If it sort of hovers halfway between the bottom and the top of the water – it’s on the way to going bad and should be used immediately.
NOW – if the egg floats – that means the air bubble has formed and the egg is no longer safe to eat and should be tossed out.

While I’m not a fan of freezing treats in general, I have plenty of friends that swear that these will do just fine in the freezer.

I recommend wrapping each bar individually in plastic wrap. Then place them all in an airtight container and freeze for up to 6 weeks. Let sit at room temperature to thaw before serving again.

Why are my rice krispie treats hard?

If your rice krispie treats are hard, it is likely because they were not cooked long enough or at a high enough temperature. Make sure to cook the butter and marshmallows together until they are fully melted before adding the cereal. Also, be sure to press the mixture into the pan firmly so that it sets properly.

This can also happen if you don’t use fresh ingredients. If you use stale marshmallows, you end up with stale treats. See the notes below for tips and tricks.

Lastly, this happens when the treats are stale. Maybe they were left out for too long and the air made them hard. You need to make sure they are kept in an airtight container until they are ready to be enjoyed.

How to Make Candy Corn Rice Krispie Treats

Line an 8×8 pan with parchment paper and then spray with non-stick spray. Set aside.

Yellow layer

In a medium-sized saucepan, melt 2 tablespoons of butter, and 2 cups of the marshmallows over medium/low heat until completely smooth and melted.
Remove from the heat and add about ¼ tsp yellow gel food coloring. Mix until the marshmallow mixture is evenly tinted.
Then add in 2 cups of the rice krispies cereal and fold until the cereal is evenly coated with the marshmallow mixture.
Press the yellow mixture into the bottom of your prepared pan and set it aside.

Orange layer

For the best possible results – follow these tips so you can make THE BEST KRISPIE TREATS EVER!

ALWAYS USE FRESH MARSHMALLOWS! Trust me on this – don’t take that old bag of sticky marshmallows from the back of the pantry. Stale marshmallows mean stale Krispie treats. If you want them soft and chewy – always use the freshest marshmallows.
USE REAL BUTTER – please don’t try to make this recipe with margarine. It just won’t turn out the same.
Don’t pack the treats too tightly in the pan – this will make them too dense. You want them to be just tight enough so they don’t fall apart but not crushed.
Don’t overcook the marshmallows – this will make them too firm once they cool.
Keep the treats in an airtight container once cooled. Try to keep the container as close to the size of the treats as possible. A container that is too large will allow for too much air to be in the container with the treats and make them dry out faster.
Dampen your hands with water before pressing the mixture into the pan – this will help to keep the marshmallow from sticking to your hands.
Try making them gluten-free by swapping out the ingredients with gluten-free options.

How to store Rice Krispie treats

These treats are best at room temperature. So I like to keep them in the pan that I press them into and then just pop the airtight lid on them.

If you use a metal baking pan – just a bit of foil or press-n-seal on the top works just fine. But I like this baking dish with the lid for ease. You can also wrap each bar individually in plastic wrap to keep as much air out as possible.

Note – you will need to do these steps for each layer to make the colors.

When you make these krispie treats there are a few things to keep in mind when it is time to cut them. Here are some tips I have learned throughout the years.

Make sure to line the pan with the parchment – it allows you to lift the entire slab of treats out so you can cut them cleanly without the pan being in the way. Once they are sliced- you can always lift the parchment back up and pop them right back in the pan for storage.
Let them cool completely before cutting. If they are still warm they will fall apart once they are separated from each other.
Use a nice sharp knife to cut them OR I like to use a dough scraper because it’s nice and sturdy and does a great job.

How to Make Mummy Dogs in the Air Fryer

Remove the hot dogs from packing and set them aside, you want the hot dogs dry.
Remove the rolls from the can and flatten each set of the rolls by unrolling but not separating the pieces.
Pinch closed the perforations in the dough.
Then place the dough between two sheets of parchment and then roll it flat to 1/8” thick.
Using a pizza cutter or knife, cut the dough into strips. Make the strips un-uniform between 1/8” to 1/4” wide.
Wrap each hot dog using the strips of the dough to mimic a loose mummy wrap. The dough will expand slightly so be sure there isn’t too much bunching or overlapping. The hot dog should still be visible throughout.
Leave a spot open for the eyes somewhere.

Air Frying Mummy Dogs

Place the wrapped hot dogs in the air fryer basket. I like to add parchment liner to the basket for nonsticking.
Cook at 350 for 12-15 minutes until the dough is cooked and slightly golden.
Remove and place the eyes on the mummies. You can use a drop of ketchup or mustard as the glue to hold the eyes in place. Let the eyes dry before platting.
Enjoy the fun spooky treat.

