Hi there, I’m Anya! I’m excited to be back again today to help my mom while she’s working on some more exciting things to share with you later. A couple weekends ago we decided to make homemade pizzas. Have you ever done that before? I really liked it because I got to watch the yeast grow & my mom taught me how to knead the dough. I really liked that part. It was a really great experience because it was something we all did together as a family. Besides, who doesn’t like pizza? It’s so good & making your own makes it all the better!

We had already created some regular size pizzas when mom thought it would be really fun to make some small, personal sized ones too. She was really inspired because she had tripled the batch of dough so we could have enough to get really creative. She had also just picked up a brand new basil plant & was really excited to use it. So with a can of pasta sauce, some homemade dough, leftover chicken from tacos the night before & some extra toppings we made these super delicious pizzas that I’m already craving again.

To make this recipe – you will need the following
Large baking sheet | Dry Active Yeast | Raw Honey | All-Purpose Flour | Salt | Pasta Sauce | Mozzarella Cheese | Chicken | Fresh Basil | Olives | Granulated Garlic | Butter

Mini Chicken Basil Thin Crust Pizza
Ingredients
Dough
- 1/2 cup warm water 115 degrees
- 1/2 tsp dry active yeast
- 1/2 tsp raw honey
- 1-1/2 cups all-purpose flour
- 1/2 tsp salt
Toppings
- 1/2 cup cornmeal
- 1-2 cups marinara or pasta sauce of choice
- 3 cups shredded mozzarella cheese
- 1 cups basil leaves
- 1-2 cups cooked & shredded chicken
- 1 small can sliced olives
- 3 tsp granulated garlic
- 2 tbsp melted butter
Instructions
- Preheat oven to 450 degrees
- In a large bowl, combine water, yeast & honey & let sit until it gets foamy (approx 10 min)
- Once foamy, stir in salt & flour until dough starts to come together
- Flour your workspace & knead the dough a few times until it becomes silky
- Let rest 5 minutes while you pull out all your toppings
- Sprinkle cornmeal evenly over baking sheet
- Portion the dough into 3 equal pieces & roll out each into a thin even layer & place on large cookie sheet
- Top with sauce, cheese, chicken, basil & olives
- Sprinkle with granulated garlic & brush edges of crust with melted butter
- Bake for 10 - 15 minutes or until crust is crispy & cheese is golden
- Enjoy!

You’re killing me with those photos – these look so delicious! Can you taste the bit of honey in the dough? I imagine its purpose is to replace the sugar that’s usually mixed with the yeast, but I imagine a teensy bit of honey flavor in the dough would be amazing!

Thanks Erin! You are right, the honey is to replace the sugar. I actually tried it both ways & the honey gave a much better texture. The family said they tasted it a tiny bit- but I didn’t at all. Hope you give it a try.
