need to keep them in a single layer because of the frosting.

The easiest way to do this is to place them in casserole dishes – preferably ones with an airtight lid. If they don’t have lids that make them stackable for space saving – you can use the press & seal wrap instead. Not only does it do a good job at keeping things airtight – but it stays firm enough for light stacking.

What is Funfetti or Confetti Cake Mix?

Basically, Funfetti is a soft, fluffy, vanilla cake with rainbow sprinkles baked throughout. It’s FUN and probably my most favorite flavor of cake.

This is actually the same as confetti cake. But then Pillsbury came out with an actual Funfetti variety of their box mix – which made the name popular.

For this recipe, you can use the Pillsbury brand and get the actual Funfetti cake mix or you can pick up the rival brands who call their versions confetti or rainbow chip.

  • unsalted butter – softened
  • confectioner’s sugar
  • heavy whipping cream or milk
  • clear vanilla extract

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

How to Make Birthday Cookies

  1. Preheat the oven to 350 degrees F.
  2. Line 2 large baking sheets with parchment paper or a silicone mat. Set aside.
  3. In a large bowl, mix together the cake mix, eggs, and oil until completely combined.
  4. Stir in the sprinkles until mixed throughout.
  5. Scoop with cookie dough scoop or tablespoon onto the prepared baking sheets.
  6. Bake for 8-10 minutes or until slightly firm but still soft.
  7. Remove from the oven and place the baking sheet on a wire rack.
  8. If adding chocolate kisses without frosting, add them immediately while the cookies are warm.
  9. Or cool the cookies completely, then add the frosting, sprinkles, and chocolate kisses.
  10. Store in an airtight container.

Frosting

  1. In a mixing bowl, cream the butter until fluffy and smooth.
  2. Sift the confectioner’s sugar into a medium bowl – this step is optional, although it makes the frosting smooth and easier to mix.
  3. Gradually add the confectioner’s sugar, alternating with heavy cream or milk.
  4. Add the vanilla extract and beat well.
  5. Add to a piping bag with a large star tip and pipe onto cooled cookies before adding the chocolate kiss.

Can you freeze kiss cookies?

The short answer is yes. These cookies can be frozen after baking, once they have completely cooled. The best way to do that is to wrap each cookie individually with plastic wrap.

Then place them in an airtight container or zip-top bag. You can freeze for up to 3 months. Keep in mind that the sprinkles may sweat from the moisture in the freezer – so you might want to stick to only freezing the ones without sprinkles.

You can also freeze the dough. Just roll it into balls and place it on a baking sheet. Freeze in a single layer. Once frozen, transfer to an airtight container for space-saving.

When ready to bake, thaw the dough, roll the cookies in the sugar or sprinkles and then bake as directed. Please don’t add the sugar or sprinkles prior to freezing – neither holds up too well with the moisture in the freezer.

Do I need to chill the dough?

Typically cake mix cookies don’t require chilling. However, if your room is quite warm, you might want to place the bowl in the fridge for about 30-60 minutes prior to rolling.

This will help keep the cookies thick and from spreading too much when baking.

How many can this serve?

This recipe makes about 35 cookies, so it will depend on how many people eat at a time. It will also vary a bit on how large or small you make the cookies.

Can this recipe be doubled?

Yes, doubling this recipe works great and I highly recommend doing it if you are giving these as a gift or making them for a party. These are a favorite and they do go quickly.

What are the best sprinkles for these cookies?

This is important – just because the package says “sprinkles” doesn’t necessarily mean that it is in fact sprinkles.

I see a lot of people using colored sanding sugar that is labeled as sprinkles.

This will not work as well because when that sugar gets wet – like when mixed into a moist dough or when placed in the refrigerator, it will sweat & the color will bleed out.

Make sure you are using jimmies – they don’t bleed or alter the colors. “Sprinkles” called Nonpareils are also not great for this recipe because they also bleed.

Of course, both can be purchased at many grocery stores or online. Pita bread is typically found in the Mediterranean section of the grocery store.

Can this be made with a different yogurt?

Yes, this recipe will work with coconut yogurt. However, the texture and rise will be a bit different for the end result.

How to Make Garlic Butter Naan

Can this be made with alternative milk?

This naan recipe will work when using nut milk. But it will subsequently change the overall texture of the naan. It may not be as stretchy and chewy.

How to Make Garlic Butter Naan

Dough

  1. First add the warm water, sugar, and yeast to a large bowl. Stir and mix. Allow the yeast to proof for about five minutes.
  2. After the five minutes, add in your flour, yogurt, milk, oil, garlic, baking powder, and salt. Mix until fully incorporated.
  3. Next, knead with a dough hook for about five minutes on medium speed if using a stand mixer. If using your hands, transfer the dough ball to a lightly floured flat surface and knead for about 10 minutes.
  4. Then transfer the dough ball to a lightly oiled bowl. Cover with a clean towel and place in a warm spot for 2 hours, or until doubled in size.

Cooking

  1. Once the dough has doubled in size, transfer the dough ball to a lightly floured surface.
  2. Divide the dough into 10 even portions.
  3. Take each portion and roll it into a ball. Set aside and once you have rolled all of the dough, cover with a clean kitchen towel. Allow them to rest for 15 minutes.
  4. Lightly dust a clean, flat surface with some flour. Roll the prepared dough into an oval shape.
  5. Prepare a cast iron skillet (a non-stick skillet will be fine as well.) by heating over medium-low heat.
  6. Cook on one side in the pre-heated skillet until you see bubbles appear on the surface. Flip and continue to cook for about one minute on the other side.
  7. Remove and place on a plate and repeat steps 4-5 with the remaining dough.
  8. In a microwave-safe bowl, melt the butter.
  9. Once melted, add in the garlic and parsley. Mix well.
  10. Brush the butter mixture on top of the cooked naan.
  11. Serve and enjoy warm!

How to store naan

This bread should be stored in an airtight container at room temperature. If properly stored, it will last for several days when stored in an airtight container.

Can naan be made without yeast?

Yes, I have heard of some naan recipes that don’t call for yeast. However, I have yet to give it a try. When I do – there will definitely be either an update to this post or a new post for that version.

What to pair with Naan

While the possibilities are endless when it comes to what you can serve with naan. Here are some ideas –

Chicken Tikka Masala, Lamb Rogan Josh, Beef Curry, Vegetable Korma, Dal Makhani, Butter Chicken, Chickpea Curry, Coconut Curry, Eggplant Curry.

That being said, I also really love to enjoy this with Beef & Mushroom Kabobs, Grilled Chicken Skewers & Grilled Asparagus.

Can this recipe be frozen?

Yes – this recipe can be frozen. Place it in an airtight, freezer-safe container. Freeze for up to 2 months. It can be thawed fairly quickly by placing it in the refrigerator for several hours.

