What is the best way to store leftover glazed carrots?
Place any leftover carrots in an airtight container and keep refrigerated for up to 4 days. When reheating, add a splash of water and pop the corner of the lid. Then microwave until hot. The steam created from the added water will make them nice and tender again.
Should I use salted or unsalted butter?
I would say that this is a personal preference. You can use salted butter and then omit the added salt when serving.
I personally like the added salt to balance the sweetness of the honey and brown sugar.
All that being said – these days with groceries being more difficult to find – I basically get whatever the store has available at the time and make it work, adjusting the other ingredients as needed.

Should I use light or dark brown sugar?
Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown sugar will work in this recipe.

- Over medium-high heat combine the olive oil and butter in a frying pan and cook until the butter is melted.
- Add carrots, brown sugar, honey, and garlic and stir to combine.
- Cook for 8-10 minutes or until the carrots are tender, tossing several times to cook evenly.
- Add salt and pepper to taste, and garnish with fresh parsley prior to serving.

Can I use frozen carrots?
Yes, absolutely, that will work just fine. Just be sure to thaw them & pat them dry before using.

Oh of course! If you are cooking for just a couple of people, reducing this recipe works really well.
