I don’t really know why. It is unexplainable. But when it comes to quick & easy dinners like this Instant Pot Mississippi Beef Roast that is 99% shredded beef, I have a hard time wanting to share. It is SO GOOD!
The best thing about this recipe is that not only can you just load up a big ol’ hoagie roll & enjoy it as is. But it is also great when served on a bed of rice with some gravy. Or on sliders or in tacos. The possibilities are endless.
Honestly, I could just eat it as is, right out of the bowl. It is so incredibly juicy & flavorful. I could have this most nights for dinner & never want for anything else.

Can I add leave out the peppers?
You can, but they are needed for that awesome flavor. Of course you can pick them out & not add them to the final bowl of shredded awesomeness. But I highly recommend adding them to the pot while the meat is cooking. They don’t add any heat, just incredible flavor.
What is the best way to store extra Mississippi Beef Roast?
After serving, place leftover beef in an airtight container. Be sure to label with the date before refrigerating. This recipe should keep for up to 2 days if not left out for too long. As with most things, it is important to get food into the refrigerator within 1 hour after serving to prevent bacteria growth.
Can this recipe be made from frozen beef roast?
Yes, you can make this using a frozen beef roast. You will need to adjust your cooking time to 30 minutes per pound (instead of 20 minutes per pound for a fresh or thawed roast). That is what I love about the pressure cooker. Aside from accounting for a little extra cooking time, I can still make dinner even when I forgot to thaw anything.

How many can this serve?
This will depend greatly on portion sizes & the appetites of your crowd. But in general, we make 2 roasts, 3 pounds each to feed our family of 5. We have 3 young adult children, so we usually go through the majority of this beef for dinner & then hopefully have just enough for a sandwich for lunch the next day.
Can this recipe be doubled?
Unless you have 2 pressure cookers, I don’t think you could double this recipe because 6 pounds of beef fills the pot. You don’t want to pack the meat in there too tightly so that it will cook evenly & relatively quickly.
HOW DO YOU MAKE Instant Pot Mississippi Beef Roast?
- Cut each chuck roast into 3-4 large pieces & place in the bottom of the pressure cooker.
- Add all of the seasonings.
- Pour in the broth.
- Add pepperoncini peppers.
- Place the lid on the pressure cooker and set to seal.
- Cook 60 minutes and then allow for a natural release for another 15 minutes.
- Remove meat and shred in a large bowl.

Can I make this recipe in the oven?
Yes, this recipe can be baked if you don’t have a pressure cooker. Place the ingredients in a shallow baking dish & cook for 7-8 hours (until fall apart tender) on 225 degrees in middle rack of the oven.
Can this be made in the slow cooker?
Yes, absolutely. If you would like to toss all these ingredients into the slow cooker, you can do that too. Just set on low for 8 hours or until roast is fork tender. Using 2 forks, shred the meat. Remove meat and pepperoncini to a platter.

What size is your instant pot? I don’t think I can get that much meat in my pot safely. It is not an instant pot though.

I wrote this recipe using my 6-quart cooker. The brand doesn’t matter & you can half the recipe if needed. Or you can just buy one roast that is closer to 4-5 pounds & cut it in half for the cooking process to keep the cooking time the same.

I’m sorry that upset you enough that you felt compelled to go through all the trouble to leave a comment about it. A lot of times it can seem double spaced but it is actually how the site adjusts to different browsers or screen sizes.