When you are ready to serve again – microwave until warm.

NOTE – it is best to freeze and store prior to adding the butter. This recipe will reheat better if you add the butter once ready to serve.

Can I use honey instead of sugar?

Yes, I have seen some other recipes out there that call for honey in place of the sugar to help proof the yeast. I have not personally tried it. But in general, honey is a good substitute for sugar in this instance.

Dough

  • Add the warm water, sugar, and yeast to a large bowl. Stir and mix. Allow the yeast to proof for about five minutes.
  • After the five minutes, add in your flour, yogurt, milk, oil, garlic, baking powder, and salt. Mix until fully incorporated.
  • Knead with a dough hook for about five minutes on medium speed if using a stand mixer. If using your hands, transfer the dough ball to a lightly floured flat surface and knead for about 10 minutes.
  • Transfer the dough ball to a lightly oiled bowl. Cover with a clean towel and place in a warm spot for 2 hours, or until doubled in size.

Cooking

  • Once the dough has doubled in size, transfer the dough ball to a lightly floured surface.
  • Divide the dough into 10 even portions.
  • Take each portion and roll it into a ball. Set aside and once you have rolled all of the dough, cover with a clean kitchen towel. Allow them to rest for 15 minutes.
  • Lightly dust a clean, flat surface with some flour. Roll the prepared dough into an oval shape.
  • Prepare a cast iron skillet (a non-stick skillet will be fine as well.) by heating over medium-low heat.
  • Cook on one side in the pre-heated skillet until you see bubbles appear on the surface. Flip and continue to cook for about one minute on the other side.
  • Remove and place on a plate and repeat steps 4-5 with the remaining dough.
  • In a microwave-safe bowl, melt the butter.
  • Once melted, add in the garlic and parsley. Mix well.
  • Brush the butter mixture on the top of the cooked naan.
  • Serve and enjoy warm!

What is the best way to store double chocolate chip cookies?

I like to place mine in an airtight container and keep them at room temperature for up to 5 days. You can also use a zip-top bag but I find they get jostled a bit too much with this and then you have broken cookies.

Can the dough be frozen for later?

Yes – this dough can be frozen and baked later. If you would like to roll the dough prior to freezing, make sure to freeze the dough balls in a single flat layer. Once frozen they can be transferred to a zip-top bag for space-saving.

To bake – increase the baking time by 1 minute – no need to thaw the dough before baking.

I like to roll the dough between my hands to soften the outside of the dough before baking – then roll in the sugar – this helps the cookies have the freshest texture once they are baked.

How long do double chocolate chip cookies last?

These double chocolate chip cookies should be enjoyed within 5 days to 7 after making them. They can be frozen for up to two months if you need to do that too.

Are these really no-chill?

Yep – that is why I love this recipe. You don’t have to chill this dough at all. However – if your house is hot (maybe it’s summer and you don’t have AC) or maybe the dough is too warm and the cookies are spreading too much when baking – you can chill the dough for 30 minutes before baking to help it out.

  • unsweetened cocoa powder – not Dutch-processed
  • baking soda
  • table salt

Why do my cookies go flat?

Cookies typically go flat when the dough isn’t at the right temperature at the time of baking OR when they are missing the right ingredients that help them to rise- such as eggs, baking soda, and baking powder. Please make sure you are measuring those ingredients correctly and that they are at room temperature when you start the mixing.

Also – something to keep in mind- make sure you are placing the dough on a cool baking sheet. The cookies will bake differently if you are placing the dough on the hot baking sheet you just removed from the oven. Make sure you have a rotation of baking sheets so you can always place the unbaked dough on a cool tray.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown sugar will work in this recipe.

Is there a substitute for butter in double chocolate chip cookies?

You can use margarine or vegetable shortening as a butter substitute in these double chocolate chip cookies. Keep in mind that the rise, spread, and overall texture of the cookies will be altered when making this change.

How to Make Double Chocolate Chip Cookies

  1. Preheat the oven to 350 degrees.
  2. Line a couple of baking sheets with parchment and set them aside.
  3. In a large, microwave-safe bowl, melt the butter on 50% power until mostly melted – remove and whisk until the remainder of the butter melts.
  4. Whisk in the granulated sugar and brown sugar until well combined.
  5. Stir in the egg and vanilla just until incorporated.
  6. Add the flour, cocoa powder, baking soda, and salt. Mix until just combined. The dough will be just a bit sticky.
  7. Fold in the chocolate chips.
  8. Scoop the dough into 1.5 tbsp portions onto the prepared baking sheets – making sure to space the dough about 2 inches apart to allow for spread.
  9. Bake for 7-10 minutes or until the cookies are just set. They will be a bit puffy but will continue to set as they cool.

Can this recipe be made without a stand mixer?

I think you could possibly get away with using a hand mixer if you have firm beaters.

I don’t recommend using a whisk or even the whisk attachment on a stand mixer for this dough as a whisk isn’t strong enough for this dough.

How do I properly measure the flour?

The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.

What is the difference between Dutch-process cocoa powder and regular cocoa powder?

So Dutch-processed cocoa powder is also referred to as alkalized cocoa. This powder starts with cocoa beans that have been washed in an alkaline solution of potassium carbonate, also used in the production of soap and glass.

By doing this, it neutralizes the acidity of the beans, making the beans neutral. This is important because when they are neutral, they do not react with baking soda. Instead, it is often paired with baking powder.

So – long story short – using regular cocoa powder vs Dutch-process cocoa powder will yield a completely different rise and texture to any recipe you are making.

So I highly recommend paying close attention to the type of cocoa powder called for in each recipe and sticking to it for that reason.

Like many out there, when we started our Keto journey we found that nearly EVERYTHING has sugar added to it. It became very apparent to us that we would have to make our own alternatives if we wanted to eat “normally”.

One thing we wanted to make was chicken parmesan – keto-style. But we couldn’t just use the sauce from the store without packing on the carbs. That’s where this sauce comes in.

We ditched the breading and just added this sauce to the top of a grilled chicken breast along with some cheese to keep it low carb.

With only 2 carbs for a 1/4 cup serving, we used only 1-2 tbsp per chicken breast, making the carbs for the sauce negligible. That’s a win for me and we didn’t have to feel like we were dieting either.

When trying to stick to a Keto, sugar-free, or low-carb diet there are a lot of things to keep in mind. What I noticed when trying to buy products to replace our sugar-filled versions is that there are what seems like a billion different names for sugar and sugar substitutes.

When reading labels you need to know all the secret little ways that sugar can be added to what you are buying. Generally, you want to avoid ingredients that will spike your blood sugar – which is why it can be so much easier to just make your own so you know exactly what is being added.

This sauce is best kept refrigerated until you plan on using it. I like to put it in a jar with a tight lid and keep it in the fridge for up to 5 days.

