Dark Chocolate Pistachio Truffles are made with just 3 ingredients. So easy to make, these are perfect for holiday parties, potlucks or neighbor gifts.
One thing I love to make each holiday season is truffles. They are incredibly simple & are a huge hit with everyone.
Every time I bring them to a holiday gathering they are one of the first things to disappear.
Instead of making my usual chocolate-covered truffles this year & decided to mix it up a bit & try a couple of new things with them to create what I think are my best truffles yet.
You see, the whole house is crazy for pistachios and the hubs definitely prefers dark chocolate over any other kind. Plus it is so infrequent that I actually make treats using dark chocolate, it was high time I changed that.

These really are just so incredibly easy to make. If you can blend melted chocolate with cream cheese, you are golden.
I love these because not only are they easy but addictively delicious too. I mean – dark chocolate and pistachios are AMAZING!
Here are some commonly asked questions
Why do I need to use premium chocolate?
When working with chocolate, always use the best quality possible that you can afford. The less expensive the chocolate, the more fillers and parabens are added to it.
This is especially true when it comes to dark chocolate. The better quality chocolate will melt easier and give an overall better final result.
Can this recipe be doubled?
Absolutely! If you are bringing this to a party or making a bunch of goodie plates for the neighbors, I highly recommend doubling this recipe. These are a favorite because they are so easy and delicious.
What premium chocolate do you recommend?
My favorites are Ghirardelli & Lindt. But I also use Guittard.
What is the best way to store leftover truffles?
Keep any leftover truffles refrigerated in an airtight container for up to 1 week. I like to let them sit at room temperature for about 15 minutes before enjoying again as they can get pretty firm when refrigerated.
Can I use low-fat cream cheese?
You can use low-fat cream cheese for these truffles. But just know that they will be a bit less creamy than the full-fat version.
HOW DO YOU MAKE DARK CHOCOLATE PISTACHIO TRUFFLES
- Melt dark chocolate chips in a double boiler. Set aside.
- Place cream cheese in mixer & beat until creamy.
- Blend in melted chocolate.
- Transfer to an airtight container & refrigerate until firm.
- Shape into balls.
- Roll in chopped pistachios to coat.
- Refrigerate on a lined baking sheet for at least 1 hour to firm up.
- Store in a tightly covered container in the refrigerator
Pistachio Truffles
Can I use a different type of chocolate?
Yes, you can use a different type fo chocolate. This recipe works well with milk chocolate or semi-sweet chocolate. But I do highly recommend the dark chocolate and pistachio combo.
To make Dark Chocolate Pistachio Truffles you will need…
- Premium Dark Chocolate
- Cream Cheese
- Roughly chopped pistachios
Do I have to use a mixer?
Because this recipe needs to be blended well, I highly recommend using either a stand mixer or a hand mixer. You could use a whisk I suppose, but that will be quite an arm workout.

Why does the cream cheese need to be at room temperature?
This is really important. If you try to blend the melted chocolate into cold cream cheese, you will have streaks of chocolate throughout semi-brown cream cheese. It just doesn’t work.
To get the chocolate to completely blend into the cream cheese and to get the cream cheese to whip into a super creamy texture – you need to make sure the cream cheese is not cool at all.
Why do I have to chill the mixture after it is mixed?
Chilling AFTER the mixture has been mixed helps to firm it so it can be scooped and rolled in the pistachios. Otherwise, you have more of a dip, rather than something that can be molded and will hold shape.
Can I use another type of nut?
You can, and we do it often. Making this with chopped almonds, walnuts, macadamia nuts or pecans is a great idea.

Dark Chocolate Pistachio Truffles
Ingredients
- 2 cups Premium Dark Chocolate top quality dark chocolate is a MUST
- 8 ounces Cream Cheese near room temperature
- 1 cup roughly chopped pistachios
Instructions
- Melt dark chocolate chips in a double boiler. Set aside to cool to almost room temperature.
- Place the cream cheese in a mixer & beat until creamy.
- Blend in melted chocolate.
- Transfer to an airtight container & refrigerate until firm. (at least 2 hours)
- Shape into balls, scooping with a melon baller works well.
- Roll in chopped pistachios to coat.
- Return to the baking sheet. Refrigerate on the lined baking sheet for at least 1 hour to firm up.
- Store in a tightly covered container in the refrigerator.

That’s really a personal preference. If you like a little salt paired with the sweet- then slated works great. Otherwise, you can use unsalted.

What can you use instead of cream cheese?

Well- if you want to remove the cream cheese – this becomes an entirely different recipe with a different set of steps. Normally I would recommend one of my Oreo cookie-based truffle recipes, but those also call for cream cheese – except this one here https://www.kleinworthco.com/holiday-nutella-bites/. That one uses Oreo Cookies but also calls for Nutella instead of cream cheese. There are many other recipes for truffles without cream cheese created by my colleagues that can be found using a quick Google search if this other one doesn’t work for you.
