Because of the moisture in the cucumbers, it can be common for the sandwiches to become soggy after some time. Here are some tips for preventing that from happening.
- Use English cucumbers – they have much smaller seeds, and less moisture
- Add the spread to both pieces of the bread – making a moisture barrier between the cucumber and the bread.
- After slicing the cucumber, lay the slices on a paper towel to help soak up any excess moisture that could end up in the sandwich.
Can these be made ahead of time?
Yes – sort of. I recommend prepping all of the components – slicing the cucumber, preparing the bread and mixing the spread ahead of time. Then keep them all refrigerated separately until ready to assemble. Make sure to let the spread come to room temperature before assembling so that it is easily spreadable.

- make the spread thick
- cucumbers must be thinly sliced
- use a mandolin to make uniform slices (very carefully and always use the safety guard)
- use English cucumbers because they are seedless or have incredibly small seeds – they also have thin skin, eliminating the need for peeling.
- salt and pepper is optional – but highly recommended
- crusts are optional – I typically leave them on when serving to just the family and cut them off for presentation purposes when serving for a crowd.

How to make Cucumber Sandwiches

- Stir in the mayonnaise, dill, salt, and pepper until creamy and well combined.
- Peel and thinly slice cucumber if using an American cucumber. If using an English cucumber, this isn’t necessary.