If you aren’t going to use it all right away – you can portion out some of it and freeze it in a freezer-safe container or zip-top bag for up to a couple of months. Thaw it by placing the container in a bowl of warm water for about an hour. Then reheat as needed on the stovetop.

The brand doesn’t really matter as long as it doesn’t have any added sugar. The can should only contain crushed tomatoes and possibly a little oil or salt. Tomatoes naturally have their own sugar and that is all you need – nothing else added or it defeats the point of making your own sauce.

IS MARINARA AND TOMATO SAUCE OK ON A KETO DIET?

As with everything on a keto diet – moderation is key here. As I mentioned before, tomatoes naturally contain sugar – so you don’t want to drown your food in the sauce, drink the sauce, or generally overdo your portions.

But if you are on keto – then you are probably used to moderating the food choices you make anyway.

How Many Carbs are in Homemade Marinara Sauce?

As I mentioned above, this recipe contains 2 net carbs for a 1/4 cup serving. So if you are only having 1-2 tablespoons at a time, that is only half to 1 carb since there are 4 tablespoons in a 1/4 cup.

You bet! We like to use frozen blueberries that we have stored from the previous season because our blueberry season is so much later than most other places in the country.

For us – blueberry desserts are perfect for summer but it will be nearly the fall season for everyone else before our blueberries are ready.

Can this be made with another type of fruit?

Yes, you can make this with other berries, we love making this with blackberries from our garden each summer. However, keep in mind the volume of the fruit you are substituting with so that it still has the same ratio with the top crust layer.

Yes, absolutely, that will work just fine. I have used white, yellow, and even chocolate when I didn’t have a box of vanilla.

Can this be made with canned fruit?

I have not tried it with canned berries, like a pie filling. But I have made a baked version like this one with canned peaches (drained) and that turned out fantastic.

Especially if you want them fresh from the oven on a weekday morning. That’s where TikTok cinnamon rolls come in.

These cinnamon rolls take only five minutes to prep, and 30 minutes to bake. So whether you’re short on time or just don’t feel like dealing with yeast, these babies will do the trick.

These cinnamon rolls are a trend that became popular on TikTok. You basically ditch the instructions on the packaging of the cinnamon roll tube and bake them a different way.

The result is giant, Cinnabon-like cinnamon rolls that are so fluffy and delicious.

How to store these Cinnamon Rolls

Once you’ve made the cinnamon rolls, you’ll want to make sure you store them properly so they stay fresh and delicious. Here are a few tips:

– Keep them in an airtight container at room temperature for up to 3 days.

– If you want to keep them longer, you can store them in the fridge for up to 1 week.

– You can also freeze them for up to 3 months. Just make sure to wrap them tightly in a freezer-safe container before putting them in the freezer.

How to make Cinnamon Rolls in the Air Fryer

Yes – you can make these in the air fryer if you don’t want to run your oven! YAY!

To do so – you will want to make HALF of this recipe and use a small air-fryer-safe pan that fits in your air fryer. I would recommend using the regular-size cinnamon rolls instead of the Grands.

When adding the heavy cream for the small batch – you will only need a half cup. Then just “bake” in your air fryer for 12-15 minutes at 320°F OR until golden on top and cooked through.

Keep checking them towards the end as all air fryers tend to cook a bit differently and you don’t want burnt cinnamon rolls.

Can I use regular cinnamon rolls?

We tried the trend with the Grands – as shown in the viral recipe. But I have seen others that made them with the regular size rolls. The result was similar but smaller. Just as you would expect from using smaller rolls.

If you decide to use the smaller ones, you will need to bake them for a bit less time. Start checking them after 17-20 minutes. They should be about done within that time.

How to open a cinnamon roll can

These cans are super simple to open. Just remove the paper wrapper. A lot of times the rolls are under so much pressure that the tube will just pop open on its own once the paper has been removed.

However, if that isn’t the case – you can either give it a tap on the edge of the counter OR take the end of a blunt object like a wooden spoon or the handle of a butter knife and use it to add a little pressure to the tube.

This is usually all it needs to pop the tube open and you can then arrange the rolls in your casserole dish.

How to Make TikTok Cinnamon Rolls

  1. Preheat the oven to 350 degrees.
  2. Prepare a 9×13 baking dish with nonstick cooking spray or oil.
  3. Remove the cinnamon rolls from the package and arrange them in the prepared baking dish.
  4. Pour the heavy cream around and over the top of the cinnamon rolls.
  5. Bake for 25 to 30 minutes or until the tops are lightly golden.
  6. Frost with the packaged icing.
  7. Serve warm.

What about the pecan glaze?

The pecan glaze is completely optional. For this round we tried it without but then made them again with the glaze.

When you add the glaze it makes them more like a sticky bun vs a cinnamon roll. Both are insanely delicious and I wouldn’t turn either of them down. It just depends on what you are craving at the time.

How to Make the Pecan Glaze

To make the pecan glaze – just combine 1 cup of brown sugar with a 1/2 cup of butter and 1/2 cup of chopped pecans in a skillet. Heat over medium-low until the butter has melted and the sugar has dissolved.

You should have a caramel-like syrup with pecans mixed in. Pour that mixture over the top of the rolls before baking but after you have added the heavy cream. Bake as directed.

So – this recipe is adapted from saw @mississippi_kween but there are a few others that have been sharing similar hacks. As with most recipes, it is really hard to know for sure who was THE FIRST.

Do I have to use the Pillsbury brand?

No – you can use any brand of refrigerated, canned cinnamon rolls you can find. This should work with all of them out there. The only thing you need to watch is which size you are buying since that will change the baking time.

How much alcohol should I use?

The amount of alcohol you use will depend on how strong you want your shots to be. A good rule of thumb is to start with 1/2 cup of whatever alcohol you choose and adjust from there.

We are using a full cup of combined alcohol for this recipe – but be sure to not increase beyond that as the jello won’t set if the ratios are off.

Can I make jello shots without alcohol?

Yes! If you want to make non-alcoholic jello shots, simply substitute the alcohol for water or juice.

How to Make Sangria Jello Shots

  1. Combine the boiling water and jello in a medium mixing bowl and stir until dissolved.
  2. Add the wine and brandy. Stir again.
  3. Fill each shot cup about ¾ of the way full, using the injector or measuring cup. Do not fill to the top.
  4. Place in the fridge to chill for about 3 hours or until set.
  5. If using, slice the apples and oranges into small pieces.
  6. Top the shots with a dollop of whipped cream and some of the fruit. This is optional.

Can I freeze jello?

Freezing jello is not recommended. The changes in the molecular structure during the freezing process make the jello lose its texture and it won’t harden. Frozen jello becomes melted and runny when thawed.

Can I make these ahead of time?

Yes, Jell-O shots can be prepared up to 24 hours ahead of time. Prepare the shots as directed and store them in the refrigerator until ready to serve.

