I have mentioned before that I have been unofficially counting points. This means that I pretty much live off zero-point foods 2 out of my 3 meals.
By zero-points I mean fruits & veggies. This can really send my carb & comfort food cravings into overdrive after a few days, even if I have carbs with dinner each night. Sometimes I really just want a muffin or bagel for breakfast – you know?! Some days are easier than others.
But after about a week of feeling like I really want to overindulge, we make a dish like this loaded tater tot casserole that really hits the spot.
I mean pulled pork, potatoes, cheese, bacon- what more could you ask for in a comfort food dish? It’s absolutely perfect if you as me.

I love dishes like this because it’s a great way to use leftovers. We had made bacon at breakfast & pulled pork for dinner the night before. So the next night we pulled out our favorite cast iron skillet & created this casserole with those leftovers & it was phenomenal.

Ingredients
- 1 large bag frozen tater tots - baked to package directions
- 2-3 cups pork barbacoa or any prepared pulled pork you like
- 3-4 cups cheddar cheese
- 1 package bacon- cooked & crumbled
- salsa diced olives & sour cream for garnish
Instructions
- Preheat oven to 375 degrees
- In a large cast iron skillet, arrange cooked tots to cover the bottom
- Top with prepared pulled pork, cheese & cooked bacon
- Bake for 25-30 minutes or until cheese is melted
- Top each serving with salsa, olives & sour cream
- *note- cook time is noted as 1 hour to account for preparing the individual ingredients prior to assembling & baking casserole

This looks amazing and though I’ve made something similar, not quite as close as this. I will definitely need to test this out…maybe even over the weekend as a nice full lunch with some leftover beef and chicken from this and last week! ๐
