Don’t get me wrong, I love making super tasty recipes. I just don’t think they have to take a ton of time for them to be incredibly delicious. That’s where this super easy Instant Pot Chicken and Broccoli comes in. (Try my Instant Pot White Rice to pair with this too!)
So one night when I knew my son was on his way home for the weekend, I needed something quick & easy to make with the chicken I had thawed.
We had pulled out way too much food from the freezer & I needed to make it before it went bad. But I wanted to keep it quick because I didn’t want to lose my visiting time when my son came home.

We already had a bunch of leftover rice & we were all craving Chinese food. Really, I was the one craving it & I really wanted Beef Broccoli.
But chicken is what I had to work with. So after changing up a couple of things from my super popular beef & broccoli recipe, we had one super YUMMY dinner in less than 30 minutes.
I was sure happy with the result & I can’t wait for you to try it too! You won’t believe how quick & easy this is.
Gotta love that pressure cooker. It sure is perfect for this sort of thing! We picked up our Instant Pot a few years ago. The thing sat in the box for probably close to a year before I finally decided to give it a go.
I have to say, I’m so sorry I waited so long because it really is a game-changer for so many of the recipes we make so often.
I absolutely love that I can make so many of our favorite homemade dinners in about the same time it would take to go through the drive-thru & get back home.
Here are some commonly asked questions
Can I make this recipe with beef?
Yes- if you prefer the traditional beef version, be sure to check out my recipe for that here. The ingredients are slighly different to make sure that sauce is still perfect.
What is the best way to store leftover Chicken and Broccoli?
After serving, place any leftover Chicken and Broccoli in an airtight container. Be sure to label with the date before refrigerating. As with most things, it is important to get food into the refrigerator within 1 hour after serving to prevent bacteria growth.
To reheat, just put a few tablespoons of water in the container & microwave for 1-2 minutes or until heated through.
How many can this serve?
This will depend greatly on portion sizes & the appetites of your crowd. This recipe feeds our family of 5 without enough for seconds or leftovers. But keep in mind that I am feeding 4-5 adult appetites. So if you have 2 adults & 2 smaller kids, you most likely will have some leftover when you are done.

Can this recipe be doubled?
This depends on the size of your pressure cooker. But yes, you can double this recipe if you need more. Please keep in mind that the Instant Pot will not cook effeciently if it is overly full. Also, when adding more to the pot it will change the cooking time as well as the time to come to pressure. So be ready for that.
I would increase the cook time by 7 minutes, leave the slow release time the same & check it for doneness before moving on to the next step.
Is it necessary to use a specific type of pressure cooker?
No, not at all. I just happen to have an Instant Pot, but pressure cookers have become so popular over the last couple years that just about every big & small appliance company makes one. This will work with them all.
HOW DO YOU MAKE Instant Pot Chicken and Broccoli?
- Combine sauce ingredients (except cornstarch) together in a small bowl & whisk.
- Add chicken to the pot & top with sauce mixture.
- Close the lid & cook on manual for 10 minutes.
- Natural release for 15 minutes & then quick release.
- Remove the cooked chicken from pot & set aside.
- Turn off pot & then turn on sautee.
- Whisk in cornstarch & stir until sauce thickens.
- Add the cooked chicken back in & stir.
- Add in steamed broccoli.
- Serve over rice.
Why use a shallow container to store the leftovers?
Well, when the container is shallow, the contents chill faster than if you were to use a large, deep container. Ideally, you don’t want it to take too long for the leftovers to get to their chilled/stored temperature. As I mentioned, if the food remains above about 35 degrees for more than 1 hour after cooking, the bacteria starts to grow.
So, if the deep container of food takes several hours to finally get to that 35 degrees, the bacteria has been growing in your leftovers for those several hours. Not exactly what you want to happen.
Can I use my Instant Pot to make the rice too?
Yes you can. I would suggest that you make it before making the chicken and broccoli & just transfer the cooked rice to another bowl while making the chicken.
To do this, combine 2 cups white rice & 2-1/2 cups water or chicken broth to the pot. Cover with the lid, close the valve & press the rice button. Wait for it to beep & you are done. So easy.

Instant Pot Chicken and Broccoli
Ingredients
- 4-6 chicken breast – cut into 1″ pieces
- 4 cups steamed broccoli
- 2 tbsp minced garlic
- 1/2 cup soy sauce