How to Make Rum Cake

Preheat the oven to 350 degrees F.
Spray a bundt pan liberally with non-stick cooking spray and coat it with flour, and shake off any excess flour. Or use bakers release.
Spread the nuts evenly into the bottom of the pan. Set aside.
In a large bowl mix together the cake mix, pudding mix, eggs, rum, oil, and water until the batter is smooth.
Spread the batter evenly into the pan on top of the nuts.
Bake for 45-50 minutes or until a toothpick inserted comes out clean.
Cool in the pan on a wire rack for 20-30 minutes.
Meanwhile make the rum glaze by combining the sugar, butter, and water for the glaze in a small saucepan.
Bring to a boil over medium heat and allow it to gently boil for 4-5 minutes or until the mixture thickens.
Remove from the heat and stir in the rum.
Turn the cake out from the pan onto a cake plate or serving plate.
Brush the rum glaze over the cake using a pastry brush, allowing it to soak in as much as possible.
Let the cake rest for 1 hour before serving.

Is Rum Cake keto?

No, this is not typically keto. You would have to use a keto-friendly cake mix and pudding mix for the cake itself. But you would still have to deal with the sugar content in the alcohol. You could use a rum extract instead.

As for the glaze, you could use a sugar substitute and rum extract for that too. So – it is possible if you found the right ingredients to supplement these.

You could also make a keto-friendly yellow cake from scratch and then add the extract and alternate glaze.

Do I need to prepare the pudding?

No. You only need to add the dry mix to the bowl. Upon adding to the other ingredients and baking, the mix will take on more of a pudding consistency.

Bakers release is a combination of oil, flour, and shortening that makes releasing cakes and other baked goods almost effortless.

To make Bakers Release – it is as simple as 1,1 & 1.

equal parts of all-purpose flour, shortening, and cooking oil – I like to do 1 cup of each.

Mix the ingredients together – whisking well. Store in an airtight container in the pantry or refrigerator. When ready to use, dip a pastry brush into the mixture and spread it over the cake pan.

Sure! A box cake mix works well for these cupcakes. Not only does it make the whole process so quick and easy, but the box mixes are pretty tasty. You can use a regular white or vanilla box cake mix and stir in the crushed cookies.

OR – I do have this super delicious homemade chocolate cupcake recipe that I really encourage you to try. They are moist and fluffy and oh so delicious! These cupcakes would be great with a chocolate cupcake base.

What is the best way to store leftover owl cupcakes?

As with all cupcakes, the most important thing is to keep them in an airtight container. Now – because of the frosting I recommend that the cupcakes be refrigerated.

Keep in mind that Oreo cookies tend to get a little soft when they are refrigerated. Also – M&M’s tend to bleed a bit when refrigerated.

So – bake and frost the cupcakes and then refrigerate them. Make the other components of the owl faces and keep them in an airtight container at room temperature. Assemble right before serving.

The frosted cupcakes will keep in the fridge for up to 5 days or freeze for up to 3 months.

Why do cupcakes not rise?

The main reason why cupcakes do not rise is because of the ingredients.

When measuring the flour, make sure to spoon it into the measuring cup and level it off with a knife. Do not pack the flour into the cup.

Also, check the expiration date on the leavening agent (baking powder or baking soda) to make sure it is still active.

Lastly, make sure your eggs are at room temperature before adding them to the batter. Room temperature eggs mix more easily and produce a lighter cupcake.

If you follow these tips, your cupcakes should rise beautifully!

How to Make Oreo Cupcakes

Preheat the oven to 350 degrees. Prepare two muffin tins with baking cups. Spritz the baking cups with nonstick cooking spray.
Whisk together the flour, baking powder, and salt. Set aside.
In a mixer, beat the butter and sugar until fluffy, about 6 minutes, scraping down the sides as needed.
Mix in the eggs and vanilla, blending well.
Add the flour mixture a little at a time, alternating with the milk, until completely blended. Stir in the cookie crumbs.
Using a large scoop, fill the cupcake liners two-thirds full.
Bake the cupcakes for 20 to 22 minutes or until a toothpick in the center returns clean.

Why are my cupcakes dry?

There are a few reasons why your cupcakes might be dry.

One possibility is that you overbaked them. To prevent this, insert a toothpick into the center of the cupcake. If it comes out clean, they’re done. If there’s batter on the toothpick, they need to bake for a few minutes longer.

Chocolate frosting can be stored in an airtight container in the fridge for up to two weeks. When you’re ready to use it again, just let it come to room temperature and give it a good stir. It might be a little thicker than when you first made it, but it will still be delicious!

