Ice cream sandwiches- even better, because it’s portable ice cream. LOVE it! So how could we make them even better? Ummmmm – make them with chocolate chip cookies of course! Delish!

These ice cream sandwiches are pretty awesome because their base is the most delicious chocolate chip cookies. HELLO – I’m all about anything that STARTS with a cookie. Especially cookies as good as these.
But then we take those and sandwich them with ice cream. That makes these THE PERFECT treat to serve for any occasion. I’m thinking I can’t wait to have these at our 4th of July celebrations or even just sitting out on the back patio after a long day of working in the garden. You just can’t go wrong with these.

How to store cookie ice cream sandwiches
The best way to store these is obviously in the freezer. But to make sure they stay fresh, remove them from the freezer once they have set. Then wrap each sandwich individually in plastic wrap or in its own zip-top bag. Then you can keep them in the freezer for up to 1 month.
Can this recipe be cut in half?
Yes – you can cut this recipe in half if you only need 9 sandwiches. However, since these can be kept in the freezer for up to a month after making them, you could just make the whole batch and enjoy them periodically.

Can the cookies be made ahead of time?
You bet – these cookies can be made ahead of time. If you would like to do that, let the baked cookies cool to room temperature. Then place them in an airtight container for up to 3 days before assembling the sandwiches.
You can also make the dough ahead of time and keep it in the fridge for up to 24 hours before baking. Please let the dough come room temperature before baking or you can increase the baking time by 1-2 minutes depending on how they are looking.

- Soft and chewy centers of the cookies – yet sturdy enough to hold together. These really are the perfect chocolate to cookie ratio for this.
- Perfect blend of thickness and sweetness to compliment the ice cream.

Should I use light or dark brown sugar?
Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown sugar will work in this recipe.

Tips for the best ice cream sandwiches
- Use a good quality ice cream
- Mix and match with flavors and sprinkles – make it fun
- Slightly under-bake the cookies. Because they will be frozen, you want them to stay soft enough to bite into. Baking just short of done will keep the centers slightly doughy and perfect for making into ice cream sandwiches.
- Use a combination of mini and regular chocolate chips so there isn’t too much cold chocolate in each bite -which would make them difficult for some to chew.
- These can be made with store-bought cookies if you are tight on time. But remember that purchased cookies are baked fully – so they will be more difficult to bite into once frozen.
- Freeze the cookies for about 30 minutes before you add the ice cream. This way they are more firm when assembling the sandwiches.
- While I normally would advise adding additional chocolate chips to the tops of the cookies as they come out of the oven to make them prettier – with these I am going to recommend that you don’t do that. Having the chocolate chips on the outside of the cookies will make them messier to handle. Since these are a “finger-food” let’s keep the chocolate chips on the inside as much as possible.
- Don’t rush the process. Give them enough time to set in the freezer once they are assembled so they don’t become a melty mess when people are trying to eat them.

How to make Cookie Ice Cream Sandwiches
Cookies
- Preheat the oven to 350 degrees.
- Line the baking sheets with parchment paper or a silicone mat.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
- Add the eggs and vanilla extract and mix until well combined.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the flour mixture to the butter/sugar mixture and beat until combined. Don’t overmix.
- Fold in the chocolate chips until well combined.
- Divide the batter using a cookie dough scoop or tablespoon and place on the prepared baking sheets about 2 inches apart
- Bake for 10-12 minutes. You want the cookies slightly underbaked for the ice cream sandwiches.
- Remove from the oven and place on a wire rack to cool.
Assemble the Ice Cream Sandwiches
- Remove the ice cream from the freezer and let soften slightly.
- Take 1 scoop of the ice cream and place on the bottom of 1 cookie, then top with another cookie that is similar in size, and gently press them together.
- Dip the sides of the cookie sandwich in the mini chocolate chips or sprinkles, if you like.
- Place on a baking sheet and return to the freezer until ready to serve.
- Store leftovers in the freezer.

What are the best sprinkles for this recipe?
This is important – just because the package says “sprinkles” doesn’t necessarily mean that it is in-fact sprinkles.
I see a lot of people using colored sanding sugar that is labled as sprinkles.
This will not work as well because when that sugar gets wet – like when mixed into a moist dough, stuck in ice cream, or when placed in the refrigerator or freezer, it will sweat & the color will bleed out.
Can I use a vanilla substitute instead of vanilla extract?
Yes. Vanilla essence does not provide quite the same flavor as regular vanilla extract. However, it is a good alternative.

How do I properly measure the flour?
The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.
However – if you fluff your flour with a spoon, then gently scoop the flour into the measuring cup, taking care to not pack the flour – that should work for this recipe.
How to soften the butter to room temperature?
First
There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.
I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.
But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.
Second
I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.
This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.
Third
My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.
