- ALWAYS USE FRESH MARSHMALLOWS! Trust me on this – don’t take that old bag of sticky marshmallows from the back of the pantry. Stale marshmallows mean stale COOKIES. If you want them soft and chewy – always use the freshest marshmallows.
- USE REAL BUTTER – please don’t try to make this recipe with margarine. It just won’t turn out the same.
- Don’t skip the chilling time – you need the chill time to keep the “cookies” together.
- Don’t cook the marshmallows – make sure the chocolate mixture isn’t too warm or it will melt the marshmallows and you will no longer have the texture you need for these to hold together.
- Keep the cookies in an airtight container once cut. Make sure you keep these in the refrigerator as a warm and cozy house will make them melt and fall apart.
- Dampen your hands with water before pressing the mixture together – this will help to keep it all from sticking to your hands.

- Allow the mixture to cool for about 5-10 minutes, so it doesn’t melt the marshmallows when you stir them in.
- While the chocolate is cooling, prepare the rolling station by laying out 2 large pieces of parchment or wax paper on a working surface and evenly spreading 1 cup of coconut on top of the parchment.
- Next, in a large bowl, combine the marshmallows and chopped nuts.
- Then add the melted chocolate mixture over the marshmallow mixture and stir to combine well.
- Now, divide the mixture in half and place each portion on top of the coconut you spread out on the parchment.
- Shape into logs and roll up tightly in the paper.
- Refrigerate for at least 2-4 hours or until firm enough to cut **you can also freeze for about 15 minutes to get a clean cut.
- Next, slice into ¼-inch thick cookies.
- Finally, store in an airtight container in a single layer or stack in the container with parchment paper separating the layers.