Cupcakes

1 ½ cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon salt
⅔ cup unsalted butter room temperature
1 ¾ cups granulated sugar
2 eggs room temperature
1 ½ teaspoons vanilla extract
1 ¼ cup milk
2 cups Oreo cookies coarsely chopped

Chocolate Buttercream Frosting

3 cups confectioner’s sugar
½ cup unsweetened cocoa powder
¼ teaspoon salt
1 cup unsalted butter room temperature
2 teaspoons vanilla extract
¼ cup heavy cream

Owl Decorations

12 Tootsie Roll midgees for the ears
48 chocolate chips for the eyes
48 mini Oreo cookies for the eyes
24 orange M&Ms for the beak
½ cup toasted coconut for the breast

Instructions

Cupcakes

Preheat the oven to 350 degrees. Prepare two muffin tins with baking cups. Spritz the baking cups with nonstick cooking spray.
Whisk together the flour, baking powder, and salt. Set aside.
In a mixer, beat the butter and sugar until fluffy, about 6 minutes, scraping down the sides as needed.
Mix in the eggs and vanilla, blending well.
Add the flour mixture a little at a time, alternating with the milk, until completely blended. Stir in the cookie crumbs.
Using a large scoop, fill the cupcake liners two-thirds full.
Bake the cupcakes for 20 to 22 minutes or until a toothpick in the center returns clean.
Place the muffin tins on a wire rack to cool for 10 minutes prior to removing the cupcakes to cool completely.

Frosting

And if you have tried them before, then you know how good they are and you need to make them ASAP. Trust me – you won’t be disappointed!

Anyone can make smoked olives at home – it’s easy, and the results are delicious. Just follow these simple steps, and you’ll be able to enjoy this tasty appetizer anytime you want.

Plus, smoked olives are a great snack for parties and gatherings. I paired down our usual recipe for a smaller gathering – but these are such a hit that I usually make these on a large baking sheet and they are still all gone by the end of the night.

Smoked olives are olives that have been smoked either on an electric smoker or over a wood fire. This gives them a smoky flavor which many people enjoy. If you have never tried them before, you may want to give them a try.

Are Smoked Olives keto-friendly?

Yes, smoked olives are keto-friendly. They are a good source of healthy fats and antioxidants. Additionally, they are low in carbs and calories, making them a great option for those on a ketogenic diet.

How to Store Leftovers

If you happen to have any leftovers, just place them in an airtight container and keep them refrigerated until you are ready to serve again. You don’t need to bring them to room temperature again before serving. They are just as delicious right out of the fridge the second time around as they are when they come fresh off the smoker.

Do I need to drain the olives?

So – yes! The ones in the can – please drain. The green ones we get in the jar. Since we are only using a portion of those, we just pick them out of the jar with a fork – leaving all the liquid in there for the remaining olives. But if you buy a small jar of the green ones – you will need to drain that too. We don’t need the liquid they come soaked in when making this recipe.

Can these be made with any type of olive?

Yes – if you happen to have other types of olives you prefer over the standard black or pimento-stuffed green ones – by all means, use those too.

What if I don’t have a smoker?

Well, if you add the liquid smoke to the pan, you could pop these in the oven at 180-200 degrees for about 20 minutes instead. They won’t technically be smoked and they probably won’t have as much smoky flavor – but it would give you as close to the real thing as possible.

How to Make Smoked Olives

Preheat the smoker to 180 degrees.
Spread the olives out on a small baking sheet. (I like to line mine with foil first for easy clean-up – but it isn’t necessary)
Drizzle the olive oil and the red wine vinegar over the top of the olives.
Combine the onion powder, granulated garlic, chili powder, and paprika in a small dish, stir and then sprinkle over the top of the olives.
Place the prepared olives on the smoker and let the smoke for 20-30 minutes. For added flavor, you can let them go for up to 1 hour.
Remove and serve immediately.

What type of pellets work best for this recipe?

Alder or Hickory are both great types of wood for smoked olives because they have a strong, smoky flavor and is easy to work with. Other good woods to use for smoked olives include oak and pecan. Of course, we always love to use applewood as it gives a slight sweetness to our smoked recipes.

I like to sprinkle them with a little grated parmesan cheese for serving.
For added flavor, add a half tsp of liquid smoke to the tray before smoking the olives.
Make sure to preheat the pellet smoker before starting.
Use a disposable aluminum pan, pieces of aluminum foil, cast iron skillet, iron pan, disposable foil pans, small baking sheet, or sheet pan when making this great recipe.
Add this as the center of your favorite charcuterie board ingredients.
Be sure to use granulated garlic or garlic powder – NOT garlic salt. The olives are salty enough on their own – you don’t need to add more in the seasonings.

