My friends, I have found a favorite when it comes to desserts. You see, in an effort to be more conscious of my food choices, I have been on the self-plan for counting points. By doing this it helps me identify just how much I really shouldn’t be eating.
It has also helped me to watch portions better & understand how things can add up so quickly. My issue has always been sweets. I can do really well all day long & eat nothing but zero-point foods. Then at dinner & start pushing the limits. But then I really crave dessert.
***NOTE – WW has changed the way they calculate points NUMEROUS times since this post was originally written in 2017. Please refer to your current calculator for the most updated plan before making this recipe for the most accurate point count.
But man, it’s so hard to enjoy things anymore when I know how many points it’s going to cost me. It really does take the pleasure right out of whatever dessert I want to have.
So I decided to combine a couple of different recipes that I have seen on a multitude of sites for these Easy Skinny Ice Cream Sandwiches. It’s been floating about for a while now & I just had to see for myself.
They are just 2 points per rectangle & don’t taste skinny at all. I can “indulge” without really indulging & leave all the guilt behind.

HOW DO YOU MAKE Easy Skinny Ice Cream Sandwiches?
- Line a 9×13 pan with parchment paper (or you can use a 9×9 square).
- Place 10 graham crackers (full rectangles) in the bottom of the pan.
- In a large bowl, combine whipped topping & yogurt until smooth.
- Pour over graham crackers & smooth out.
- Place remaining graham cracker rectangles on top.
- Freeze at least 6 hours.
- Thaw on the counter approx 15 mins before cutting.

With just 3 ingredients for these, it makes it pretty simple. I usually have my daughter whip these up after breakfast so they are ready for us to enjoy after dinner. It’s just low-fat yogurt, low-fat whipped topping & graham crackers. Yep- that’s it.

I mix it up with different flavors of yogurt & even picked up some chocolate graham crackers for variety. Sometimes we like to add other things like flavor syrups – but those do have & add calories which then changes the point count. So we save those for the weekend & try to not do it too often.
Are weight watchers desserts healthy?
Honestly, I’m not an expert on healthy eating. While this recipe was created with points in mind, I don’t make a ton of WW Desserts or weight watchers recipes in general. We typically find something that works for us & that the family likes & we stick to it.
I don’t really follow weight watchers as strictly as I should but I feel that when I find little things (like these ice cream sandwiches) that help me make better choices, that isn’t a bad thing.
Do I still indulge in candy, cake & goodies? Yes, in moderation. All things in moderation.
Can I replace the graham crackers with something else?
Sure, can. If you want to make these round, try these Nabisco Famous Chocolate Wafers with a dollop of the semi-frozen mixture.
You will have to still whip up the filling & then freeze it in an airtight container. Then scoop out what you need to make these mini sandwiches.
How do these equal 2 points?
Make your cuts at the perforations on the graham crackers. This will make your sandwiches into small rectangle-shaped bars. Those bars make these 2 points.
You should be able to make approx 20-21 bars in this batch. If you don’t mind enjoying 4 points – just cut them into squares as pictured here.
Can I use different flavored yogurt instead?
Yes, absolutely, providing that you get just the flavors & not the fruit on the bottom, which contains a ton of added sugar.
Keep in mind that the calorie & sugar content might increase if you pick a different flavor, which would probably change the point count a bit too. That being said, we do switch it up occasionally & it is delicious.
How long can I store ice cream sandwiches in the freezer?
I typically like to get through them in about a week. My daughter will whip some up on a Friday morning so we have them for dessert that night.
I will pull them out for dessert a few times throughout the week & over the following weekend. I would think they would stay relatively fresh for a couple of weeks or more if you keep them stored in an airtight container.

We have these pretty much every night. I love that this recipe makes 20 sandwiches- so there’s enough for the 5 of us for 4 nights.
Definitely, a great way to help me feel like I’m not depriving myself while trying to make better choices. Because if I’m going to be successful at something, I have to enjoy it enough to WANT to do it.

Instructions

Hi Jen, Yes, as I mentioned in the post, you can change the yogurt flavor- however, this also changes the calories & sugar content in the yogurt, so the point count will probably increase. But if you are just enjoying these without watching points – then that is always a great option.

