I have been wanting to make monster cookies for what seems like forever. Every time I see another recipe for them I get inspired & then somehow it never seems to happen.
Probably because sometimes cookies can take a while to make. Letting certain ingredients sit out to come to room temperature, waiting for each batch to bake before the next can go in.

So it goes, which means I don’t make some cookies all that often. But monster cookie bars are simple, quick & easy to make.
No need to let the ingredients come to room temperature & no chill time either. That is a huge win in my book because when I want a treat, it’s painful to wait.
Monster Cookie Bars Recipe
The family was THRILLED when I finally made these. I had been talking about it for a while & these were so scrumptious.
Just the perfect amount of peanut butter, oats & chocolate. They are the perfect compromise when the hubs wants oatmeal raisin cookies & I always want the chocolate chip.
It’s the best of both worlds all rolled into one. I cut these large, so one is absolutely sufficient for dessert. Although I may or may not have added a scoop of homemade ice cream on top just once.
Here are some commonly asked questions
Can I use butter instead of margarine?
Yes, absolutely, that will work just fine. Just be sure that it is at room temperature and soft before using.
Can I use a hand mixer?
Yes, it is a little more work on the arm – but will work just the same.
Can I use a sugar substitute?
I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.
How many can this serve?
I cut mine into about 20 bars. But you can cut them as small or large as you see fit.
Can this recipe be doubled?
This recipe makes a lot of dough that actually fills my mixer bowl. You could do the batches of dough back to back and then bake them together. But I don’t recommend trying to mix this dough in a double batch.
HOW DO YOU MAKE Monster Cookie Bars?
- Preheat the oven to 350 degrees.
- In the bowl of an electric mixer, combine sugars & margarine & beat until just combined.
- Add eggs & vanilla – mix.
- Add peanut butter – mix.
- Slowly mix in oats & baking soda & mix well.
- Fold in chocolate chips & most of the candies – reserving a handful to adding to the top once baked.
- Spread out into an even layer on a 4 sided baking sheet (either non-stick or lined with parchment) – pressing flat with your fingers or a spatula.
- Bake for 15-18 minutes or until golden. Press the remaining candy into the top immediately after removing from the oven before they cool.
- Allow to cool in pan before cutting.
What is the best way to store leftover Monster Cookie Bars?
The best way to keep them fresh for the longest period of time is to transfer them to an airtight container and keep at room temperature. However, you can just wrap foil over the top of the pan and keep them on the counter too.

Monster Cookie Bars
Ingredients

Is 1 tablespoons of vanilla correct? That seems like a lot.

Yes – that is correct. Vanilla isn’t a critical component to making the recipe work. You can reduce it if you don’t like that much vanilla- but it isn’t overpowering in the overall flavor of the bars.