Do I need to chill the olives before serving?

Nope – you can take these right off the smoker and transfer them to your serving dish. Set out a handful of toothpicks or cocktail forks for people to grab and go.

That being said – you CAN make them ahead of time and chill them prior to serving. Say you are having an evening party but you want to smoke these the morning ahead – that would be just fine.

Just finish smoking them, pop them in the fridge and serve later. They are just as delicious cold as they are right off the smoker.

Oh yes – of course. If a box mix is your thing – you can absolutely make these little treats with that. Using a box mix gives you an opportunity to make these as shown – with thick brownies OR you can make the mix in the 9×13 pan and create more little mummies.

How to Make Mummy Brownies

Spoon the frosting carefully into a piping bag or plastic storage bag.
If using a zip-top bag – cut a small hole or poke a hole in the corner of the bag depending on how thick you want your mummy stripes to be.
Use a zigzag pattern over the brownies with the frosting to create the look of a mummy.
Add two candy eyes to complete the mummy brownies.
Allow your brownies to sit for 20 minutes so the icing hardens a bit.
Store in an airtight container but do not stack.

Can I use homemade frosting?

Yes! Homemade frosting is fine for these brownies. I recommend my Best Bakery Buttercream Frosting or you can try this Cream Cheese Frosting recipe. You might want to cut the recipes in half or even make just 1/4 of the recipe.

You don’t need much frosting to make these brownies. But if you make the whole batch of frosting – you can always use it to make these super cute Ghost cupcakes.

Can I use melted white chocolate instead of frosting?

Yes – using melted white chocolate or candy melts will work out just fine.

Melt the almond bark in a microwave-safe dish for 20 seconds and mix. Repeat until all the bark is melted.
Carefully spoon the melted chocolate into a piping bag. Cut the tip or the corner of the bag depending on how thick you want your mummy stripes to be.
Pipe the white chocolate over the brownies in a back-and-forth zigzag pattern to create the look of a mummy.
Complete the mummies by adding two candy eyes.

Can I freeze Mummy Brownies?

Yes, you can freeze these brownies. Place them in a freezer-safe container and they will keep for up to 3 months. Let them thaw at room temperature before eating. Make sure to freeze in a single layer so the frosting doesn’t get messed up by stacking them.

But – the eyes don’t do well in a damp environment. SOOOOO – I recommend storing them without the eyes and adding them right before serving.

How Do I Know the Brownies are Done?

When you insert a toothpick and a few crumbs remain on it, the brownies are done. If the toothpick comes out clean, they were overcooked.

Can I mix in chocolate chips or other goodies?

Yes – of course! I’m all about the mix-ins – so I will always encourage you to do that whenever possible. That is one of the bonuses of making your own brownies – either with a box mix or homemade. You get to decide what’s inside and can always make them a little bit better.

It’s no secret that fried foods are more fattening – but did you know that there are 9 calories in every gram of fat? With air frying, we can reduce the fat by removing most of the oils usually needed to create crunchy foods. This helps to drastically reduce fat intake and calories.

I love being able to cook with my air fryer and eliminate the need for large baking sheets and lots of pots and pans. Most of my air fryer recipes can be made with just a mixing bowl or two or a small saucepan in addition to my air fryer.

Energy Efficient

Someone said to me once, “why make this in the air fryer if you can do it the conventional way in the same amount of time?” Well, air frying helps eliminate the need for a conventional oven.

Not only can you keep your home cooler in the summer by not using the oven, but you are saving money with reduced energy consumption costs as well.

Time Saver

I don’t know about you, but if I can avoid turning on the oven and having to wait 20 minutes for it to preheat, I’m happy about that. Most air fryer recipes either don’t require that you preheat the fryer – or the preheat time is 5 minutes or less. That is a huge time saver over using the oven.

Take it on the go

I love that the air fryer is compact and easy to take along on trips. We pack ours in our RV and find that air fryer cooking while camping is so much easier than trying to deep fry foods on a small RV stove or camping burner.

For this recipe, we are cooking the chicken in an air fryer at 375degrees Fahrenheit. This will ensure that the chicken is cooked through and juicy on the inside.

Do you have to flip the chicken in the air fryer?

For this recipe, you do need to flip the chicken. While the air fryer will typically circulate the hot air around and cook the chicken evenly on all sides – I like to make sure that the chicken is crispy on ALL sides.

Can this be made with frozen chicken?

Unfortunately, you will need to at least thaw your frozen chicken BEFORE starting to make this recipe. I don’t recommend trying to make this recipe with chicken that is frozen.

