- In a small bowl, whisk together the mayonnaise, adobo sauce, minced garlic, lime juice, salt, and black pepper.
- Adjust the seasoning to taste. Set aside.
Sandwich
- Preheat the griddle or skillet over medium heat.
- Spread a generous amount of the prepared chipotle sauce on each bread slice.
- Add a layer of cheese. Arrange the chicken over the cheese and add the avocado. Finish with another sprinkle of cheese before adding the top piece of bread.
- Add a small pat of butter to the preheated skillet and allow it to melt.
