I love alfredo sauce. It is my absolute favorite when it comes to pasta & the kid’s sure love it too. Every single year my youngest requests this for her birthday. She puts this on her special request list instead of going out to eat. I love that she can appreciate a home-cooked meal & prefers it over dining out.
Having pasta doesn’t have to be heavy. We like to make this recipe with a little grilled chicken either on the side or chopped & tossed into the noodles. In fact, that is a great use for leftovers when you don’t quite have enough to use for the main dish the second night.
We are all about not only using leftovers but making our meals stretch as far as we can. Feeding a family of 5 adult-sized people gets expensive, so we like to keep things dialed back as often as we can. Plus, no one wants to toss out perfectly good food & this is a great way to make sure we are utilizing all we have. It’s so good too.
That all being said – this alfredo sauce recipe is more than enough to feed a crowd. Toss with your favorite alfredo noodles & sprinkle with a little parmesan cheese when serving & you’ll feel like you are enjoying a gourmet dish.

I have found that most recipes I come across say they feed 4 people. Often times that means 2 adults & 2 small children. We are a family of 5 & all my kids are taller than I am. There’s the hubs & myself & 2 out of the 3 kids are young adults, so we are basically feeding 5 adults here.
It’s hard to find recipes that will feed us all let alone still leave enough for lunch the next day. Which is why I was so thrilled when I made this recipe & it was just enough for everyone.
How do you make Alfredo sauce without heavy cream?
It’s easy, I like to use half & half or even milk sometimes. You can even substitute the heavy cream with evaporated milk if you need to.
I just increase the cheese a little to keep it creamy. Using half & half is how we keep this recipe lighter than a traditional alfredo sauce, which can be very heavy.
HOW DO YOU MAKE ALFREDO SAUCE
- Melt butter in a large saucepan.
- Add in the half & half & simmer.
- Whisk in garlic, parmesan cheese, salt & pepper.
- Stir into cooked pasta.

Ingredients
- 1 cup butter (2 sticks)
- 4 cups half & half
- 2 tbsp minced garlic
- 6 cups grated parmesan cheese
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Melt butter in a large saucepan over low to medium heat.
- Add in the half & half & simmer for 7-8 minutes.
- Whisk in garlic, parmesan cheese, salt & pepper.
- Continue whisking until cheese is completely melted.
- Remove from heat & stir into cooked pasta or any other favorite alfredo recipe.
