Do you love Funfetti? We sure do & look for any excuse we can to add those colorful sprinkles to just about any occasion possible. This time we had a birthday to celebrate & so we whipped up these super easy & delicious Funfetti Cake Mix Bars that were the hit of the celebration.
Have you ever made cake mix bars before? Our family loves them because they are like a brownie that tastes like cake – with a whole lot of mix-ins added in there too. They are absolutely delectable & my “go-to” dessert when I am tight on time.

To make these all you need to do is combine all the ingredients & mix until you get a dense batter. It will actually be more like a cookie dough that you can press into the prepared pan.
Then bake for about 20 minutes. The hardest part is waiting for them to cool completely before enjoying. I can tell you that these are the treat that disappears the fastest when I take them to parties. YUM!
Here are some commonly asked questions…
Does it matter what flavor of cake mix I use?
Sort of, but not really. You can make this with really any flavor, but we find that we have the best flavor & pop of color when using a yellow cake mix. You can also use a white or vanilla cake mix for these as well.
What sprinkles do you recommend?
Please don’t use things like sanding sugar (which oddly enough is being advertised as sprinkles on the packaging by some brands. That won’t work – it’s just colored sugar.
You also shouldn’t use nonpareils. These are quick to let that color bleed & you won’t get the same effect. The best thing to use are these rainbow jimmies – which are traditional for FUNFETTI.

Funfetti Cake Mix Bars
Ingredients
- 1/3 cup Rainbow Jimmies
- 1 box Yellow Cake Mix or white or vanilla
- 1/4 cup Canola Oil
- 1 egg - beaten
- 1/4 cup milk
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 350 degrees
- Grease 8x8 baking dish - set aside
- Combine cake mix & sprinkles in a large bowl
- Using a large, stiff silicone spatula, mix in oil & egg
- Drizzle in milk & work into the batter. (Mixture will be super thick like cookie dough)
- Add in white chocolate chips
- Transfer to prepared dish & press into place
- Bake 25-30 minutes - don't over bake.
- Allow to cool at least 30 minutes before cutting & serving.
