Who loves strawberry shortcake? Growing up in Southern California, we had access to some of the freshest strawberries for a good portion of the year.
One of my favorite things to make with those strawberries was, of course, a strawberry shortcake. But over the holiday weekend, I decided that I wanted to take that nostalgic flavor & change it up a bit. I made these Easy Strawberry Shortcake Cookies that were AMAZING!
Everyone loved these! But honestly, who wouldn’t when you have cookies topped with creamy frosting & fresh strawberries? These cookies were the perfect addition to our celebration & they were so incredibly easy to make.

I started with my classic, soft & chewy sugar cookie recipe. Once they were cooled, I used new Pillsbury™ Filled Pastry Bags in vanilla to add the frosting to the top of each one. Then I added fresh strawberries.
I also decided that some fresh blueberries would be pretty too. (especially given the holiday) That’s what I love about these cookies, they are not only delicious but versatile too. You can’t beat cookies topped with frosting & fresh fruit.

Plus it’s filled with our favorite Pillsbury frosting, which really helps when making treats quickly. No one wants to spend all day in the kitchen when the weather is so nice.
If you wanted to save some time, you could even pick up some sugar cookies from the bakery at Walmart while you are there & eliminate the baking altogether.
That would make this recipe even faster for those times when you have guests showing up in a couple of hours & have so much to do.

Can we just talk about the flavor of these cookies for a moment? The combination of the soft & chewy sugar cookie & that rich & creamy frosting is enough to make my eyes roll to the back of my head.