I was all on board and very excited about this recipe until I saw that you use artificial whipped cream (Cool Whip basically) in this. Yuck! No thanks. I will try it with real whipped cream that I make myself and see how that goes.

By all means, swap them out, Jenna. But keep in mind that if you are counting points – whipped cream is 2 points per tbsp – which would negate the 2 points per bar for this recipe. But it is certainly an option if you aren’t wanting to keep these skinny.

Hi there. I make this with regular low-fat yogurt, but you can give it a try with Greek low-fat if you like. Obviously, that will change the overall flavor of these, but if you already like Greek yogurt, then that shouldn’t be an issue. You can also try these with non-fat varieties, but it might lack in the overall creaminess once frozen.

So I made these today and was so excited about a 2 point snack. I couldn’t find nutritional information listed in the recipe. I went to enter in each item individually and wow, this is definitely NOT 2 or 4 points. I got low-fat graham crackers instead of the regular ones the recipe recommended. One full graham cracker broke in half (one square on top and one on the bottom) was 3 points alone. When I put in the low-fat yogurt? 5 points for 1/2 cup. And the low fat cool whip? 1 point for 2 tbsp.
I’m not sure how these could ever be 2 or 4 points per square. I feel bamboozled. And am now over my points for the day.

I’m sorry you feel “bamboozled”. This recipe was written several years ago & based on the calculations I had at that time – these are 2 points for 1 small rectangle. As you are probably aware, WW has several different ways they count points & several different point charts that seem to be ever-changing. Unfortunately, I have yet to find charts or apps that give the exact same counts for the exact same recipes. I don’t think that 1″x2″ rectangle could possibly contain a 1/2 cup of yogurt. For that size rectangle, I would think the yogurt + whipped topping would only measure approx 2-3 tbsp (combined) at best. You can also use non-fat versions for the filling if desired.

The full printable recipe with the measurements and the full instructions is located just above the comments section. In rare cases, I have seen the recipe card disappear with certain browsers, but most of the time it just gets missed when scrolling quickly.

This recipe according to WW recipe builder, comes to a whopping 5 points for that tiny, skinny piece!!! Even with fat free ingredients instead of low-fat, it still comes to 3 points per piece, not two! Please check your points. People rely in you to fact check and report points honestly!

Nothing dishonest here. I’m sorry you feel that way. This post was written many years ago – unfortunately, their point system is ever-changing – I think they have changed it at least 3-4 times in the span of time since I wrote the post. I no longer follow them for this reason & therefore have not kept up on what these would calculate by their system today. Unfortunately, I have yet to find charts or apps that give the exact same counts for the exact same recipes. Additionally, the pins & graphics you find on the internet & social media were created when the post was written – it would be impossible to go through & update & remove those millions of images wherever they may be. That all being said, I can only write with what I know at the moment & it is up to each individual person to calculate & manage their diet as they need.

unpopular opinion I guess…but I didn’t like these at all. I like Greek yogurt but its too tart so I need a packet of Splenda added in. I mixed with the lite cool whip and froze it, but I just don’t like the consistency. its icy and not creamy, and def not sweet like ice cream. I added cocoa powder for some flavor, maybe that changed things? but I don’ t see how. they definitely need some more flavor added , and more sweetener.

Ok so I’m reading all the comments and I see the confusion. I’ve been an on again off again WW guru since 2004. Points have changed over the years in so many directions. It is now January 2023 and I just rejoined for 6 months. The app no longer gives you different colors to follow. It appears there’s just one WW plan. With that being said .. a large container of regular cool whip (since it’s hard to find low fat or nonfat sometimes) is 50 points. 15 regular Graham crackers is 14 points. I used members mark fat free Greek yogurt for 0 points. I cut up frozen cherries from Walmart for 0 points and threw them in the mixture. I was able to make 15 yummy desserts for 4.2 points each. The ice cream is really big and definitely worth the 4 points. NOTE: just mix up non fat Greek yogurt with frozen cherries cut up for a 0 point treat instead. I eat this literally every day for lunch !!! Good luck ladies !! Nothing tastes as good as thin feels 😊
