Coffee Toffee Cookies
I think it’s safe to say that I don’t think I could live without coffee. Setting up my coffee to brew in the morning is the last thing I do before heading to bed. Heading down to the coffee bar when I get up at 4 in the morning is first thing I do to get my brain working that early in the morning so I can hit the ground running. I even drink my coffee instead of water when I’m on the treadmill. Yep – I love it. It makes me happy. So when I come across a brand that I can really get behind, not only for it’s amazing flavor, but also for it’s business practices- I’m all in. I not only brew it but I find new ways to incorporate it in my recipes as often as possible. Just like I did when I made these Coffee Toffee Cookies.
I started with Cameron’s Coffee. Just look at all these wonderful coffee flavors they sent me. Oh my goodness – I’m in love.
First thing I did was brew a pot & give it a try. I knew from the first sip that this was something special & I would be a lifelong fan.
It also inspired me to make these amazing cookies. Adding the ground coffee gives them a deep flavor that’s different than what you would get when adding brewed coffee.
This Velvet Moon is what I added to these cookies. It blends so nicely with the toffee bits. But I can’t wait to add the Chocolate Caramel Brownie to something soon. I’m pretty sure I squealed when I saw that one in the box.
I love that Cameron’s roasts all their coffee in small batches using 100% Arabica beans in special designed European roasters in one of the greenest coffee facilities in the world. They have fine tuned the process for optimal freshness & AMAZING flavor with the help of their very own Roastmaster who is one of only 321 Q-graders nationally certified to be a tasting expert. What a fun job that would be.
The best part is that I have the ground versions here for my regular coffee maker & single serve cup versions for when I’m at the apartment. Definitely makes waking up there so nice. A little coffee while I watch the rain.
Coffee Toffee Cookies
Ingredients
- 3 sticks unsalted softened butter
- 1 1/2 c. packed brown sugar
- 1/2 c. granulated sugar
- 2 eggs
- 1 tbsp. vanilla extract
- 4 c. all purpose flour
- 4 tsp. cornstarch
- 2 tsp. baking soda
- 1 tsp. salt
- 1 - 1 1/2 tbsp. ground coffee
- 1 c. chocolate chips
- 1/2 c. chopped toffee pieces
Instructions
- Preheat oven to 350 degrees.
- Combine flour, cornstarch, baking soda, salt and coffee grounds in a medium bowl. Set aside.
- In mixer bowl, cream together butter and sugars
- Add eggs, vanilla, and mix until creamy.
- Slowly stir in the flour mixture until it is combined well.
- Fold in chocolate chips and toffee bits
- Bake for approx. 12-15 minutes or until edges are browned- cool on pan 5 minutes before transferring to wire rack
