Do you ever have a dessert that makes your eyes roll in the back of your head with every bite you take? Those really are the best desserts, aren’t they? I’m a firm believer in the idea that if you are going to be bad- do it right. That means, if you are going to go ahead & have a dessert & add in those extra calories to your day, it better be worth it. These Oreo Stuffed Peanut Butter Blondies are definitely worth it – believe me!

This genius idea came about when I saw that the recipe pairing for peanut butter bash was Oreos. If you aren’t familiar with peanut butter bash, it’s where a bunch of us bloggers collaborate once a month to create a new recipe using peanut butter & another recipe ingredient that we vote on ahead of time. This month the vote turned out that we were to use Oreo cookies & I was thrilled.
I mean, I have never met anyone that didn’t love Oreo cookies. They are SO GOOD & literally the only cookie that I don’t make from scratch when it comes to desserts. I thought I might pair them into some sort of no-bake peanut butter pie or something. But then I had the idea to stuff them into a decadent peanut butter blondie & the rest is history. You just have to make these!
Oreo Stuffed Peanut Butter Blondies
Oreo Stuffed Peanut Butter Blondies
Ingredients
- 1/2 cup butter- melted
- 1/2 cup creamy peanut butter
- 1-3/4 cup packed dark brown sugar
- 2 eggs - room temperature
- 1/2 tsp table salt
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 cup white chocolate chips
- 1/4 cup peanut butter chips
- 12-15 Oreo cookies
Instructions
- Preheat oven to 350 degrees
- Line 9x9 pan with parchment paper - set aside
- Melt butter in a large bowl in microwave for approx 25-40 seconds
- Whisk in peanut butter & brown sugar until fully combined
- Whisk in eggs
- Switch to a large spatula or wooden spoon & stir in salt, flour & baking powder
- Transfer half the batter to prepared pan & press into a thin, even layer
- Top with Oreo cookies & sprinkle in white chocolate & peanut butter chips
- Add remaining batter, pressing into a flat layer - it's okay for some of the Oreos to show though, just not all of them.
- Bake 20 minutes - then (using hot pads) carefully cover pan with foil & bake an additional 15-18 minutes
- Remove foil & bake another 5 minutes or until tops no longer look doughy
- Let cool in pan until ready to serve

Room temperature is fine in an airtight container. (unless your house is on the warmer side – then I’d refrigerate)
