My family loves salad & they love spicy food. So what better combination than to put the two together to make a southwest chicken salad that is loaded with sriracha bbq chicken. Needless to say, this didn’t last long. The family was crazy for it. The best part is that it was super easy to make & it pairs so well with so many of our favorite recipes. It’s a win-win in my book!
Easy Southwest Chicken Salad
This was so incredibly easy to make. We just brushed our chicken tenderloins with a little sriracha sauce during the last 5 minutes of grilling. It gave them a nice bold flavor that paired well with the southwest flavor of the salad. Then sliced them up & added them to the other ingredients. Toss & serve- that’s what so great about salad.

Southwest Chicken Salad
Ingredients
- 1 Eat Smart Gourmet Vegetable Salad Kit- Southwest includes corn, cheddar cheese, tortilla strips & southwest dressing
- 3 cooked bbq chicken tenderloins - brushed with a light layer of sriracha sauce during the last 5 minutes of grilling
- 1 cup grape tomatoes
- 1/2 cup black beans
- 1/4 cup sliced olives
Instructions
- Combine salad, tomatoes, beans & olives in a large mixing bowl
- Slice BBQ chicken & add to bowl
- Drizzle with dressing included in the salad kit & toss to combine
- Enjoy immediately