Tips for making the BEST Jell-O Shots

  • I use an injector because it makes less of a mess and is quicker. However, using a pourable measuring cup works also.
  • Do not leave these uncovered in the fridge if you plan on storing them. They will dry out if you do. It will take them a couple of days to dry out, so it’s ok if you don’t remember, but if you plan on storing them for a few days, be sure to cover them.
  • These will keep in the fridge, covered, for about a week and a half. Do not freeze.
  • Do not garnish if you’re storing for a couple of days. You can garnish the shots up to 2 hours before serving. They do best if being garnished right before serving though.
  • Be careful going over the stated amount of alcohol. If you do, they may not be fully set up. If you like a little thinner consistency for your jello shots, you can add more alcohol.
  • You can add the pieces of fruit to the jello itself before placing it in the fridge. This is another fun way to serve them.

Where can I find the cups for jello shots?

They may be found at many retail stores, including Walmart and the dollar store. We live in a very rural area, so I get mine from Amazon online. At the bottom of this post is a link to some that I like.

Can these be made with regular vodka?

Yep – you can change up the different types of alcohol used in these shots. However – you will want to keep the ratios the same so that there isn’t too much alcohol being added to the mixture.

Too much alcohol added will keep the shots from setting.

Sangria Jello Shots

Equipment

  • 14 2-Ounce Shot Cups with Lids
  • 1 injector or pourable measuring cup

Ingredients

  • 1 box orange Jello 3 ounces
  • 1 cup boiling water
  • ⅔ cup red wine
  • ⅓ cup brandy
  • green apple pieces optional
  • orange wedges optional
  • raspberries optional
  • whipped cream optional

Instructions

  • Combine the boiling water and jello in a medium mixing bowl and stir until dissolved.
  • Add the wine and brandy. Stir again.
  • Fill each shot cup about ¾ of the way full, using the injector or measuring cup. Do not fill to the top.
  • Place in the fridge to chill for about 3 hours or until set.
  • If using, slice the apples and oranges into small pieces.
  • Top the shots with a dollop of whipped cream and some of the fruit. This is optional.

Notes

Tips:
  • I use an injector because it makes less of a mess and is quicker. However, using a pourable measuring cup works also.
  • Do not leave these uncovered in the fridge if you plan on storing them. They will dry out if you do. It will take them a couple of days to dry out, so it’s ok if you don’t remember, but if you plan on storing them for a few days, be sure to cover them.
  • These will keep in the fridge, covered, for about a week and a half. Do not freeze.
  • Do not garnish if you’re storing for a couple of days. You can garnish the shots up to 2 hours before serving. They do best if being garnished right before serving though.
  • Be careful going over the stated amount of alcohol. If you do, they may not be fully set up. If you like a little thinner consistency for your jello shots, you can add more alcohol.
  • You can add the pieces of fruit to the jello itself before placing it in the fridge. This is another fun way to serve them.

Many years ago I made this recipe for a friend. My family loved it, and my friend loved it even more.

Since then we have been making it and I kept meaning to photograph it so I could share it here with you all. Finally, I just buckled down and did it and I am so excited to share it with you.

How to Make Huevos Rancheros

Sauce

  1. In a medium saucepan, bring the two tomatoes to a boil with the serrano peppers and add water until you cover the tomatoes. Let them cook for 5 – 10 minutes, or until you notice the skin of the tomatoes tearing.
  2. Once they are ready, peel the tomatoes and add them to the blender along with the serrano pepper.
  3. Add ¼ cup of the water used to boil the tomatoes, onion, garlic clove, salt, and pepper. Blend until smooth.

Tortillas

  1. Heat a tablespoon of oil in a large nonstick skillet over medium heat.
  2. Once it’s hot, add a tortilla and lightly fry it on both sides. This will take around 2 minutes.
  3. Once it’s ready, set it on a plate and repeat with the other tortilla.
  4. Warm the refried beans and spread some of the beans onto the tortillas.

Eggs

  1. Continue with the fried eggs. Add the other tablespoon of oil into the skillet, and fry one egg at a time. Let it cook between 2 and 4 minutes depending on how much you want it cooked. Ideally, have a runny yolk or over easy.
  2. Once it’s ready, place it over the tortilla, on top of the beans. Repeat with the other egg.
  3. Place them on the plates you are serving and spoon some of the sauce over your eggs. Sprinkle with fresh cilantro and Cotija cheese if you decide to use some.

Can this recipe be doubled?

You can, and we do it often. The dough will work just fine when doubled. Keep in mind that the dough fills a 5-qt mixer bowl pretty full – so unless you are using a larger 7-8-qt mixer bowl, doubling might be difficult.

Do I need to chill the dough before baking?

YES – you absolutely must chill this dough before baking for at least 30 minutes. This is key to the cookies baking correctly.

Do I really need to chill the dough?

Yes, Yes, Yes! Chilling the dough is important for a couple of reasons. First – while the dough is chilling the ingredients are coming together. It gives a better overall flavor to the cookie.

The second and probably even more important than the first – is that chilling helps the dough hold together during the baking process.

Without chilling, the dough would not only be too sticky to really roll it into balls. But it would also spread way too much while baking – leaving flat and not very appealing cookies in the end. Please don’t skip the chilling process.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

How to Make Cookie Monster Cookies

  1. In a large bowl of an electric mixer, cream together the butter, brown sugar, and granulated sugar until fluffy.
  2. Beat in the egg, vanilla, and 3 drops of the blue food coloring. Add more food coloring until you reach your desired shade. Keep in mind that the color will intensify as the dough sits.
  3. Slowly mix in the flour, baking powder, and salt.
  4. Stir until just combined.
  5. Next fold in ⅓ cup of the white chocolate chips, ⅓ cup of the mini Oreo cookies, and ⅓ cup of the mini chocolate chip cookies. Use the mixer or a spoon to break up the cookies just a bit while stirring them in.
  6. Divide the dough into 6 equal portions and form each portion into a ball.
  7. Place on a lightly greased cookie sheet.
  8. Break up the remaining mini Oreo cookies and mini chocolate chip cookies.
  9. Place the remaining white chocolate chips, mini Oreo cookies, and mini chocolate chip cookies around the top of the unbaked cookie dough.
  10. Refrigerate for at least 30 minutes.
  11. Meanwhile, preheat the oven to 350 degrees.
  12. Bake the cookies for 15-18 minutes. You want the edges to just be golden brown, we want the cookies to stay chewy – so don’t over-bake.
  13. Cool for 5 minutes on the baking sheet and then transfer to a rack to cool completely.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

Can you freeze Cookie Monster Cookies?

Yes – the baked cookies will keep when frozen for up to 3 months. Wrap each cookie individually with plastic wrap and then place them all in an airtight container before freezing.

