She returns with that little pail full to the brim & my refrigerator & freezer are packed. We can’t eat them fast enough & I need to find new & creative recipes to make.
This, of course, has me scouring grandma’s old cookbooks quite a bit looking for fun recipes to make with them all. The kids are loving it because they get to try a whole bunch of new recipes & we are also making all their old favorites, like this Mixed Berry Fruit Leather.
Fruit Leather Recipe
While the weather is still nice we have been trying to get out as much as possible & explore this beautiful place we live. You might remember a bit ago when I shared about how we went out in the wild for a family day & got a flat tire while literally in the middle of nowhere.
There wasn’t any civilization around for hours & we were stuck. Fortunately, we did have a spare tire & the boys were able to fix it.
Fruit Leather Recipe
My biggest fear was getting another along the very rocky path back down the mountain. But I wasn’t too scared about being stuck out there if need be for a couple of days.
I had packed some of our homemade fruit leather for our mini road trip & I was sure happy to have that & a flat of water while we were stuck out there. It’s always good to be prepared when going out of town here in North Idaho. You never know what might happen.
I love making this fruit leather recipe because it’s so simple & it makes such a great grab-n-go snack. Just combine all the ingredients in the blender & let it do its thing until it’s almost completely smooth. You can strain out the seeds if you want, but they don’t bother any of us so I skip that step.
Then I spread it out on a 3/4 sheet baking pan lined with either parchment or a silicone mat & let it bake on super low heat for a couple of hours. It’s really that simple.
When making this, I love to use SPLENDA® Naturals Sugar & Stevia Blend. I like it because it acts like sugar but with only half the calories. Pretty great, right?
Just 1/2 a teaspoon of SPLENDA® Naturals gives you the same sweetness of a full teaspoon of traditional sugar. Anytime I can cut sugar, that’s a good thing.

Here are some commonly asked questions
Can I use frozen berries?
Yes, absolutely, that will work just fine. Just be sure to thaw them before using so they don’t get too thick when blending. You don’t want to make a smoothie and then try to spread it out on the sheet pan.
Can I use other fruit?
Yes, that works too. If using fruit with skins like apples, peaches or nectarines, just be sure to remove the skin first.
Can I use a sugar instead?
I have not personally tried it, so I can’t say how that would turn out. I would assume granulated sugar would be just fine. But if you would like to try it, please let me know how it turns out.
How many can this serve?
This recipe makes about 10 strips, but that will depend on how large or small you cut the strips. Servings will also depend on how many each person is having at a time.
