It is baking season in our house. Each and every day we have some sort of goodie being made and the whole house smells absolutely incredible. It makes this time of year so very special. Today we are making these Dark Chocolate Peppermint Cookies.
Growing up my mom was always in the kitchen making some sort of goodie. When I was really little she decorated wedding cakes professionally, so there was always cake happening. But come the holiday season she went into fudge and cookie mode. Needless to say, I was a pretty happy kid because the treats were endless.
Time in the kitchen baking is one of my favorite memories of my years with my mom. She taught me everything I know about baking. One of our favorite little goodies to make for friends and family were these Dark Chocolate Peppermint Cookies.
Every time I am baking in the kitchen it reminds me of the moments we had together and all those cherished memories come flooding back.

HOW DO YOU MAKE DARK CHOCOLATE PEPPERMINT COOKIES?
- Whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- Beat butter and sugars together in a large mixer bowl.
- Add eggs and Nielsen-Massey Pure Peppermint Extract. Mix.
- Add in the dry ingredients.
- Fold in dark chocolate chips and peppermint chips.
- Cover and chill at least 2 hours.
- Roll dough and bake.
- Press a few extra chocolate and peppermint chips into the tops before they cool after baking.

These cookies have more brown sugar than granulated sugar, making them super thick and chewy. I don’t know about you, but thick and chewy cookies are my absolute favorite.

HOLIDAY PEPPERMINT COOKIE RECIPE
Dark Chocolate Peppermint Cookies
Ingredients
- 1 tsp Nielsen-Massey’s Pure Peppermint Extract
- 1 cup all-purpose flour 140g
- 2/3 cup cocoa powder 93g
- 1/2 tsp baking soda
- 1/4 tsp salt
- 10 tbsp butter
- 3/4 cup packed brown sugar 143g
- 1/4 cup granulated sugar 48g
- 1 egg room temperature
- 1-1/4 cups dark chocolate chips 188g
- 1/2 cup peppermint bark chips 75g
Instructions
- Whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- Beat butter and sugars together in a large mixer bowl.
- Add eggs and Nielsen-Massey Pure Peppermint Extract. Mix well.
- Slowly add in the dry ingredients.
- Fold in dark chocolate chips and peppermint chips.
- Cover and chill at least 2 hours or up to 48 hours.
- When chilled, preheat the oven to 350 degrees (180 degrees C)
- Roll dough, making sure the balls are slightly taller than they are wide.
- Bake for 10-12 minutes or until the tops are just set.
- Press a few extra chocolate and peppermint chips into the tops before they cool after baking.
- Cool on baking sheet 5 minutes before transferring to a wire rack to finish cooling completely.