How to store these Cookie Monster Cookies?

These cute cookies can be stored in an airtight container at room temperature for up to 1 week. If you want them to last longer, you can freeze the dough or the baked cookies for up to 3 months. Just make sure to wrap them tightly in plastic wrap or freezer-safe bags to prevent them from drying out.

Can I add other ingredients to the cookie dough?

Sure! These adorable cookies are a great base for experimentation. You can change the color and the mix-ins to whatever you like. Keep in mind that by changing them from blue to another color and changing the cookies that are added to something else – they will no longer be “cookie monster cookies” but you can come up with some really cute variations.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown will work in this recipe.

Why do I need to pack my brown sugar when measuring?

Packing your brown sugar is crucial for making consistent measurements. If you do not pack your brown sugar, you are leaving little air pockets in your measuring cup that will reduce the true amount of brown sugar you are adding to the recipe.

These pockets are never uniform, meaning that scooping without packing will add a different quantity each time. Thus, one should always pack their brown sugar when measuring – even if the recipe does not call for it.

For best results, please grill them for about 8-10 minutes. No need to flip them over, since they are rounded on the other side, they won’t have enough contact with the grill for it to make a difference.

I would imagine that because most frozen peaches come pre-sliced, you would have to place them in a container or on a griddle over the grill. They would essentially become smoked peaches since they wouldn’t be touching the grill grates.

  2. Cut the peaches in half and remove the pit.
  3. Brush the peaches on the cut side with the oil.
  4. Brush the grill with the oil as well.
  5. Place the peaches on the grill -cut side down- and cook for 8-10 minutes.
  6. While the peaches are cooking, melt the butter in a microwave-safe bowl.
  7. Stir in the sugar and cinnamon.
  8. Remove the peaches from the grill and place them on a baking sheet with a rim.
  9. Spoon the butter mixture over the peaches slowly so it soaks in.
  10. Serve immediately with a scoop of ice cream and a drizzle of caramel sauce, if desired.
  11. Store the leftovers in the refrigerator for up to 3 days.

Can I make grilled peach pie?

Absolutely! Just follow your favorite recipe and substitute grilled peaches for the fresh or canned peaches called for in the recipe. Yum!

I have not tried baking a pie on the grill yet. But stay tuned, it is on my wish list.

Does it matter what type of peach is used?

Nope – you can make this recipe with either yellow or white peaches. They are both equally delicious. Just make sure they are ripe but still firm enough that they don’t squish when you cut them and remove the pit.

Can these peaches be grilled on the stovetop?

Yes – if you would like to grill these peaches on the stovetop instead of the bbq that is possible. I found that using a cast-iron skillet works best for this – preferably one that has grooves in the bottom like this grill pan here.

How to Cut a Peach

First – Wash thoroughly by rinsing under water and rubbing gently with your hands.

Then – if you want to peel the skin before cutting – if the peach isn’t fully ripe, use a peeler to remove the skin. Otherwise, score the skin on top and blanch them in boiling water for 15 seconds. After that, immerse them in an ice bath to halt the cooking process. This method allows you to remove the peaches’ skins without cooking them.

To cut into slices – Place the peach on a cutting board with its stem side up. Cut angled pieces from the peach using a paring knife, starting from the stem end. To remove the flesh, cut away any tissue around the pit if necessary. This results in between 10 and 12 slices.

Leaving the peel on – Start with the peach at the top of the stem, where there is a natural indent. Cut down into the flesh until you hit the pit with a sharp paring knife. Continue cutting around to the other side until it reaches where you started.

Twist each half, then hold. If it comes apart with little effort, the peach is a freestone. It’s most likely a clingstone peach if you need to remove the pit from the flesh by cutting.

Choose one of the sides, then use the blade’s tip to make small incisions along the pit’s curve, separating the flesh. The remaining portion will still have the pit in the middle since you removed half of it with tiny sawing motions.

Easy Lemon Cake Recipe

I’m just here working my way through all of mom’s cake recipes. While a whole lot of them are several layers and super elaborate – she has some in her collection that are simple and easy – like this lemon cake.

I love this one because it falls into the snack cake category being that it is only one layer, is on the smaller side of 8″ square, and whips up fairly quickly.

It is perfect for bunco night, a small backyard bbq or brunch at church. I know you’ll love this one as much as we do.

Yes – of course. Just like any other cake, you can freeze this lemon cake. Just make sure to wrap the cake tightly with plastic wrap or place it in an airtight container before freezing. Use it within 3 months.

Making this lemon cake the day before is a great idea. Just be sure to cover with plastic wrap before refrigerating. You can also make the cake and icing the day before and then add the icing fresh before you serve it the next day.

Can this be made with different size cake pans?

You bet – if you need to change the size of the cake you are making – please see the variations below. As with all cakes – bake until the toothpick test is clean as different ovens, climate, elevation, and other factors can change the baking time.

  • 8″ square (used here) is the same as a 9″ round with both holding 8 cups of batter.
  • 9×5″ loaf pan also holds 8 cups of batter – however, the depth of the cake would increase and change the baking time.
  • 9 x 13 pan holds 14 to 16 cups of batter – you would need to double this recipe for a 9×13 pan.
  • This recipe can be made in 2 – 6″ round pans – with each pan holding a total of 4 cups – baking for 18-21 minutes.
  • You can convert this to cupcakes – it will make about 8-12 standard-size cupcakes.

Keep the depth of the batter the same.

The amount of batter in a cake pan is crucial to the recipe. The cake could sink in the middle or overflow if there is too much batter. If you don’t use enough batter, you’ll end up with a thin, flimsy, and dry cake (the moisture will evaporate too rapidly). When switching pan size, follow this guideline: fill halfway to two-thirds full. If you have any leftovers – make them into cupcakes.

Notes

  • You may use vanilla extract instead of almond extract. I like the flavor of almond extract in certain baked goods, but it’s a personal preference. Almond extract enhances the lemon flavor in this recipe.
  • 1 tablespoon of lemon zest is equal to about 1 lemon.
  • 2 tablespoons of lemon juice is about half of a large-sized lemon.
  • You can use all-purpose flour in this recipe instead of cake flour. You will use 2 ¼ cups of all-purpose flour instead of 2 ½ cups as the recipe states above.
  • The scoop and level method is the process you will use to accurately measure your cake flour. All you need to do is take a spoon and scoop the flour into a dry measuring cup, and then using the back of a knife scrape the top to level it.

How do I properly measure the flour?

The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.

What is cake flour?

Cake flour is very finely milled making it lighter in texture, it is bleached so it has a lighter color, and has a much lower protein content than your standard all-purpose. All of these things will change the overall texture, rise and consistency of the cake since it will produce less gluten.

