When I met the hubs, one of the first things I learned about him was that he was crazy for cheesecake. Every year for his birthday his grandmother would make him her “family famous” no-bake cherry cheesecake. Over the years I learned the recipe & have made a multitude of variations of it to suit the season.
So this year, knowing that he also has a healthy obsession with Oreo cookies, I decided to make grandma’s old cheesecake recipe into this No-Bake Oreo Cheesecake.
Needless to say, it was an absolute hit. You really just can’t go wrong with this flavor combo. Bonus that it is a no-bake recipe too.
I mean, who wants to bake during the summer? I sure don’t- especially because I try as hard as I can to not turn on the air conditioner. Now that we don’t live in the desert, it is nice to have the windows open as much as we can this time of year. But if I turn on the oven, it is instantly too hot in here & on goes the AC- Boooo.

Not only does this make a quick & easy dessert recipe to enjoy after dinner, but it is always a welcome treat at all those summer bbq’s too. Whenever there is a potluck on the calendar, I always plan to make this cheesecake.

This is so simple that I often hand the recipe off to my girls. Being 15 & 18, they love being able to get in the kitchen & whip up something for the family. Can I mix in other cookies or treats?
Yes- of course. This would be great with chocolate chip cookies, mini chocolate chips, chopped candy bars & so much more mixed in here. The sky is the limit to what you can add. Just pick your favorites & enjoy!
What is the best way to store extra no-bake cheesecake?
After serving, place the cheesecake in an airtight container or cover your dish with plastic wrap or tin foil. Be sure to label with the date before refrigerating. This recipe should keep for up to 2 days if not left out for too long. As with most things, it is important to get food into the refrigerator within 1 hour after serving to prevent bacteria growth.
Can a different flavor of Oreos be used?
Yes, absolutely. This recipe is delicious when made with the following Oreo flavors, mint, chocolate, salted caramel, golden, birthday cake, chocolate & peanut butter, fireworks, lemon & spicy hot cinnamon.

How many bars will this make for a party?
This recipe will make 9 bars- but that also depends on how you cut them. If you cut 4 squares x 4 squares, then you’ll yield 16 smaller bars. So depending on your party, this might be enough. For larger parties, double this recipe.
Can this recipe be doubled?
YES – I usually like to double this recipe when having friends over. Just divide the crumb crust between 2 pans & then do the same for the cheesecake top. I haven’t tried using one giant sheet pan for this recipe yet because I felt it would be challenging to pull up such a large piece of cheesecake with the parchment. It is far more manageable when making in the smaller pan.
HOW DO YOU MAKE No-Bake Oreo Cheesecake?
- Crush the Oreos in a large zip-top bag or in the food processor.
- Reserve out 1/3 of the crushed cookies for the top of the cheesecake later.
- Mix in the melted butter until the mixture looks like wet sand.
- Line a 9×9 pan with parchment paper.
- Transfer 2/3 of the Oreo mixture into the parchment lined pan & press until you have a smooth, even layer.
- In the bowl of an electric mixer, beat cream cheese, granulated sugar & vanilla together until well blended.
- Fold in whipped cream & a handful of the reserved cookie crumbs.
- Spread out over the prepared crust & top with remaining cookie crumbs.
- Chill in the refrigerator for at least 4 hours before cutting & serving.
- Once chilled, cut into squares & then top with 1/2 of one of the reserved Oreo cookies.

How to make the cheesecake creamy?
I have found that the best way to make sure this no-bake cheesecake is super creamy & that I get all the cream cheese lumps out is for the cream cheese to be at room temperature before I start mixing. If the cream cheese is too cold it just won’t mix fully into the other ingredients.
How do I keep the crust from pulling up as I spread the cheesecake mixture?
The best way to do this is to pop the crust into the freezer to chill while you mix your cheesecake topping. This helps all that melted butter that you mixed into the cookie crumbs to solidify again & makes those crumbs firm. You shouldn’t have any issues with the crumbs wanting to mix into your cheesecake if the crust is chilled.

- 29 Oreo cookies (reserve out 5 for decorating)
- 1/4 cup butter - melted

- 4 ounces whipped topping or whipped cream – thawed
