This Chocolate Mint Poke Cake is a delicious mint chocolate cake soaked with chocolate fudge & topped with minty whipped cream, mini chocolate chips & sprinkles. So good!
Do you love a good mint & chocolate combo? It’s one of my all-time favorites. So the other day I whipped up this Chocolate Mint Poke Cake on a whim. I was craving minty chocolate & I really wanted cake. I didn’t plan on sharing it here, I just wanted to satisfy that craving. But then once I had my first piece I thought you might love it as much as I did. I had to snap a couple pictures & tell you about it.

Now I typically associate mint & chocolate with St. Patrick’s Day. But here it is in the middle of summer & mint was all I could think about. I think it’s because, to me, mint is the coolest of all the flavors. Like with ice cream, mint just seems colder than all the others out there. That’s probably why that’s the one we buy the most when it’s hot outside. So the same applies to this cake. The mint counters the richness of the chocolate fudge & it’s all so yummy! I want more.

Chocolate Mint Poke Cake
Ingredients
- 1 box chocolate cake mix + ingredients needed to make cake oil eggs and water
- 1-1/2 tsp mint extract
- 1 jar hot fudge sauce
Frosting
- 1 tub whipped topping 8 oz
- 1 tsp mint extract
- 3 tbsp green jimmies
- 3 tbsp chocolate jimmies
- 1/3 cup mini chocolate chips
Instructions
- Prepare cake according to package directions for a 9 x 13 pan - adding 1-1/2 tsp mint extract to the batter before baking
- Remove from oven & poke holes all over the top of the cake using the handle of a wooden spoon - allow cake to cool
- Pour hot fudge sauce all over the cake- pushing it into the holes.
- Fold in 1 tsp mint extract into thawed whipped topping
- Spread whipped topping over the top of the cake in an even layer
- Sprinkle on mini chocolate chips & jimmies
- Slice and serve.
