Are you a cinnamon lover? Our whole family can’t get enough, so I am always trying new recipes that will satisfy that cinnamon craving. I was tight on time & needed something quick & easy.
I had already planned on making some sugar cookie bars that weekend. So the natural progression in the thought process was to just take those already delicious sugar cookie bars & make them into these positively delectable Cinnamon Roll Sugar Cookie Bars. They were a HIT!
I don’t know if you noticed, but I have been on a cinnamon kick lately. Honestly, I don’t know what to say except that maybe making so many cinnamon recipes for my son has made his love for it rub off a little bit.
These are all the yummy goodness of a cinnamon roll all neatly compacted into a little easy to eat bar. Oh, my word!!! It makes it so easy to just grab one to enjoy while I mill about the house.
That being said, it probably isn’t the best idea for me to make goodies that are so easily enjoyable. But that is what I love so much about sugar cookie bars. They are so freaking easy to make, no rolling, cutting, chilling, decorating each individual cookie…. you get the idea.
You literally just press the dough in the pan & bake. Then top with the frosting. Even easier than a chocolate chip cookie too. It is no wonder I love making cookie bar recipes.

I so love the cinnamon roll flavor of these. Because I do crave cinnamon rolls nearly all of the time. Who wouldn’t?
But even though I do have some insanely easy One Hour Cinnamon Roll recipes that I love & cherish, sometimes I want the flavor without all that goes into making a batch of those delicious breakfast treats. That’s where these sugar cookie bars come in.
Here are some commonly asked questions
Can I make these with margarine instead of butter?
In a word, no. Margarine will change not only the consistency of the dough but also how long the bars need to bake. On top of that, it changes the overall texture of the cookie bars once they are baked. When it comes to baking, stick to butter unless the recipe specifically calls for margarine.
Can I grease the pan instead of using parchment?
I suppose you could, but it would have to be heavily greased. I highly recommend using parchment & leaving a little hang-over at the top. This helps you lift the entire batch of cookie bars out of the pan without having to dig a spatula into the bars to remove them one by one.
What is the best way to store these cinnamon bars?
I like to keep mine in the dish I bake these in, mainly to cut down on extra dishes. So after serving, cover the baking dish with plastic wrap or tin foil.
Be sure to label with the date before refrigerating. This recipe should keep for up to 3 days. As with most food, it is important to get these into the refrigerator within 1 hour after serving to prevent bacteria growth.
Can this recipe be frozen?
You can freeze these cookie bars if needed for up to 2 weeks. Sometimes I like to do this & only thaw what we intend to enjoy for the evening. It helps to keep me from over-indulging when it comes to goodies.
How many bars will this recipe make?
Honestly, this really depends on how large or small you cut them. But I like to cut them 3×3 – totaling 9 bars. Of course, you can cut 4×4 rows to make 12 bars or 2×2 & have just 4 super large bars. That is really up to you. I’m talking 3 bars x 3 bars – not 3″x3″.
HOW DO YOU MAKE Cinnamon Roll Sugar Cookie Bars?
Cookie Bars

- Preheat the oven to 375.
- Line a 9×9 inch pan with parchment – set aside.
- In the mixer bowl, cream together the butter & sugar until fluffy.
- Add in the egg & egg white, sour cream, vanilla & almond extracts & mix well.
- Slowly stir in flour, cinnamon, baking powder & salt & mix until it is a crumbly dough.
- Press dough into a flat, even layer in the prepared pan.
- Use a fork to poke holes in the top so that it bakes evenly.
- Bake 17-20 minutes or until browned.
- Cool completely before adding the frosting.
Cinnamon/sugar mixture

- Combine cinnamon & sugar in a small bowl & whisk to combine.
- Set aside until ready to decorate the bars.
Cream Cheese Frosting
- Combine the butter & cream cheese in the mixer bowl & beat well.
- Add in the vanilla & then confectioners sugar & beat until creamy.
- Spread frosting in an even layer & sprinkle with a little cinnamon/sugar mixture.
- Keep refrigerated until serving.
- *Note- I found it easier to cut the bars first & then frost each one to keep the cuts cleaner.
Can this recipe be halved?
Cutting this recipe in half would drastically change the baking time. For the best possible result, it would be better to make the recipe as it is written & then give away whatever portion you won’t use immediately. That being said, these bars will keep for 3 days, so there is plenty of time to enjoy them all.
Can this recipe be doubled?
I usually like to double this recipe but still bake it in 2 separate pans. This way I can keep the baking time the same, instead of having to figure out how much longer I need to increase the time when using a larger pan. Plus I really like the thickness with this recipe & doubling it into another size pan would change that.

- 1 egg
- 1 egg white
- 1-1/2 tbsp sour cream
- 1 tsp vanilla extract
- ½ tsp almond extract
- 1 tbsp cinnamon

- ½ tsp salt
Cream Cheese Frosting
- 8 ounces cream cheese - room temperature
- 8 tbsp butter - room temperature (1 stick)
- ½ tsp vanilla extract
- 2-1/2 cups confectioners sugar
Cinnamon/sugar mixture
- 1 tbsp granulated sugar
- 1 tsp cinnamon
