Common Questions About Famous Amos Cookies Recipe
Can I use vegetable oil instead of shortening?
In a word, no. Shortening is preferred for its ability to keep the cookies crisp and you need the consistency for the dough to hold together.
I don’t recommend substituting it with vegetable oil. Be mindful that the texture could be slightly (or more than slightly) different when making a change like that.
How do I get my cookies crispy like Famous Amos?
The key to achieving that signature crispness is to let the cookies cool completely on a cooling rack. This stops the baking process and allows them to firm up nicely.
You can test out the difference yourself. Simply place some on the wire rack and some on a flat surface to cool. You’ll be surprised!
Can I skip the chilling step?
Chilling the dough is crucial for preventing the cookies from spreading too much in the oven. It’s a step you won’t want to skip if you’re after that perfect texture.
Storage
I like to keep a resealable bag of Famous Amos cookies right on the counter where everyone can’t miss them. They disappear real quick that way!
Refrigerator
Not recommended for baked cookies as it can make them soft.
Freezer
You can freeze the cookie dough wrapped in cling wrap for up to 3 months. Bake from frozen, adding a couple of minutes to the baking time.

Janet says
This may be a dumb question, but do you remove the cookies from the sheet to the cooling rack to cool? Or leave baked cookies on the sheet and place the sheet on the cooling rack to cool?
Gina Kleinworth says
You will remove the cookies from the baking sheet and transfer them to the cooling rack so that they can have airflow around the whole cookie and cool properly.
