So this fun treat loaded with cookies, would definitely make a cookie lover’s dream come true and get official approval from the Cookie monster himself.
Homemade cookie Monster ice cream tastes like a classic combo of vanilla ice cream, chocolate chip cookies, and chocolate sandwiched cookies, so it is usual cookies and cream but with a bright blue color. The food coloring itself is tasteless! I love this recipe because it doesn’t require a trip to the grocery store.

Ice Cream Ingredients Notes
Note that for no-churn ice cream, we don’t use sugar on its own, only the sweetened condensed milk to make sure all the ingredients combine and there will be no air pockets left for the ice crystals to form and ruin our ice cream flavor.

- Heavy whipping cream to make silky smooth and creamy ice cream. I do not recommend substituting heavy cream or condensed milk with any other dairy for the best results.
- Sweetened condensed milk – 1 can. To make ice cream without an ice cream maker we must use condensed milk -this is the secret to the best homemade ice cream. To be fair, there is no big difference between using unsweetened or sweetened condensed milk.
- Pure vanilla extract. I love the classic vanilla ice cream base for this homemade ice cream recipe, but you can use any other extract to flavor the ice cream mixture – coconut, almond, cinnamon, or even rum or bourbon.
- Blue gel food coloring or regular food coloring to imitate the blue color of the Cookie Monster coat. The amount of blue food coloring will depend on your desired shade of blue. I’ve never used more than 10 drops. At Baskin-Robbins ice cream shop, the color is closer to light blue.
- Salt balances and opens up the sweet flavors.
- Oreo cookies, roughly chopped. You can also use mini cookies to decorate. You can also crush them in a Ziptop bag with a rolling pin or pulse them in a food processor instead of cutting them.
- Chips Ahoy Cookies, roughly chopped chocolate chip cookie pieces to add in the ice cream and for the decoration. Homemade chocolate chip cookies work amazing too! Don’t use very soft cookies as they may turn soggy when the ice cream melts.
Optional, waffle or sugar ice cream cones or chocolate cookies (to make an ice cream sandwich) to serve.
Equipment You’ll Need
- Loaf Pan lined with plastic wrap or parchment paper to initially freeze the ice cream. You can later move it to an airtight container.
- Stand or hand mixer to beat the whipped cream and condensed milk together to get the smoothest ice cream base possible and prevent ice crystals from forming.
How To Make Cookie Monster Ice Cream Without An Ice Cream Machine
- Beat the heavy cream on high speed in a stand mixer until stiff peaks form for around 3-5 minutes.
- Gently stir in the sweetened condensed milk and vanilla extract until combined.
- Fold in the food coloring and salt, followed by the crushed cookies, leaving a few extra chopped pieces to top the ice cream.
- Transfer the mixture to a loaf pan and top with the reserved chopped cookies.
- Freeze tightly covered with plastic wrap for at least 6-8 hours or overnight.
How To Scoop Ice Cream Without A Scooper
Homemade ice cream doesn’t have additives to preserve it and keep it hard, so sitting on the counter it melts much faster than store-bought ice cream.
If you don’t have an ice cream scoop, just use a tablespoon to scoop ice cream. It will make a more oval-shaped scoop, like in fine-dining restaurants. You need to scoop and holding the spoon in the ice cream rotate it full 360 to get that perfect scoop.
How To Store Homemade Ice Cream
Store in a freezer-safe container in the freezer with plastic wrap tightly covering the ice cream surface for 2-4 weeks.
Monster Cookie Ice Cream Add-ons & Variations
- To take this ice cream to the next level you can add mini marshmallows or marshmallow fluff, edible cookie dough formed in tiny balls (safe to eat raw!), and more chocolate chips, white or dark.
- Drizzle the servings with hot fudge or caramel sauce or add peanut butter caramel swirls to the ice cream.
- Cookie Monster ice cream sandwich cake. To turn this into a cake, use the same loaf pan, but layer brownies, sandwich cookies, cookie dough, chocolate chip cookies, or Oreo cookies at the bottom of the pan, then add ice cream, and top it up with the second layer of the cookies.
- Vegan Cookie Monster ice cream. You can substitute dairy with coconut cream and coconut condensed milk. For coloring, you can use spirulina powder. Swap the cookies with vegan chocolate chip cookies, original Oreos are vegan-friendly too.
Tips For Making Ice Cream
- Chill the bowl of the stand mixer or the mixing bowl you will use to whip the cream and condensed milk in the freezer overnight before making this recipe.
- The color of the ice cream will deepen and become more vibrant as it sits, so don’t overdo the food coloring as it can change the consistency and flavor of the ice cream if you add too much.
- Be prepared that fool coloring can stain the tongue or clothes if you drop a piece of ice cream. It is washable but still!
- Fold, do not overmix. It is very important to get smooth, soft ice cream. Once the peaks stand soft but hold shape, stop mixing.
- A perfect bite has a bit of cookies and ice cream, so make sure to chop cookies in small half-inch pieces.

Can I Use Other Cookies?
Yes! Instead of Oreos and Chips Ahoy, you can use homemade chocolate chip cookies, peanut butter cups, graham crackers, fudge elves, mini cookies, cookie dough, etc.
Is Gel Food Coloring the Same as Regular Food Coloring?
Liquid food coloring can alter the consistency and is easy to overdo. The gel food coloring has a more intense color and doesn’t affect the texture that much.
