What is your favorite side dish when it comes to dinner? For me, it has always been scalloped potatoes. The tender potato rounds smothered in a thick & cheesy sauce is great with just about anything if you ask me.
Since I am all about making my recipes quicker & easier, I decided to see if I could use my Souspreme Multi Pot & make my favorite dish by pressure cooking it instead. I’m so glad I did because this turned out amazing!

For as long as I can remember my family has been serving scalloped potatoes. The layers upon layers of cheesy goodness can’t be matched by anything else. This recipe is definitely the perfect comfort food.
I love that scalloped potatoes go with just about any dish. We typically enjoy these for the holidays & making them in my Souspreme Multi Pot makes it so easy to keep my oven free for things like the main dish.

Now, that being said, pressure cooking these scalloped potatoes makes it so simple to enjoy these on any weeknight. I no longer need a ton of time to serve these alongside fried chicken or pork tenderloin.
One of the things I really love, using my Souspreme Multi Pot for recipes like this make clean up so quick & easy too. I sure love it when I can save time in the kitchen.
Now, one thing I really like to do is change up our old family recipes just a little bit. For this recipe, I decided that since the family is so crazy for the flavors of chicken, bacon & ranch, that it would be great to add bacon & ranch to these potatoes.
It was really easy & absolutely delicious. You can’t go wrong with adding bacon to something that is already as delicious as scalloped potatoes.

The Souspreme Multi Pot, made by Fissler, is a multi-cooker that features 18 one-touch cooking programs! One of those is sous vide, which is something I have never seen before in a multi-cooker. I love that it can steam & sauté & ferment, meaning that it cooks soups, meats, grains, beans, yogurt, dough, cake & more. I’m really excited about that.
What is the sous vide method of cooking?
Sous vide is a method of cooking in which food is placed in a plastic pouch or a glass jar and cooked in a water bath for longer than usual cooking times at an accurately regulated temperature.
What is the best way to store leftover scalloped potatoes?
After serving, place any leftover potatoes in an airtight container or cover the pan with foil or plastic wrap. Be sure to label with the date before refrigerating. To reheat, just place on a microwave-safe plate, cover & microwave for 45-90 seconds or until heated through.
How many can this serve?
This recipe feeds approx 6-8 people. That being said, it is the perfect portion for my family of 5 with just enough leftover for the lunch next day. We have 3 adult or almost children, so the appetites are a bit different from when they were little.

Can this recipe be doubled?
Due to the space constraints within the pot, I don’t think you could fit 2 pans of potatoes in there. For this recipe doubling isn’t advised.

HOW DO YOU MAKE Easy Scalloped Potatoes?
- Combine evaporated milk, milk & ranch seasoning packet in a bowl & whisk well.
- Layer half of the potato slices in the bottom of a 7-8″ deep dish baking pan.
- Top with half of the bacon crumbles & a 1/2 cup of the cheese.
- Pour half of the milk mixture over the potatoes.
- Repeat the layers with the remaining ingredients.
- Cover with foil.
- Using a foil or silicone sling, place in the bottom of the pot on top of your trivet.
- Add in water & place the lid on.
- Cook on the rice setting for 40 minutes. Quick release when done.
- Carefully remove with sling & uncover.
- *Opt – top with additional cheese & broil for 2-5 minutes to brown the cheese before serving – or you can use a small butane torch.
- Sprinkle with Parmesan cheese & parsley prior to serving.
What are the best potatoes for scalloped potatoes?
For this recipe, Yukon Gold is preferred. But you can also use russet potatoes. Just increase the cooking time by 2-3 minutes.
What is the difference between scalloped potatoes & au gratin potatoes?
It used to be that au gratin potatoes were known for their crispy baked top & that meant there was cheese involved. The origin of scalloped potatoes & their name is a bit unknown but they typically didn’t include cheese.
These days our love affair with cheese has made these two recipes basically interchangable because the recipes were already so similar & we tend to add cheese to just about everything. So no matter what you call them, you still get these delicious potato rounds smothered in a cheesy cream sauce. You can’t beat that.
Do I have to broil the potatoes at the end?
This is a personal preference. I happen to like that broiled cheese covering the top. But you can add panko, fried onions or wonton strips to the top instead.

Easy Scalloped Potatoes
Ingredients
- 2 pounds potatoes (about 5-6 medium)
- 12 ounces evaporated milk
- 4 ounces milk
- 1 pkt ranch seasoning packet (1 ounce)
- 2 cups shredded cheddar cheese
- 1 cup cooked – chopped bacon
- 1-1/4 cups water
- 1/4 cup Parmesan cheese & 2 tsp parsley for garnish – opt
Instructions
- Combine evaporated milk, milk & ranch seasoning packet in a bowl & whisk well.
- Layer half of the potato slices in the bottom of a 7-8″ deep dish baking pan.
