WOW – it sure has been a while since I talked Easy Family Dinner Ideas. Today I thought I would share with you one of our favorite dinners- these Crock Pot Chicken Tacos.
This is a “go-to” recipe for us because not only is it easy – but it’s so delicious that rarely do we have much in the way of leftovers. I can take 5-10 minutes late in the morning and toss all the ingredients in the crockpot and just let it go.

I usually have the second cooker going a bit earlier in the morning to make the refried beans and the house smells like our favorite restaurant within just a couple of hours.

We used to always make this when my mom would travel up here for a visit. It was on her special request list every time.
Now the recipe calls for 6-8 pieces of chicken. My kids eat a TON! So there usually isn’t a whole lot left over.
But once in a while I make a double batch and we LOVE to use it in so many leftovers. You’ll have to scroll down to the lower portion of this post for more great recipe ideas to use this chicken and for pairing ideas too.
Here are some commonly asked questions
Can I use frozen chicken?
Yes, frozen chicken will cook fine. I have heard that many feel it is unsafe to cook frozen chicken in the slow cooker because it takes so long to come to full cooking temperature, leaving the chicken at a level where bacteria can grow. Please keep this in mind when preparing.
What Crockpot do you use?
I have multiple that I have collected throughout the years. It really depends on the quantity I am making. Please see the list below.

HOW DO YOU MAKE Slow Cooker Pulled Chicken Tacos?
- Combine chicken, beer, apple, onions, garlic, salt and pepper to the slow cooker.
- Cook on high for 4-5 hours or low for 5-6 hours – stirring & turning every few hours.
- You will know it’s done when it is tender and falls apart when pierced with a fork.
- Remove & shred in a large bowl. Add to your tacos with your favorite taco ingredients.
- *Note- all slow cookers cook differently – watch your time as you get closer to that 6-hour mark. It may cook faster.
What is the best way to store leftover slow-cooker chicken?
I transfer the shredded chicken to an airtight container along with a little bit of the juices and refrigerate for up to 4 days.

Can this recipe be doubled?
You can, and we do it often. I usually add about an hour or more to the cooking time when doubling this. I also like to cut the chicken up into large chunks – usually 3 pieces per chicken breast so it cooks a bit faster.

Ingredients
Chicken
- 6-8 boneless skinless chicken breast
- 12 ounces beer flavor of your choosing
- 1 apple cut into 4 pieces & the seeds removed
- 2 tbsp minced garlic
- 1 tbsp minced onions
- salt/pepper to taste
*Taco pairings
- tortillas, refried beans, cheese, tomatoes, sour cream, lettuce - anything you like to add to your tacos
