How Many Truffles Does This Recipe Make?
With the ingredients I’m using I usually get about 20 medium-sized truffles.
They are really tasty, so if you have many guests, I recommend making a few batches, as rarely a guest, especially a little one, stops at just one eyeball…
As soon as they are served, they first meet a Woow reaction and then are gobbled up within a few minutes.
Main Ingredients For Halloween Eyeball Truffles
You only need 6 ingredients to whip up these Halloween truffles.
The good news is that all of these ingredients are not strict rules but rather guidelines, you can easily substitute one or another based on what you have and the flavors you crave.
I will share many ideas on how to do so below.
- Oreos – I use Golden Oreos as a base for the truffles as I really like the taste. I use one pack to make 20 servings, but you can use more and different variations of Oreo, they all work and they determine the color of the truffle filling. With Golden Oreos the filling when you bite it is creamy white, with classic Oreos it will be dark.
- Softened Cream cheese – Give full-fat cream cheese some time to soften at room temperature before using. Oreos blended together with cream cheese will make a delicious creamy dough for our eyeballs.
- Food coloring – to turn the balls from boring into Halloween eyeballs. I only use 10 drops and it gives a really strong color. Feel free to use any Halloween color, I keep it simple and use green – either way it is so much fun.
- Vanilla almond bark – one bar will be enough, I melt it and do the coating of the eyeballs to make them look realistic but also to add rich almond vanilla flavor. I am used to getting the bark, but white chocolate (or white candy melts) works perfectly for these eyeballs too.
- Red candy melts – I melt them and draw the blood vessels of each eye with a toothpick to make it look like a bloodshot eye.
- Candy eyeballs – each of our truffles should have a googly eye! Get the medium or smaller size ones, to make sure they don’t take all the space on top of the eyeballs for these fun Halloween Oreo truffles.
Do I Need To Remove Cream Filling From Oreos?
It is completely optional, and you don’t have to remove the cream filling from Oreo cookies before blending or crushing them.
When I use vanilla-flavored Golden Oreos I keep the cream filling. I think it adds flavor to the truffle filling and helps the cream cheese and cookie crumbs to bind better.
But I have to say, if you’re using classic Oreos or double-stuffed Oreos, the truffles may be a touch too sweet.
If you have a sweet tooth it won’t be a problem, but if you don’t, I recommend scraping at least some of the cream filling before crushing the cookies and mixing them with cream cheese.
Kitchen Equipment You Need
- Food processor OR ziplock bag and a rolling pin to crush Oreos into small crumbs
- Hand mixer to combine crushed Oreos and cream cheese for eyeballs’ filling. You can do it manually too if you don’t have one.
- Baking sheet or cookie sheet and parchment paper to freeze the eyeballs before decorating and serving.
- Microwave and safe-to-use bowls to melt the bark and candy melts.
- Toothpicks to draw on the eyes.
- 2 regular forks to help us dip and coat each truffle eyeball.
How To Make Halloween Eyeballs
These Oreo Eyeballs are one of the easiest and super creepy treats you can make for Halloween. Only 20 minutes of prep time before you can pop it in the freezer or serve.
They are such a fun treat, if you have kids, let them help you decorate some! To be fair, even adults will be happy to participate.
The only real challenge with this recipe is the dipping and decorating part.
They sort of require speed. But at the same time, we are making Halloween treats! It doesn’t have to be perfect. Just follow each step as best as you can.
Step 1: Make The Cream Cheese & Oreo Truffles
- Crush Oreos in the food processor until they become fine crumbs. It takes less than 1 minute.
- Transfer the crumbs to a large bowl, and beat in the cream cheese until mixed very well.
- Add the food coloring (as many drops as you desire) and beat again until the color is evenly mixed throughout. For the color I get I use 10 drops of green food coloring.
- Line a baking sheet with parchment paper.
- Roll 1-1/2 tbsp of dough into a ball, place on the prepared tray, and repeat until you have no more mixture left.
- Freeze for 1 hour.
If making ahead, you are safe to freeze the balls for as long as you need, even if it is two weeks or a month.
Step 2: Decorating The Halloween Eyeball Truffles
- Melt the almond bark and red candy melts in two separate microwave-safe bowls. If you are not sure you’re doing it right, follow package directions for candy melts. I’ll also share the 2 common ways to melt bark or chocolate below.
- Remove the truffles from the freezer.