How to Make Lemon Cake

  1. Preheat the oven to 350 degrees F. Spray an 8×8 inch pan with nonstick baking spray. Set aside.
  2. In a medium-sized bowl, whisk together the cake flour, baking powder, salt, and lemon zest. Set aside.
  3. In a bowl of an electric stand mixer fitted with a paddle attachment, cream together the butter and sugar until light and fluffy, about 3 minutes.
  4. Add in the eggs one at a time, followed by the almond extract, sour cream, and lemon juice. Mix until combined.
  5. Carefully, add the flour mixture into the wet mixture. Mix until just combined.
  6. Pour batter into the prepared 8×8 pan.
  7. Bake for 22 to 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove the cake from the oven and let cool for 20 to 30 minutes before removing it to a cooling rack.

How to Make Lemon Cake Icing

  1. Add the confectioner’s sugar, lemon juice, and heavy whipping cream to a medium-sized bowl. Whisk until smooth. If you would like a thicker icing keep adding more confectioner’s sugar. If the icing is too thick, add more lemon juice or heavy whipping cream to thin it out.
  2. Spread the icing on top of the lemon cake and sprinkle with your favorite colorful sprinkles.
  3. Serve immediately.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

Do Pudding Shots Have To Be Served Cold?

Pudding shots can be served at room temperature, but they are more commonly served cold. This is because pudding is generally a cold dessert. When alcohol is added to the pudding, it can make the pudding set improperly if it’s not kept cold.

How Strong Are Pudding Shots?

Pudding shots, like the ones pictured here, are usually prepared with one cup of alcohol for the entire batch. After that, it’s divided among the 12 shots — they aren’t very strong. It comes out to less than 1 ounce per shot, I believe. Increasing the booze could cause the pudding to set improperly.

How to Make Piña Colada Pudding Shots

  1. Place the pudding in a bowl and add the half and half, pina colada mix, and rum.
  2. Whisk until the mixture is thickened.
  3. Fill up your pudding cups with the mixture. I used a frosting bag and tip at first, but then I moved to just using a spoon. It was much easier, quicker, and less messy with the spoon.
  4. At this point, you can either chill the shots for an hour and then garnish them before serving. Or, you can garnish and serve them immediately. This is totally up to you. Either way, enjoy!

Notes for the Best Piña Colada Pudding Shots

  • I like to garnish these by topping them with whipped cream using a frosting bag, sticking a cherry right in the middle, placing a pineapple chunk on the side (gently), and ending it by sprinkling everything with some toasted coconut. Of course, you can garnish them how you like.
  • If you like a stronger coconut or pineapple taste, you can add some coconut or pineapple extract. This doesn’t have an overwhelming taste of either, but rather a light addition to the rum. However, everyone likes their flavors differently, so the extracts are nice for those little flavor adjustments.
  • I think the shots taste better chilled. However, if you use cold liquids to make the mixture in the first place, it will remain cold enough to serve immediately, if desired.
  • Do not garnish these before you chill them. If you make them ahead, just be sure to garnish them after they come out of the fridge, for best results.
  • If covered, these can store for about 4 days in the fridge.
  • I like serving these with small spoons, just in case some people don’t want to try and dump them into their mouths.
  • Do not go over the given liquid amounts. If you do, this can make the mixture too thin.

How Long Do Pudding Shots Last?

Pudding shots will last for several days in the fridge. However, the alcohol will start to evaporate after a day or two. This means that the pudding shots will taste less alcoholic over time.

You can freeze pudding shots for up to two months. However, thawing and refreezing pudding shots is not recommended because it can cause the pudding to separate from the alcohol.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown will work in this recipe.

Why do I need to pack my brown sugar when measuring?

Packing your brown sugar is crucial for making consistent measurements. If you do not pack your brown sugar, you are leaving little air pockets in your measuring cup that will reduce the true amount of brown sugar you are adding to the recipe.

These pockets are never uniform, meaning that scooping without packing will add a different quantity each time. Thus, one should always pack their brown sugar when measuring – even if the recipe does not call for it.

  1. Preheat the oven to 375 degrees.
  2. Line a baking sheet with parchment paper. Set aside.
  3. In a large mixing bowl using an electric mixer, cream butter and both granulated and brown until fluffy.

  5. Stir in the baking soda and salt.
  6. Fold in the flour, just until combined.
  7. Gently fold in the rice Krispie cereal, M&Ms, white chocolate chips, and sprinkles.
  8. Using a 1 ½ tablespoon cookie scoop place the dough onto your cookie sheet.
  9. Top each one with any leftover chocolate chips, M&Ms, and sprinkles if desired.

NOTES FOR THE BEST RICE KRISPIE COOKIES

  • Store in an air-tight container for up to 5 days.
  • Find Red, White, and Blue M&Ms in the summer or you can pick them out of a regular bag.
  • Try using mini M&Ms instead of in addition to the regular ones.
  • You can pop these cookies in the fridge before baking if you want to make them ahead of time.
  • You can also freeze the unbaked cookie dough balls on a sheet pan and then transfer them to a freezer bag and freezer for up to 3 months.

Who doesn’t love a good fajita? This easy sheet pan chicken fajitas recipe is perfect for busy families. The best part is that there’s hardly any clean-up! So put your feet up and enjoy a delicious dinner.

I love this recipe because I can have dinner on the table in 30 minutes flat. I’m talking start to finish. But the best part is that we don’t have to sacrifice flavor for a quick and easy meal.

What makes a fajita, a fajita?

A fajita refers to the strips of meat used in the dish, as the literal definition of fajita means “little girdle” or a “tiny strap.” This was originally carne asada, but the term has evolved over the last hundred years to include a variety of other meats including chicken and seafood.

Traditionally, fajitas are served with special fajita seasonings and served on a corn or flour tortilla. However, the term is so broad that it gives you a lot of latitudes when deciding how best to prepare the dish by making it your own.

How do restaurants get their fajita chicken so tender?

If you would prefer to achieve a more tender cut of meat when preparing your fajitas, you will need to be sure to marinate it before baking. If you are looking for a good marinade, be sure to try my recipe for the Best Chicken Marinade.

The acidity of the vinegar works well for breaking down the muscle fibers in the chicken while the remaining ingredients provide a juicy and flavorful experience.

Can I make this recipe in a toaster oven instead of my normal oven?

Yes! Keep in mind that the smaller size of the toaster oven will make it more challenging to create enough space between all of your ingredients. If all of the components are on top of each other on the sheet pan, they will not cook properly. This is why I would recommend either halving the recipe or dividing the full-scale recipe into two batches.

Does it matter what color peppers I use?

When following most recipes, the color of the bell peppers that you use is only for aesthetic purposes. However, there is a difference in flavor between the different colors.

Notably, green bell peppers are the least ripe of them all and have a more bitter flavor, though they will still have that distinct bell pepper flavor along with the spiciness. As you move down the color scale from yellow to orange, to red, bell peppers get progressively sweeter and fruitier.