How do you make teriyaki chicken from scratch?

How to prevent sticking in the air fryer

Sticking can often happen when using an air fryer. I understand that most would think to add non-stick spray to the basket to prevent this. I strongly encourage you to not do that.

Non-stick spray leaves a coating that won’t come off, even when washed. Over time – this will build up and cause smoking when you use our air fryer.

I also do not recommend putting down a sheet of foil. The idea behind air frying is to allow the air to circulate around the food.

This is why the basket or tray has holes in it. If you put foil down – this prevents the air from reaching all of the areas it needs to in order for it to cook properly.

Instead – I recommend spraying the basket with olive oil using this spray bottle. You can line the air fryer with perforated parchment paper.

Or you can use one of these really great silicone liners that still allow for airflow but are reusable and easily cleanable.

How to Make Air Fryer Teriyaki Chicken

Chicken

Cut the chicken into roughly 1” cubes and pat them dry with a paper towel.
Dip the chicken into the beaten eggs.
Next, stir together the cornstarch and panko and transfer the chicken from the egg to the cornstarch/panko mixture. Make sure the chicken is evenly coated on all sides.
Spray the air fryer insert with an oil sprayer and add the chicken, making sure to not overcrowd the basket or tray.
Set the air fryer to 375F and cook for 15-18 minutes, turning the chicken halfway through cooking.
Allow the chicken to cool for 3-4 minutes before you sauce it. This will help retain the crispness.

Sauce

In a medium saucepan over medium heat, whisk together all of the ingredients (soy sauce, water, brown sugar, ginger, garlic, rice wine vinegar, sesame oil, cornstarch, and sesame seeds).
Bring the mixture to a boil and then reduce the heat to medium-low. Simmer the sauce until it has thickened and has a consistency similar to caramel sauce.
Remove from the heat and allow the sauce to cool slightly– 2-3 minutes.
Pour the sauce over the cooked chicken, and toss to combine.
Serve over rice, garnished with green onion, if desired.
Store in an airtight container in the fridge for up to 3 days.

Can I use a jarred sauce?

Yes – if you have a favorite sauce that you absolutely love – you can use that instead. I like to make my own here because I rarely have the sauce on hand.

When I am making this recipe is it usually on a whim and I have not prepared by picking up the sauce beforehand.

Air Frying Doneness Tip

Every air fryer is a bit different and they all cook at different rates – so in general, all cooking times are approximate based on the pan and temperature.

You can always cook the recipe longer if needed and reduce the heat a bit. If needed, you can tent the top if it is browning too much.

Can I Make this Keto-Friendly?

Yes – there are some ways to make this recipe suitable for a keto diet. First – you will want to swap out the cornstarch with egg white protein powder. Then instead of using panko, you crushed pork rinds.

Then for the sauce, you can use coconut amnios instead of soy sauce and swap out the brown sugar with a sugar alternative. You’ll also want to swap the cornstarch in this part of the recipe too and use xanthan gum to thicken the sauce instead.

No Bake Pumpkin Pie Graham Cracker Crust

Spray a springform pan with nonstick spray and set aside.
Add the graham crackers to a large bag and crush them into tiny pieces using a rolling pin, OR place them in a food processor and blend until finely crushed.
Add the melted butter to the crushed graham crackers and mix until a wet sand-like mixture forms. If using a processor, just add it straight to the mixture and blend. You may need to mix it once and then continue mixing.
Place the mixture in the prepared pan and press it up into the bottom and almost all the way up the sides. Place in the freezer until ready to use.

No Bake Pumpkin Pie Filling

Add the marshmallows to a large mixing bowl and microwave for two minutes or until the marshmallows are creamy and not lumpy when stirred.
Immediately and quickly add the pumpkin puree, pumpkin spice, and salt to the melted marshmallows and stir well until fully combined.

You don’t need to cook the crust for this recipe.

For the Best Results

Change out the crust and try using gingersnaps, nilla wafers, Oreo cookies, or chocolate graham crackers in place of the traditional graham crackers.

Please do not try to make this recipe using regular whipped cream from the squirt can. It needs to be stabilized whipped cream for this recipe to work.

Don’t skip the chilling process. It is essential to the pie holding together.
Add a sprinkle of pumpkin spice to the top of the pie or mix it into the whipped cream.

ALWAYS USE FRESH MARSHMALLOWS! Trust me on this – don’t take that old bag of sticky marshmallows from the back of the pantry. Stale marshmallows mean stale pie. If you want the pie to be creamy – always use the freshest marshmallows.

For this recipe, you need to make the crust yourself. The problem with the crusts from the store is that they are not large enough to hold the volume of the filling we have here.