- Dip each truffle ball in the melted almond bark, flip around using two forks, scoop it up with the fork with the bottom part of the truffle facing the bottom, and scrape any excess chocolate from the bottom.
- Return the coated truffle to the lined tray and immediately dip a toothpick in the red candy melts, drag the coated toothpick up the sides of the truffles and make lines all around the truffle from the bottom up to the top middle of the eye, leave space clear on the top for the candy eye.
You’ll have to wipe and re-dip the toothpick every time you make a line, try to work fast.
- Place the candy eye in the center top while the almond bark is still wet, the red lines should stop right at the eye or a little before.
- Repeat with the remaining truffles, working one at a time so the chocolate doesn’t harden before you can finish decorating.
- Let the chocolate set for 5 minutes to harden before serving.
You can also serve immediately some of the truffles and place others in the refrigerator!
Word of caution, as these eyeballs contain cream cheese, they do not sit out well. I would say no longer than 2 hours. So serve them with desserts, or last at your Halloween gathering.
If you use chocolate for coating, it can get sticky after sitting out for longer as well, so try to time it right.
What Is The Best Way to Melt Bark And Chocolate?
There are two ways of melting chocolate, bark, or white candy wafers: double boiler and microwave.
Using a microwave is less intimidating and quicker for beginners but melting chocolate or bark in a double boiler gives you more control and a smoother consistency.
- If you decide to use the microwave method, set the microwave power at 50% and melt the bark/chocolate for 30 seconds, then stir and repeat.
Do these 30-second intervals with stirring until the bark is melted.
Instead of power mode, you can also use the defrost mode if your microwave has it.
- For the double-boiler method, you can buy a double boiler or DIY one using a saucepan and a heat-resistant medium mixing bowl.
Simply pour some water into the saucepan, turn on medium heat, place chocolate or bark bits in the dry mixing bowl sitting on top of the saucepan, and keep stirring until it is fully melted.
Pro trick: If you melt loads of chocolate, there is a special chocolate melting pot by Wilton.
It is not that expensive and it makes melting chocolate-like products and candies a breeze.
Variations And Substitutions For Spooky Oreo Eyeballs
Technically, you can make these sweet fake eyeballs with any filling and coloring you want.
Here are some of my monstrous ideas for Halloween Eyeball Truffles:
- Eyes ideas. Buy more candy melts of different colors and squeeze some on top of the truffle balls before attaching the googly eye. Colored or black M&Ms make great crunchy edible eyes too!
And you can simply draw a pupil dot with an edible marker. Black candy melts are another option to DIY eyes on this Halloween treat.
- Flavor Oreos. You can use Golden, regular Oreos, and even Red Velvet or themed Oreos like chocolate Halloween Oreos with orange filling. I don’t recommend using thin oreos as they don’t have enough filing to create the right consistency.
This choice will affect the flavor and the color of the truffles inside. Using regular chocolate Oreos will color the dark brown, almost black then. Red Velvet Oreos will give a nice rich dark cherry color.
- Bark substitutes. The bark doesn’t contain cocoa, so if you really like chocolate flavor, you can use melted white chocolate or white chocolate wafers. I don’t recommend using milk chocolate since that wouldn’t be white.
I say white because if you want to use any coloring, using milk or dark chocolate will not allow us to make bright colors.
- Sweet tooth? Can add condensed milk instead of cream cheese for the truffle filling.
- Bloodshot effect. To make bloodshot eyes you can also use writing icing, edible markers, or decorator gel in squeeze tubes. Pick red and blue colors for a more realistic effect.
More Fun Ideas
Instead of bloodshot, you can also add some sprinkles on top, it makes a cuter, less creepy truffle ball.
- To take it to the next level you can make different colors of coating for your eyeballs, by melting different chocolate and adding food coloring to it.
So you can make green like little Frankensteins, orange like little pumpkins, black, white, red, blue, yellow – any color.
Halved dark Oreos also make cute wings for the truffles and make them look like chubby bats. Shredded coconut, edible glitter, glow-in-the-dark decorations – endless fun options! All can have a pair or one eye!
- Gluten-free Variation. You can use any gluten-free cookies (Oreo had those too!), and cream cheese is considered gluten-free. I also saw some decorating gels with gluten-free options.
- For extra texture: Add Rice Krispie cereal to the truffle mixture to add some chewy texture.
To be fair, without the terrifying decorations, these chocolate or bark-coated Oreo balls can be just pop-in-your-mouth sweet treats you make during the week.
