This super easy Hashbrown Breakfast Casserole is made with milk, eggs, butter, sausage, bacon, hash browns, and cheese. What a great start to the day!
When it comes to breakfast we rarely have time for anything fancy these days and when I say fancy, I mean something that isn’t grab-n-go. So when I can make something like this breakfast casserole, the whole family is elated.
What I love about this breakfast is that while it isn’t a 30-minute or less recipe, it’s pretty simple to make and you can even make it the night before and bake in the morning, which is great for our schedule.
You just can’t go wrong with hash browns, eggs, bacon, sausage, and cheese all baked up into one simple casserole.
Our family sure loves it and it also makes a great dish for busy holiday mornings or taking to a morning pot-luck or pancake feast.

Can this be made ahead of time?
Yes – this breakfast casserole can be made ahead of time. Just whip up everything the night before by placing the potatoes in the dish and getting them ready to bake. Then combine the other ingredients that get added later in a bowl. Cover them both and refrigerate.
Then continue with the recipe in the morning when you are ready to bake. Make sure to set what you prepared out on the counter while the oven is preheating – that way it isn’t going straight from the fridge to the oven.

How to store leftover breakfast casserole
This breakfast casserole works great as leftovers. Just cover the dish with foil or plastic wrap or portion out the remaining casserole into airtight containers. Then keep refrigerated until ready to enjoy again.
To reheat – just microwave for 1-2 minutes or until hot. Make sure you are using a microwave-safe container or dish.

Can other ingredients be added?
You bet – we love to change it up. Try adding leftover rotisserie chicken, ground beef, diced green chiles, salsa, diced bell peppers, sliced mushrooms, or even chopped spinach.

Ingredients for Hashbrown Breakfast Casserole
- frozen shredded hash brown potatoes
- butter – melted
- salt
- pepper
- large eggs
- evaporated milk
- smoked paprika
- minced onions
- granulated garlic
- shredded Colby Jack cheese
- shredded medium cheddar cheese
- real bacon bits or cooked bacon – chopped
- diced ham

How to Make Hashbrown Breakfast Casserole
- Preheat the oven to 400 degrees.
- Spray a 9×13 casserole dish with oil.
- Spread the frozen hash browns in the bottom of the dish in an even layer.
- Pour the melted butter on top and then sprinkle with salt and pepper.
- Bake for 30 minutes or until the potatoes are tender and starting to lightly brown on top.
- While the potatoes are cooking, combine the eggs, evaporated milk, paprika, minced onions and granulated garlic in a medium bowl. Whisk well to combine. Set aside.
- When the potatoes are done, remove from the oven and reduce the temperature to 350 degrees.
- Spread the cheese, ham and bacon on top of the cooked potatoes and stir with a fork. Then spread out into an even layer again.
- Pour the egg mixture over the top of the potatoes.
- Return to the oven and bake at 350 degrees for another 40 minutes or until the center no longer jiggles and the edges are bubbling. You can tent the top with foil if it is browning too quickly but the center still needs more time.

How would I store this for the freezer? Assemble then freeze and pull out thaw then bake?

I’m not sure I would try to freeze it. You need to the hashbrowns, bake for a period of time, and then add the mixture to bake again. I have not tried it without baking the hashbrowns before adding the remaining mixture. I suppose you could bake to completion and then freeze. I have not tried it, so I can’t say what the outcome would be.

This was fabulous! I swapped the meats to 1/2 cooked sausage and 1/2 ham since that’s what I had on hand.very much appreciated the precook on the potatoes in the same dish as the full casserole would be cooked. And, loved the ratio of egg to meat/potatoes – some recipes are too much egg and are not good. Will definitely use this as my go to breakfast casserole. (Recipe halved well too for a smaller group.) We enjoy many of your recipes!

I think it would work fine as long as you really squeeze the moisture out of them before adding – AND reduce the baking time. If you give it a try – please come back and share

I have never tried it with regular milk. I would imagine it would be runnier as the milk is thinner than evap – so it will definitely bake differently and might not firm to a casserole consistency.
