My friends, I have to say – I’m no cheap date. I’m a total meat & potatoes kind of girl. No salads as my dinner for me. If I’m going out, I definitely want the filet & always pair it with a baked potato.
I made this clear when I met the hubs & fortunately it’s one of the things he loves about me. That means we enjoy a whole lot of meat & potatoes around here. Fortunately, this recipe for Instant Pot Baked Potatoes makes it super easy.
For most of our life together we have always done baked potatoes in the microwave. It’s easy & takes about 20 minutes. But there are some drawbacks to this.
First & most annoying, is that I often have other components to our meal that I need the microwave for. Waiting for the potatoes & having the microwave tied up for 20 minutes is rough.

Secondly, the little corningware dish I use for making the potatoes in the microwave isn’t quite big enough to make all the potatoes we need for a dinner.
Now that the kids are all young adults they are obviously eating adult portions. Long gone are the days when we could prepare small meals around here.
I needed to come up with a solution to this delema that still produced perfect baked potatoes.
Fortunately, the pressure cooker is perfect for this! We picked up our Instant Pot a few years ago. The thing sat in the box for probably close to a year before I finally decided to give it a go.
I have to say, I’m so sorry I waited so long because it really is a game changer for so many of the recipes we make so often.
I absolutely love that I can make baked potatoes in about the same time it would take in the microwave, but I don’t have to tie up my microwave to do it AND I can make the quantity I now need too.
Here are some commonly asked questions
Can I make this recipe any kind of potatoes?
Yes- you can use another type of potato, but keep in mind they will be more like a roasted potato vs a baked potato because of the size difference. The best potatoes for “baking” will be Russets, Idaho & most variations of Sweet potatoes.
What is the best way to store leftover baked potatoes?
After serving, place any leftover potatoes in an airtight container. Be sure to label with the date before refrigerating. As with most things, it is important to get food into the refrigerator within 1 hour after serving to prevent bacteria growth. To reheat, just put a few tablespoons of water in the container & microwave for 1-2 minutes or until heated through.
How many can this serve?
This will depend on the size of you potatoes & the size of your pressure cooker. I am able to get 7-8 medium-sized potatoes in my pressure cooker, which is great for our family of 5 + a couple friends.

Can this recipe be doubled?
This depends on the size of your pressure cooker. But in general I would not recommend it. The Instant Pot will not cook effeciently if it is overly full. Also, when adding more to the pot it will change the cooking time as well as the time to come to pressure. Overall this would change the final result of the potatoes.

Is it necessary to use a specific type of pressure cooker?
No, not at all. I just happen to have an Instant Pot, but pressure cookers have become so popular over the last couple years that just about every big & small appliance company makes one. This will work with them all.
HOW DO YOU MAKE Instant Pot Baked Potatoes?
- Wash the potatoes & place on top of the trivet in your pressure cooker.
- Sprinkle with salt & add the water to the bottom of the pot.
- Close the lid & steam valve & set to high pressure for 14 minutes.
- Once it is done cooking, allow for slow release for 7 minutes before using the quick release.
- Use a fork to make sure the potatoes are tender before serving.
- Remove & garnish as desired.
Does the size of the potatoes matter?
Absolutely. This will definitely alter the cooking time requirements for the perfect baked potato.
I have found that 10 minutes is great for small potatoes, 12 minutes for medium potatoes like you find in most bags at the grocery store & 20 minutes for those extra large potatoes (like the ones you get at Costco). Keep in mind that you won’t be able to fit very many of those in your pot, so plan accordingly.
What if I want the skins to be crispy?
Well, you will need your oven for that. To do this, just brush the cooked potatoes with olive oil and a little sprinkle of salt. Place in a 400 degree oven for 10 minutes. This obviously takes away the quick & easy part of the recipe, but if the crispy skin is what you are after, this is the way to go.
Do you have to use your trivet?
YES, please don’t skip this. You need to keep the potatoes above the water, because we are essentially steaming them. Otherwise they will be a soggy mess.