This opens an opportunity to create more recipes!
Making Oreo Eyeballs Ahead
These Oreo truffle balls are easy Halloween treats that are great for making ahead. They do well in a freezer for weeks and don’t take up much space.
What I would do, especially if you have kids, is to prep the truffles and pop them into the freezer ahead of time until Halloween comes (or a minimum of 1 day ahead), and then I would turn the decorating step into a family activity.
This way we have a yummy sweet treat but also have fun times connecting with our loved ones.
How Long Will Oreo Truffles Keep In The Refrigerator?
The eyeball Oreo truffles are stored well in the refrigerator.
Place the Halloween Eyeball Truffles in an airtight container and they will stay good in the refrigerator for 3-4 days.
You can also freeze them, and freezing can preserve them for up to 3 months!
When freezing truffles place them in an airtight container in a single layer leaving a bit of the space in between each Oreo ball to avoid their coating sticking and later on cracking.
Can You Ship Oreo Truffles?
These Oreo truffle eyeballs do not travel well long distances.
Since the recipe calls for melted chocolate or bark and melted candies, they are not good to ship or transport, especially during hot weather.
They can start melting again, become sticky, and lose their look.
If you need to deliver these sweet treats to Halloween parties, get a cooler, line it with ice packs, and place truffles in an airtight container to transport.
Tips To Make The Spookiest Halloween Eyeball Truffles
- Do not use double-stuffed Oreos or scrape some of the cream out. Otherwise, the filling combined with blended cookies and cream cheese may be too sweet.
- Don’t buy white chocolate chips, they are too thin when melted to cover the eyeballs properly. Use bark, chocolate, or wafers.
- You can leave the balls in the freezer overnight if need be.
- Use medium-sized candy eyes to make sure the proportions are nice and you still have space to draw the bloodshot lines.
- If the almond bark hardens before you put the red lines on, you can heavily dip the toothpick in the red and drag it on the almond bark.
- Do not overheat the bark or chocolate when melting.
- The chocolate is easier to dip into while it is still warm, the cooler it gets the harder it will be to get a smooth coverage, it will start forming chunks. If your chocolate is hardened, add a bit of coconut oil or any vegetable oil, and put it in the microwave for a few seconds. It will soften and you can continue decorating the treats.

What Can I Use Instead Of Food Processor To Crush Oreos?
You truly do not need a blender or food processor to crush Oreos.
Place the cookies in a big Ziploc bag and crush them with a rolling pin until crumbs.
How to Make Smooth Coating?
A fork or a toothpick can help with dipping the truffle balls into the chocolate.
I prefer using a fork, actually, two forks.
Dip each truffle ball in the melted almond bark, flip around using two forks, scoop it up with the fork with the bottom part of the truffle facing the bottom, and remove excess chocolate from the bottom. Transfer to the baking sheet.
But there is another very popular alternative method you can try:
Place a ball on the fork and lower in the bowl with melted chocolate or bark. Lift the fork and wait a few seconds to make sure there is not much dripping.
Move the ball to the pan lined with parchment or wax paper that you prepared beforehand.
You can also use a knife to slide the balls off the fork but it is optional.
Use a fork to lower and remove the dipped balls from the chocolate and a sharp knife to slide it off the fork onto parchment paper.
Why Are My Halloween Oreo Balls Sticky?
If your Oreo balls are sitting out for longer than 2 hours, they will become sticky as the chocolate coating starts to warm up.
Another reason for such stickiness can be the wrong measurements of the filling, too much Oreo cream filling, too much cream cheese, and simply the wrong ratio of the ingredients.
Do not use double-stuffed Oreos or scrape some cream filling.
Why Are My Oreo Balls Cracking and Oozing Out Oil?
If your Oreo truffles start cracking or leave oily marks, it is a temperature issue.
Parts of the balls have different temperatures: the filling is cold after being in the freezer and the melted candy is too hot. It can also be the case when you add some vegetable oil to the mix, this is why I don’t do that.
If you see a crack, pour a little bit of the melted chocolate over, it will cover the crack up.
If your truffles were frozen for more than one hour, let them thaw for just a few minutes before decorating.

- Place the candy eye in the center top while the almond bark is still wet, the red lines should stop right at the eye or a little before. Repeat with the remaining truffles, working one at a time so the chocolate doesn’t harden before you can finish decorating.
- Let the chocolate set for 5 minutes to harden before serving.
