I wanted to share with you today a quick little treat that is near & dear to my heart. You see, every year while my mother-in-law was with us she would make these tasty little goodies for our Christmas get-together. I would sit there at the counter of the bar & just eat these until someone pulled me away.

Don’t really know what it is about them- but I really can’t get enough. I have missed them so much since she passed but have never made them myself.
I have been craving things that bring back fond memories. SO I finally decided to make these (with my own twist) & share them with you.

What kind of cany bar do you use for this?
I picked up the candy cane white chocolate candy bar from Hershey’s. But if you find another peppermint candy bar out there you can use that too.
Can this recipe be made with milk or semi-sweet chocolate?
Yes, you can create these with another kind of chocolate. They probably won’t look as pretty because you won’t see the color of the cereal coming through the chocolate in the same way. But I can say that they will be just as delicious.
HOW DO YOU MAKE Peppermint Crunch Bites?
- Measure out your cereal & marshmallows.
- Prepare your candy bar & set aside.
- Combine white chocolate chips & shortening in glass bowl.
- Microwave – stirring every 30 seconds until completely melted.
- Add in your cereal & marshmallows – stir to coat evenly.
- Scoop tablespoon size drops out & place on parchment lined baking sheet.
- Sprinkle chopped peppermint candy bar on top.
- Refrigerate to firm before serving.
- Store in airtight container at room temperature.

- mini marshmallows
The little marshmallows in there just make me swoon.
Topping with the peppermint candy bar really took these to the next level.

Chocolate Peppermint Shortbread Cookies
Peppermint Crunch Bites
Ingredients
- 2 cups white chocolate chips
- 2 tbsp shortening
- 2-1/2 cups Captain Crunch Cereal
- 2 cups mini marshmallows
- 1 Hershey's Candy Cane Candy Bar broken into pieces
Instructions
- Measure out your cereal & marshmallows & set aside.
- Prepare your candy bar & set aside
- Combine white chocolate chips & shortening in glass bowl
- Microwave on high for 1-2 minutes - stirring every 30 seconds until completely melted
- Add in your cereal & marshmallows - stir to coat evenly
- Scoop tablespoon size drops out & place on parchment lined baking sheet
- Sprinkle chopped peppermint candy bar on top
- Refrigerate to firm up at least 1 hour before serving.
- Store in airtight container at room temperature.