The variation in flavor makes a nice medley when mixed together in a fajita. Be sure to choose the colors based on how sweet you would like your dish and experiment with combining flavors too!

How to Make Sheet Pan Chicken Fajitas

  1. Preheat the oven to 350 degrees Fahrenheit and grease a baking sheet with olive oil and set aside.
  2. Cut the chicken, peppers, and onions into thin slices and place them into a large bowl.
  3. Squeeze the lime juice over the chicken, peppers, and onions. Mix until fully coated with the lime juice.
  4. Add your fajita seasonings to the bowl and mix until fully coated.
  5. Place the chicken, peppers, and onions evenly onto the baking sheet.
  6. Bake for 15 minutes.
  7. Once cooked remove from the oven and prepare your fajitas.

Why must I coat all of my ingredients in lime juice before baking?

Absent any kind of marination for your chicken and veggies, the acidity of the lime juice helps to make all of your ingredients more tender during the cooking process. This is a much better experience when eating a fajita because you want to be able to bite right through all of the contents without getting stuck and pulling out the rest of the meat or a long strand of bell pepper.

What goes into a good fajita seasoning?

Traditionally fajita seasonings will include cumin or chili powder. When making a fajita seasoning at home, you will also want to add other spices like garlic powder, salt, dried onions, cayenne, white sugar, and paprika.

Generally, a recipe would call for a chili powder base with the remaining ingredients to balance the spiciness. Here is what I use when making fajita seasoning.

  • 2 tbsp chili powder
  • 1 tbsp cornstarch
  • 1 tsp dried onions
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp granulated sugar
  • ½ tsp garlic powder
  • ½ tsp salt

What toppings go on fajitas?

For additional flavor, you may want to add a bit of cilantro, feta cheese, or a squirt of fresh, homemade crema to the top of your fajitas. These toppings have the added benefit of making your fajitas look beautiful!

  • 1 tablespoon olive oil
  • 1½ pounds chicken boneless, skinless & sliced
  • 3 large multi-colored bell peppers sliced
  • 1 medium white onion sliced
  • juice of one lime
  • 2½ tablespoons fajita seasonings

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and grease a baking sheet with olive oil and set aside.
  • Cut the chicken, peppers, and onions into thin slices and place them into a large bowl.
  • Squeeze the lime juice over the chicken, peppers, and onions. Mix until fully coated with the lime juice.
  • Add your fajita seasonings to the bowl and mix until fully coated.
  • Place the chicken, peppers, and onions evenly onto the baking sheet.

Also, I find it especially useful to use a disposable aluminum pan when creating this dish for meal prep. This makes it easy to place in the oven to thaw and reduces the amount of clean-up time.

How do I control the spiciness of my dip?

The heat that is characteristic of peppers is caused by a waxy chemical called capsaicin. When preparing jalapenos for cooking, most of the capsaicin is found in the seeds of the pepper.

If you would prefer to add more spice to your dish, be sure to include more of the seeds when adding your peppers. Know that removing all of the seeds from the peppers does not necessarily remove all of the spicinesses but it will moderate it.

How to Make Jalapeno Artichoke Dip

  1. Preheat the oven to 375ºF.
  2. Combine the cream cheese, mayonnaise, sour cream, ½ cup parmesan cheese, and ½ cup jalapenos in a medium mixing bowl. Mix until combined.
  3. Add the chopped artichokes and mix again.
  4. Transfer the mixture to a 9×9-inch baking dish.
  5. Sprinkle the remaining jalapenos and cheese on top.
  6. Bake for 18-20 minutes or until the top is golden brown and bubbly.

Why do I need to cook my Jalapeno Artichoke Dip?

Note that this dish contains four types of cheese mixed with the peppers and the artichokes. Cooking your dip allows the cheeses to melt and blend together and adopt the flavor of the peppers and the artichokes throughout. It will also allow fresh jalapenos and artichokes to soften, allowing for a smoother consistency when enjoying this dish.

One of my favorite parts about baking this dish is the golden-brown crust that forms on top. In my opinion, this is the most flavorful part of the dish as it includes toasted cheese and adds a slight crunch.

Dumplings are a classic dish that can be made with meat or vegetables. Today, we’re making them vegetarian-style with a mix of garlic, onions, and mushrooms.

The filling is simple to make and easy to customize with your favorite veggies. So why not give them a try this weekend? They make the perfect appetizer or main course!

One thing I can never get enough of is dumplings or potstickers. There is just something about these little bites full of a delicious filling. I could eat them every single day.

So, I obviously can’t get take-out every single day. That’s where making these tasty little gems at home comes in. They are oh so delicious and I love them SO MUCH. I know you’ll love them as much as we do.

Do I have to use shiitake mushrooms, specifically? May I substitute with a different kind of mushroom?

Shiitake mushrooms are famous for adding umami (a savory, pleasant flavor) to any dish. They can best be described as a strong, buttery flavor that tastes like bacon to some.

Despite their ability to elevate a dish, shiitake mushrooms are not always available at your local supermarket. For this dish, it is perfectly acceptable to substitute with any of your favorites, including button or portobello mushrooms.

What is the purpose of adding ice cubes to the pan after the wonton wrappers turn golden brown and appear as though they are finished cooking?

If you were to remove your wontons from the pan before adding the ice cubes, you would find that the center did not cook through and the outside is very crunchy and hard. Adding the ice and placing a lid over the pan both steams the wonton wrappers and cooks the contents more thoroughly.

This recipe specifically calls for adding ice over liquid water to minimize the amount of splashing that would occur when adding it to a hot pan.

Sesame Vegetarian Dumplings

What can I substitute for wonton wrappers?

There are a lot of alternatives to wonton wrappers one can use. A couple of good alternatives would be rice paper or dumpling wrappers.

Though both of these options serve the same purpose as a wonton by containing the delicious filling in a bite-sized form, they may not taste exactly like the wonton wrapper. To make the rice paper taste more like a wonton, simply fry them to add a bit of crispiness to the outside.

Can I make my own wonton wrappers at home?

Absolutely! The process of making wonton wrappers at home is very easy. All you would need is one egg, ⅓ cup of water, 2 cups of flour, and ½ teaspoon of salt.

When making your wonton wrappers, start by combining the flour and salt, then make a well in the middle of the mixture for you to add your water and egg to the bowl.

When adding the egg and the water, combine them in a separate bowl first, then add them to the bowl of flour and salt. When added, mix all the ingredients together until well combined.

After all of your ingredients are well combined, knead the dough until it is more of an elastic consistency, then ball it. After allowing the ball of dough to sit for about ten minutes, you are ready to cut it into smaller, more manageable sizes (into quarters for instance) and roll it into a thin, flat sheet.

