Common Questions About Greek Chicken Kabobs
Can I use different vegetables for the skewers?
Absolutely! Feel free to swap out or add any of your favorite vegetables to the skewers. Some popular options include cherry tomatoes, mushrooms, eggplant, and yellow squash. Just make sure to cut the vegetables into similar sizes to ensure even cooking.
What type of skewers should I use?
You can use either wooden or metal skewers for this recipe. If you opt for wooden skewers, make sure to soak them in water for at least 30 minutes before grilling to prevent them from burning.
Can I bake the Greek chicken kabobs instead of grilling them?
Yes, you can bake the Greek chicken kabobs in the oven if you don’t have access to a grill or prefer not to use one. Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil or parchment paper for easier cleanup.
Place the skewers on the prepared baking sheet, making sure they don’t touch each other. Bake for 20-25 minutes, turning the skewers halfway through the cooking time, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Storage
These tender chicken kabobs will make great easy meals later in the week.
Refrigerator:
- Cooked Greek chicken kabobs can be stored in an airtight container or resealable bag in the refrigerator for up to 3 days. Separate the meat and vegetables from the skewers before storing them to make reheating easier.
- If you’ve prepared the marinated chicken and chopped vegetables but haven’t cooked them yet, store them separately in airtight containers or plastic bags in the refrigerator for up to 24 hours. Thread them onto skewers when you’re ready to cook.
Freezer:
- Cooked Greek chicken kabobs can be stored in the freezer for up to 2 months. Remove the meat and vegetables from the skewers and place them in an airtight container or freezer-safe plastic bag. Label the bag with the date and contents before freezing.
- To store uncooked marinated chicken, place it in a freezer-safe plastic bag, removing as much air as possible before sealing. Freeze the chicken for up to 3 months. Keep in mind that the texture of the chicken may change slightly after freezing due to the yogurt in the marinade. It’s best to freeze the chopped vegetables separately in a freezer-safe bag or container.
Tips
The entire family will love these kabobs. They are an easy way to give you an excuse to cook on an open flame!
- Be cautious about marinating the chicken for too long, as it can result in a mushy texture.
- Use a variety of colorful vegetables to make the kabobs visually appealing.
- Rest the kabobs: After cooking, let the kabobs rest for a few minutes before serving. This will allow the juices to redistribute and ensure that the chicken stays moist and tender.
- Serve with tzatziki: Greek Chicken Kabobs are delicious with tzatziki sauce, which is made from Greek yogurt, cucumber, garlic, and lemon juice. Drizzle the sauce over the kabobs or serve it on the side for dipping. Enjoy!

Notes
● Leftover chicken and vegetables can be stored in an airtight container in the fridge for up to 3 days Tips
● Marinate the chicken, but not too long! Marinate the chicken for 30 minutes to 4 hours. This is the perfect amount of time to infuse it with flavor and make it tender. Any longer, and the marinade starts breaking down the chicken, rendering it mushy. ● Soak the skewers: If you’re using wooden skewers, soak them in water for at least 30 minutes before assembling the kabobs. If you have the time, it’s best to soak them overnight. This will prevent them from burning on the grill. ● Metal skewers are lovely, especially if you are busy and tend to forget to soak the skewers! ● Cook the kabobs on medium-high heat: Preheat your grill to high heat and cook the kabobs for 8-10 minutes, flipping them occasionally and watching that they don’t burn. Make sure the chicken is cooked through and no longer pink in the center. ● Add veggies and other ingredients: You can also add vegetables like bell peppers, red onion, and cherry tomatoes to the kabobs for extra flavor and color. Be sure to cut the vegetables into similarly sized pieces for even cooking. ● Rest the kabobs: After cooking, let the kabobs rest for a few minutes before serving. This will allow the juices to redistribute and ensure that the chicken stays moist and tender. ● Serve with tzatziki: Greek Chicken Kabobs are delicious with tzatziki sauce, which is made from Greek yogurt, cucumber, garlic, and lemon juice. Drizzle the sauce over the kabobs or serve it on the side for dipping. Enjoy!
