Common Questions About Lace Cookies
Can I Make These Without Brown Sugar?
Yes, you can use light or dark brown sugar, or even white sugar for a slightly different taste and consistency. Though it will change the cookies a bit, you can certainly try any type of sugar you want. These things will be yummy, whatever the sugar.
How Do I Know When They’re Done?
Bake until they are golden brown around the edges, usually 7-8 minutes. Definitely keep an eye on them as each oven is going to be a little bit different. These small, thin cookies are very easy to over-bake!
Are These Similar to Florentine Cookies?
Yes, they have a similar delicate, crisp texture and caramelized flavor. Personally, though, I’m a bigger fan of these lace cookies. They are so perfectly crispy, it’s hard to believe!
Storage
This amazing lace cookies recipe is one that everyone should have in their book. These crisp cookies are just plain satisfying.
Refrigerator
These cookies are best stored at room temperature as the fridge might soften them. We want them to stay as crispy as possible!
Freezer
In an airtight container with parchment paper layers, they’ll stay crisp for up to 3 months.
Tips
If your batter is too thick, you’ll know it pretty quickly. You want it to spread out a fair bit as you spoon it onto the parchment-lined pan.
- Thin is Key: The thinner the batter, the more delicate the cookie.
- Consistent Size: Use a teaspoon measure for uniform cookies.
- Cool on Sheet: Let them cool a bit on the baking sheet before moving.
- Even Spacing: Space out the batter as these cookies spread.
- Gentle Removal: Use a thin spatula to transfer them to a cooling rack.
Ingredients
These delicate cookies have a pretty short list of ingredients. My advice is to go all in on the Nutella! Chocolate does wonders for these things!
- Unsalted butter
- Dark brown sugar
- Almond flour or oat flour
- Table salt
- Milk or cream
- Vanilla extract
- Optional Nutella or chocolate chips for filling
- Optional sea salt flakes for garnish
How to Make Lace Cookies
I made sure that this recipe makes for easy lace cookies. The simpler, the better! Delicious, crispy cookies are just around the corner!
- Heat the butter over low heat in a medium saucepan.
- Once the butter has melted, add the brown sugar, almond flour, salt, and milk.
- Cook until the ingredients are combined, stirring continuously. This should take about 3 minutes, the mixture will look a bit grainy from the almond flour, but the sugar will be dissolved.
- Remove from the heat – stir in the vanilla. The mixture will now be shiny but grainy.
- Allow the mixture to cool for at least 5-10 minutes before proceeding. It needs to thicken a bit.
- Preheat the oven to 350 degrees.
- Line several large baking sheets with parchment or silicone liners.
- Use a TEASPOON (an actual measuring spoon – not flatware) and portion out small, scant portions out onto the prepared baking sheets – placing each about 3 inches apart – they will spread a lot.
- Bake for 6-8 minutes or until golden brown around the edges. They will be bubbly on top.
- Remove and allow to cool for at least 5-10 minutes on the baking sheet before using a thin metal spatula to transfer the cookies to a wire rack to cool completely.
- To assemble – gently spread a spoonful of Nutella on one cookie and top with another cookie similar in size/shape.
- Sprinkle the cookies with flaky sea salt if desired.