You could use two crusts from the store and divide the filling between the two.

Can I make this with a standard flaky pie crust?

Yes – I have a wonderful homemade pie crust recipe that I would highly recommend for this recipe. The only thing about making this with a regular pie crust instead of a graham cracker crust is that it will need to be baked first.

So you can make the crust, bake it and then let it cool before adding the filling mixture. Then chill in the fridge as directed.

Fall is in the air, which means it’s time for all things pumpkin! This creamy No-Bake Pumpkin Pie is perfect for those wanting to enjoy the taste of pumpkin pie but wants an easy-to-make option.

Crust:

12 graham crackers full sheets (rectangle)
7 tablespoons unsalted butter melted

Filling:

7 cups mini marshmallows
15 ounces pumpkin puree 1 can
16 ounces whipped topping 1 large tub + More for Optional Garnish
2 teaspoons pumpkin spice
¼ teaspoon salt
nonstick spray

Instructions

Spray a springform pan with nonstick spray and set aside.
Add the graham crackers to a large bag and crush them into tiny pieces using a rolling pin, OR place them in a food processor and blend until finely crushed.
Add the melted butter to the crushed graham crackers and mix until a wet sand-like mixture forms. If using a processor, just add it straight to the mixture and blend. You may need to mix it once and then continue mixing.
Place the mixture in the prepared pan and press it up into the bottom and almost all the way up the sides. Place in the freezer until ready to use.
Add the marshmallows to a large mixing bowl and microwave for two minutes or until the marshmallows are creamy and not lumpy when stirred.
Immediately and quickly add the pumpkin puree, pumpkin spice, and salt to the melted marshmallows and stir well until fully combined.
Add the whipped cream and then whisk well. Use a rubber spatula to fold the ingredients and then whisk again.
Pour into the crust and spread evenly with a spoon.
Refrigerate for 8 hours or until set and able to be sliced.
Top with dollops of whipped cream, if desired, serve, and enjoy!

Notes

Do not try and use whipped topping while it’s frozen. It needs to be thawed for it to properly mix in.
When mixing in the melted marshmallows, they may leave tiny lumps in the mixture, that’s ok, they mix in once the whipped topping is added.
You can use a normal pie pan, but it will need to be a deep pie pan, or you can make two 8-inch pies out of this recipe.
Do not pour the mixture into the crust until you know for sure that you have mixed it well, all the way through to the bottom.
You don’t need parchment paper for this recipe.
You don’t need to cook the crust for this recipe.
For storage, you can place the pie in a sealed container and freeze it for up to 2 months. Be sure to thaw for about 30 minutes to an hour before serving.
You can also refrigerate it, covered, for up to 5 days.

My friend came over and helped me out with these super cute cupcakes for Halloween. The general idea of using fondant over a lollipop to make the ghost has been around for a multitude of years now.

It is hard to say where it originated, but these were definitely inspired by those that have been shared by so many. They are super fun because they are so easy to make. The kiddos love them and they make a great addition to holiday parties for young and old!

Can these be made with a box mix?

Sure! A box cake mix works well for these cupcakes. Not only does it make the whole process so quick and easy, but the box mixes are pretty tasty.

That being said – I do have this super delicious homemade chocolate cupcake recipe that I really encourage you to try. They are moist and fluffy and oh so delicious!

What is the best way to store leftover ghost cupcakes?

As with all cupcakes, the most important thing is to keep them in an airtight container. Now – because of the frosting I recommend that the cupcakes be refrigerated.

HOWEVER – the lollipops don’t do all that well in the moist air. So I do recommend adding the ghosts to the top of the cupcakes at the time of serving.

So – bake and frost the cupcakes and then refrigerate them. Make the ghosts and keep them in an airtight container at room temperature. Do keep in mind that if you live in a humid environment, the lollipops might still weep.

The frosted cupcakes will keep in the fridge for up to 5 days or freeze for up to 3 months.

Ingredients for Halloween Ghost Cupcakes

12 baked cupcakes – chocolate or any flavor you like

Frosting

unsweetened baking chocolate
butter – softened
vanilla extract
heavy cream
confectioner’s sugar

Dum Dum lollipops
white fondant
black fondant

Yes, absolutely. This recipe makes 12 cupcakes – fortunately, this recipe is so simple that doubling barely takes any additional time. Everyone loves these super cute treats – so I do recommend making more than you think you will need.

How to Make Halloween Ghost Cupcakes

Bake cupcakes according to package or recipe instructions. Allow to cool completely.

