Watching holiday movies is one of my favorite things to do in December and while there’s a long list of ones that I enjoy, I can’t help but continue to love How the Grinch Stole Christmas. So, clearly, that’s my inspiration for making these green Grinch pancakes.
These themed pancakes taste like any other delicious pancake on their own. However, they’re made extra sweet by topping them with a sweet cream cheese icing, green whipped cream, and red heart sprinkles.

How to Make Grinch Pancakes
There are a few steps involved with making this pancake recipe but you’ll find they are all fairly simple. Just make sure to make your glaze and whipped cream before the pancakes so that they’re ready to serve as soon as the pancakes are finished cooking.
Glaze
- Add the cream cheese, confectioners’ sugar, and vanilla extract to a large bowl of a stand mixer with a paddle attachment (or use a hand mixer).
- Beat the ingredients on high speed until smooth.
- Turn the speed of the mixer down to medium and slowly add milk until the glaze has reached the desired consistency.
Whipped Cream
- Pour the heavy whipping cream into a separate bowl.
- Beat the whipping cream on high speed until it thickens and forms soft peaks when you gently lift the beaters.
- Next, add confectioners sugar and vanilla.
- Continue to beat at high speed until you are able to create stiff peaks with the mixture.
- Next, turn the speed of the mixer down to low and add in food coloring in intervals until it reaches the desired shade of green.
- Using a large spoon, place the green whipped topping into a piping bag or ziploc bag with the corner cut off.

- Pour the dry ingredients (flour, sugar, baking powder, and salt) into a large measuring cup or large mixing bowl.

Grinch Pancakes
Ingredients

- 1 cup heavy whipping cream very cold
- ¼ cup confectioner’s sugar
- 1 teaspoon vanilla extract
- green food coloring
Pancakes
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 3 teaspoons baking powder
- ½ teaspoon salt
- 1 egg
- ¾ cup milk or buttermilk
- 2 tablespoon vegetable oil or canola oil
- green food coloring
Decoration
- red heart sprinkles
Instructions
Glaze
- Beat together the cream cheese, confectioner’s sugar, and vanilla extract until smooth.
- Add milk 1 tablespoon at a time until the desired consistency is reached.
- Set aside.
Whipped Cream
- In a large bowl or a bowl of the stand mixer, beat the whipping cream until soft peaks form.
- Add the confectioner’s sugar and vanilla and continue beating until stiff peaks form.
- Stir in a few drops of food coloring at a time until the desired color is achieved.
- Transfer the whipped cream to a piping bag fitted with a large star tip or round tip.
Pancakes
- Add the flour, sugar, baking powder, and salt to large measuring cup or mixing bowl and whisk together.
- Add the egg, milk, and oil to the dry ingredients and whisk until well combined.
- Stir in a few drops of food coloring at a time until desired color is reached.
- Heat the griddle and spray it with cooking spray or an oil spritzer.
- Scoop or ladle the pancake batter onto the hot griddle and cook the batter for 4-5 minutes or until golden brown. You will know when it is time to flip when the top of the pancakes are full of bubbles.
- Flip and cook on other side 2-3 minutes or until golden brown.
- Remove from the griddle and keep warm while repeating with the remaining pancake batter.
- When all the pancakes are done, assemble them by stacking 2-3 pancakes, then spoon on the glaze over the top, and pipe on the prepared whipped cream.
- Decorate with red heart sprinkles.
- Serve immediately.
- Store leftovers in the refrigerator.
