I sure love easy dinners! How about you? One of my favorite things to do when we have had an exceptionally busy week is finish it off with an appetizer spread for our dinner. It’s so nice to just pick & nibble on tasty little bites & have a light load of dishes when we are done. Who’s with me on that? I think we can all agree that minimal dishes after a long hard day is a good thing. Since this week was exceptionally busy, I handed the snack preparations over to the hubs & the kids this time. Sometimes it’s great to just delegate instead of running yourself ragged. I gave him some recipe inspiration & sent him off on his way. One of the awesome things he came up with? These Creamy Chicken RITZ Nachos that were absolutely delicious!
Creamy Chicken RITZ Nachos
I had just made a run over to Fred Meyer where they had a huge display of RITZ Crackers. I really love that Fred Meyer always makes it easy for me to find all the things I need each week & the selection is great. Since I really love that super yummy, butter flavor of RITZ Crackers, I picked up a couple boxes. They are so great in countless recipes. Well, one of the recipe ideas I had sent the hubs was for RITZ Chicken Nachos, knowing that I had just stocked up with a couple boxes of crackers. So apparently, the hubs really liked my idea of making these nachos using these RITZ Crackers & got a little creative with some other leftovers we had in the fridge from tacos the night before.
The topping on these little bites was made with all our leftovers & things we had on hand. Leftover shredded chicken, shredded cheese, black beans, diced green chilis, cream cheese & spices. He topped them off with a little tomato & chives & they were absolutely perfect.
The kids were just loving these! How can you go wrong with creamy chicken & buttery RITZ Crackers?
You can find RITZ Crackers at all your Kroger brand stores like I did at my Fred Meyer, but also at Dillons, Food 4 Less, Smiths, Ralphs & many more.
Don’t you just want to grab one? These were the family favorite in our appetizer spread that night! It was so nice to just relax, have some family time, enjoy good food & start the weekend off easy & low key. I really could get used to this. I think I might push for this to be our new Friday night routine. Especially when it means I can hand dinner duty off to the family too! Creamy Chicken RITZ Nachos
Creamy Chicken RITZ Nachos
Ingredients
- 2 cups cooked shredded chicken either rotisserie or leftovers
- 8 oz cream cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup black beans- rinsed & drained
- 1 small can diced green chilis
- 1 tbsp minced onions
- 1/2 tsp garlic salt
- 1/2 tsp parmesan garlic seasoning
- diced tomatoes & chives for garnish
- 20 RITZ Crackers
Instructions
- Combine chicken, cream cheese, cheddar cheese, black beans, chilis, onions & seasonings in a medium bowl & stir together until fully combined
- Place approximately 1 tbsp of the chicken mixture on top of a RITZ Cracker
- Top with tomato & sprinkle with chives
- Repeat with remaining crackers
- Enjoy!
