Hi, I’m Ava & I’m so excited to be back here today to share with you this super yummy chicken recipe I created. My parents vow that I won’t leave the house without knowing how to cook properly. The other day I got the opportunity to put my training to use when I made this chicken. Crispy on the outside & tender & juicy on the inside, the whole family was raving over this Crispy Sriracha Cheesy Chicken Bake. It was so tender that I didn’t even need a knife, it cut so easily with my fork. My mom already had me make it a couple more times since the first time I made it because it goes so well with a variety of sides. I really like it with buttery rice & peas, but we also had it with green beans & mashed potatoes.

Now, I have to tell you, this chicken is so easy to make. I just coated the trimmed chicken in the sriracha, cheese & mayo mixture I created. Then I dredged it in a mix of panko & buttery Ritz crackers. I made sure I baked it on a baking rack to get maximum airflow because my brother really doesn’t like it when the bottom of the chicken is soggy. This really worked well to keep the chicken crispy on all sides. It was super simple for this whole dinner to come together. I got the rice going in the cooker just after I popped these in the oven. Then I had enough time to wash all my prep dishes & get my veggie prepared & dinner was done. I love it when dinners are easy like that.

Ingredients
- 4-6 boneless skinless chicken breasts
- 1/2 cup mayonnaise
- 1/4 cup shredded cheddar cheese
- 2 tsp Sriracha
- 1 cup panko
- 1 cup crushed Ritz crackers
Instructions
- Preheat oven to 425°
- Line a baking sheet with foil & then place an oven-safe baking rack on top
- Combine mayonnaise, cheese & sriracha in medium bowl.
- Mix panko & crushed crackers in another bowl
- Dip each piece of chicken in the mayo mix to coat & then dip in panko mix making sure all sides are coated
- Arrange chicken on baking sheet.
- Sprinkle with additional panko mix
- Bake until chicken is thoroughly cooked, about 30-40 minutes depending on your oven.