After cutting the sheet into the size of wonton wrappers you would like (wonton wrappers are traditionally 3 x 3 squares) you are ready to include them in this recipe.

Garlic Chili Oil

  • ½ cup toasted sesame oil
  • 2 cloves garlic thinly sliced
  • 1 teaspoon red pepper flakes

Dumplings

  • 4 ounces of shiitake mushrooms
  • 1 clove of garlic smashed and peeled
  • 2 green onions roughly chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons panko bread crumbs
  • 12 4” wonton wrappers
  • ¼ cup raw white sesame seeds
  • 2 tablespoons olive oil

Can I substitute fresh garlic with minced or powdered garlic?

Store-bought minced garlic is a perfectly acceptable alternative to fresh cloves of garlic. Generally, I am more likely to have this on hand than fresh garlic since it is jarred and stored in the refrigerator. However, I would discourage relying on garlic powder as a substitute in this recipe since it will not have the same ability to incorporate its flavor throughout the filling.

Can these be made with another filling?

You bet – if you want to add a little pork or chicken inside instead of the mushroom or in addition to the mushrooms – that is always a super tasty option.

How to Make Vegetarian Dumplings

  1. Add the mushrooms, garlic, and green onions to the bowl of a food processor and pulse until the mushrooms are a fine crumb– about 15 seconds.
  2. Next, add the soy sauce and panko. Pulse again until the mixture resembles a coarse paste– another 10 seconds.
  3. Fill each of the wonton wrappers with 1-2 teaspoons of mushroom filling. To seal, dip your finger in water and rub it along the edge of the wrapper. Bring the corners of the wrapper up to the center and twist them to seal in the filling.
  4. Brush the bottom of each wonton with water and dip it into the sesame seeds.
  5. Heat a large nonstick skillet over medium-high heat. Add the olive oil and then add the wontons to the pan. Cook for 2-3 minutes or until they are crisp and golden brown on the bottom.
  6. **Working quickly, add a small handful of ice cubes to the pan and immediately cover it with a lid. Shake the pan gently and cook for another 2-3 minutes, or until the dumplings are tender.
  7. Remove the dumplings to a plate and garnish with additional green onion and sesame seeds, if desired. Serve with garlic chili oil and enjoy.
  8. Storage: Leftover dumplings can be kept in an airtight container in the fridge for up to two days.

I don’t like spicy foods. Can I omit the red pepper flakes?

Most of the time, the flavor is the only part of a dish that hinges on the use of certain dry ingredients. This is great because you can omit most dry ingredients without sacrificing the consistency of certain sauces, or the integrity of the overall dish.

In this instance, you can refrain from using red pepper flakes in this recipe if you do not prefer the spice that they add to the dish.

How to Make Garlic Chili Oil

  1. Add the sesame oil, sliced garlic, and red pepper flakes to a small, cold saucepan. Set the pan over medium-low heat.
  2. Cook for 1-2 minutes, or until the garlic is just fragrant and beginning to sizzle. Remove the pan from the heat and set it aside to cool. Cool completely before enjoying.
  3. Storage: Store any leftover garlic chili oil in an airtight container in the fridge for up to one week. Bring to room temperature before enjoying.

Ingredient Notes

  • Sesame oil is the base of our garlic chili oil. Toasted sesame oil will have a more robust flavor than regular sesame oil. I’m using toasted but either will work!
  • Garlic adds delicious flavor to both the oil and dumplings.
  • Red pepper flakes add heat and spice to the chili oil. Feel free to add as much or as little as you like.
  • I like the flavor and texture of shiitake mushrooms but pretty much any mushroom will work in this recipe!
  • Green onion adds a subtle earthy onion flavor to the dumplings.
  • Soy sauce adds umami and saltiness to the dumplings.
  • Panko breadcrumbs add a bit of crunch and help absorb any extra moisture released by the mushrooms.
  • I’m using store-bought wonton wrappers (available next to the tofu in most grocery stores) but homemade would be even more delicious– up to you which you use!
  • I recommend raw sesame seeds for coating the dumplings because they will toast as the dumplings cook and you don’t want them to burn.
  • I’m using olive oil to saute the dumplings but sesame oil would work too!

Can dumplings be steamed in the instant pot?

You bet – dumplings are great when made in the instant pot. They just won’t have that crisp as you get in the skillet. However – you can cook them in the skillet afterward for a couple of minutes.

To make in the instant pot – place them in a bamboo steamer with the lid on top of your rack at the bottom of the pot. Add 1½ cups of water.

Put the lid on and set the valve to seal. Select the steam setting and set the time to 7 minutes.

Use a quick pressure release to release the pressure once done.

Vegetarian Dumplings

Vegetarian Dumplings are made with fresh mushrooms and sesame seeds. Great when served with this delicious homemade garlic chili oil.

Ingredients

Garlic Chili Oil

  • ½ cup toasted sesame oil
  • 2 cloves garlic thinly sliced
  • 1 teaspoon red pepper flakes

Dumplings

  • 4 ounces shiitake mushrooms
  • 1 clove garlic smashed and peeled
  • 2 green onions roughly chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons panko bread crumbs
  • 12 4” wonton wrappers
  • ¼ cup raw white sesame seeds
  • 2 tablespoons olive oil

Instructions

Garlic Chili Oil

  • Add the sesame oil, sliced garlic, and red pepper flakes to a small, cold saucepan. Set the pan over medium low heat.
  • Cook for 1-2 minutes, or until the garlic is just fragrant and beginning to sizzle. Remove the pan from the heat and set it aside to cool. Cool completely before enjoying.
  • Storage: Store any leftover garlic chili oil in an airtight container in the fridge for up to one week. Bring to room temperature before enjoying.

Dumplings

  • Add the mushrooms, garlic, and green onions to the bowl of a food processor and pulse until the mushrooms are a fine crumb– about 15 seconds.
  • Next add the soy sauce and panko. Pulse again until the mixture resembles a coarse paste– another 10 seconds.
  • Fill each of the wonton wrappers with 1-2 teaspoons of mushroom filling. To seal, dip your finger in water and rub it along the edge of the wrapper. Bring the corners of the wrapper up to the center and twist them to seal in the filling.
  • Brush the bottom of each wonton with water and dip it into the sesame seeds.
  • Heat a large nonstick skillet over medium high heat. Add the olive oil and then add the wontons to the pan. Cook for 2-3 minutes or until they are crisp and golden brown on the bottom.
  • **Working quickly, add a small handful of ice cubes to the pan and immediately cover it with a lid. Shake the pan gently and cook for another 2-3 minutes, or until the dumplings are tender.
  • Remove the dumplings to a plate and garnish with additional green onion and sesame seeds, if desired. Serve with garlic chili oil and enjoy.
  • Storage: Leftover dumplings can be kept in an airtight container in the fridge for up to two days.