Frosting

Place the baking chocolate in a microwave-safe bowl and heat in 30-second increments, stirring in-between, until the chocolate is completely melted and smooth. Set aside to cool.
Using an electric mixer, cream together the butter and vanilla.
Gradually add in the confectioner’s sugar and heavy cream, mixing between each addition until all of the sugar is incorporated. I start with 3 cups and add more until the desired consistency is reached, up to 4 cups.
Add in the melted chocolate and continue beating until the chocolate is well incorporated.

Decorate

Using a piping bag, or spatula, frost each cupcake with a thick layer of frosting.
Roll out the white fondant about 1/16 inch thick on a piece of parchment paper (or a clean surface lightly dusted with cornstarch)
Cut out circles that are 4 inches in diameter. I used a wide-mouth mason jar lid as a template, but you can use a cookie or biscuit cutter or any 4-inch circle as a guide.
Unwrap a lollipop and place the top in the center of the circle of fondant. Gently press the fondant down around the lollipop to create a ghost shape.
Pinch off small pieces of black fondant and roll the pieces into balls. Press the black fondant into the white fondant to create the ghost’s eyes and mouth. If you have trouble getting them to stick, dampen the back of the black fondant with a small amount of water.
Press the lollipop stick into the center of the prepared cupcakes.
Repeat until all of the cupcakes have been topped with a ghost.
Store in an airtight container.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

I don’t know about you – but when it comes to Halloween, once the kids got to a certain age they would always prefer to stay home and pass out candy instead of going out into the neighborhood.

But I wanted them to have something fun to enjoy, just the same. So I would always whip up some sort of cute treat for them to snack on while they greeted all the little kids.

These broken glass cupcakes are super spooky and absolutely perfect for a Halloween celebration.

What is the best way to store leftover broken glass cupcakes?

The most important thing is to keep them in an airtight container. I like to keep them refrigerated since the frosting does have milk and butter in it.

Now- I must say, they do keep better when they have only been partially decorated. So typically I will bake the cupcakes and add the frosting. Those go in the fridge.

Then I keep the glass candy in an airtight container in the pantry. The gel stays fine at room temperature until the container is opened. So since I do open that to make the cupcakes, I’ll pop that in the fridge after taking what I need for them.

When it comes time to serve – I just add the candy on top, then the blood, and they are ready. Super easy to prep ahead.

Can broken glass cupcakes be frozen?

Yes, I do it often. Once baked – these cupcakes can be frozen at most stages of the creation process. I like to remove the freshly baked and cooled cupcakes from the pan, wrap them tightly in plastic wrap and freeze them for later use. (this is also handy when you want to work with cold cakes to keep the frosting from getting too soft.)

You can also place the frosting decorated cupcakes in an airtight container where the frosting won’t get crushed, and freeze them until you need them. Add the candy glass and the gel blood at the time of serving – not before freezing.

Just make sure to thaw the cupcakes in the fridge the night before as they do taste best when not frozen. I also like to leave them at room temperature for 1-2 hours before serving so the frosting is more creamy than stiff.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

These broken glass cupcakes are fun, strawberry-filled cupcakes that are topped with buttercream frosting, candy made to look like broken glass, and then topped with strawberry gel to look like blood. They are a super cute treat for any Halloween celebration!

How to Make Broken Glass Cupcakes

Cupcakes

Preheat the oven to 350 degrees.
Prepare two muffin tins with baking cups. Spritz the baking cups with nonstick cooking spray.
Mix the cake mix according to the package directions with the water, oil and eggs.
Using a large scoop, fill the cupcake liners two-thirds full.
Spoon ½ teaspoon of the pie filling into the middle of each cupcake. Swirl slightly with a toothpick or knife.
Bake the cupcakes for 20 to 22 minutes or until a toothpick in the center returns clean.
Place the muffin tins on a wire rack to cool for 10 minutes prior to removing the cupcakes to cool completely.

Frosting

Beat the butter on high for 3 to 5 minutes or until creamy and light in color.
Mix in the vanilla.
Add the sugar, salt, and whipping cream, beating on low until the sugar is incorporated and then switching to high speed and scraping down the sides as needed.
Beat the frosting until fluffy, about 5 minutes. Stir slightly to remove air pockets.
Transfer the frosting into a decorating bag with a star tip and frost with a circular motion on top of each cupcake.

Glass

Prepare a large, rimmed baking sheet with parchment paper.
In a large saucepan, stir together the sugar, water, corn syrup, and cream of tartar.
Place over medium-high heat and while stirring constantly bring the mixture to a boil.
Continue boiling the mixture until it reaches 300 degrees, or hard ball stage.
Immediately pour the syrup onto the prepared baking sheet. Exercise caution when moving the baking sheet as it will be VERY hot.
Allow the syrup to cool completely into a solid.
Once solidified, strike the candy with the back of a metal spoon or butterknife to crack it into large shards.

