I love making cornbread muffins to pair with our dinner. But what I don’t love is having to keep a whole bunch of boxes of cornbread mix stored in the pantry.
It takes up so much space & isn’t convenient when I need more than what the box yields for recipes like cornbread casserole. So today I’m sharing my solution, this Homemade Corn Muffin Mix.

I love this recipe because I can make a big batch & keep it in one big jar for whenever I need it. It is simple & easy to make & whipping up the muffins on a moment’s notice is practically effortless.
Just as easy as the box of mix, that’s for sure & way less space taken up in the pantry.
I can’t tell you just how many times in the past we have run out of mix & didn’t have time to run to the store. Fortunately, I found this recipe in grandma’s cookbook & it saved the day.
Ingredients in Homemade Corn Muffin Mix
- all-purpose flour
- cornmeal – yellow or white
- granulated sugar
- baking powder
- table salt
Equipment Needed
- mixing bowl
- whisk
- large airtight container for storage
We have been using this for years now. Having this on hand makes it so much easier & since it only takes just a couple minutes to make ahead of time, I never have to worry about it.

Homemade Corn Muffin Mix
Ingredients
- 1-1/3 cup all-purpose flour
- 1 cup cornmeal yellow or white
- 6 tbsp granulated sugar
- 2 tbsp baking powder
- 1/2 tsp table salt
Instructions
- Combine all ingredients in a large bowl & whisk well.
- Transfer to an airtight container
Notes
Combine 1-1/2 cups of mix with 1 egg, 1/3 cup milk, 2 tbsp vegetable oil.
Whisk well & scoop into lined muffin tins.
Bake at 400 degrees for 15-20 minutes.
Makes 6-12 muffins (depending on the size of your tin)

I’m not sure – I have not compared it by measuring out the two. I don’t buy the box mix. But since this recipe will make the equivalent quantity as the box mix, I would imagine it’s pretty close.

Hi. I can’t wait to try this recipe. I have wanted to make mine from scratch for a long time, but couldn’t find a good recipe, but this one looks great. I like to add a small can of sweet cream corn and a small can of green chilis to my recipe!

My apologies – the nutritional info wasn’t an available function in the recipe card when the recipe was written. I literally have several thousand recipes that need to now be updated individually to include that, I just have not been able to get to them all yet. However, I highly recommend using an independent nutritional calculator as I have found them to be far more accurate if you are watching your macros closely.
