Yes, this salad can be made ahead of time. Simply chop up all of the ingredients and store them in a covered container in the fridge. When you’re ready to serve, just add the dressing and give the salad a stir.
How to remove the bite from onions?
So – onions are a tricky thing. A lot of people love them for their bite and others avoid them for the very same reason. If you are serving this to a large group of people and you want it to be more on the mild side to appease a larger portion of the crowd, there is a way to lessen the bite of the onions.
One way to remove the bite from onions is to soak them in cold water for 10 minutes. This will help to take away some of the sharpness. You can also try cooking the onions on low heat for a short period of time before adding them to the mixture, which will help to mellow out their flavor.

- green bell pepper – diced
- cherry or grape tomatoes – quartered
- red onion diced

- lime juice

Because of the skin on tomatoes, it is very important to have a VERY sharp knife, otherwise, you not only squish the tomato in the cutting process, but the whole process becomes quite frustrating. How to Make Grilled Corn Salad
- Preheat the grill to medium heat and lightly oil the grill grates.
- Brush the olive oil on the corn and season with salt and pepper.
- Cook on the grill, turning occasionally until corn is tender and the char marks are visible.
- Remove the corn from the grill and set it aside while you cut the other ingredients.
- Slice the kernels from the corn cob and add the corn to a large bowl.
- Add the cut bell pepper, tomatoes, and red onion.
- Toss together.
- Gently stir together with the cut herbs.
- Mix the dressing ingredients (lime juice, olive oil, salt, and pepper) and pour over the salad mixture.
- Toss to coat.
- Cover and place in the refrigerator for at least 30 minutes, up to 24 hours before serving.
- Store the leftovers in the refrigerator.

Ingredients

- 6 ears fresh sweet corn
- ¼ cup olive oil
- salt and pepper to taste
- 1 green bell pepper diced
- 1 cup cherry or grape tomatoes quartered
- ½ cup red onion diced

- 2 tablespoons extra-virgin olive oil
- ½ teaspoon salt more to taste
- ½ teaspoon freshly ground black pepper more to taste
Instructions
