My friends, it is no secret that I love cookies. Almost every week we have some sort of cookie in the house.
My favorite are ones that are not only easy to make, but are super soft and chewy. Which is why these Gooey Butter Cookies are made again and again.

I love them because they only take a handful of ingredients to make and require very little chill time. Not only that but because they are made with cake mix, it is pretty hard to mess these up.
No need to worry about them spreading too much or going flat. These turn out thick and chewy every single time.
I also really love that they are so similar to my Chocolate Crinkle Cookies – but even easier to make. I really love those crinkle cookies and wish I could have them in the house ALL THE TIME.
But with these, I can change it up, pick different cake mix flavors – switch the yellow mix to chocolate and be pretty darn close to those crinkle cookies when it comes to flavor and texture.

What is the best way to store leftover butter cookies?
I place them in a large airtight container and keep them at room temperature. They should stay soft for up to 4 days. (that being said, ours are usually all gone within 48 hours- max)
Can butter cookies be frozen?
You can freeze these cookies and they will stay good for 3-4 weeks. Just let them cool to room temperature before placing them in a zip-top bag or airtight container before freezing.

HOW DO YOU MAKE Gooey Butter Cookies?
- Combine the cream cheese, butter, egg, and vanilla in the mixer bowl and beat well until combined and fluffy.
- Stir in the cake mix until fully incorporated.
- Cover the bowl and chill in the refrigerator for 30 minutes.
- Preheat the oven to 350 degrees.
- Line baking sheets with parchment paper.
- Roll tablespoon-sized balls of dough between your hands and then roll them in the confectioner’s sugar before placing them 1-2″ apart on the prepared baking sheet.
- Bake for 10-12 minutes, they will be puffed and slightly soft when done.
- Sprinkle more confectioner’s sugar on top if desired.
Should I use salted or unsalted butter?
This is really a personal preference. If you are happy with just a little salt to cut the sweetness, then use salted butter.
I usually use whatever I have on hand & I really don’t pay too close attention to what butter I have. But I typically keep salted butter on hand & I love that little bit of extra salt with the sweet in this recipe.
These days with groceries being more difficult to find – I basically get whatever the store has available at the time and make it work.

Why do the butter and cream cheese need to be room temperature?
If the butter and cream cheese are cold, they won’t blend evenly with the room-temperature ingredients. This can create little pockets of cream cheese and butter when what you really want is for the fats to be evenly distributed throughout the dough.

Can I use a sugar substitute?
I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.
Can this recipe be doubled?
You can, and we do it often. If 24 cookies aren’t quite enough – I completely understand. This recipe doubles well and I highly encourage it if you are making these for a party, giving to neighbors, or for the holidays.
