Coconut Nut Ice Cream Bars are the perfect little cool down on a hot summer day. Just a handful of ingredients & a few minutes is all you need. Chocolate ice cream coated with a thick layer of milk chocolate & coated with coconut & macadamia nuts is just heaven.
Coconut Nut Ice Cream Bars
I’m absolutely in love with simple desserts this time of year. If I can have a small treat that didn’t take me a ton of time to create, that’s a happy ending to my day. So I’m always looking for new & creative ways to bring a smile in the things I make. That usually involves coconut & chocolate. Those are my favorite flavors. So whenever I can incorporate them into what I’m making, I will take that opportunity. It’s a good thing that the family is on board with that because I rarely make a treat that doesn’t have at least one of those two things included. Add some nuts & I don’t think it really gets much better than that. When I created these Coconut Nut Ice Cream Bars it was all smiles from me.
I started with these Giant Chocolate Fudge ice cream bars from Weight Watchersยฎ I picked up at Walmart during my weekly shopping excursion. I think it was the first higher temps of the season that prompted me to pick up ice cream. It was the first time I wore capris & I was enjoying the summer feel outside. That always sparks a craving for ice cream. The bonus is that these ones from Weight Watchers are under 100 calories right out of the box. (Don’t miss the iBotta offer available up to $4 right now)
But I always like to dress things up & put my own twist on things, even if it’s already a “ready-to-enjoy” type food. So I coated them in milk chocolate & sprinkled with chopped coconut slices & some macadamia nuts.
I made sure to add pecans to a couple just for a little variety. Because I’m all about choices. I love individually wrapped items like these because it really helps with portion control.
Coconut Nut Ice Cream Bars
Ingredients
- 1 box Weight Watchersยฎ Ice Cream Bars
- 1 cup milk chocolate chips
- 1 tbsp shortening
- 1 cup chopped coconut shreds
- 1 cup chopped macadamia nuts or favorite nut
Instructions
- Combine chocolate chips & shortening in a small bowl & microwave on 50% power for 30-90 seconds, stirring in 30-second intervals
- Once chocolate is melted & smooth dip each ice cream bar into coat
- Sprinkle with chopped coconut & nuts before chocolate sets
- Place on a parchment lined baking sheet & store in freezer until ready to enjoy