Decorate

Press the shards of candy glass into the cupcakes and then drizzle with the strawberry pie filling gel on top to simulate blood.
Refrigerate until ready to serve. Best if served within 8 hours.

What’s The Secret To Moist Cupcakes?

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

Buttercream frosting can be stored in an airtight container in the fridge for up to 2 weeks. Simply let it come to room temperature before using it.

Can I freeze buttercream frosting?

Yes, you can freeze buttercream frosting. Simply place it in an airtight container and store it in the freezer for up to 3 months. Thaw it overnight in the fridge before using it.

Pro Tips

Any red pie filling can be used as a substitute for the strawberry pie filling. Fresh and/or frozen strawberries are not recommended unless using your recipe to make a syrupy pie filling prior to using them in the cupcakes.
Try making these with my red velvet cupcakes recipe for a fun twist.
You can omit the strawberry filling in the cupcakes and just bake the box mix according to the package directions.

The blood can also be simulated by using the red piping gel that comes in the tube. It is typically used for decorating cookies – but will also work fine for these cupcakes.

Be sure to use a candy thermometer when making the hard candy glass. But I do recommend not attaching it to the side of the pan as this will cause it to get too hot where it is attached and the sugar mixture will burn – especially when getting the temperature to the hard crack stage when making this basic hard candy recipe.
Swap out the buttercream frosting for cream cheese frosting when making these bloody broken glass cupcakes.

You can also make these cupcakes using red food coloring.
Be sure to use light corn syrup and white sugar (usually called granulated sugar) when making the candy glass.
Use a sturdy, heavy-bottomed sauce pan when making the candy glass shards.

This recipe can be made with red velvet cake mix or you can make it with devil’s food cupcakes.
Be sure to add the pie filling to the center of each cupcake.
The edible fake blood can also be made using cherry pie filling.

Any white frosting or vanilla frosting can be used.
Make sure you are using a jelly roll pan not a cake pan to make the broken sugar glass or edible glass shards.
Add a little non-stick spray to the cupcake liners to keep the cake batter from sticking.

Place the glass in the top of the cupcake.
This recipe can also be made with homemade yellow cake.
We have also tried this recipe using strawberry jelly instead of the pie filling and that worked great too.

Sometimes we like to add a dram of cinnamon oil to the glass recipe for added flavor.
This has the best dramatic effect when decorated with white icing, however, you can frost cupcakes using any color frosting you like. They would also be a total hit with black frosting.

15.25 oz. yellow cake mix
1 cup canned pure pumpkin puree
½ cup water
⅓ cup vegetable oil
1 tablespoon pumpkin pie spice
4 eggs

8 ounces cream cheese softened
⅓ cup granulated sugar
1 egg

Glaze

4 ounces cream cheese softened
¼ cup butter softened
1 cup confectioner’s sugar

Instructions

Preheat the oven to 350 degrees.
Grease a 10-12 cup bundt pan. Set aside.
In a large mixing bowl combine the cake mix, pumpkin, water, oil, eggs, and pumpkin pie spice.
Whisk until completely blended.
Lightly grease the bundt pan.
In a medium mixing bowl whisk the filling ingredients- cream cheese, granulated sugar, and egg until well combined and smooth.
Pour half of the pumpkin cake batter into the prepared bundt pan.
Add the cheesecake filling mixture on top of that.
Top with the rest of the cake batter.
Place the bundt pan on a baking sheet and then bake for 45 minutes or until a toothpick inserted comes out clean.
Cool the cake for 10 minutes before inverting it onto a wire rack to cool completely.
Once cool, prepare the glaze.

In a medium mixing bowl whisk together the cream cheese and butter until smooth.
Whisk in the confectioner’s sugar.
If your glaze is too thick you can add a tablespoon of milk at a time until you reach your desired consistency.
Drizzle or spoon the glaze all over the cake before serving.

Store cake in an airtight container for up to 3 days.
Do not skip placing your bundt on a baking sheet before baking, overflow can happen through the middle hole sometimes, so it is better safe than sorry.
Make sure you are using pure pumpkin and not pumpkin pie mix.
You can use pumpkin pie spice or just cinnamon if that is what you have on hand.
The consistency of the glaze is totally up to your preference. If you like a thick glaze don’t add any milk. If you like a thinner glaze add a little milk – a little at a time.

However, for this recipe, we are using frozen meatballs that are already pre-cooked. Therefore, you just need to make sure that they are hot and completely heated for the recipe to be done.
